DIRECTIONS + Steep a bag of Earl Grey Tea in hot water for a minimum of one hour, to get the best flavor extraction. + To make the Demerara Syrup, dissolve two parts Demerara sugar into one part hot water. Boil, if necessary, to ensure all crystals are dissolved. + Add all ingredients to a shaking tin, fill with ice and shake until the tins become frosted, about fifteen seconds. Strain into a rocks glass, over fresh ice, and garnish with a bouquet of mint. Its impact is of a pre-prohibition cocktail with the fruitiness of a rum punch but the complex undertones of 1757 and tartness of Earl Grey with lemon

Y E L L O W TA P E INGREDIENTS Watershed Gin, Batavia Arrack (Indonesian Rum), Yellow Chartreuse (Herbaceous Liqueur), Banane du Bresil (Tropical Banana Liqueur), Orgeat, Lime.
DIRECTIONS + To make Orgeat, pulse one cup of toasted almonds in a food processor until the almonds are broken up. Add almonds and equal parts water and cane sugar into a sauce pot and bring to a boil, then reduce heat to a low simmer for fifteen minutes. Allow to cool, then strain mixture through a cheesecloth. Add a few drops of orange blossom water and one ounce of vodka. + Add all ingredients to a shaking tin, fill with ice and shake until the tins become frosted. Strain into a highball glass, over crushed ice, and garnish with a lemon peel and banana leaf. + Watershed Gin has a lower juniper profile than most gins, and pairs well with the refreshing, herbaceous ingredients and an earthy rum. Bright, citrusy and refreshing.

DIRECTIONS + To juice pineapple, cut pineapple into small chunks and blend until smooth, then strain through a fine mesh strainer until all juice has passed through. + Add all ingredients to a shaking tin, fill with ice and shake until the tins become frosted. Strain into a chilled coupe glass and garnish with an edible flower. + Passionfruit on the tongue makes sure the pineapple juice doesn’t overwhelm. Goosecup makes its own pomegranate molasses, which is nothing like the blackstrap variety, but rather a sweet/tart elixir

DIRECTIONS + To make Juniper Gomme, add juniper berries, coriander seed, and lemon peel to a Ziploc bag along with two parts sugar to one part water. Add a teaspoon of Gum Arabic powder to the mixture, seal, and sous-vide in a water bath at 160F for three hours. + Add all ingredients into a mixing glass, fill with ice and stir until the glass becomes frosted, about twenty seconds. Strain into a rocks glass, over fresh ice – preferably a large ice block – and garnish with a fresh lavender sprig. + More than a novelty with the ambrosia from Artemisia Farm, but still at heart a classic gin cocktail.

+ Smoky and dense -- a bit like the mythology of the Richmond rock band -- but smooth on the finish. Worth the trip just to watch the apple wood smoker in action. The annual tournament, now in its 9th year, has already raised more than $7.5 million for the Nicklaus Children’s Healthcare Foundation that has been the couple’s passion since its founding in 2004. Like many spurs to philanthropy, the Nicklaus’s commitment to kids comes from personal experience. When their only daughter Nan, an 11-monthold, was struggling to breathe, her parents took her to Columbus Children’s Hospital – now Nationwide Children’s. The doctor used an adult bronchoscope to see what was wrong. Usage of an adult tool rather than one sized for children forced an obstructing crayon deeper into Nan’s lungs, leading to pneumonia. Nan’s life was saved, but the importance of child-centered health care was deeply etched on Jack and Barbara’s hearts. When they had the resources and the time, they vowed that they’d join forces to make a difference.

We have exceptional years and disastrous years. More than ten thousand varieties of grapes produce wine, but only one (Norton) is native to Virginia. Wine grapes do best in warm, dry climates with stable, temperate weather all year round in soils dominated by chalk, schist, volcanic rock and shale. Think: Southern France, Italy, Spain, California, Australia, South Africa and the Republic of Georgia. Virginia’s climate is everything that a good wine growing region isn’t. Of course, for Arandell to be successful in wine-making, it has to convince connoisseurs who swear by traditional

Its taste and temperament must stand up to the best, most reliable varieties grown across not just Virginia and the Eastern United States, but around the world. To coax the best wine from this newcomer, the Briedés teamed with Nate Walsh of Walsh Family Wines in Purcellville. The result is a beautifully balanced red wine that is rich in dark fruit flavors with a long cherry finish and notes of pepper and coffee. It is neither jammy like some California Cabernets nor dry like a Merlot, but walks the line between the two extremes. Neither too light nor too aggressive, it is flexible enough to sip solo, or pair with food. I tried it with a variety of creamy cheeses, smoked salmon and spicy meats and found that it complimented all of them. The verdict? This is no novelty. This is a lovely varietal representing the first truly significant leap forward for American viticulture since Norton was tamed in the 1820s. If it catches on, and I really hope that it does, it has the potential to get the attention of the international wine industry and finally earn the respect that Virginians deserve for our innovation and willingness to take bold risks.
