Your Summer to Explore

While ‘explore’ is usually a verb—and sometimes a noun in forms like ‘explorer’ or ‘exploration’—we’re leaning into its active spirit in this issue. Whether your ideal summer is packed with outings or spent savoring it all at a slower pace, our July “Explore” issue is filled with ideas to inspire both. Personally, I find the sweet spot is somewhere in between—just the right mix of discovery and downtime.

Doesn’t summer just seem to hum along at a slower pace? It’s the perfect time to come up with a bucket list of activities to enjoy and ways to unwind and relax. In fact, I hope this letter indeed finds you lying by a pool or a beach or on your boat on Lake Minnetonka, soaking up some much-needed vitamin D. Some of the best summers spent are often not filled with constant activities and trips. Although “the lazy days of summer” aren’t always something we can attain with our packed schedules, it is so refreshing to take at least a little time to slow down and enjoy some simple pleasures.

Some of the best time spent can be a backyard barbecue with friends or spending a day on the water. If you don’t have a boat, consider making this the summer you finally get one of your own, or at the very least, join a Club and travel from bay to bay on our beautiful lake. And if we still have to work at a hectic, crazy schedule, we can at least look forward to planning an adventurous day trip to explore and check out many things to do right here in our area. In this issue, we’ve highlighted some things to do, businesses to check out, and ideas to consider.

I hope you’re able to enjoy all the fun the Lake Minnetonka area has to offer during these hot days of summer. And that you make memories with those around you that you love. Have a blessed and fun Fourth of July, and I will see you around the lake!

How Erickson Marine is helping the next generation of boaters feel at home on the water

Have you ever been to the lake and seen friends fishing together, parents trying to flip their kids off a tube, or families cruising around the lake and thought, I wish that was me? Even if, much like me, you have little to no experience driving or maintaining a boat, a little guidance from a trusted source can go a long way to getting you there.

In Minnesota, that trusted source is Erickson Marine. Founded in 1967 in Hastings, the family-run company specializes in boating sales, service, and storage with an emphasis on quality customer care.

Luke Erickson’s grandparents (Roger and June Erickson), who started the company along with his father Jon, have instilled in him a passion for living life fully on the water.

“It means a lot to me that Erickson Marine was founded by my grandparents and remains a family business today. I grew up loving boating and making life-long memories with family and friends on the water,” Luke says.

How does Erickson Marine help you turn your dream of living the lake life into a reality?

For some people, it’s storing and servicing their boat. Erickson Marine will sell you a great boat, service it when needed, and also store it in the winter. They are a full-service marine dealership with locations in Hastings, MN, along with a sales facility in Tonka Bay on beautiful Lake Minnetonka.

For others, it means helping them buy the right boat to begin with. “The big question I always ask people is, what does a perfect boating day look like for you? Is it your small family going out? Is it taking a couple of your friends and their families out on the water? Is it going to a restaurant? Fishing? Water sports? Is it going to the beach and packing up a cooler?”

Luke says asking those questions helps guide a person towards what they might need or be interested in — something Dan Scardino is very familiar with as well, Erickson Marine’s newest full-time sales associate at their Minnetonka sales location.

And if you’re wondering specifically about boating on Lake Minnetonka, Luke has his favorite spots.

“Truly, one of my favorite parts of the lake to boat on is by Howard’s Point. The bays in that area are a bit calmer, the scenery is still beautiful, and there are a couple of fun little sandbars to enjoy,” he says.

But Luke also acknowledges that the restaurants on Lake Minnetonka — such as Maynards, Fletchers, and others are great spots to stop by when you’re out on the lake enjoying boating with family and friends.

Luke recommends exploring Lake Minnetonka on weekday evenings if you’re new to boating or unfamiliar with your new boat. He says the lake is typically calmer and less busy during the week, allowing for a safe environment to get comfortable on the water.

When asked about his role in the Minnesota boating community, Luke shares, “My main goal for us is to help our customers make great memories by enjoying quality time on their boat with friends and family. As the familiar saying goes, ‘life is better on a boat,’ and I strive to help our customers live their boating season to the fullest.”

FIRECRACKER RACE

Start your 4th of July off with a bang at the Firecracker Race in Excelsior. Run a 1-mile, 5K, or 10K that begins at Excelsior Elementary and winds its way along Lake Minnetonka and through the streets of Excelsior, Shorewood, Deephaven, and Greenwood before ending in the Excelsior Commons. Awards are handed out at 10am followed by a Kids Parade at 11am, and finishing with a petting zoo.

Excelsior Commons is the place to be on the 4th of July. Food vendors open at 3pm with tasty bites, beverages, and live music and festivities throughout the day. DONATION YOGA

At 8:30am Tuesdays, Thursdays, and every other Saturday morning through August 28, you’ll find a great group meeting up in the Excelsior Commons for an outdoor yoga class. Open to all levels, you’ll only need to bring a mat and water. Donations are welcome, which all go to the Community for the Commons, the nonprofit park conservancy improving the Commons. Everyone is welcome, regardless of ability to pay. To date, they’ve raised nearly $34,000 for the park!

Ryan Sathre, General Manager of Lola’s Lakehouse, emphasizes that what sets this dockside retreat apart goes far beyond the stunning view. “Our goal is to provide a total experience that melds unbelievable food and drinks with excellent service, and of course, sitting lakeside with the sun on your shoulders doesn’t hurt.”

