We will be moving close to Longview Lake this summer and are also going to enjoy the miles of trails for mountain biking and hiking.

It’s a small town in Missouri that is a great getaway location only two hours from Lee’s Summit. I highly recommend this fun, peaceful lake for boating, fishing and great hiking!

HAVE SPENT MOST OF MY TIME IN THE CAR CHAUFFEURING THE KIDS TO AND FROM ACTIVITIES. Baseball fields, swimming pools, summer training programs and camps have consumed our days, and as constant and busy as it is, I know that I am going to greatly miss this someday. It has been a whirlwind of activity, and summer is always the time when working from home becomes a bit more difficult to balance. As I create this month's issue of the magazine from my home office, I realize that I’m feeling guilty that my kids are home and off-the-clock, probably playing video games. I tend to feel that internal struggle to set up another activity for them because too much idle time bothers me, and in reality it shouldn’t. I know in my heart (and studies are backing me up on this): Kids need downtime. It’s incredibly healthy and necessary for kids to have time to recuperate from the busy schedules they keep. As a child, I had countless hours of downtime, and it helped me to become more creative in how I spent my time and allowed me to appreciate the fun stuff when it did occur.

PHIL SCHMIDT, A LOCAL ARTIST WHOSE WORK CAN BE SEEN AROUND LEE’S SUMMIT AS WELL AS THE GREATER KANSAS CITY AREA AND BEYOND, FIRST FOUND HIS LOVE OF ART AS A YOUNG CHILD DOODLING IN CLASS. That love of art continued to grow, as his mother fostered it by supplying him with drawing pads, oil paints and a canvas. “In middle school, I would strap my painter’s easel and canvas to my 10-speed bike and ride to the park to paint “en plein air” (in the open air) long before I knew what it was called,” Schmidt explains. After graduating, he spent most of his career in commercial art, putting fine art on the back burner for more than 30 years. It was only in 2014 that he began to seriously pursue a career as a fine artist, specializing in watercolor. Schmidt describes his art as representational realism. He explains, “There are lots of terms for artistic styles that people throw around, but the truth is, I really don’t think about that when I paint. I just do what comes most naturally to me, and that is to tell stories with my paintings. Creating a painting allows me to escape to another place, to re-live an experience, or to dream of something I hope to do some day, like sailing the coast of Alaska or flying a P-51 Mustang.” When choosing subject matter, Schmidt paints what he is passionate about: aviation, sailing, fishing, nature and wildlife; however, he is best known for his aviation art.

“When I was about 5 years old, I got to sit in an F-101 fighter jet that my uncle, an Air Force pilot, had flown to the airbase near our home. I was hooked on airplanes from that day forward. I earned a private pilot’s license several years ago, have owned my own airplane, and am currently building a two-seat kit airplane. So, naturally, aviation art is a perfect fit for me.” Schmidt recently was honored to become a juried artist member of the American Society of Aviation Artists. Several of Schmidt’s framed reproductions are currently on loan at the Lee’s Summit Airport terminal building. He will be on site for an artist’s reception and solo exhibit during the Downtown Lee’s Summit “Fourth Fridays Art Walk” on July 26 at 239 S.E. Main Street. He is also a juried artist member of Summit Art. His art will also be on display at The Summit Art Festival in Lee’s Summit in October.

In 2013, Brooke’s grandfather, Errol Durbin, got the flu and began a downward spiral in his health. After multiple stints in rehabilitation facilities, he was unable to care for himself. Beet and Ricotta Gnocchi INGREDIENTS + 1/4 pound red beets + 1 pound ricotta + 1 large egg + 1 cup grated parmesan, plus more for finishing + 1 cup all-purpose flour + 1 stick unsalted butter + 8 sage leaves + 1/2 cup toasted walnuts, chopped + 1/2 tablespoon kosher salt + Freshly ground pepper PREPARATION Wrap washed beets in aluminum foil and place on baking sheet. Bake in 450-degree oven until tender for 45 minutes. Remove from oven and cool. Peel skins using a paper towel. Add beets to the food processor and purée. Transfer to a large bowl. Add the ricotta, eggs, parmesan cheese and salt and pepper. Mix well. Add 1 cup flour to ricotta mixture and stir. Set mixture aside for a minimum of 2 hours in the refrigerator. To form the gnocchi, roll a walnut-sized piece of beet mixture into a nice oblong shape. Drop it into the bowl of flour, turning to coat all sides. Lay dumplings on a parchment lined baking sheet lightly dusted with flour. Refrigerate for one more hour to firm. Melt butter with sage in a skillet. Let butter lightly brown until the sage leaves are crispy. Set butter aside. Slip gnocchi into a pot of boiling salted water until they float to surface of water, about 3-4 minutes.

