Summer has a way of slipping through our fingers, and as we look forward to trading the heat and humidity for crisp fall nights and all things pumpkin spice, many of us seek opportunities to pack in every last moment of fun and frivolity before the kids head back to school. When my own kids were younger, we spent our summers adventuring far and wide, exploring everything from marbles at the Moon Marble Company and butterflies and the big bug exhibit at Powell Gardens, to virtually every soccer complex within a three hour radius playing three v. three summer soccer. I treasured those moments that are now fond memories, introducing my children to people and places as frequently as possible. Now that our first grandchild is on the way, I find myself pondering all the activities and field trips we’ll get to take and enjoy. I know my perspective will be different this time around, but from those of my friends who are already grandparents, I hear it’s the most rewarding gig yet. Whether you’re enjoying the ride as a parent yourself, if you share time with nieces, nephews and neighbors, or perhaps you’ve made the transition into grand parenting, I hope you’ll enjoy the fun ideas in this issue. From recipes to enjoy together, to goat yoga and learning how to make at-home treats for your pups, options abound for investing your most precious resource of time with your loved ones. Healthy Tips for College Freshmen Heading off to college is a big adventure and can cause excitement and stress—along with a host of other emotions—for parents and students alike. You can help your college freshmen be successful in class and in life by talking to them about how important their choices will be. Building healthy habits now can last a lifetime.
GET ENOUGH SLEEP The benefits of getting a good night’s sleep have been well documented. From balancing hormones and regulating blood sugar to helping reduce stress and inflammation, sleep is a vital requirement for a healthy lifestyle. College freshmen should aim for 7–9 hours of sleep each night. To ensure your students get enough sleep, they should strive for a consistent sleep schedule. That means going to bed and waking daily at similar times. Those late nights—whether for studying or partying—will catch up with college freshmen sooner rather than later.
EXERCISE AND STAY ACTIVE At most colleges and universities, students have access to an oncampus gym. Sometimes, the cost is rolled in with tuition, and if it’s not, they’ll pay a nominal fee to use the facilities. This is a great investment in health and wellness—not only while in school but for long after. If your student wasn’t already exercising regularly before heading off to college, this could be a good time to start a routine. They’ll also find physical education classes on the schedule, and even if they’re not looking for credit, the courses can be audited. Curious about how to lift weights without getting hurt? How about enrolling in a weight-lifting course? Student athletes will find staying active at college easier since it’s regulated for them. But all college freshmen can enjoy the many benefits of regular exercise. Encourage your students to walk or bike between classes, even on a large campus. Additionally, most students can enjoy on-campus gym facilities, plenty of outdoor lawns for impromptu yoga, and a visit to the swimming pool for a few laps.
PAY ATTENTION TO YOUR DIET The “freshman 15” is a still a real issue among kids who go off to college. That’s because, perhaps for the first time, 18-year-olds’ diets
are unregulated. Most college freshmen are on the campus meal plan, which affords them access to an unlimited buffet of goodies. Without Mom and Dad there to control portion sizes or avoid keeping certain not-so-good-for-you foods in the house, students often don’t pay attention to how much they’re eating. Heading off to college means choices abound. This is a great time for college freshmen to learn to pay more attention to their bodies. Eat when you’re hungry. Sleep when you’re tired. Just because food is there doesn’t mean it needs to be eaten—even if it is a delicious piece of chocolate cake.
DRINK PLENTY OF WATER Students should get into the habit of always having a water bottle with them. Rushing in between classes often leaves little time for hydration, and without enough water, they can become lightheaded, fatigued, and even have muscle cramps. Just as sleep has numerous benefits, so does drinking adequate water. And for active college freshmen, electrolytes are an added benefit. Students should avoid sugar-laden energy drinks and sports drinks and opt, instead, for sugar-free options. Individual packets of electrolyte can be added to water on the go, making the entire process of staying hydrated much easier.
HAVE A PARTY PLAN College freshmen want to hop into the college scene with both feet, and that means partying. While it’s fine to go to parties, students need to have a plan. Underage drinking aside, kids will be kids. Start conversations now about making smart choices, whether they plan to drink or not. It’s that next choice that makes all the difference. Talk to them about being responsible, because the decisions they make in college—about partying, sleeping, being active, and staying healthy— can last a lifetime.

