INVESTING IN FAITH, COMMUNITY, HEALTH AND FAMILY

Lee’s Summit’s Premier Aesthetic Center

You can’t plan for pain— but you can plan where to turn.
Rockhill Orthopaedic Specialists has served the Kansas City region for more than 80 years. Our experts have advanced training in every part of the body, so you get the highest level of care wherever it hurts.
Because when it comes to pain— the right move makes all the difference.

Investment. By definition, it’s the act of dedicating time, energy, or resources toward something with the hope of a worthwhile return. But in practice, it’s so much more. Whether it’s our community, relationships, finances, or personal growth, the things we invest in shape our futures and the lives of those around us.

We can invest in our community by supporting local businesses, schools, and organizations. Volunteering and mentoring are powerful ways to contribute to future generations. On a broader scale, participating in public surveys and staying informed about city planning are investments in the places we call home.
Financial investments help us build security and achieve long-term goals, while personal investments—spending quality time with loved ones or fostering deeper connections—bring immeasurable rewards to both ourselves and the people we care about.
While the ways we choose to invest may look different for everyone, the common thread is the hope of making a positive impact. This month’s issue explores various ways we can invest in our lives—whether by nurturing our community, planning for our financial future, or investing in our health.
Every investment we make is an act of hope and commitment. As you read this issue, we hope you’ll feel inspired to invest in the people, places, and dreams that matter most to you.
Here’s to a month full of growth, connection, and meaningful returns.
Happy April!

An exclusive Q&A with City Lifestyle

ARTICLE BY ANGELA BROOCKERD

From championship trophies to global humanitarian impact, Tim Tebow’s journey has defied every standard playbook. In an exclusive conversation for the Share the Lifestyle podcast, Tebow pulls back the curtain on the moments that truly defined him, from a humbling middle school church retreat to the life-altering shift of fatherhood. This isn’t just a look back at a career; it’s an invitation into the heart of a man driven by purpose. Read the highlights below, then join us for the full, unfiltered experience by scanning the QR code at the end.

Q: WE ALL KNOW YOUR ACCOMPLISHMENTS ON THE FOOTBALL FIELD, BUT TELL US ABOUT THE CURL CONTEST.
A: I was competing for my future high school team (my brother’s team), and I pushed myself way past what was smart. I ended up collapsing and needing medical attention. But what stayed with me wasn’t the pain, it was the lesson. Would I be willing to do something that others aren’t? For much of my life, I strived to bring my best for a game, but I hope that I can say at the end of my life I was willing to do that for things that actually matter.
Q: YOU’VE ACHIEVED SO MUCH IN SPORTS. WHAT WOULD YOU SAY IS YOUR GREATEST ACCOMPLISHMENT NOW?
A: Becoming a dad. Nothing compares. From the moment I knew my wife was pregnant, I felt a new depth of love for our child, but when you bring your baby home, the responsibility hits you like nothing else. Suddenly, everything you see, every decision you make, you’re asking, “Is this corner too sharp? What happens if she reaches that drawer?” It changes how you see the world and how you see other people.
Q: YOU’VE SPOKEN OPENLY ABOUT DISAPPOINTMENT, ESPECIALLY AROUND FOOTBALL. HOW DID THAT SEASON OF LIFE SHAPE YOU?
A: I talked a lot about that very thing in my book Shaken . We all go through moments where our faith in our abilities and purpose feels rattled, but I believe it’s often in those storms when God can show us who we could become.
Q: YOU TALK A LOT ABOUT COMPARISON CULTURE. WHY DO YOU BELIEVE COMPARISON HAS BECOME SUCH A TRAP TODAY?
A: Because we’re comparing our real, everyday lives to someone else’s highlight reel. Social media shows people’s “best day,” often filtered and staged, and then we measure our reality against that. There’s a reason filters are so popular—it’s not real. We end up scrolling through images that don’t tell the full story, and without realizing it, comparison starts to steal our joy and our gratitude.
“We’re comparing our real, everyday lives to someone else’s highlight reel... comparison starts to steal our joy.”
Q: YOUR FOUNDATION FOCUSES ON THE “MOST VULNERABLE.” WHERE DID THAT CALLING BEGIN?
A: When I was 15, I met a boy in the Philippines who was treated as a throwaway because he was born with physical differences. That moment changed me. I realized God was calling me to pursue a different kind of MVP, not “Most Valuable Player,” but “Most Vulnerable People.”
Q: FINALLY, WHAT’S ONE THING PEOPLE MIGHT BE SURPRISED TO KNOW ABOUT YOU?
A: I have some weird coffee habits, which include protein powder, collagen, and cream all mixed together. I love golf dates with my wife. And every night, I bring snacks to bed to share with our dogs. It brings me more joy than it probably should.
This conversation barely scratches the surface. Tim goes deeper into the moments that rattled him, the joys of fatherhood, and one story he has never shared publicly until now. Scan the QR code for the full, exclusive City Lifestyle interview on Share the Lifestyle Podcast.

