Eat, Drink & Be Merry!

Anyone who knows me is aware of the fact that I like fine wine and fine dining. I also love comfort food that is not necessarily on the approved list of healthy food fanatics. If I did not punish myself at the gym almost every day, I’d probably be shaped like a blimp.

To celebrate our Wine & Food issue, I want to discuss the present state of dining out in our community…or for that matter anywhere else. As restaurants recover from the impact of the pandemic on their businesses, we have arrived at the point of a full-blown dining out mode, much of which has returned indoors. Hopefully, it stays that way and gets even better. Just make your reservation early in the week.

All of that is good news. However, even if we factor in the increase in costs due to inflation, the dinner tab in too many places is much higher than the inflation rate. A USDA Prime New York steak entree that formerly cost $50 should not cost $80. Fine wine by the glass that formerly cost $15 should not cost $25. I could go on and on, but I think you get the picture.

Good news folks—there is a solution! There are wonderful restaurants in our Conejo Valley community that have had to increase prices, but they have kept that increase in line with inflation. Their kitchens have also recovered to pre-pandemic quality as their staffing quantity and quality has continued to improve. None of the following restaurants are our advertisers, so I have no skin in the game. I simply think they are the best and that they deserve your business based on the quality of the food and service and fair prices. At this point, we either prepare a great weekend meal at home (I love to cook) or we patronize the following local restaurants. I am judge, jury and hungry guy.

The winners are Tuscany il Ristorante in Westlake Village, Basta Restaurant in Agoura Hills, Rustico Restaurant in Thousand Oaks (North Ranch) and Geofrey’s in Malibu. Mangia, mangia!

More than a dozen tasting rooms line the bucolic main street in Yountville. The gorgeous wine-tasting “shops” also sell goods in order to serve alcohol. Sip wine and ogle the merchandise all over town.

Hestan Vineyards

Sample five varietals from winemakers Thomas Rivers Brown and Jeff Gaffner at the Hestan Vineyards tasting salon, where wine is accompanied by dream cookware from Hestan that even Chef Thomas Keller uses. Culinary fiends will fall in love with their titanium pans and nonstick skillets, some with diamond sparkles known as “the Cadillac of pans.”

Maybe this estate should be called “From Argentina with Love,” as an Argentinian surgeon who invented the heart balloon stent designed the estate using rocks dug from the land to create fortress-like walls. The subterranean winery and cave extend 18 stories into the rocky flank of Mount George and are home to the proprietary take on gravity-flow winemaking.

Located on a pre-Prohibition winery founded in 1881 by one of the pioneers of Napa Valley wine production, today three generations of the Palmaz family live and work on this land, combining tradition and technology to craft delicious wines. The operation is like “Willy Wonka’s House of Wine,” as a private tour will share how the winery collects data and statistics on every detail, tracking temperature, sugar and alcohol of each barrel and geographic area in real time.

Cakebread Cellars

Book a private tour in advance to visit Cakebread’s Rutherford winery, where five wine tastings occur throughout the property to demonstrate how their wine pairs well with good food and company. The story begins with Ansel Adams who taught Jack Cakebread photography in the 1950s and when the sales from Jack’s coffee table book took off in San Francisco, it bankrolled a down payment for the house and land that exists today. Not a winemaker then, Jack went to UC Davis to learn viticulture and took the advice of neighbor Robert Mondavi to plant Chardonnay.

Stroll through the culinary garden and relax in the courtyard to take in the views with sips of Chardonnay and Sauvignon Blanc. Soak in the magnificent architectural details and admire the floor-to-ceiling concrete eggs that look like mini spaceships, where the wine matures. The Ruse is an unexpected wine country stay like no other

Slowly pull up to the front of The Ruse and images of New England may come to mind. The grey siding and white trim of this Healdsburg inn, enhanced with white roses and a dark grey statement fence, accent an elegant “R” and let you know you’ve arrived. Sun filters through the inn’s surrounding trees with one looking as if it’s showing off its autumnal hues, while the smell of sweet lilac perfumes the air.

