Counting my blessings

In this season of giving thanks, we often find ourselves reflecting on the many blessings in our lives. The true spirit of Thanksgiving encourages the conscious expression of gratitude. Its focus is spending time with those that you love and encourages giving back in a meaningful way. While ambition, competition and slaying goals can be very healthy, forgetting to place importance on being present, enjoying the ride and appreciating those around us that have helped us along in our journey, can leave us missing out on what truly matters. We’ll never be content if we look outside ourselves and at our possessions or titles to determine if we are fulfilled. True contentment comes from within and from fulfilling who we were made to be. Even as I was pondering what to name our LLC when creating the magazine, I knew I wanted it to reflect who we were and what we believed in. Scott is always quoting the "Rules of the Harvest" to me and I have always believed in it fully. I truly believe planting your seeds in every aspect of your life can yield so many blessings. So one day it hit me...let's name the new LLC, Rules of the Harvest. It was perfect for us. The meaning of the Rules of the Harvest are...you reap what you sow, you reap later than you sow and you always reap more than you sow. How true and purposeful! Our November issue is dedicated to stories of gathering, gratefulness and giving back to our community. We are so thankful for the residents and businesses in our community who support so many wonderful organizations and help make our city the vibrant community that it is. We are especially thankful for our advertising partners who help bring this magazine to your doorsteps each month. They are part of our vision and purpose of bringing inspiring stories and the good news of the community directly to you. This holiday season as we prepare to gather with our loved ones, and in the true spirit of thanksgiving, let’s set time aside to consider what truly makes life meaningful and stop to reflect on those blessings. When Landon and Meredith set off on a 10 month, 27 state, RV trip a few years ago, they never imagined they would fall so in love with Middle Tennessee. “I grew up on the ocean in Long Island, New York, my parents had me at the beach at three weeks old. My dad’s a boat captain and I always say I have salt water in my veins so never in a million years thought I’d leave the beach, but when we started to travel, oh my gosh, we discovered God’s creation was so much more beautiful than just the tranquility of the sea,” says Meredith. “We fell in love with the weather, the terrain, and most of all, the people,” she explained, “Seeing farm animals on their land, in their natural habit brings me so much joy, I have the feeling of peace here that I’d get on the shoreline and it’s a lot less populated. While for Landon, who grew up on 11 acres in Michigan, this was like coming home.”

Recently celebrating their 10 year wedding anniversary, Meredith and Landon Weiss love working together. Meeting as co-workers and best friends for 20 years, the duo telecommute at the same consulting and talent sourcing agency, which allowed them to take off and see the country in a way most only dream of. Once they settled into their own home, they wanted to build something else together, so they found the perfect location in Lebanon, ideal for short term renting. “We see this as a space for families or friends to gather for total relaxation, to unwind and reconnect. We’ve had many couples rent the entire house to themselves to get away, even if only from an hour away,” they explained, “Every time we get ready for our next guests, we don’t even want to leave.” They welcome songwriters in need of solstice, have group options and will even work with guests to create experiences like wine tastings, company dinners and would consider longer stays for local business professionals or people moving to the area, waiting for construction, or looking for a furnished home temporarily. Landon explained that their dream guests are those who value a high end experience and five star amenities. Those who yearn for a time out, to sit and talk on the beautiful deck, play a game of corn hole, relax in the hot tub and hammocks, watch the birds, livestock and the sunset. Most of all we value guests searching for the serenity Cedar View offers. “We encourage guests to visit the square and wineries in town,” he says, “Our favorite things about Wilson County include the fairgrounds, the lush rolling hills and the small town with big amenities and amazing people. We give guests a little taste of local by providing things unique to the area like fresh bread from Lester Farms, charcoal from Seven Cedars Butchers Block, plus we always provide Heavenly Scents soaps and coffee from Split Bean Roasting."

Roasted Coconut Dishes Up Island-Inspired Fare Tiki Truck to Colorful Cafe

When Melanie Nelson moved to Middle Tennessee after growing up in Southern Florida, she found herself missing both the ocean and the vibrant flavors of the tropics. At the time, there wasn’t anywhere in Nashville to find good acai bowls or other island-inspired fare. Over the years, Nelson has spent significant time traveling in and around the Caribbean and Hawaiian Islands which helped to shape her palette for fresh fruits, vegetables, and tropical-themed entrees. Her whole life, Nelson always dreamed of becoming an entrepreneur. After a lot of thought and consideration, she felt that a food truck would be the quickest and most cost-effective way to share her love of flavorful cuisine with the area. Armed with a background in hospitality and marketing, she launched Roasted Coconut in April 2022. The