Owner Carrie Arnone blends family recipes, Sicilian inspiration and warm hospitality to create an intimate neighborhood dining experience.

Tucked into the heart of downtown Lee’s Summit, Farfalle Bistro offers something that feels increasingly rare: a warm, intimate dining experience rooted in family, tradition and simple, honest cooking. For owner and chef Carrie Arnone, the restaurant’s story begins long before the first plate of pasta ever left the kitchen.
The name itself carries a special family memory. When Arnone’s nieces were babies, they often wore headbands with large bows that reminded her mother of farfalle pasta. She affectionately called them her “little Farfalle Dollies.” Years later, the nickname inspired the name of Arnone’s catering business, Farfalle Dollies Catering and Confections. When the opportunity to open a restaurant came along, she carried the idea forward with a new name, Farfalle Bistro.
Lee’s Summit felt like the natural place to bring that vision to life. After making the community her home in 2003, Arnone quickly fell in love with the charm and energy of the downtown district. When she decided to leave her corporate career of 18 years to pursue her dream of opening a restaurant and catering business, the space Farfalle now occupies became available. It felt like fate.
Step inside Farfalle Bistro today and guests are meant to feel as though they’ve wandered into a small neighborhood restaurant in Italy. Friendly greetings, soft instrumental Italian music and the aroma of fresh cooking immediately set the tone.

At the heart of the kitchen is a commitment to cooking from scratch with quality, seasonal ingredients. Many of the recipes come directly from Arnone’s family, while others were inspired by travels through Italy and Sicily. Her Sicilian roots influence much of the menu, reflecting the regional traditions that shape Italian cuisine.
“Fresh is best, and keep it simple,” Arnone says of her culinary philosophy.
The restaurant features a core menu of signature dishes served year-round, while a rotating monthly specials menu introduces seasonal cocktails, appetizers, entrées and desserts. These additions give the team a chance to experiment creatively while still delivering the classics that guests return for again and again.
Behind the scenes, Farfalle operates much like the family kitchens that inspired it. Arnone describes her staff as hardworking and collaborative, with each team member bringing something unique to the table. As a small business, everyone wears multiple hats, and the team works together to develop the monthly specials.
Running an independent restaurant has come with its share of challenges. Being entirely selffunded, Arnone has navigated the financial pressures of the industry while building the business from the ground up. Despite those hurdles and the disruption of the pandemic, Farfalle Bistro has continued to grow and is now celebrating its seventh year in business.
What has made the journey most rewarding, Arnone says, are the loyal customers who have supported the bistro since the beginning. Many have become like extended family. Over the years, the team has watched children grow up, seen first dates turn into marriages and even hosted an intimate wedding inside the restaurant.
As downtown Lee’s Summit continues to evolve, Farfalle Bistro hopes to grow alongside the community. Looking ahead, Arnone would love to expand the restaurant’s special prix fixe dinners, which allow the kitchen to showcase new menu ideas and push its culinary creativity.
For Arnone, however, the heart of Farfalle will always remain the same: welcoming guests with genuine hospitality and serving food that brings people together. And if diners leave the table full, happy and planning their next visit, she knows the bistro is doing exactly what it was meant to do.

“Fresh is best, and keep it simple,” Arnone says of her culinary philosophy.

