am going to greatly miss this someday. It has been a whirlwind of activity, and summer is always the time when working from home becomes a bit more difficult to balance. As I write from my home office, I realize that I’m feeling guilty that my kids are home and off-the-clock, probably playing video games. I tend to feel that internal struggle to set up an activity for them because too much idle time bothers me, and in reality it shouldn’t. I know in my heart (and studies are backing me up on this): Kids need downtime. It’s incredibly healthy and necessary for kids to have time to recuperate from the busy schedules they keep. As a child, I had countless hours of downtime, and it helped me to become more creative in how I spent my time and allowed me to appreciate the fun stuff when it did occur. My oldest son and I recently discussed how over-scheduled and busy his generation is

KAMO Adventures helps veterans GET IN TOUCH WITH THEIR EMOTIONS BY GETTING IN TOUCH WITH THE OUTDOORS

MILITARY SERVICE LEFT DOC WITH DEEP EMOTIONAL WOUNDS. A simple act of kindness has him on the road to recovery. “Initially, he was very quiet, shy and withdrawn, and I could tell that he was struggling to interact with others,” says Bill Eckert, who invited Doc on a fishing trip with other veterans three years ago. “By the end of the fishing trip, he was talkative, laughing and engaging with the other veterans.” The story doesn’t end there, however. “I ran into him recently, and he told me that before our fishing trip he was contemplating suicide and was very depressed,” he says. “He told me things changed for him during that fishing trip because he began to realize that people cared about him and that he had value as a human being. He said that the fishing trip saved his life. To know we have had an impact as extraordinary as that makes this all worth it.” CONTINUED >

Eckert is helping other veterans experience similar adventures as cofounder and vice president of the board of directors of KAMO Adventures, Inc. (KAMO, a play on the word “camouflage,” stands for Kansas and Missouri.) The nonprofit organization is run entirely by volunteers. Eckert and a friend, Steven Johnson, started the organization in 2012 after taking four wounded and disabled veterans on a turkey hunt. “We personally paid to fly the veterans in from Austin, Texas on a Thursday, and they returned home that Sunday,” he says. “That was a life-changing weekend for myself and my friends. The veterans felt comfortable and safe sharing their stories about their lives, their military service, their combat experience, their wounds and injuries, and their difficult and long road to recovery--physically, mentally and spiritually. We immediately decided to continue the next year with additional hunting and fishing weekends.” KAMO sponsors three trips each year--a spring turkey hunt; a September fishing trip to Stockton Lake; and a November deer hunting trip. Ten homeless and disabled veterans from St. Michael’s Veteran Center will participate in this fall’s fishing trip. These trips are open to current military members or honorably discharged veterans on a first-come, first-served basis. Although applicants across the nation are welcome, Missouri and Kansas residents are given priority. KAMO is not currently seeking new volunteers, but it welcomes contributions to next spring’s fundraiser and the scholarships it has set up at the University of Kansas and the University of Missouri. Because volunteers provide everything from hunting guides to meals to transportation, all donations go directly to support veterans. As Eckert learned on that first adventure, the opportunity to serve is as rewarding for supporters as it is for veterans such as Doc. “As civilians, we also experienced an amazing weekend and were honored to witness a small glimpse into the lives of these American heroes,” he says. “We wanted to continue to provide this opportunity for others in the future, as much for ourselves as for these current and former soldiers.”

OVER GOOD FOOD AND DRINKS IS A GREAT WAY TO USHER IN SUMMER. This gorgeous farm-to-table dinner is set in the breathtaking Timber Barn space at Weston Red Barn Farm. From the fresh flower arrangements to the locally sourced produce and herbs, this earthy spread is brimming with character and flavor. The earthy ceramic and clay vases give the perfect vessel to fill with organic cut herbs and handpicked wild flowers. Amy Casin from Victoria Gardens arranged a beautiful medley of queen Anne’s lace, mint, sage, rosemary, lavender, lamb’s ear, nigella, buddleia, oregano, dill, fever few, and geranium to name just a few of these beautiful blooms. We love a good home cooked menu mixed with a signature drink, so we brought in the expertise of local food connoisseur, Samie Laforce, to share some of her favorite farmto-table patio favorites and the creative beverage genius, Brandon Burke of Cordial Craft. What are we serving? We started with an Arugula Salad with Grilled Corn, Shaved Radishes with Zucchini and Goat Cheese and served with a Creamy Lemon Vinaigrette. Buttermilk Brined Fried Chicken was a must for this outdoor party which paired nicely with locally sourced Roasted Heirloom Carrots drizzled with Hot Honey. Peach Bread Pudding with Salted Vanilla Caramel Cream rounded out our meal for the perfect sweet treat. We wanted to share a few of our favorite recipes for you to try at home. Enjoy!

Pe ac h Br e a d Pudding INGREDIENTS + 1 loaf brioche + 5 fresh peaches + 2 tablespoons sugar + 2 tablespoons butter + 2 cups milk + 1 cup heavy cream + 5 eggs + 2 teaspoons cinnamon + 2 tablespoons brown sugar + 2 teaspoons vanilla INSTRUCTIONS Preheat oven to 350 degrees. Cut bread into 1-inch cubes. Dice peaches into medium dice. Place peaches, white sugar, and butter in saucepan. Cook until sugar is dissolved and peaches are soft. Mix all other ingredients together. Spray a 9x13-inch baking pan and add peach mixture with brioche pieces and then add milk mixture. Bake for 45 minutes. Let cool for 20 minutes before cutting.