Rosé Pop s ic le s INGREDIENTS + 6 ounces strawberries, hulled + 1 2/3 cups dry rosé + 1/2 cup pink lemonade + 2 tablespoons sugar + 1 cup sliced fresh strawberries PREPARATION Combine all ingredients in a blender and process until smooth. Divide mixture between ten popsicle molds and freeze in a flat place in freezer for one hour. Use a popsicle stick to break up any frozen chunks and push sliced strawberries into mixture. Curry Roasted Carrots INGREDIENTS For the Carrots + 1 pound medium size carrots, peeled + 1 tablespoon curry powder + 1/2 cup grapeseed oil + 4 ounces goat’s milk feta + salt and pepper For the Pickled Fresno + 3 Fresno peppers + 1/2 cup red wine vinegar + 1/2 tablespoon sugar For the Pesto + 1/2 of a Serrano chili + 2 garlic cloves + 1 teaspoon flaky sea salt + 3 tablespoons honey + 1/4 cup coconut milk + 3-4 sprigs cilantro with stems + 6 sprigs flat parsley + 1/8 teaspoon cayenne + Juice of 1 lemon + 1 cup toasted pepitas, divided PREPARATION Set oven to 450 degrees. Slice Fresnos into thin rings and add to a bowl. Sprinkle with sugar and add vinegar. Allow to pickle for at least 30 minutes or overnight. Over medium heat, toast curry powder. Add oil and heat until bubbling. Turn off heat and let steep for 15 minutes. Strain oil. Lay carrots on a foil-lined baking sheet and massage with curry oil. Sprinkle with sea salt and pepper to taste. Roast for 10-12 minutes. Add all pesto ingredients to a food processor and blend. Remove carrots from oven and place in bowl. Mix in pesto. Top with remaining pepitas, feta and peppers.

Jam Burger No. 9 INGREDIENTS + 1 1/2 pounds ground chuck + salt and pepper + 1 tablespoon canola oil + 4 slices American cheese + 4 hamburger buns + 1 cup fried onion straws + Strawberry-jalapeno jam + Lettuce + Mayonnaise PREPARATION Heat oil in pan over high heat. Cook burgers until golden brown and slightly charred on first side, about 3 minutes. Flip burgers and cook 4 minutes for medium rare or until cooked to desired degree of doneness. Add cheese to the tops of burgers and let melt. Place on toasted buns and finish with toppings.
Baked Cod Escabeche INGREDIENTS + 2 ½ pounds cod filets + 7 tablespoons olive oil, divided + ½ bunch chives + ¼ red onion, thinly sliced + 1 habanero or red Fresno chile, thinly sliced into rings + 4 garlic cloves, minced + ¼ cup fresh lime juice + 2 tablespoons white wine vinegar + salt and pepper PREPARATION Set oven to 400 degrees. Combine chile, garlic, onion, chives, lime juice, vinegar, and 6 tablespoons oil in a small bowl; season with salt and pepper. Set marinade aside.On a foil-lined baking sheet, brush cod with oil, salt and pepper. Bake for 15 minutes. Plate the fish and pour marinade over the top. Finish with chives, salt and pepper to taste.