At Lakeside Heating & Cooling, family values, honest service and community roots are at the heart of every home they help.
ARTICLE BY LAUREN POWERS
PHOTOGRAPHY BY JANIE JONES
For Brad Heydon, heating and cooling isn’t just a career, it’s part of the family story.
Heydon grew up in the industry, learning the trade while working alongside his father, who ran a successful HVAC company for more than 30 years. Over time, Heydon worked

“Very few things are more essential than keeping people’s heating and cooling running during the coldest winter days and hottest summer months,” Heydon says.
nearly every role imaginable in the field, from contractor work to the manufacturing side of the business. When the world shifted during the early days of the COVID-19 pandemic, he realized it was the right moment to take everything he had learned and build something of his own.
“Very few things are more essential than keeping people’s heating and cooling running during the coldest winter days and hottest summer months,” Heydon says. “It felt like the right time to put all that experience to good use.”
That decision led to the creation of Lakeside Heating & Cooling, a locally owned family business rooted in the Lee’s Summit community.
The name reflects both past and present. Growing up, Heydon spent summers at his grandparents’ place at the Lake of the Ozarks and days filled with swimming, fishing and boating. Today, he and his family enjoy the same lifestyle in their own lake community near Lake Lotawana.
“It only seemed fitting that the name reflected those memories and the life we’re building now,”

he says. “We wanted to create something that reminded people of simpler times.”
That philosophy carries into the company’s approach to service. Lakeside Heating & Cooling aims to combine the trusted feel of a neighborhood “mom and pop” business with the professionalism and efficiency of a modern company.
The early days were a true family effort.
“When you’re starting out, everyone is doing everything,” Heydon says. “It’s the epitome of multitasking.”
His wife Lindsey remembers the whirlwind well, including a bassinet set up in the office while they worked.
“Our six-month-old was right there with us for a while,” she says with a laugh. “There was excitement, a little bit of terror and a lot of pride watching him build something he’d worked so hard for.”
Today, the roles are more defined. Brad manages operations and service calls throughout the city, while Lindsey and the office team handle internal operations, marketing and customer communication.
Their different strengths help the business run smoothly.
“I like being outside,” Heydon says. “Lindsey likes coffee and climate-controlled temperatures.”
Beyond technical service, the couple believes relationships are the most important part of the job. Heydon reviews every service call and often remembers customers by name when they call again, which is something he says people rarely expect anymore.
“It surprises them that we remember,” he says. “But to us, they’re not just another address. They’re neighbors.”
That sense of responsibility runs deep. The Heydons are raising their children in the same community they serve, sponsoring youth soccer and swim teams and supporting local schools and activities.

Lakeside Heating & Cooling aims to combine the trusted feel of a neighborhood “mom and pop” business with the professionalism and efficiency of a modern company.

“These people are our friends and neighbors,” Heydon says. “We want to make sure we’re doing right by them.”
Part of that means helping homeowners see their heating and cooling systems as an investment, not just something to think about when it stops working.
Routine maintenance and modern, energy-efficient systems can significantly reduce utility costs while improving safety and comfort.
“If your system is struggling to maintain temperature or running constantly, that’s usually a sign it needs attention,” Heydon explains.
For many homeowners, the smartest first step is simple.
“Start with maintenance,” he says. “You’ll know your system is running as efficiently as possible and you’ll get a clear picture of its condition.”
Looking ahead, Heydon hopes Lakeside Heating & Cooling continues to build the kind of reputation that lasts for generations.
“I tell our team we’re playing the long game,” he says. “We want relationships with customers that span decades.”
Ultimately, his vision is simple: build a company his children can be proud of.
“Proud of the way we treated people,” he says, “and proud of what we did for our community.”

We have all seen and heard ads about the use of these colorful lights for weight loss and other health claims. Our expert, Brian Greenwald, owner of Lee’s Summit beem® Light Sauna, has taken a deep dive into this industry and shared his research findings.
First of all, what exactly is light therapy and when did it reach popularity? Also called phototherapy, it is the use of specific wavelengths of light to stimulate biological processes in the body. Different colors, or wavelengths, of light interact with cells in a variety of ways, triggering responses related to healing, energy production, hormones, skin health and nervous system signaling.