name was carefully selected as a combination of her desire to offer coffee along with dishing up fresh, island-inspired bites. Together with her husband, Brian, they purchased and converted an antique box truck into a tropical oasis on wheels. The tiki truck was well received as they served up tasty acai bowls, smoothies, soups, and salads. Almost immediately, the beloved Mr. Tiki was booked 7 days a week for festivals and special events in Wilson and its surrounding counties. “The Wilson County Fair was a game changer for us,” says Nelson. Everyone began asking if Roasted Coconut had a permanent restaurant location. Amy, a frequent customer says the menu is addicting. Another frequent guest, Mary, shares, “The ingredients are always high-quality and incredibly fresh. The flavor profiles are magically

delicious.” The remarkable response to the recipes and the need for a commercial kitchen for catering is what prompted Nelson to launch a brick-and-mortar cafe with the same vibe. When looking for a location, the Lebanon area was quickly a strong contender. They secured a storefront just off The Square and, once again, the Nelsons began renovating and transforming the building into a paradise-themed destination. Everything about the newly opened Roasted Coconut Cafe makes you feel like you are at a mini coastal retreat. Nelson wanted to include as many natural elements as possible and there are unique beachy touches everywhere including waves in the tile, a large bamboo fan, and colorful wallpaper. It’s worth a visit just to see the beamed inset ceiling with a stamped flora design. Guests rave about the expanded menu and the aesthetic, noting that it is a relaxing atmosphere with delightful, healthy options. When crafting the cafe menu, Nelson created new recipes inspired by her travels and love for fresh ingredients. Many of the signature dishes are family recipes including all their house-made dressings. One of their key ingredients, lilikoi (passion fruit) butter, is sourced from Maui, Hawaii. The cafe is also a big supporter of farm-to-table, striving to acquire in-season produce and meats from local farms as much as possible. Having a family member with Celiac has also pushed Nelson to source ingredients for various dietary needs. She shares, “Essentially, our entire menu is available gluten-free including our sweet or savory crepes, avocado toast, spices, soups, chicken salad – everything!” There are multiple vegan and dairy-free options too. If the lack of sunshine and shorter days have you feeling down, step inside the Roasted Coconut Cafe for breakfast, brunch, or lunch to be transported to a tropical destination with vibrant, fresh flavors, colors, and friendly staff. You are guaranteed to indulge your tastebuds with something different that you can’t get anywhere else. In 2024, you’ll still see Mr. Tiki driving around Middle Tennessee for special events and the Roasted Coconut will offer local delivery in Lebanon.

Make-A-Wish: Joy and Lasting Memories In the last 12 months, Make-A-Wish Middle Tennessee has granted 150 wishes, seven in Wilson County, with four of those being Lebanon families. They currently have nine more Wilson County kids in their pipeline, with four more of those being from Lebanon. “We are honored to grant wishes in Middle Tennessee and are looking forward to granting every eligible wish in Wilson county,” says President and CEO, Beth Torres, who recently connected us to

a special story of Luca, a Lebanon boy who received his wish this past spring. His mom recounts their experience below.

has shown a special interest in animals and loves telling animal facts, their sounds, and even their favorite snack. One of our favorite places to visit is the Nashville Zoo!

HOW HAS CYSTIC FIBROSIS IMPACTED LUCA? Luca was diagnosed with cystic fibrosis, or CF for short, at one week old. He was born with a blockage in his bowels and spent the first four months of his life in the hospital because of complications related to this blockage. He also had trouble gaining and maintaining a healthy weight. Since day one, Luca has always been a fighter! Most of our therapy and routine regimen consists of prevention and management of symptoms. Luca spends about an hour per day connected to a vest machine. This machine shakes his chest and loosens mucus from his lungs—in the hopes that we can prevent the build-up of ‘yucky bugs’ as we call them. Luca also requires specialized medications to help digest his foods. He takes about 22 pills per day! Luca also does breathing treatments to assist in keeping the thick and sticky mucus in his lungs thinned out and the airways clear. This summer, Luca had the blessing of beginning a new medication called Trikafta. This medication works by working directly with the CFTR protein defects that make CF what it is. We have

seen several improvements in Luca with this—he is sicker for shorter periods, and he has beautiful lung function! Our hope is that we will see continued improvements in Luca’s lung health, digestive health, weight maintenance, and over all well-being because of Trikafta. We are very involved as a family in the Cystic Fibrosis Foundation. Our work as a community is not yet done. There are many living with CF that are not eligible for medications like Trikafta. A cure for CF does not yet exist. Our hope is that one day CF will be able to stand for “cure found”!

With Luca’s love of animals and zoos, we knew a trip based around the concept of being a zoologist was the perfect wish! The entire trip and experience was a dream come true for Luca and our family! We were greeted at the airport by an incredible staff, and Luca’s first flight

Once we landed in San Diego, we were met by staff from the Make-A-Wish San Diego chapter, and settled into our hotel! We had the opportunity to go to both the San Diego Zoo Safari Park and the San Diego Zoo. The Safari Park was so amazing! Luca really loved seeing the animals in a new light! The following day we went to the San Diego Zoo and were met by Laura, our own tour guide and zoo

expert! She was wonderful! Luca had his own ride around the zoo and a behind-the-scenes look at the inner workings of the zoo! And guess what? He fed an elephant! He also fed giraffes, petted a snake, met new animals he’d only read about, and our family made some truly core memories! We also had the opportunity to visit SeaWorld San Diego and see some magnificent sea life! And to finish our trip off we went to The Jurassic World Exhibition. Luca was able to see dinosaurs up close and personal. Luca still talks about this trip!