SPENDING TIME OUTDOORS AND ENJOYING FRIENDS AND FAMILY OVER GOOD FOOD AND DRINKS IS A GREAT WAY TO USHER IN SUMMER. This gorgeous farm-to-table dinner is set in the breathtaking Timber Barn space at Weston Red Barn Farm. From the fresh flower arrangements to the locally sourced produce and herbs, this earthy spread is brimming with character and flavor. The earthy ceramic and clay vases give the perfect vessel to fill with organic cut herbs and handpicked wild flowers. Amy Casin from Victoria Gardens arranged a beautiful medley of queen Anne’s lace, mint, sage, rosemary, lavender, lamb’s ear, nigella, buddleia, oregano, dill, fever few, and geranium to name just a few of these beautiful blooms. We love a good home cooked menu mixed with a signature drink, so we brought in the expertise of local food connoisseur, Samie Laforce, to share some of her favorite farm-totable patio favorites and the creative beverage genius, Brandon Burke of Cordial Craft. What are we serving? We started with an Arugula Salad with Grilled Corn, Shaved Radishes with Zucchini and Goat Cheese and served with a Creamy Lemon Vinaigrette. Buttermilk Brined Fried Chicken was a must for this outdoor party which paired nicely with locally sourced Roasted Heirloom Carrots drizzled with Hot Honey. Peach Bread Pudding with Salted Vanilla Caramel Cream rounded out our meal for the perfect sweet treat.
BUTTERMILK BRINED FRIED CHICKEN INGREDIENTS
BUTTERMILK BRINE
DRIED SPICE MIX
+ 4 cups buttermilk
+ 2 tablespoons white pepper
+ 1 bunch fresh sage
+ 1 teaspoon ground mustard
+ 1/2 of spice mixture
+ 5 teaspoons paprika + 2 teaspoons fresh black pepper
DREDGE
+ 2 tablespoons garlic powder
+ 2 cups flour
+ 2 teaspoons dried oregano
+ 1/2 cup cornstarch
+ 2 teaspoons cayenne
+ 1 tablespoon baking powder
+ 1 teaspoon celery salt + 1/2 teaspoon dried thyme
+ Whole cut up chicken or 2 bone-in breasts, 2 thighs and 2 drumsticks
+ 4 teaspoons onion powder + Palm kosher salt
TO COOK
+ 4 cups shortening INSTRUCTIONS 01 Marinate chicken in brine for up to 24 hours. Place chicken in large Ziploc bag and pour marinade over top. Add fresh sage and store in fridge. 02 Preheat oven to 350 degrees. Prepare a baking rack with a sheet pan for raw chicken and one for cooked chicken. 03 Add remaining spice mixture to flour mixture. Whisk together well. 04 Heat shortening to 350 degrees. (Preference is cast iron Dutch oven) Pull chicken out of buttermilk mixture and let drip. Coat firmly in flour mixture and set on raw chicken rack. Complete each piece of chicken. 05 Heat oil to 350 degrees. Place 2 or 3 pieces of chicken in oil and cook 3-5 minutes per side. Place on cooked chicken rack. Put cooked chicken in oven to complete cooking for 15 minutes. 06 Let chicken rest for 5-10 minutes before serving!

Think twice before killing the golden goose Divorce and family law matters can be an emotional time. In many of these cases, parties are worried about custody and support of their children. Custody cases in particular can cause a widerange of emotions. While parties should never put their children in the middle, parties can sometimes get caught up in a contentious custody battle. This can cause some parties to become emotional and lose sight of what is important. Divorce cases involving spousal maintenance (formerly known as “alimony”) can also be acrimonious. There are certain scenarios where one party feels as if they will not be able to meet their needs without the financial help of their soon-to-be ex-spouse. In some of these cases, one of the parties might make more income than the other. In certain cases, one party might make substantially more. It might be that one party has education, skills and a work history that the other party does not have. However, in an effort at gaining an advantage in a custody or spousal support case, some parties are tempted to loft scandalous allegations. Sometimes, the allegations may have little or no merit. They may be exaggerated, embellished or untruthful altogether. But to gain an apparent advantage, or due to their anger or emotions, they are tempted to fling mud. It might mean that they file a motion in the 34