ARTICLE BY JUDY SPAAR | PHOTOGRAPHY BY JANIE JONES

“In the late 1800s, scientists began observing that sunlight could influence health, particularly skin conditions,” Greenwald explained. “Danish physician, Niels Ryberg Finsen, systematically studied light’s medical effect, and in 1903, was awarded the Nobel Prize in Medicine for using light therapy to treat lupus vulgaris, which is tuberculosis of the skin.”
Obviously, his discovery laid the foundation for modern lightbased therapies. Today, LEDs, lasers and infrared saunas are used to deliver precise wavelengths without UV damage to target specific issues and cellular pathways.
So, why would you seek out light therapy? It enhances natural healing and balance and helps remove toxins by improving circulation and lymphatic flow, which allows the body to release waste more efficiently.
“By calming the nervous system, it reduces stress and supports a relaxed, restorative state. Light therapy also ignites metabolism
by boosting cellular energy and signaling fat cells to release stored fuel. It renews skin by stimulating collagen production and improving blood flow, leading to healthier, more youthful-looking skin,” Greenwald continued. “At the same time, it relieves pain by reducing inflammation and accelerating muscle and joint recovery. Altogether, these effects help boost immunity, giving the body more energy and resilience to protect, repair, and perform at its best.”
He explained that his new advanced light bed combines green, blue, red and infrared wavelengths to deliver full-body results in one session.
What does each light color do? Green can signal fat cells to form temporary pore-like openings, allowing stored fatty acids to be released supporting improved body composition when paired with hydration and movement. This is why it can be considered a non-invasive, “natural” way to lose weight and help to reshape body contouring. Green light can also help with pain relief by calming the nervous system and acting at the cellular level. Infrared light penetrates deeply to reduce inflammation, improve circulation, and support overall recovery, metabolism, and immune function throughout the body, while blue light works at the skin’s surface to help kill bacteria promoting clearer, healthier-looking skin. It’s paired with red light therapy and ties everything together by boosting cellular energy, supporting collagen production for skin renewal, encouraging fat mobilization, and reducing inflammation for broad pain relief.

“Together, these wavelengths make the beem® advanced light bed a comprehensive solution for body composition, skin health, pain management, and total-body wellness,” he reiterated.
“While I may not have ‘formal’ education, my expertise in light therapy has been shaped by passion, purpose, and a deep commitment to helping others feel their best. Over the past two years, I’ve immersed myself in studying our emerging wellness technology, listening closely to our clients’ stories, and witnessing their transformations firsthand,” he smiled. “I’m proud to bring something innovative and transformative to the people we serve, offering a therapy that nurtures both body and mind and empowers individuals to feel stronger, healthier, and more energized in their everyday lives.”
This spring, he notes that their goal is to provide therapies that align with the season, supporting radiant skin, renewed energy, and overall vitality as our community embraces a more active time of year.
“With longer days and more time spent outdoors, many people naturally increase their sun exposure while enjoying seasonal activities. Consistent use of red-light therapy may help support the skin’s natural resilience and recovery processes,” he expressed. “Emerging research suggests it could play a role in pre-conditioning skin for UVB exposure.”
That being said, this should never be a replacement for proper sun protection. If you are thinking of light therapy, there is no better time than now.

Travel is no longer just a luxury, it’s an investment that has the power to enrich our lives in ways that traditional financial investments cannot. It broadens our horizons, enhances personal and professional growth, and allows you to recharge your mind and body.
Crystal-clear waters and perfectly white sandy beaches await to recharge the spirits of all weary travelers.
Cancún is known around the world as one of Mexico’s finest tourist destinations. Steeped in the rich history of the Mexican Caribbean, Cancún offers visitors the best that the Yucatán Peninsula has to offer. Whether you are coming for the all-inclusive resort experience or are looking to enjoy the seemingly never-ending gorgeous beaches, Cancún has it all. Unbelievably fresh and delicious seasonal cuisine, great weather, a rich cultural history, exquisitely clear turquoise blue Caribbean waters, and vibrant coral reefs are all waiting for you to explore when you arrive.
Nature lovers, environmentalists, thrill seekers, and luxury destination travel enthusiasts all have a place to call home in Cancún. Boulevard Kukulkan, more commonly known as the Hotel Zone, is home to Cancún’s most luxurious all-inclusive hotels and boasts some of the city’s finest restaurants, nightclubs, and shopping centers. This fifteen-mile-long sand bar separates the Caribbean Sea from the Laguna Inchoate. The brackish waters of

