TRADITIONS MARK THE PASSAGE OF TIME. Family traditions are some of the best memory keepsakes. Growing up in the south, each New Year’s day was marked with resolutions and a special meal. My mother was adamant that we have the ‘good luck’ dinner on January 1. I invite you to try this southern tradition or to develop your own unique meal to kick off 2021. After all, everyone could use a little luck after 2020, and the superstition keeps the holiday light and fun. NEW YEAR’S DAY DINNER + Baked Ham- a symbol of prosperity because pigs root forward. + Collard Greens- they represent green, folding money. Legend has it that they bring wealth and good fortune. + Black-Eyed Peas- symbols of coin money. + Cornbread- it represents gold and, when coupled with the other dishes, a sure-fire way to build your finances in the new year! BAKED HAM In the south, nothing beats a Honey Baked Ham. I remember standing in line for hours to pick up our perfectly sliced, delectably seasoned ham. No other ham would do. (Our closest store is off of Harmony in Fort Collins.)

RECIPES FOR A TRADITIONAL SOUTHERN NEW YEAR’S DINNER

COLLARD GREENS + 2 bunches of Collard Greens + 1 large yellow onion, diced + 1 red bell pepper, diced + 1 ham hock - these are found next to bacon and dried meats in the grocery store

+ Dash of tabasco sauce + Salt Don’t turn up your nose until you’ve tried this quick cooking version of a ‘mess ‘o greens.’ Take two bunches of collards cleaned, stems removed, and chiffonade (a preparation of shredded, leafy vegetables). To chiffonade, stack leaves, roll tightly, and slice into thin strips perpendicular to the roll. This allows the collard greens to cook quickly. Now it’s time to prepare your ham hock. Bring ham hock to boil for two hours, allowing water level to reduce significantly. Boil off most of the water to saute. Remove ham hock, water saute, onions, and bell pepper for 3-4 minutes before adding in the collard greens. Cook until wilted. Season with tabasco sauce and salt if desired.

BLACK EYED PEAS + Salt cured pork browned in pot. Add water to cover pork.

+ 1 onion diced + 2 cloves garlic halved + 1 stalk celery + 16 oz black-eyed peas (fresh is best) + Salt to taste Boil the salt pork, onion, and garlic for half an hour. Add peas and cook until tender or desired consistency.

Gluten-Free, Dairy-Free Cornbread + 1 cup cornmeal + 1 cup Pamela’s baking mix (may use flour if not gluten-sensitive)

+ 3 teaspoons of baking powder use 4 teaspoons if using regular flour use 4 teaspoons if using regular flour.

+ ½ t salt + 1 cup of almond milk (may use cow’s milk if not dairy-intolerant)

+ 1 large egg, slightly beaten + ¼ cup avocado oil, divided Heat oven to 425 degrees. Heat cast iron skillet in the oven with oil in it. Mix all ingredients. Carefully pour hot oil into the mix. Stir. Add batter to the hot skillet. Cook for 20-25 minutes. Serve with clarified butter or your favorite butter substitute and a drizzle of warmed molasses. IF YOU CAN NAME IT, IT’S QUITE POSSIBLE THAT LESLIE PARRECO HAS EITHER COMPLETED IT, LEARNED IT, OR TRAVELED TO IT AT SOME POINT IN HER ADVENTUROUS LIFE. From singing in the Washington, DC jazz circuit, to playing piano, to gaining her skipper’s license and sailing in Australia, Leslie has attempted and most likely succeeded in more activities in her life than most people will ever experience. In addition, she also picked up hobbies such as scuba diving, horseback riding, playing the piano, and cycling over the years. Of her adventures, Leslie says, “I’ve always been a big risk-taker.” This has included changes in her career path, from working at the International Monetary Fund, to the Department of the Navy, and now as an esthetician. Currently, Leslie is qualified on four body contouring devices, including sculpting, nine lasers and several radio frequency devices. Of the services she provides, Leslie says “I love treating clients. It’s fun to make people feel good. It’s fun to help get their confidence back. We do see amazing results. During the six years the club was shut down, Robin continued working with seniors, including seniors with disabilities, by opening her own business, UB4ME Health. “I went to seniors’ homes, provided physical therapy, and also had my own studio for those seniors with mobility,” she says. “My business was beyond successful and I had a waiting list for new clients. fitness, the Club is not only a job for her, but a vocation. “I started working in health clubs in Loveland when I was 19 years old [in 1983] at Gloria Stevens Figure Salon, and have built my career in fitness from that,” she says. She went on to work at several other Loveland health clubs, including the Rocky Mountain Health Club in 1987, which was the first business to open in what is now Club Loveland’s location. Later, the Orchards Athletic Club (OAC) opened there in 1995. This was where she created her beloved senior fitness program. “I felt in my heart that this challenge would truly provide the seniors of Loveland the opportunity for longevity and social health,” she says. “By 2012, I had over 1,600 seniors in my program, but sadly, the club closed. I was more than devastated to say goodbye to not only my precious seniors, but the building that had held my heart for almost two decades.”

2. Invite Others to Join You When you’ve settled on the problem you want to tackle you should immediately begin looking for others to join you. In the book, Rob and I recommend starting with friends and family; you already have influence with them, and chances are you’re of like mind in many areas. Go to those family members who frequently ask you for advice or seek your opinion on personal matters, as you likely have greater influence with them. To move beyond family, however, you’ll need to take a leap of faith and begin sharing your passion for solving the problem with other people. Passion attracts, and when people come to you with interest, don’t be afraid to ask them what they think or invite them to improve your ideas. Empowering people to help you creates a bond, and once that bond is established, you will quickly discover who you can truly work with and invite them to take action with you.

3. Do What You Can Where You Are Action is the final step. It doesn’t have to be big or grand; it doesn’t even have to be guaranteed of success. Nothing happens in life until someone does something, and once you take your first step, the next step will come into focus. Remember that transformation is a process, not an event. It takes time and repeated action to bring about positive change. So focus on purpose, not perfection, and do what you know to do. These three steps may seem too simple, but I assure you they work. The goal of all transformational movements is making things better however possible. Incremental change is better than the status quo; and when you’re truly committed to making your community a better place, you know that any improvement is a significant improvement.
