It’s no wonder Earth Day is in April. This issue, we celebrate spring vegetables sprouting up on menus at local restaurants, especially at Tano Bistro. Gina and Gaetano Williams’ restaurant has experienced a rebirth of its own after the 2017 Loveland fire, but they have always embraced the farm-to-table ethos and continue to do so. You can’t think Loveland without picturing the Little Miami River roaring through the heart of town. This precious waterway needs constant love and attention to keep it healthy, not to mention scenic. We caught up with the Little Miami Conservancy to understand the measures they employ to nurture this natural treasure.

“From a business trajectory, there was a real change, and it was a conscious one,” Gaetano explains. “We had to decide if we really wanted to rebuild or if we just wanted to move on. When you make the decision to not only come back but to purchase the property, that puts you in a different mindset. We put roots in the ground here.” Both Florida natives, the Williamses had plenty of restaurant experience when they arrived in the area for Gaetano’s job working with the Buca di Beppo Italian Restaurant franchise. He eventually moved on to work for McCormick & Schmick’s Seafood and Steak. “When the downturn happened, we decided that it made more sense for me to start catering out of the house. We grew the catering really quickly and realized that I needed my own spot. When we found this location, we decided to open a bistro because our catering clients wanted a place where they could sit down and eat,” Gaetano says. But the space the Williamses found in 2009 wasn’t actually a restaurant. There was no hostess stand and no bar. But there was an adjacent tea room and a defunct clothing store with an apartment upstairs. They put in a commercial kitchen, raised money from investors, and within the first year, expanded into the tea room to create a bar, then expanded into the upstairs apartment the following year for an office and a private dining room. That said, Gina admits that parts of the old building were “quirky.” With a chance to rebuild, the Williamses could design a neighborhood restaurant that was bigger, stronger and potentially even faster. “We were looking at how we could make it more efficient and maximize the space. We tried really hard to maintain the façade and the architectural feel of the building, and we knew we wanted to do a rooftop bar,” Gina says. “We worked with a Loveland-based designer, Chrissy Staley, and she really drove the look.” While Gina was handling the business and PR side of

things, Gaetano, who she lovingly refers to as the “risk taker” of the duo, was traveling to visit stockyards in Kansas and a water buffalo farm in northern Ohio in an effort to spend more time with his purveyors before writing his next menu. That water buffalo is now the basis for one heck of a burger. “We blind tasted it against five other grinds, and it won unanimously. It’s really lean, but it doesn’t have that gamey, heavy iron taste that you might think of with bison. The flavor is very neutral, but it’s also moist in a natural way that isn’t fatty,” he explains.

I say bistro because I think it envelops the world. Officially a bistro is a little neighborhood place. Here, it’s going to be fresh and exciting, kinda foodie-ish but also recognizable.”

Whether they are talking about specific dishes on the menu, relationships with purveyors, or their renovation experience with the city of Loveland, the Williamses are a united front when it comes to their particular breed of optimism. “A lot of our culture here is that we are very family-oriented. Our tagline is ‘simply made to matter.’ Because our staff matters, we matter, the farmers matter, our vendors matter, the guests matter,” Gina says. Leaning back in his chair, arms crossed across his neatly pressed chef coat, Gaetano nods and quietly concurs. 18

THE LM WHO? You’ve been on the trail. Likely dipped your hands in the river, your paddle in its depths. Canoed, kayaked, communed with the quiet nature that marks the Little Miami. But beneath every surface, down every path, the Little Miami Conservancy has been there first, doing critical, behind-the-scenes work to preserve this national treasure. At its heart: Executive Director Eric Partee. Gregarious and charismatic, the man is a font of knowledge and expertise when it comes to all things river, whether talking history, conservation, education or science. His sheer enthusiasm for the river’s storied past and its future preservation is nothing short of contagious. “It’s a special place,” Eric beams. “We get so much accomplished, you pinch yourself every once in a while … when you think of the Little Miami, there’s a lot to smile about. The dream is definitely still alive.” That dream began in 1967 with newspaperman Glenn Thompson and his vision of creating an organization that would take charge of safeguarding the Little Miami for future generations. Today, that initiative is still working hard, caring for 107 miles of river and all that surrounds it. “Floating down the river, ridgetop to ridgetop, we’re there in spades. We’re big into protecting what’s there—but we’re also focused on restoration. Our basic approach is to find a win/ win for everyone involved.” And that means working with farmers, developers, local government and property owners to plant trees, secure setbacks and buy land. “We’re not anti-development or anti-growth. We’re just