the lagoon’s nature reserve and Mangrove ecosystem offer an exciting, ecologically friendly look into the rich natural history of Cancún. On the other side of the boulevard, crystal-clear waters and perfectly white sandy beaches await to recharge the spirits of all weary travelers.
The JW Marriott Resort and Spa is the place to stay while in Cancún. You'll be met by the most gracious of staff and a high level of service is standard across the property. This impeccably designed resort features multiple pools, an incredible spa, countless delicious restaurants, and a delightful lobby bar featuring over 150 signature margaritas.
Caring for the mind and body should be an essential part of everyone’s travel. A little physical exercise is a necessary element of any vacation for me. Puerto Maya Cancún combines a look into the historical Mayan culture of the Yucatán followed by an amazing speed boat tour of both the lagoon and the sea. And, just when you think it can’t get any better, it’s time to jump in and swim around. Snorkeling on the vibrant coral reefs and visiting MUSA, the Cancun Underwater Museum of Art, absolutely recharges the mind, body, and soul. It is an incredible workout!
If you care to go a little further out of the city, Cenotes Zapote Eco-Tour awaits. Cenotes are natural sinkholes that expose cool, refreshing, groundwater
that is both invigorating and spiritually refreshing at the same time. There are over 6000 cenotes on the Yucatán, each one is unique and otherworldly. Floating or frolicking in the cool waters inside the earth is the ultimate spa experience. There are zip lines or diving platforms at most cenotes and they are well worth experiencing.
While it is nice to explore the “Hotel Zone”, you don't have to leave the hotel to experience fine international dining at its best!
Sacbé Beach Shack, located in the adjoining Marriott property was beyond belief. Situated directly on the sandy beaches beneath the hotel, the "beach shack" is a whimsically designed bar and dining room offering a perfect oceanside culinary experience. The freshest local ingredients were artfully combined to create a scrumptious offering that highlights regional Mexican cuisines. The mezcal lab experience with famed Master Mezcalier, Chef Benjamín Nava Vargas was an unexpected treat and opened a door to a delicious understanding and appreciation of small-batch mezcals.
Other JW Marriott Resort and Spa culinary treasures include Hana Polynesian Grill’s themed dining room. Perfectly crafty cocktails paired wonderfully with the authentic Polynesian Islands menu. The evening’s festivities were highlighted by a completely themed costumed troupe of singers and dancers performing time-honored Polynesian fire dances. While visiting, be sure to explore Kasai Izakaya, Club 91, and Bravo, a very fresh take on modern Spanish cuisine.
And, when it feels like it’s time to leave the hotel again, check out Chambao Cancún. Just think of it as an interactive curated dinner theatre experience with pop-up music, dance, fashion, and acrobatic activations staged throughout the evening.
Cancún should be at the top of everyone’s travel list. Trust me, you can thank me later.

Rooted in Community, Focused on Generations
PHOTOGRAPHY
BY JANIE JONES
In downtown Lee’s Summit, it is common to run into familiar faces while grabbing coffee, browsing local shops, or attending an event on the square. For the team at Beyond Wealth Advisors, those everyday connections are part of what makes their work meaningful. With their main office located in the heart of downtown Lee’s Summit, the practice has built its approach around relationships, community, and long term guidance. Today, Beyond Wealth Advisors serves families across the region with a growing team of advisors while staying deeply connected to the community they call home. We sat down with John Kliewer, to talk about their philosophy, their commitment to Lee’s Summit, and how their approach to financial planning goes beyond traditional wealth management.