Here in Kansas City, lots of people talk about Patrick Mahomes being the G.O.A.T. (Greatest Of All Time). And while Chief’s fans will be cheering him on this fall, there are some other goats out in Lee’s Summit that are pretty cool too! Sheila Patten and her family operate Falling Down Ranch, home to about 15 Myotonic goats, a.k.a. fainting goats. In the spring of 2014, Sheila and her daughter Mya started a new adventure. Mya, now 20 years old, says she stumbled upon a lady who had a bathtub full of baby goats at a state fair in Texas and she was hooked. Sheila says, “The goats found a way into our hearts.” They purchased two bucks and three does. Goat Yoga was born two years later as a fundraiser for the Lee’s Summit High School Broadcasting group and has been steadily growing in popularity since then. In the early spring of each year, Sheila turns her garage into a maternity ward and up to 15 baby goats (kids) join the ranch. Sheila only keeps 1-2 kids each year to help grow the herd. Until the baby goats find their forever homes, Sheila loves sharing them with the community through goat yoga. “Everyone needs to experience GOGA! All ages and all levels of fitness are welcomed. GOGA is when humans are attempting yoga poses while baby goats are running around and on top of you. It’s a win-win. Human participants get the health benefits of stretching and breathing, while also benefiting from animal therapy,” explains Sheila. “I believe mental health has a close tie to physical health, something that is important when understanding the impact of goat yoga sessions.” She continues, “Sometimes at GOGA, I just watch and listen... people are laughing and smiling and talking to the goats. I want to bring smiles to people’s faces, and I want them to forget about any issues that they might be facing in the real world. It’s pretty hard to take yourself or life too seriously when there are baby goats involved. It’s a great way to break from your normal mindset and relieve stress.” Falling Down Ranch also offers adult and kid birthday parties, bachelorette parties and goat happy hours in the fall. Sheila will provide the tables, chairs, bales of hay and the goats. Guests can bring their own food and drinks and spend an hour feeding, brushing, and snuggling with the goats. Hugely popular, Sheila says these spots fill quickly and often sell out. Sheila is also considering a new trend: special deliveries called GOAT-A-GRAMS. Great for birthdays, retirements, anniversaries or any special occasion, the goat brings the recipient a gift and an unforgettable memory. A GOAT-A-GRAM can be personalized with add-ons such as flowers, candy, or balloons. As an employee of Lee’s Summit R-7 School District, Sheila is fondly known as “the goat lady.” She has brought the goat kids to local elementary schools as incentives for fundraisers where principals and teachers must “kiss the goat,” as part of 6th grade clubs and to summer school sessions. “The students are so interested in the goats. Sheila acknowledges that while raising goats is work, she looks at it more as a hobby than a chore. The goats are family pets to the Pattens. Sheila says there are so many parallels between goats and dogs: the goats know their names, can be housebroken, wag their tails out of contentment, and are very social. FAINTING GOAT FACTS
• They get their name from a genetic condition called myotonia congenita, which causes their muscles to briefly stiffen after they are startled. • Female goats are pregnant for 5 months and almost always give birth to twins or triplets. • Kids (baby goats) can begin “fainting” at 2-3 weeks. • Adult goats will learn not to fall when startled and instead walk or run with stiff legs. • Goats have horizontal eyes which allow them to see in several directions at once. • Each goat has its own unique voice (bleat). • They are herd animals and must have companions or they will become depressed/mean. • It is a myth that goats eat everything, though they do explore with their mouths. • Fainting goats can be registered as therapy animals. • Goats are clean animals and avoid rain and mud. • Goats are smart and can be housebroken. • Fainting goats originated in Tennessee and are an endangered breed.