Past a koi pond and through the inn’s check-in foyer, a welcoming heated pool and jacuzzi are hugged by umbrellas and chaise loungers. Have you arrived in the Hamptons at your own private estate? Michael and Zelene partnered with the renowned Guillaume Fabre, a sixth generation French Winemaker to develop the vineyard and make the wine. Fabre says, “Creating great wine is about balance…that unique equation that enables an ideal blend of climate, soil and the grape itself.” The Mizel Estate soil is a fertile mix of clay and sand, which Fabre says brings tannin structure and a certain elegance that is so difficult to find. Leaning into Fabre’s unique Bordeaux-style approach, the Mizel team is producing deep, velvety reds punctuated with fruit and spice that elevate the Malibu Coast AVA (American Viticultural Area) and show what the region can achieve.

ESTATE-GROWN PERFECTION

Mizel’s sumptuous reds are made from 100% estategrown grapes. Cabernet Sauvignon, Mourvèdre, Grenache, Syrah, Petit Verdot and Cabernet Franc contribute their alluring profiles to Mizel Estate’s signature wines—First Impression Bordeaux Blend, Easy to Please Grenache and Smooth Touch Syrah.

The vines are nurtured throughout the growing season under the direction of Estate Manager Hector Ambriz, who leads an experienced team that builds protective canopies, prunes the vines and drops excess clusters to concentrate the flavors in the remaining grapes. Fabre and Ambriz carefully monitor the grapes to determine when to harvest.

“There’s a little bit of an art and science to figuring out which types of oak and how old the barrels should be for each varietal. Guillaume is the expert, and he knows best,” says Michael Fowler.

Q. HOW DID YOU GET STARTED IN THE BUSINESS?

A. About 6 years ago, my “side hustle” from my full-time job as a Department of Defense contractor was barbecuing and smoking meats like ribs and briskets and catering for friends and family. I’m a big believer in quality and when I started hearing about different quality meats, I envisioned barbecuing with better meats. I connected with a source for high-quality meats in Seattle and started a private Facebook group to share and sell the meat online with friends. The group grew from half a dozen friends to more than 4,000 people in a few years! We opened our retail location last October, located at 2260 Townsgate Road #1 in Westlake Village.

Q. WHAT DO YOU ENJOY MOST ABOUT THE BUSINESS?

A. What I enjoy most about my business is when I have customers come back in, after trying something new, and explaining to me how that was the best steak, or the best piece of seafood, or the best pork chop they have ever had—that is what motivates me! It truly makes me happy! That’s what’s behind all of this—me wanting to share with family and friends; that’s where I get my true enjoyment in life.

Q. HOW DO YOUR PRODUCTS STAND APART FROM OTHERS?

A. We sell ultra-premium meat, fish and seafood from around the world and for the best value—it’s a different quality and a much better product than what you find in most stores. For example, in Australia, they don’t use the word organic, because they don’t have to—everything is natural. I source meats from amazing farms that love the animals. You can really taste the difference!

MR. MALIBU QUANTUM DRUMS

Anyone who witnessed The Beatles’ global impact can easily see why millions of teenagers wanted to emulate them.  Their caliber of musical talent and performance was so stratospheric that they remain unsurpassed in the last 50 years as the top selling group! As a drummer, I’m astonished by Ringo’s phenomenal drumming talent, which has been undervalued in the press and industry. And, by the way, he has lived here in Malibu on Pt. Dume appreciating the rhythm of the sea.