BEYOND WEALTH ADVISORS IS ROOTED HERE IN LEE’S SUMMIT. WHAT DOES BEING A LOCALLY BASED FIRM MEAN TO YOU?
Being rooted in Lee’s Summit is not a branding decision. It is a life decision. This is home. It is where we have raised our families, where we worship, and where many of our closest relationships have been built.
That naturally shapes how we serve our clients. They are not just accounts on a statement. They are neighbors and friends. We see them at school events, community gatherings, and around town. When you live in the same community you serve, the level of care and accountability is different. We are focused on building relationships that last for generations.
HOW SHOULD A WEALTH ADVISORY FIRM SUPPORT ITS COMMUNITY BEYOND FINANCIAL SERVICES?
We believe a wealth advisory firm should help steward more than financial capital. It should also invest in the health of the community around it.
Our team looks for ways to support organizations that strengthen families, encourage mentorship, and develop future leaders. We also enjoy helping clients think about how their giving and leadership can make a meaningful impact locally. When families flourish and businesses grow, the entire community benefits.
ARE THERE LOCAL INITIATIVES THAT ARE ESPECIALLY MEANINGFUL TO YOUR TEAM?
We are especially drawn to organizations that support families and invest in the next generation. That includes education initiatives, mentorship opportunities, and faith based outreach.
Our mission is very much multi generational, so supporting programs that help children and young families build strong foundations aligns naturally with the work we do with clients. Strong families help create strong communities.
YOUR NAME SUGGESTS GOING “BEYOND” TRADITIONAL WEALTH MANAGEMENT. WHAT DOES THAT MEAN IN PRACTICE?
For us, “beyond” means we do not stop at portfolio performance. Investment management is important, but it is only one part of the picture.
We help families align financial decisions with their values, their long term vision, and the legacy they hope to create. That often includes estate planning coordination, charitable strategies, business succession conversations, and guidance through generational transitions.
WHAT ARE SOME COMMON MISCONCEPTIONS ABOUT WORKING WITH A WEALTH ADVISOR?
One misconception is that you need to be extremely wealthy before seeking advice. In reality, guidance can be most valuable during growth seasons and life transitions.
Another misconception is that advisors only manage investments. True financial planning connects several areas of life including tax strategy, estate considerations, risk management, and long term lifestyle planning.
WHAT FINANCIAL HABITS HAVE THE BIGGEST IMPACT ON LONG TERM LIFESTYLE FREEDOM?
Consistency matters more than almost anything else.
Living below your means, investing regularly, and staying disciplined through market ups and downs all play an important role. Freedom is rarely created by one dramatic financial decision. More often it comes from steady, wise choices repeated over time.
HOW DO YOU BUILD TRUST WITH CLIENTS DURING UNCERTAIN ECONOMIC TIMES?
Trust is built long before uncertainty arrives.
During volatile markets we focus on proactive communication and revisiting the strategy originally designed for each family. We remind clients why their plan was structured the way it was and help them stay focused on long term principles rather than short term headlines.
WHAT EXCITES YOU MOST ABOUT THE FUTURE OF BEYOND WEALTH ADVISORS?
The generational opportunities ahead are exciting. Many families today are navigating transitions such as business sales, retirement decisions, inheritances, and leadership changes.
Helping families not only transfer assets but also pass along values and purpose is meaningful work. Legacy is less about what has already been accomplished and more about what is being set in motion for the future.
WHAT SETS BEYOND WEALTH ADVISORS APART IN A CROWDED INDUSTRY?
Relationships are at the center of everything we do. Performance matters, but alignment matters just as much. Every financial decision should support a client’s values, long term goals, and family vision.
It is also important to note that Beyond Wealth Advisors is more than just one advisor. Our main office is located in downtown Lee’s Summit, where we have a team of five local advisors serving families in the community. We also have three additional offices with advisors who share the same philosophy. Working as a team allows us to bring broader experience and perspective to the families we serve.
WHAT MISTAKES DO PEOPLE OFTEN MAKE DURING UNCERTAIN MARKETS?
The biggest mistake is emotional decision making. Selling after markets decline or abandoning a long term strategy because of short term fear can be costly.
Trying to time the market is another challenge. Headlines are designed to capture attention, not provide perspective, and reacting to daily news can easily derail a disciplined plan.
WHAT FIRST STEP WOULD YOU RECOMMEND TO SOMEONE WHO FEELS FINANCIALLY OVERWHELMED?
Start with clarity. List your assets, debts, income, and expenses so you understand where you stand today. That step alone can reduce financial stress.
From there, focus on small and achievable next steps. Momentum builds confidence over time.
WHY CAN WORKING WITH A LOCAL ADVISORY FIRM PROVIDE STABILITY DURING UNCERTAIN TIMES?
There is something powerful about sitting across the table from someone who knows your family and understands your goals.
Technology can help manage investments, but relationships bring context and perspective. Local, relationship based advice provides continuity and clarity when the broader environment feels uncertain.
At Beyond Wealth Advisors, financial planning is about more than numbers. It is about relationships, community, and helping families move confidently toward the future they envision.