With more than 400 acres of lake and a shoreline that continues to develop as new phases are built and community amenities are added, Lee’s Summit’s Lake Winnebago is a water paradise for kids and adults of all ages. According to agent Renee Amey, whether you’re wanting to fish, find a group to learn crafting, relax on the boat with friends or get in a kayak workout after a long day, there’s a way for everyone in the family to find a way to unwind and connect at Lake Winnebago. Established in the 1960s, Lake Winnebago’s rich history has provided a firm foundation that will support the growing and thriving lake community, as it has added approximately 145 acres of water and continues to see new homeowners flock to the area. With its own City Hall, police and fire presence and governance structure, Winnebago seeks to comprehensively serve its residents’ needs. There’s a little something for everyone, including Safety Days focused on family friendly, educational offerings, shopping events, turtle races, barbeque competitions and garden clubs. As the south side of the lake has been developed, almost three hundred new lots with homes have been recently finished or are under construction, and the burgeoning community continues its forward focus. A five-acre amenity area is planned, which will include a resort-style zero entry pool and community building. Additionally, a boat ramp with security gate and parking
are available for residents, along with two miles of paved walking trails. The Arrowhead Yacht Club, also known as the Lake Winnebago Yacht Club, is available for weddings and special events, as well as offering outdoor entertainment and dining options for residents. Healing Through Horsemanship
SIMPLY EQUINE ASSISTED THERAPY HELPS YOUTH AND ADULTS ALIKE ARTICLE BY JUDY GOPPERT

Horses are intuitive. Horses have superpower. Interaction with them releases serotonin in the human brain, and when that horse/human interaction occurs it’s great for depression, anxiety, and a host of other maladies. “Horses automatically know what’s going on. They feel what you feel and often know what’s going on with you before you know!” Lisa Jegen, founder and owner of Simply Equine Assisted Therapy, says. “I can tell my clients what the horse is telling me through body language, and their verbal signs.”
Jegen began her therapy equine program in 2001, when she opened on the campus of Seasons Care Center at 15600 Woods Chapel Road. She was approached by Kenny Blom, who had started the Alzheimer’s and dementia unit there. “He knew I was a fifth-generation equestrian and asked me what I thought of using some of the land to see if horses could benefit the residents,” she says. “I researched and discovered that equine assisted psychotherapy could definitely help them!

“I am a product of equine psychotherapy and know firsthand how horses can benefit mental health. I am now a certified equine specialist, and we began the program.”
The program worked so well that they decided to open it to everyone, not just exclusively Seasons Care residents. They are now a 501c3 nonprofit organization and currently have a capital campaign to make improvements on the property. They turn away no one. This is a strictly mental health program, and Jegen works with children from all different walks of life who have autism, are in the foster system or have been taken away from their parents and put in a different environment. The children are referred to her by therapists, teachers, pastors, coaches, next door neighbors, family members and caregivers.

“I offer these children a safe environment that takes them out of their element they are used to and to be honest, a lot of these kids are living in homes they have no control over,” she continues. “I put them into an environment with nature, horses and instructors of life skills. Those instructors of life skills have been exactly where our client is now. They are only a couple steps ahead of them. The reason all our instructors need to come from that background is because we want them to empathize with the client. I want them to know those feelings and experience those feelings so they can validate. It’s important for people’s feelings to be validated.” She teaches kids and adults the equine way, where every day of your life you have self-confidence, self-worth with a bit of self-deprecation without giving up any self-respect. They are now on their second generation, and parents she worked with are now bringing their own children to her. Jegen says that’s the best part of her job, knowing she did some good and the children grew up to be healthy adults. She offers programs for adults suffering from PTSD, ADHD, abuse, depression, anxiety and more. One such event is the spa days she puts on. People get a garden hose, wet down the horses and wash their tails and manes with products such as Nexxus and Paul Mitchell, donated by one of their members. They braid the horses’ mains and even paint their hooves. Horses and humans love this on hot summer days! The Horse Hook-Up program is for people who are already horse people. They can grab a horse and spend time with them. They come for stress relief, self-reflection, decision making assistance, exercise, health care and fun.
“We want to spread the word here that horses help people. We are here for people to enjoy horses, even if that means coming up to the fence to pet our horses. That five minutes might give you incentive to finish the rest of your day with a positive attitude,” she smiles.

“Horses bring clarity,” says Jegen. Jegen is from the Kansas City area, and her father was a horse trainer. She was on a horse at six months old, riding by herself by the age of two, showing horses at age six and training them at age eight. “I think what makes our program unique is that it is specialized. Horses are intuitive and so am I. All I want to do is make sure every person in my community who wants to listen, can understand the power horses can have in a human’s life. How they change your perception and way of thinking, take all the negativity away and bring in positiveness so you can have a healthy life,” she says. They have 11 acres, five of which are used for equestrian programs. She likes to take people to ride at other locations, such as Monkey Mountain, Blue and Gray Park and James A. Reed wildlife center. Currently they have six horses, with more on the way.