As a teenager, I became enamored with playing the drums and joined my buddy Brian Goff, who was infatuated with playing the guitar. Our would-be "better than the Beatles" 1970’s rock group named "Pink" took shape in the Malibu Colony. With our unbridled, flaming drive and a little help from Brian’s father, creator of "Charlie’s Angels," doors opened in our venture to hit the big time as we rubbed elbows with many of the world’s top musicians. Brian lived with Elton John and Ritchie Blackmore, guitarist for Deep Purple in England, took lessons from world-renowned jazz guitarist, Joe Pass, and received an original, acoustic guitar belonging to Elvis Presley.

I was a friend of Led Zeppelin’s drummer, John Bonham, “Bonzo,” and hung out with him backstage and on stage while they performed. I set up his drums at the Forum and was with him at the Hyatt sharing stories, like the time he was playing a drum solo with his bare hands. After badly cutting his left hand on the hi-hat cymbals, he played his heart out in front of all those thousands of fans with blood all over his drums. He laughed about that as well as being a perfectionist. He gave me several pairs of his big 5B sticks, which his roadies called "clubs." In 2016, Rolling Stone Magazine’s worldwide poll of the top 100 drummers of all time, Bonzo was named Number 1.

Legendary jazz drummer Buddy Rich gave me a pair of his 7A “toothpick” sticks that he had just performed with in a concert. I sat 5 feet from him and during a very high paced beat, one of his sticks cracked in half. Without

even looking, he grabbed a new stick, but didn’t just grab it, he twirled it in the air without even looking and caught it in perfect timing to continue playing! He laughed as he shared with me the poem he had just written on the wall in the men’s room: “Roses are reddish, and violets are blueish, but the world’s greatest drummer just happens to be Jewish!”

I met Jimi Hendrix’s drummer, Mitch Mitchell, performing in his group Ramatam. Brian and I saw Hendrix at the Forum, the last concert he did in L.A. He utterly mesmerized the entire audience with his magnetic charisma. He was so much in a league of his own that in many ways, he redefined what rock music was, including new ways to play the guitar. He autographed his albums and photos with “Stay Happy.”

Mitch shook my hand and said in his strong English accent, “Great to meet you mate!” I told him I was collecting drumsticks from my drummer idols and asked him if I could have a pair of his. He said, “Sure, but not a new pair,” and he handed me a broken pair. I had a rare collection of sticks and a handwritten letter from John Bonham that I received before meeting him in person.

Indulging my love of playing the drums, I created another group in Malibu with Chad McQueen on guitar. His father was Steve McQueen, starring in blockbusters like “Thomas Crown Affair.” I was frequently at their home on Broad Beach where we had deep conversations about life and death. Eerily, Steve died within 2 years at 51. We would go next door and knock on Keith Moon’s door, drummer for The Who. One time a lady opened the door and said, “Come on in! Keith’s in that room watching a movie and would love to see you guys.” They offered us drinks and treated us like special guests. We would occasionally meet up at Trancas Restaurant in Malibu where rock groups used to perform.

I met Ginger Baker, drummer for “Cream” with Eric Clapton, at Trancas. Ginger was quite mean. A woman who was in his entourage told me with a smile, “He’s like that to everyone.”

Brian and I sat in on recordings with Eric Clapton at Shangri La studio on Morning View near Malibu High. We marveled at being in a recording session with one of music’s greatest legends.

Each celebrity, Bonzo, Keith Moon, Hendrix, Prince, Whitney Houston, Chester Bennington and Tom Petty, in their own way, has touched a chord in me and I, in turn, am now beating another drum as well. I have two organizations, HeartAscent Group Sharing and PsyberCeuticals System, created for the purpose of empowering a Chord of Connection in all of us wanting the peace and unity so needed now.

Santa Barbara Lifts Glasses at Wine Fest

What a wonderful time to visit the Santa Barbara Museum of Natural History and at the same time enjoy all of the goodies offered by the many local California wineries like Mizel Estate from the Malibu AVA, Tablas Creek from Paso Robles and Longoria Wines from Santa Barbara. We also shared the wine with some prehistoric dinos—all part of the fun. The sold-out event raised money to support many worthy environmental causes.
