In this season of giving thanks, I find myself reflecting on the many blessings in my life. Our society tends to place high value on materialistic gains, our possessions, our image, our professions and our leisure. While all of those things can make us comfortable, they are not what matters, and without faith, community and relationship, the material things in life leave us feeling empty. I am always so appreciative of the family that I was born into and the family that I have created. They, as well as friends old and new, are a constant source of joy and support. And while going the extra mile for a family member or friend can be commonplace, it can leave you awestruck when someone outside of that circle extends that same level of extra consideration and care. This past year, I had a tiny health hiccup, and while I am going to be totally

fine, I had several frustrating months of trying to figure out what was going on. I have brilliant, wonderful doctors, but after many tests and specialists, there still wasn’t an answer. Then enters Dr. David Lyons. Not only did he go way above and beyond to find the answers we needed, he requested to personally review images from radiology for further evaluation, he personally called me multiple times to follow up, ask questions and share information, and he did everything with such care and kindness. Dr. Lyons showed me what it means to persistently advocate for someone, and his gentle, patient demeanor and calming spirit was exactly what I

having worked at a variety of other kitchen design studios prior to venturing out on her own. Custom design is her cup of tea! “When working with our clients, we assess in the home, their wants and needs. We have done many customized storage options for clients,” she says. “We base each design on how individual homeowners cook or don’t cook, how they use their kitchen and how they live in their kitchen. More and more people are wanting specialized types of storage aids, functionality is a very important aspect of the kitchen.” The designers talk through all aspects of the kitchen and discern how the client stores their equipment, their food, spices, oils and tons of water bottles. For example, they can create a baking center with pocket doors to close off messy areas, and if a person has a Kitchenaid mixer, it can install on a customized lift in the cabinet, so the whole mixer and lift go back inside the cabinet. No more lifting and taking up counter space. “People often don’t want to have utensils in crocks on counters. We can design a pullout unit inside a cabinet with containers for utensils and different types of knife storage,” she says. “Knives fit down in a synthetic material that doesn’t dull the knife. You simply grab the handle and pull them out.” Another popular design aspect is pet considerations. Pullouts with sealed containers for dog food, food and water bowls built into a drawer in the toe kick can then be pushed back in out of the way. Also, building in the dog kennel under the island, out of sight. “People are spending money to make their pet’s life better!” she says. CONTINUED >

They also turn master baths into more personalized spaces, as with kitchens. Installing pullouts with metal containers for housing curling irons. straighteners and blow dryers, even when they are hot. They can be left plugged in when you shut the cabinet. As a man who slings steaks for a living, he’s got a few tricks up his sleeve. You’ll need: + Kansas City strip steak + Kosher salt + Metal tongs + Meat thermometer + Butter
SOUS VIDE
1. Pull steak from fridge and cover in kosher salt
(if you don’t like salt, you can always wash it off before searing. The salt tenderizes the steak). 2. Place steak inside a plastic storage bag or BPA-free reusable silicone bag, along with one tablespoon of butter per steak. Fill up a large pot with water and place the bag in the water, clipping the bag to the side of the pot. Place sous vide inside pot. 3. Set sous vide for time and temperature for desired doneness. 4. Once the sous vide has finished, finish off the steak on a hot cast iron skillet or grill, 45-seconds to a minute per side. The goal is not to cook the steak for long, but to sear it. Let rest 5-10 minutes before cutting. Pros: Easiest to get desired temperature correct. You can also set it and forget it while you prepare the rest of dinner without worrying about overcooking. Cons: Takes the longest, is the least amount of fun, needs special equipment.

CAST IRON
1. Remove steak from the refrigerator and
allow it to reach room temperature. Season both sides generously with kosher salt, and let sit for 30 minutes. Turn the oven to 325 degrees F. 2. Heat the cast iron skillet on top of the burner on high heat. Skillet will most likely begin to smoke. Add one tablespoon of butter per steak. 3. Add steak and cook for 2-5 minutes per side, looking for a good crust on each side. 4. Check internal temperature, and if steak is not finished, place it in the oven until you’ve reached desired doneness. Use a meat thermometer if you’re unsure. Pros: Most fun, and you can experiment with different ingredients in your butter Cons: Tough to get desired doneness, and if you don’t have good ventilation, you’re going to set off the smoke alarm

Indirect/smoker/grill

Place your steak on the smoker, and cook indirectly to 20 degrees below desired doneness. Turn on direct heat/ grill while you’re waiting. 3. Move steak to direct, hot heat for 1 minute per side (expert level: get the nice grill marks). Pros: Best flavor Cons: Toughest method to get desired doneness, and you need to pay pretty close attention to the steak while cooking

Now a multigenerational household, the support of her family is crucial throughout this next chapter of her stage four cancer diagnosis. When asked why she is doing it—having three young children, being a wife, a mother and still continuing to teach she says, “I have no interest in becoming a full-time cancer patient, my students know I value them, and I will continue to teach until my doctors tell me that I can’t.” The students and staff at Blue Valley High School have designed a Live Deliberately T-shirt in her honor that can be purchased with proceeds going to the Sanfle Family. "BVHS is a special place, the teachers here truly care for their students and for each other." She shares that she has begun the process of making heart-wrenching end of life preparations, like recording messages to her young sons for all of the milestones that she will miss. Lovingly reflecting on her boys she says, “I know I won’t get to see my boys pitch a high school baseball game, but I can watch my third grader pitch a baseball game.” She is choosing to live in joy, prioritizing only the things that really matter, and letting the rest fall away. “My circle of things that truly matter has grown much smaller these days.” To her students she gives the precious life advice of “live deliberately, don’t waste time, don’t let fear keep you from doing things.” She shares a story of crawling into a uninhabited bear cave in Alaska last summer and with a laugh says, “don’t be afraid of looking stupid if it’s going to enhance your life.” On the importance of thankfulness in her life she quotes David Steindl-Rast: “The root of joy is gratefulness. It is not joy that makes us grateful, it is gratitude that makes us joyful.” She continues on to say, “the spot between joy and gratitude is where I reside right now and where I want to be living.”
