Springtime symbolizes a fresh beginning. In the Flint Hills of Kansas, the rebirth here uniquely brings forth the fragrance of newly-produced smoke, and the crackling sights and sounds of fire ripping through winter-deadened prairie grass. As winter inevitably gives way to spring, it’s good to know the cold, cloudy, snowy days full of ash will always be followed by sunshine, warmth, and the brightest green grass you’ve ever seen! Nature reveals its beauty through budding trees and flowers, and the fresh temperate air invites us to spend more time outdoors. As we prepare our gardens and flowerbeds, a new life awakens in not just the world, but in ourselves, and it lends us the desire to explore the planet we’re living on. There’s a multitude of diverse spots around Manhattan to explore. You can easily find a hiking trail along the Kansas River, Tuttle Creek Lake, or at the Konza Prairie. There’s a ton of family events around the region that are starting to heat up this time of year. Journey around town to one of our fantastic dining options with flavors to satisfy virtually any tastebud. Tulum. Marrakech. Bali. As international travel restrictions relax post-pandemic, many travelers are setting their sights on bucket list worthy cities and landmarks around the world. Manhattan, Kansas may not top many “must-see” lists yet, but the city is indeed a destination for many folks looking for a unique dining destination. “We have people come from Kansas City, Wichita, even outof-state, just to eat here,” says Kenrick, Little Grill owner and Manhattan transplant by way of Montego Bay, Jamaica. Twenty years ago, Kenrick and his wife Cathy opened the Little Grill. Located a short jaunt from downtown, just across the road from Willow Lake, the eatery has provided a dining experience unlike any other in Manhattan. Serving “Jamerican” cuisine, the Little Grill offers Jamaican staples like jerk chicken, fried CONTINUED >

plantain, and rum cake, alongside American classics, including mac-n-cheese, burgers, and gumbo. While Little Grill patrons come for the food, they stay for the atmosphere. As you enter the restaurant, you are welcomed by thatched-grass overhanging the bar, exposed ceiling beams, and emerald walls lined with music memorabilia and island-themed artwork. The tropical décor creates a warm, inviting ambiance, which is reflected in the demeanor of the servers and diners alike. As you enjoy your meal, you will likely catch a glimpse of owners Cathy and Kenrick sharing conversation and laughter with patrons. The Little Grill is known for its exceptional live music. If you are lucky, you will get a chance to hear Kenrick play a Bob Marley or Elvis Presley ditty on his guitar. Every Wednesday, you can enjoy the dulcet tones of acoustic duo Chris Biggs and Ken Gustin, both of whom boast impressive musical skills. Chris is a nationally-recognized flatpicking virtuoso, while Ken is an award-winning folk singer. Simply put, the vibes at the Little Grill are immaculate, as is the restaurant itself. “Kenrick is a stickler for cleanliness. People always comment that we have the cleanest [commercial] kitchen they have ever seen,” says Cathy. The care that the couple puts into every aspect of the restaurant is evident, from the spotless kitchen and the curated décor to the phenomenal food and friendly staff. Reflecting back on the past two decades of business, Kenrick says, “We must have been doing something awesome to be here for twenty years.”

For this article, we caught up with Daniel Mushrush, a sixth-generation Kansan and rancher in the Flint Hills who oversees controlled burning on the tallgrass prairie.

Every spring, tallgrass prairie throughout the Flint Hills is set ablaze. Why do we see controlled burns in the region? We started doing controlled burns during a severe drought, not because we wanted to but because we had to. The Eastern half of the state receives enough rain to support tree growth. As European settlers came to Kansas, trees took over. Trees should be where trees should be, but they can be invasive. Every tree in the Flint Hills is a weed. There’s not a single sacred tree in the Flint Hills. For thousands of years, without the encroachment of trees, the tallgrass prairie has supported hundreds of species. All those trees create soil erosion and crowd out native species. Even a couple of trees every hundred yards has a significant impact on prairie chickens. Initially, the tallgrass prairie extended from the 100th meridian [which is considered the western edge of The Great Plains] to western Kentucky and Tennessee. The tallgrass prairie, which was once a pretty common ecosystem, is now endangered. Somewhere around ninety-eight percent of the remaining tallgrass prairie is in the Flint Hills. How do we know the tallgrass prairie ecosystem is endangered? For the past thirty or so years, satellites have taken images of the whole Great Plains. We now have the data to show the encroachments of invasive species - you can see all the cedar trees taking over the prairie. The science is showing us that we’re losing this battle.
What are the pros and cons of controlled burning? It keeps the invasive species at bay so we can maintain biodiversity. The ecosystem has evolved with fire; the native species have evolved with fire. The fire chars the earth pitch black, and burns off invasive species. But, in a few weeks, the land will be as green as Ireland, as the native species re-grow. If there’s no fire, we’ll lose the Flint Hills in twenty-five years. We want to make sure the Flint Hills stays the Flint Hills. The air quality is something that we’re trying to deal with. There are programs to control how much smoke is generated and where it goes. The burns occur mid-March to May 1, but to keep people safe on the ground, there are probably ten days that are actually safe [for burning]. Nobody does [controlled burns] for fun. We [the people overseeing the burns] hate it more than the people it bothers in Manhattan. How many acres are burned each year? Not enough. We log every burn with the sheriff’s department, when it was lit, when it was put out. [Editor’s note: The Konza Environmental Education Program reports that between 3000 and 5000 acres are burned each year on just the Konza Prairie. Before us, the Native American tribes here carried them out, and before that they occurred naturally via lightning. [This practice] is science-informed and it’s for the greater good. Each summer, the Flint Hills come alive with 3,400 bike riders when Emporia hosts the world’s premier gravel event, Garmin UNBOUND Gravel. We talked with Race Director -- and Manhattan native -- Ben Sachs, and he offered advice on what to look for when buying a gravel bike and what you must always carry when you ride. WHERE SHOULD YOU START WHEN LOOKING FOR A GRAVEL BIKE? I always look for durability and reliability. That’s why I like steel bikes. They’re a little heavier, but they’re strong and durable. The first thing to decide is whether or not you want drop-down handlebars or flat handlebars. If you’re doing anything longer than an hour and a half ride, then going drop handlebars are the way to go. They allow for more riding positions throughout the day, so you can move around and not get cramped into one position.

After that, look at tire clearance. You want a tire in the 1-3/4” range, or around 40MM. That’s ideal for gravel roads. Anything smaller and you’re likely to get pinch flats. Anything bigger and it'll slow you down a bit. Strangely, I have also seen some situations where wider tires are more likely to get cuts from sharp flint rock. WHAT’S ONE MUST-HAVE ACCESSORY WHEN YOU RIDE? At the very least, a pump, an extra tube, tire levers (for removing the tire from the rim), and a multi-tool (Allen keys, etc.) are the four things you need for sure. Otherwise, you better have a phone with good reception out in the country!
