LIFESTYLE LETTER
So much to love locally! I don’t know about you, but this time of year I am always torn. I find myself torn between resisting what can be called a "greeting card holiday" and indulging in all the sweet excuses to enjoy the season. To do a Valentine’s Day date out or enjoy a cozy night at home? To buy a card or just say a kind word? I usually land somewhere a little in between. We’ll each arrive at different answers based on our preferences and personalities, but what we hold in common is an opportunity to make sure those around us know we love them. Regardless of how you choose to celebrate, we hope the pages of this month’s magazine will help you do just that as we celebrate and highlight what’s to love in your local community. This is where my husband and I fell in love, while I attended Monmouth University. And during that time I also fell in love with all that this community has to offer. Culture, great food, nightlife, unique shops, and incredible people. While we teeter between the chill of January Winter and the excitement of Spring, we hope you’ll be inspired to take a moment to come together with the people in your life. The ones in your home and on your street. In your neighborhood and your community. “Love local” means your local businesses, those in your community - but it also means loving what is near. Those under your own roof included. So grab a coffee at Offshore and head home for a game night around the fire with the family. Or snag a bottle from the Beach Bee Meadery and some incredible takeout from around town and indulge in a movie night in. We’ve always believed what we can do together is so much more than what we can do apart. And we continue to see that demonstrated through the many stories told in these pages month after month. Thanks for letting us be a part of the life you’re building, whatever that may look like. Our hope is that we inspire you to love it just a bit more than you did before. Happy February!

1 lb of pasta 1 lb of mixed mushrooms 3 Tbsp butter Sprigs of thyme Grated parmesan Oil - Grapeseed, avocado or canola Salt & pepper Sichuan peppercorns
2. FIRST STEPS Heat the oil of your choice to high heat with a sprig of thyme. Add in the mushrooms, but don't move the pan around too much; allow the 'shrooms to caramelize and sear. Deglaze the pan with wine or sherry. This is optional, but enhances the flavor. Remove cooked mushrooms and put to the side.

3. UP NEXT Boil the pasta. Then, slowly melt 3 tablespoons of butter with some pasta water in the pan. If the butter is bubbling, add a little more water. Once emulsified, add about 1 tablespoon of ground black or Sichuan peppercorn.

ARTICLE BY BERNIE AUGUSTINE Imagine for a second that you’re 6-years-old, and you’re going to the dentist for the first time. You’re feeling anxious, maybe even a little scared. You walk in with mom or dad, or whoever is there for you. You get in that big chair and you see the tray with all of the instruments on it. Some of them look sharp. There are devices with hoses on the end, too, and you’re thinking:

What is all of that? Then, the Pink Power Ranger walks in and everything changes. The mood lightens, and you might even crack a smile, which is exactly what Dr. Isabel Bastos wants to see. “Nobody likes to come to the dentist,” Dr. Bastos said with a laugh. “We try to keep it as fun as possible while also keeping things as professional as possible.” Now, just to be clear, every day isn’t a “character cleaning” at West Long Branch Dental. But that was the scene last February when Dr. Bastos and her staff participated in Give Kids A Smile Month, a free program that’s backed by the American Dental Association and has been embraced by Dr. Bastos. Oh, and Spider-Man was there, too. "We do it to give back to the community,” she said. “There are a lot of kids that don't have access to dental care for multiple reasons." The initiative was launched in 2002 by two St. Louis, Missouri, dentists and now has nearly 6,500 dentists participating nationwide, including at West Long Branch Dental, where they will host their Give Kids a Smile event on Feb. 2. “The procedures vary,” she said when describing what clients who register can expect. “We try to do what is the most urgent.” The program is the kind of thing that Dr. Bastos had in mind when she opened her own office. “I felt like I could do more,” she said. It’s exactly what she did. She studied in Rio de Janeiro, Brazil, and also at Rutgers, earning D.M.D. degrees in each country. She spent eight years at Monmouth Medical Family Health Center before opening her own practice at 879

She takes a multi-disciplinary approach to patient care, and has curated a staff that is well-suited to serve a diverse community; several staff members are fluent in Spanish and Portuguese, including Dr. Bastos herself. And the atmosphere is professional, but not stuffy. They have a vibrant Instagram page (@westlongbranchdental) that captures the overall vibe. That thoughtfulness is at the center of the overall experience Dr. Bastos and her team try to deliver for patients, especially when it comes to the apprehension many people feel when it comes to visiting the dentist. “I try to find out where that fear or anxiety is coming from, if they've had a bad experience before,” she said. “I try to work them through the entire procedure to make sure that nothing is a surprise. I always make sure people are comfortable before we do anything. I think the anxiety comes from people feeling like they're not in control.” With an approach like that, who could say that they don't like going to the dentist? In today's fast-paced world, the act of writing letters by hand is often overlooked. However, a handwritten letter is a special gesture that shows you care. Handwriting is unique and personal, making it a gift that is worth treasuring, whether it's from a loved one who has passed away or from a child who has grown up. Take some time this month to write a letter to someone you care for. You can even make it more special by sealing it with a wax stamp.