One example of success Jegen shared involved a nineyear-old boy: When he was three, he was on our racehorse we had. He had no respect for anybody when his mom brought him to me. This horse changed him, and he turned into a fine young man and doesn’t get kicked out of school anymore! He learned that disrespecting, confusing, hurting a horse or being angry and yelling at them, means you’re going to get a response just like you will from a human. NO BAKE PEANUT BUTTER BALLS INGREDIENTS 1 cup pumpkin purée 1/4 to 1/3 cup peanut butter 1/4 cup milk or half and half 3 cups oatmeal
INSTRUCTIONS In a bowl, mix pumpkin purée, peanut butter and milk on medium for 1 minute. Gradually add 2 ½ cups oatmeal and stir. Use a small scoop or spoon to create ¼ inch balls. Roll balls in remaining half cup oats. Refrigerate in closed container.

PEANUT BUTTER DOG TREATS INGREDIENTS 2/3 cup pumpkin purée 1/4 to 1/3 cup peanut butter 2 eggs 2 1/2 cups flour (whole wheat preferred)
INSTRUCTIONS Preheat oven to 350* and line baking sheet with parchment paper. In a bowl, mix all ingredients except flour. Gradually add flour until the dough isn’t sticky. Roll dough into a ball, then lightly flour your counter surface and lightly knead the ball of dough. Use a rolling pin to roll dough out to ¼” thickness. Use cookie cutter, then place dough shapes onto baking sheet. Bake for approximately 20 minutes, then drizzle with peanut butter. Cool and let your pup enjoy!

Nothing says summer like grilling out and chilling on the patio as you enjoy the serenade of cicadas and the beauty of a sunset. These mouth-watering recipes will help you soak up every last second of summer fun with family and friends. To extend the experience, visit your local farmers market to gather your fresh fruits and vegetables.
T O M AT O P E A C H B UR R ATA S A L A D YIELD: Serves 6
INGREDIENTS • A few big pinches of Kosher salt • Freshly ground black pepper • 1 teaspoon dried oregano or 2 teaspoons fresh oregano • 1 tablespoon balsamic vinegar • 1/4 cup extra-virgin olive oil • 2 large heirloom tomatoes or large plum tomatoes, or cherry tomatoes. (about 2 1/2 pounds total) • Two peaches • 8 ounces mozzarella pearls or small balls • 4 ounces burrata cheese • 1/4 cup torn fresh basil leaves plus additional whole leaves for garnish DIRECTIONS 1. Combine salt through olive oil. 2. Place the burrata cheese round on a platter. Arrange the tomatoes, peaches and mozzarella balls around cheese. 3. Drizzle with dressing from bowl. Sprinkle with more salt and pepper. Garnish with additional basil leaves and serve.

STEAK WITH CHIMICHURRI SAUCE YIELD: Makes about 1 cup (enough for 3-4 servings of steak, as described below)
INGREDIENTS • 1 cup (packed) fresh Italian parsley • 1/2 cup olive oil • 1/3 cup red wine vinegar • 1/4 cup (packed) fresh cilantro (optional) • 2 garlic cloves, peeled • 3/4 teaspoon dried crushed red pepper • 1/2 teaspoon ground cumin • 1/2 teaspoon salt Steak • 1 ½-2 pounds flank steak or steak of choice. I use grass-fed beef from KC local Salt Creek Farms. DIRECTIONS 1. Make sauce: Puree all ingredients in food processor. Transfer to bowl. (Can be made a few hours ahead. Cover and let stand at room temperature until ready to use.) 2. Preheat grill to medium-high heat. Sear steak for 6-8 minutes on each side until heavily browned on the outside and slightly pink in the middle. 3. Thinly slice steak across the grain and top with Chimichurri sauce. 4. Serve and enjoy

INGREDIENTS • 2 ears corn, grilled and cut from the cob • 1 small shallot, thinly sliced into rings • 1/4 cup fresh feta or goat cheese, crumbled • 3 sprigs basil, leaves removed and torn • 1/4 cup extra virgin olive oil • 1 tablespoon red wine vinegar • Black pepper to taste • Jalapeño, thinly sliced (optional)
DIRECTIONS 1. Place corn kernels into a bowl with the rest of the ingredients and stir to combine. 2. Taste, and re-season with salt, pepper, and vinegar to taste.