WHAT DID LUCA'S WISH MEAN TO HIM AND YOUR FAMILY? This wish has meant and means so much to our family. Having a child with a chronic illness can be very trying and difficult. The light and memories that this trip gave us will last a lifetime! The Wish Reveal Party that the ladies of Chi Omega put on for Luca was a blast! Luca still talks about his animal party! We are so thankful to Make-A-Wish Middle TN, Make-A-Wish San Diego, the ladies of Chi Omega, and all of those who made this wish possible!

At Make-A-Wish, we celebrate medical advancements and improved treatments for the wish kids we serve. Given the ongoing life-changing advances in cystic fibrosis research and treatment, Make-A-Wish is transitioning our CF eligibility to qualify for a wish on a case-by-case basis. This means that CF will no longer automatically qualify for a wish but will be eligible when accompanied by additional complications or factors that make the current situation critical. This change will take effect January 1, 2024, so all children with CF will automatically qualify for a wish if referred by December 31st, 2023. Children can be referred at wish.org/refer-a-child

When air travel is involved recirculated cabin air alongside a lack of moisture within that air can be an issue in the skin. Not only does skin become dehydrated it also has a tendency to absorb certain environmental pollutants such as germs and bacteria from others.

Brass candlesticks with brown taper candles create a simple and elegant centerpiece. Use familiar accents such as amber jars filled with dried grass foliage and brass pheasants to adorn the table. To add a little character to the table, use a recycled wine bottle as a vase. Are you planning to dine al fresco this fall? Create an earthy, fall garden party on the porch by using natural, organic elements, greenery and flowers. To make a statement, create a floral chandelier by hanging flowers upside down above the table using fishing wire (if your space allows). The centerpiece that runs down the length of this table consists of fresh eucalyptus with gold candlesticks and a ceramic pumpkin vase filled with flowers placed on top of a tree trunk charger. Adding small pumpkins and fresh flowers along the center gives a little extra character. Instead of going with the classic white plate, enjoy a pop of color at your outdoor fall garden party with a blue place setting as a nod to the sky. Adding a cloth napkin and cloth placemat is a great way to add texture and more autumn color to your table. If the weather doesn’t cooperate on your day, bring the outdoors in with a lovely indoor garden party dressed up in fall foliage.

Falling For Neutrals SEASONAL DECOR TIPS FOR KEEPING IT SIMPLE I love decorating for the holiday season, but it gets tough if trying to keep a home decor airy, light and neutral. My home is full of neutrals, such as linen, khaki, white and gray, so decorating for the holidays can be tricky with the bright and bold themes on display at the stores. Here are tips regarding how to achieve a festive look without going overboard.

LESS IS MORE First, whenever decorating for the holiday season, I clear what's possible to make room for what's coming. I eliminate decor pieces that are displayed year-round to avoid adding clutter to rooms. Giving decor pieces or floral arrangements their own space to shine can pull the room together and make it feel very designed.

GO COZY Swapping out usual throw pillows and throw blankets for plushy, cuddly materials and seasonal prints are another simple way to add holiday spirit without being so literal. Opting for neutral plaids, cable knits, or sherpa materials add that feeling of fall and winter.

CATER TO ALL THE SENSES Don’t forget about the smell! Stocking up on candles that smell like the season is the last missing piece for a holiday vibe. The total sensory feeling of the holidays is what really brings a home to life, whether it's pumpkin spice burning for Thanksgiving or a fresh pine and cedar for Christmas.

STICK TO THE PALETTE As best as possible, I try to stick to each of the color palettes in my room. When it’s time to bring out pumpkins or holiday Santas, I stick to white and neutral or add in color pops of gold and silver to keep everything flowing. If I start to add too many primary colors, it ends up looking like a mash-up gone astray.

CELEBRATE MEMORIES The holidays are often bursting with family traditions and memories, and decor can reflect that, too. I have many items handed down over the years that I like admiring, but if they aren’t quite right for my room, there are options to bring the spirit of them to life. Framed holiday family photos in a black and white filter are an excellent way to tie in your history of celebrating in a subtle way.

LOOK TO NATURE Some of my favorite items to use for holiday decor come from a simple nature walk. Using actual items you find, or just getting inspiration from the outdoors is a great way to bring sights of the season indoors. For fall, elements such as branches, leaves and neutral gourds match with everything. For winter, I love using sticks with berries
