If you are traveling internationally, always ask about how they calculate the exchange rate and what they will charge for ATM usage—and be sure to get foreign currency through your bank before going on your trip so you have money for tips, snack shops, etc. 6. MAKE CARD COPIES. Keep copies of your primary credit card (with contact numbers), passport and driver’s license in a place you know won’t get lost, and keep the phone number for your bank handy in case it’s needed. 7. SECURE CELL SERVICE. Check with your phone provider to learn how the service will be and how much it will cost to use your data while you’re traveling. You may want to buy an International Day Pass or something similar if coverage will be spotty. 8. PLAN FOR EMERGENCIES. Always make an emergency contact sheet to give to someone in case something happens to you. Think ahead and make it simple for the person who needs to help you if you can’t help yourself. A sheet of paper with advisor, attorney and doctors’ names, etc., can go a long way to helping them help you.

I decided that we deserve better.” She explains that naturally occurring biophenols in olive oil offer a number of health benefits—but that traditional processing and storage can render them useless. Elderflower-Lemon Olive Oil Cake

+ 1½ cup all-purpose flour + 2 tsp baking powder + ½ tsp salt + ½ cup granulated sugar + 3 eggs + 1 egg white + ¾ cup The Spicy Olive Lemon Olive Oil + 2 Tbsp The Spicy Olive Elderflower White Balsamic Vinegar

+ ½ cup milk + Zest of one whole lemon + 1 Tbsp fresh lemon juice + ½ cup powdered sugar, for dusting Position a rack in the center of oven; preheat to 350ºF. Grease and flour an 8x8 cake pan or 6–8-cup bundt. In a medium bowl, sift together flour, baking powder and salt; set aside. On medium-high speed, mix sugar, eggs and egg white until light and fluffy, 3–5 minutes. Reduce speed to low, then gradually add olive oil, vinegar, milk, zest and lemon juice. Add flour mixture; fold to combine. Pour into prepared pan. Bake for 35–40 minutes, until a toothpick inserted comes out clean. Let rest for 10 minutes in pan, then invert onto rack to cool completely; dust with powdered sugar before serving. A not-so-sweet tea cake that’s great with fresh berries or berry coulis.