“Start with a Vegetable was the result of a natural transition in the way I started thinking about preparing dinner for my family. At the end of a busy day, I often didn't have the energy to think about dinner in parts by preparing a separate protein, vegetable, and starch,” says Smith. “I realized that if I put a vegetable at the center of the dish, the rest was easy to fill in.”
The book features 100 flexible recipes proving vegetables aren’t just a side— they’re key to simple, satisfying meals.
As chief recipe developer for the Cook Smarts meal-planning app, Smith worked closely with families struggling to get dinner on the table. She noticed a common challenge: people wanted to eat more vegetables but didn’t know how to build meals around them.
“As I started planning and testing recipes for the book, I just loved how easy it made dinnertime feel. Are there carrots in the fridge? Here are a bunch of ways to turn them into dinner. Nearly all of the 100 recipes are complete meals and include easy swaps to make them vegetarian. The book is truly flexitarian, with vegetable-forward recipes for all types of eaters.”
Unlike most cookbooks, Start with a Vegetable is organized by ingredient. Each chapter focuses on a different vegetable, offering multiple ways to turn it into a meal.
“The concept is resonating with many readers who tell me they love that the chapters are organized by vegetable, making it easy to use whatever they have on hand.”
Smith went through a rigorous testing process, starting with over 300 ideas before narrowing them down to 100.
“I always have running lists of recipe ideas. I started sorting recipes into categories, making sure there was variety for each vegetable. I wanted different cooking methods and types of dishes, so each chapter might have a soup, a salad, a roasted dish, a stove-top dish, and a sandwich or pasta.”
After perfecting the recipes in her own kitchen, she passed them to a trusted friend, an everyday home cook, to ensure they worked under realworld conditions.
“I want to know how these recipes worked for a home cook who was shopping at regular grocery stores and trying to make dinner for a family on a weeknight. She sends me feedback on any ingredients that are hard to find, anything that is unclear in the recipe, and tracks how long it takes her to make it with real-life interruptions.”
To further refine the book, Smith enlisted 30 volunteer home cooks through Instagram and her email list to test the recipes.
“My goal was to ensure that the recipes in this book are reliable, easy, and adaptable. I wanted this to be a cookbook for real home cooks. I'm so grateful to that team of volunteers for helping to ensure that it is.”

Sweet carrots and tart cranberries complement each other in every bite of this tangy couscous. It makes a light meal on its own but becomes a showstopper when spread on a platter and topped with braised meat, roasted cauliflower steaks, or seared tofu. If you want to add a little creaminess, serve the couscous with a spoonful of plain yogurt.
• 1 pound carrots
• one 15½-ounce can chickpeas
• 3 tablespoons olive oil
• 1½ teaspoons ground cumin
• ½ teaspoon ground ginger
• ½ teaspoon dried thyme
• ¾ teaspoon kosher salt, plus more for boiling
• ½ cup orange juice
• 1 cup water
• 1 cup dry regular or whole wheat couscous
• ⅓ cup sliced almonds
• 1 lemon
• ½ cup dried cranberries
• chopped fresh parsley for garnish
Directions:
Step 1. Preheat the oven to 425°F
Step 2. Peel the carrots and slice them diagonally into 1-inch ovals. Drain and rinse the chickpeas
Step 3. In a large mixing bowl, combine the carrots and chickpeas with 1 tablespoon of the olive oil, cumin, ginger, dried thyme, and ½ teaspoon of the salt, coating evenly.
Step 4. Line a rimmed baking sheet with parchment paper. Spread the seasoned veggies and chickpeas on it in an even layer.
Step 5. Bake until the carrots become tender, 25 to 30 minutes. Stir halfway through cooking.
Step 6. Meanwhile, in a medium saucepan over high heat, combine the orange juice, water, and ½ teaspoon of salt. When the mixture begins to boil, remove it from the heat, stir in the couscous, cover, and let stand for 5 minutes.
Step 7. When the carrots become tender, sprinkle the almonds on them and continue baking until the almonds lightly toast, 4 to 5 more minutes.
Step 8. Juice the lemon for 1 tablespoon fresh juice.
Step 9. In the same mixing bowl used to season the veggies, whisk together the lemon juice, 2 tablespoons of olive oil, and the cranberries.
Step 10. Fluff the couscous with a fork and add it to the carrots, chickpeas, and almonds. Stir well to combine.
Step 11. Serve warm or refrigerate for 30 minutes and serve chilled. Just before serving, stir in the parsley.