How to apply a wax seal: 1. Light the wick and hold the stick parallel to the work surface. 2. Let wax slowly drip into a coin sized circle onto the paper. It’s tempting to angle the stick down to increase the speed of drips but avoid this as pieces of soot will fall into the wax and discolor it. 3. Blow out the flame and set the stick aside.

4. Press the sealing stamp onto the melted wax. Hold for a few seconds before lifting away. If it sticks, gently rock the seal back and forth to release. *Wax seals are able to be sent through the mail but you may consider an additional outer envelope to protect it from potential damage.

Reservations For Two Dreamy destinations for couples looking to get away.
Finding a life partner just might be easier than finding someone you can travel with. Pace, patience and priorities all matter when organizing itineraries, straddling time zones and navigating new places. Do you like languid mornings with room service, wide sandy beaches and white-glove service? Or, do you prefer watching the sunrise in hiking boots, launching into eye-opening excursions and digging to find that hidden gem of a restaurant that serves local food to locals? When the stars align, both partners have an affinity for generally the same kind of vacation, or are willing to compromise. Enjoying travel with your mate is the icing on the (wedding) cake. Here are a few ideas for fabulously romantic getaways. Bon Voyage!
Traveling can be as stressful as it is sublime. Exhausting as it is inspiring. Traveling as a couple requires additional planning and communication with a healthy dose of patience. Much like marriage! But, waking up in a faraway place, exploring unknown terrain together and leaving your routine and all its trappings behind can be therapeutic. You both can take on new roles and release tired habits.

Share planning and talk about your goals for the trip. Do you want to completely unplug or will one of you need excellent wifi to call into a few meetings?

If you’re parents, consider setting boundaries for texting and phone calls so you can put the phone away and immerse in one another. Let the kids know you will be checking your phone at a certain time each day (and stick to that). Let the grandparents or caregivers handle the day to day drama.

Take turns charting a course for the day. On day one, you check museum opening times, get the timed tickets and find a nearby spot for a healthy lunch. C h o c o late Fond ue • 2 cups heavy cream • 1 pound premium semisweet chocolate (recommended: Lindt or Callebaut) • 1 tablespoon pure vanilla extract • 1 tablespoon brandy • Strawberries, bananas, pineapple, brownies, waffles, marshmallows, Oreos, pound cake, pretzels or any other dipping item of your choice! Put approximately four inches of water in a saucepan and bring to a slow boil. Place a mixing bowl on top and pour in the heavy cream. Let heat. Or, use a double boiler. Meanwhile, break up or chop the chocolate into small pieces. When the cream feels hot to the touch, add chocolate and whisk until smooth. Whisk in vanilla and brandy (optional). Pour into the fondue pot and light the handy fuel underneath. Keep the flame low as not to burn the fondue. Arrange dippers on a platter and enjoy. For the grown-ups, a spiked chocolate drink from our friend, Martha Stewart.

1/2 cup milk 1 cup heavy cream 1/4 cup whole coffee beans 2 ounces semisweet chocolate (61% Valrhona), chopped • 2 tablespoons Kahlua • 1 teaspoon confectioner's sugar • 1 tablespoon dark chocolatecovered coffee beans, chopped In a saucepan over medium heat, combine milk, 1/2 cup cream, and whole coffee beans. Bring to a simmer, turn off heat, cover, and steep beans for 1 hour. Strain liquid and return to saucepan; discard beans. Bring the milk-and-cream mixture back to a simmer, add chocolate, and whisk until incorporated. Remove from heat; whisk in Kahlua. Whip remaining 1/2 cup cream and the confectioners' sugar until soft peaks form. Divide the hot chocolate between 2 cups and garnish each portion with a dollop of whipped cream and a sprinkling of chopped chocolate-covered coffee beans.
When my kids were little, we would address valentines to classmates, deliver flowers to neighbors and decorate the house with hearts and snowflakes (cut from white coffee filters). For dinner, I would make their favorite meal: dessert! Why not? I'd melt chocolate (the good stuff) and let them line up their dippers. They thought dessert for dinner was magical. Of course, I'd fed them a protein-packed after-school snack and served "dinner" early so they could get their sugar wiggles out before bed. Delightful! Happy Valentine's Day!