family court that contains scandalous allegations. It could be that they issue some subpoenas or take depositions based on these allegations. In other cases, parties might decide to call protective services (also known as DFS or family services) on the other parent when the children are not facing real risk from abuse or neglect. They might even call the police on the other parent when nothing has happened to warrant it. It could be that they begin contacting co-workers or involving the other party’s employer or business contacts unnecessarily. Obviously, if there are legitimate allegations, those need to be raised. At the same time, if a party is simply stirring the pot by raising scandalous allegations that have little or no merit, this is not helpful. The truth is that if they kill the golden goose, then what? Put simply, if the party who makes substantially more income has their reputation sullied in the community, or they lose their job, how does this help the situation? This can actually hurt the spousal maintenance case of the party bringing these scandalous allegations. For example, how can the other party pay spousal maintenance if they end up losing business (due to their reputation being harmed in the community) or, worse yet, they lose their job altogether? Even if they were to get custody based on
these scandalous allegations, if the other party loses business or their job, it can have the net effect of lowering the child support amount. More importantly, it can also impact the kids emotionally if they end up being interviewed by protective services or a guardian ad litem who is investigating the allegations. Psychologically, this can be damaging to the children and has the net effect of putting the kids in the middle of the dispute. Further, if the allegations are frivolous, it can impact the credibility of the party raising the allegations. Many family court judges are not impressed with parties who raise scandalous allegations that have little or no merit. This can result in a boomerang effect where the party who brought the frivolous allegations ends up being the one hurt. “With 20 vets a day committing suicide, we at Camp Valor Outdoors look at this as a national tragedy--something more must be done,” Schwent says. “The struggle with feelings of hopelessness and over-medication, commonly prescribed by the VA, are real issues and raise legitimate concerns. It needs to be addressed.” Schwent specifically recalls a veteran who approached him at the end of a CVO event and presented him with a bullet. As the veteran began to share his story, it became apparent the veteran had planned to take his own life with that very bullet only weeks prior. “He told me he didn’t need this [bullet] anymore,” Schwent says with emotion. “He told me he added mercury to the powder to make sure it got the job done. He said the only thing that kept him from doing it was how much he was looking forward to this event. He just needed something to give him hope.” CVO has been so successful that many veterans who attend it often return as mentors to assist veterans at future events. “We expect our warriors to join the military and lead at a young age,” Schwent says. “Then they come home, and they don’t know what to do in the corporate world because (veterans) are not profit-oriented--we are mission-oriented. What they need is a new mission in life.” Veterans share a common bond regardless of when they served or for which branch they served. Connecting warriors in the outdoors has proven to provide effective healing in general. “There is no difference between an 85-year-old-Korean War veteran and a warrior who served in Iraq,” Schwent points out. “Because of that common bond all veterans share, today’s warriors are inspired by yesterday’s warriors.” “Making a difference in the lives of wounded, ill and injured veterans is the heart of everything CVO does,” Schwent says. “Whether it’s connecting warriors in the outdoors, launching a honey bee program,

We have to help them break ground in a new area of passion. We owe them that for serving our country. That is our debt of gratitude.”

FLEMMING PARK Home to both Blue Springs Lake and Lake Jacomo, Fleming Park is the largest of Jackson County Parks. It is the perfect place to have fun in, on or even above the water. Located at 22807 Woods Chapel Road.
MONKEY MOUNTAIN The park is used as a nature reserve. It has a variety of cover and t`errain. It is popular with hikers, horse back riders and orienteering enthusiasts. Located on E. Old Highway 40 in Grain Valley.
WINTERSET NATURE AREA This 10.2 acre park is a natural area with a .6 mile wood chip trail that meanders through different types of trees and wildflowers, wood bridges and waterfalls. Anytime of year you are sure to see some local wildlife and some amazing examples of Missouri native flowers.
LEA MCKEIGHAN PARK As one the most loved parks in the area, Lea McKeighan Park boasts low ropes course, playgrounds, musical instruments, speedway zip line, splash pad, pickleball courts, sand volleyball court, multipurpose fields and a skate park. Located at 120 NE Chipman Road.