Innovative water-quality monitoring programs, over and above what’s been done before, are constantly in the works, both at the local high school level and in partnership with advanced technology companies. A notable mussel survey, electrofishing to study live fish, support for new and existing nature preserves, raptor events, eagle nest webcams—all dual-purpose affairs for both attracting interest and inspiring involvement. “We’re educating the next generation … showing them the beauty that’s out here. The wildlife, the quiet recreation, the clean drinking water—are they important?” Eric grins. “Oh, yeah.” So what can you do? Volunteer. Donate. WOLTERMAN DIDN’T SET OUT TO BECOME AN ATTORNEY. In fact, he considered following in his father’s footsteps but found himself more interested in business. Steve attended Clemson University for finance, but then the dot-com bubble burst. Determined to find his calling, he applied to law school at UC and discovered his true passion. “I thought, I’ll get a JD/MBA and do something in business,” Steve says. After his first year, Steve got a job at a small tax firm in Blue Ash. He stayed on for an additional year after he graduated, but by September 2008, he was ready for a change. “I always envisioned my career as more of a business owner than an attorney, and I still do,” Steve explains. “I thought I’d be a tax attorney and build my own practice. Two weeks after I went out on my own, Lehman Brothers went under.” Steve weathered the financial crisis well as a fledgling tax attorney. Wisely, he diversified his services, offering estate planning as well as general business. After marrying, he chose to trade his bachelor pad for a suburban house, better suited for a family. A Loveland realtor friend found the Wolterman family a home in Symmes Township and then invited Steve to share space in her Loveland office a few days a month. Sharp and driven as ever, he thrived— and so did his new law business. Relocating to a comfortable, rustic space on Loveland Avenue was a natural next step. But he didn’t stop there. Steve became a board member for the Little Miami River Chamber Alliance. Expanding services, his practice grew from a one-man outfit to a team of four: two office staff members

convinced Joe to flex his horticultural design know-how and double down on some surefire tips for both seasonal and long-term planting success.

1. BACK TO BASICS “The basics are the best because they’re proven in the area. There’s a lot of really cool plants out there, but they’re not all hardy in zone 6-7. I like to recom-

mend spruce and maple trees, boxwoods, perennials, knockout roses and burning bush. Going off the grid can make it hard to keep them alive. Southern magnolias are beautiful, but several years ago many of them died around here during a harsh winter.”

2 2. BULBS ON A BUDGET “I wish people would use more tulips and daffodils— they’re inexpensive and very hearty. The daffodils come back every year, but we tend to replant tulips annually.”

3. BLANK SLATE

When adding landscape design for a brand-new home, Joe starts with foundation plantings. “I’d go with boxwoods, Stella D’Oro daylilies and even birch trees because they are tall and thin. Getting out into the yard, I’d put in some shade trees—maples and oaks—and maybe some privacy screens using arborvitae or spruce trees. If the budget allows, I’d also add rock and outcropping; a decorative wall and lighting.”

4. REFRESH When updating an older home, Joe recommends strategically removing plants. “Renovation is underrated. Sometimes you need to rip stuff out and start over. A lot of foundation plants have a limit to their age. For example, sand cherries only last about 15-20 years. Other plants just won’t thrive after a while. Selectively ripping out the older plants can make the landscape look much fresher.”

5. SIZE MATTERS “You’re always going to get a bigger impact with larger trees or plants. At Homearama, most of the winners put in really big plants.