El A humado by Cordial Craft “SPANISH FOR SMOKY” INGREDIENTS + 1 1/2 ounces Reposado tequila + 1/2 ounce aperol + 3/4 ounce lime juice + 1/2 ounce agave nectar + 1/4 ounces luxardo cherry syrup + 1 spritz of Mezcal INSTRUCTIONS Lightly sweet, pleasantly bitter. The Mezcal adds just a hint of smoke to make a beautifully balanced, interesting cocktail. 24

Buttermilk Brined Fried Chicken INGREDIENTS DRIED SPICE MIX

+ 2 tablespoons white pepper + 1 teaspoon ground mustard + 5 teaspoons paprika + 2 teaspoons fresh black pepper + 2 tablespoons garlic powder + 2 teaspoons dried oregano + 2 teaspoons cayenne + 1 teaspoon celery salt + 1/2 teaspoon dried thyme + 4 teaspoons onion powder + Palm kosher salt BUTTERMILK BRINE

+ 4 cups buttermilk + 1 bunch fresh sage + 1/2 of spice mixture DREDGE

+ 2 cups flour + 1/2 cup cornstarch + 1 tablespoon baking powder + Whole cut up chicken or 2 bone-in breasts, 2 thighs and 2 drumsticks TO COOK

+ 4 cups shortening INSTRUCTIONS 01 Marinate chicken in brine for up to 24 hours. Place chicken in large Ziploc bag and pour marinade over top. Add fresh sage and store in fridge. 02 Preheat oven to 350 degrees. Prepare a baking rack with a sheet pan for raw chicken and one for cooked chicken. 03 Add remaining spice mixture to flour mixture. Whisk together well. 04 Heat shortening to 350 degrees. (Preference is cast iron Dutch oven) Pull chicken out of buttermilk mixture and let drip. Coat firmly in flour mixture and set on raw chicken rack. Complete each piece of chicken. 05 Heat oil to 350 degrees. Place 2 or 3 pieces of chicken in oil and cook 3-5 minutes per side. Place on cooked chicken rack. Put cooked chicken in oven to complete cooking for 15 minutes. 06 Let chicken rest for 5-10 minutes before serving!

BOULEVARD MAY HAVE PAVED THE WAY FOR CRAFT BEER IN KANSAS CITY, BUT NOW SMALL, INDEPENDENT BREWERIES ARE POPPING UP ALL OVER THE METRO, BRINGING AN ENTREPRENEURIAL SPIRIT, CONVIVIAL ENVIRONMENT AND FULL-FLAVORED POURS TO THE CITY AND SUBURBS. In 2018, seven new breweries opened in the KC metro, with more on the way. What makes our town fertile ground for brewery startups? Kansas City dwellers appreciate craft beer more than your average person, says James Stutsman, CEO and co-owner of City Barrel Brewing Company opening in East Crossroads this month. In Kansas City, craft beer makes up about 28 percent of the market share, versus the national average of 12 percent, he cites. In addition, the craft brewing community is welcoming, valuing community over competition. Craft brewers help one another troubleshoot and bounce ideas around. Case in point, before opening, City Barrel launched two collaboration beers with neighboring breweries. Stone’s Throw, brewed at Torn Label Brewing Company, is a juicy New England IPA with apricots and peaches. Gucci Brut, brewed at Stockyards Brewing Company in West Bottoms, is an effervescent, citrusy IPA. Collaboration tastes good, indeed. Ready to find your new favorite hangout and drink? Let’s take a tour. Starting close to home, consider a tasting on the patio at Martin City Brewing Company’s original location or at the newer Mission Farms location. Brooo is their new milk chocolate stout with organic, raw cacao brewed in collaboration with Shatto Milk Company. Or this spring, sample the return of two crowd favorites – Freshly Squeezed Cherry Limeade and Pineapple Whip IPA. Grains and Taps, Downtown Lee’s Summit bar and home brew supply store, recently released its first house-made beers, adding its own brews to the 25-tap rotation. In Independence, pay a visit to newly opened Apex Aleworks, owned by homebrewer Jeremy Parratt just off Highway 70 and Noland Road. In November 2018, Parratt added a small, three-barrel brewing system and 18 taps to his homebrew supply store Apex Brew Wares. Customers can pick up niche hops and barbecue supplies in the store and carry-in food to enjoy with a crowd-favorite English Dark Mild, Coconut Stout or any other beer on tap on the brewery side. In Blue Springs, East Forty Brewing Company opened in 2018 as the city’s first and only brewery featuring 16 taps as well as pizzas on Farm to Market dough crust. Try the Sunrise Saison, a French saison with ginger, citrus and peppery notes, or Right Track IPA. For a full-on brewery-hopping experience, spend an afternoon exploring the Crossroads. Here you’ll find a brewers’ district comprised of Double Shift, Border, Casual Animal, Torn Label and City Barrel Breweries as well as Brewery Emperial. Plan to grab a bite to eat at City Barrel or Brewery Emperial, both of which have full brewpub menu. From Crossroads, take a short streetcar ride to River Market where you’ll find Strange Days Brewing Company. 30

Fish earned the pilots’ respect and improved our future treatment through his example.” After retiring, Fish continued to defend America against biological threats as a medical intelligence analyst. This past January, Fish and his wife, Meg, traveled to Singapore where Fish spoke on medical education. Fish and Meg took a photo of themselves riding an elephant before flying home. The next morning at 8 a.m., at age 63, Fish was gone too soon from this earth. Thank you for your service, James Fishback. May your story influence another life.