The ways this one-of-a-kind destination stands out from the rest are endless, but what Ryan finds especially meaningful is that most of the team is made up of locals who live in Waconia. “Many of them have worked here for years. I think that’s really unique for a restaurant of our size.” He also says that the relaxed lakeside vibe keeps the team in a great mood. “It’s a meeting place in the community, and we just all love being a part of it.”

And it’s true, the moment you step inside, you know you’re not in Kansas anymore. From the New England boat house vibe to the professional, welcoming staff, you’ll have to fight the urge to exhale “aaaahhh” out loud. “We want guests to leave feeling they got to unwind with great service, food, and drinks!” Check, check, and check.

If you’re visiting on a Wednesday or a Sunday this summer, you can look forward to musicians performing live from the barge floating on Lake Waconia, and on Fridays, they have a resident DJ spinning tunes until sunset. “We’re situated right on the lake and manage the marina, so boaters can tie up their boats right off the patio!” There are also many exclusive seasonal events, such as Oyster Fest, a Crab Boil, and a Herradura Tequila Dinner, that you’ll find filling their events calendar, so you, in turn, can fill yours.   They have the entertainment covered, you say, but what about the food? Well, how long do you have? Ryan shares that the must-try dishes for the summer are the Pan Seared Sea Scallops and the Tagliatelle Frutti di Mare (gulf shrimp, scallops, mussels, fresh fish, local tomato, and prosecco, yes, please).

“You just can’t beat fresh seafood lakeside!” Most locals have their favorites, but you’ll be hard-pressed to find something from this seafood-inspired menu with traditional American fare that you don’t fall in love with. At the bar, you’ll find talented mixologists who can shake up and serve just about anything, but if summer had a taste, it would be their Spicy Watermelon Palomas or Kiwi Vodka-Tinis.

At a certain age, people start asking what your retirement plans are going to look like. I’m at that age. The chattering is starting even though I still have a son in high school. It doesn’t seem fair that I’m negotiating curfews and at the same time fielding retirement inquiries. It

feels much like when well-intentioned but irritating strangers ask what your post-high school plans are going to look like. Or when you’ll get married. Or where you will live. Or if you’ll have a baby. My answer to all of the above was/is — I don’t know.

Literally, no clue on the retirement question. And I’m not talking about the economics of it. Everyone has all sorts of different circumstances. I’m talking about how and

where to spend the span of time. How will we spend the time? I’m talking about what will the days look like without kids, sports, insane schedules, yard work, house projects, pleading with anyone to walk this dog, and all of these fixed patterns we have lived in for so very long. It’s hard to remember the before. And I like routines.

I feel a bit of pressure to come up with the correct answer, but I’m not sure what the correct answer is. Maybe it’s time to get back to work on what is next. If I take my cues from generations before me, it offers options (some quite dismal) but no insights on what to do in preparation.

For example, my paternal grandmother was widowed at fifty-five and retired at age sixty-five from her secretarial job. She told me she deeply regretted retiring so early, but that was expected at that time. She enjoyed her job and coworkers but, more importantly, ended up living thirty-three more years. A very long stretch to live alone and fill the days. My dad didn’t live long enough to officially retire at all.

Not a great option either. Therein lies the problem, nobody can see around the corner.

When some of my friend’s parents retired, they immediately fled south, spending their winters in warmth. Many eventually adopted a no-snowblower lifestyle permanently. As an outside observer, that doesn’t appeal to me. There is no universe where my husband and I will find ourselves in a planned community, wearing athleisure, alternating playing golf and pickleball with neighbors, and having a Martini each day at 4pm. It’s just not “us.” But what is “us” when we have been doing the same thing for decades?

But as I’m mulling this over, I heard an interview on the radio with a psychologist who specializes in ‘psychological richness.’ Their research demonstrates how novel experiences and pushing ourselves to do and eat and see and attempt new things improve life satisfaction and happiness. And unique experiences can contribute to longevity. He was talking to me. I am known to order the same thing at my

favorite places, not wanting to risk it. I don’t even want to take a chance on an unfamiliar chicken sandwich.

Yet I have spent years giving pep talks to my kids about exploring the world. Trying something new. Learn something new. Exploring their options. I need to start giving myself the pep talk.

Could we do something crazy? Do we still have it in us to entertain wild ideas that might make no sense to anyone else? We have always cut our own path. I really feel a surge of energy when I think about it. It’s a sign. Maybe we move overseas and volunteer in a school? Maybe we go live near a national park and hike every day? Learn cribbage? We could spend Thanksgiving in the Maldives? Spend a summer living in a remote cabin in Alaska? Play pickleball like everyone in America?

Maybe the secret is just to keep making the plans. I can start small now to prepare.

I will try the unique chicken sandwich. And I could be talked into buying a tennis dress.

HOW THE MINNEAPOLIS FOUNDATION IS MOBILIZING DONORS TO TURN IDLE FUNDS INTO COMMUNITY ACTION

Across the country, more than $250 billion is sitting in Donor Advised Funds (DAFs)—money that has already earned donors a tax break but hasn’t yet reached the very worthy communities and causes those donors care about. The Minneapolis Foundation is on a mission to change that.

“DAFs are powerful philanthropic tools, but they’re only impactful if they’re being used,” says Chris Beach, Senior Vice President of Philanthropic Services at the Foundation. “We’re focused on helping donors move from intention to action—to be generous now, not just someday.”

That’s the core message behind the Foundation’s new Give Advised campaign, which encourages DAF holders to take the next step: actually giving. “You probably got advice to earn that money,” the campaign declares. “Now get some to give it away.”

ACTIVATING DORMANT GENEROSITY

Unlike private foundations, which must distribute at least 5% of their assets each year, DAFs have no minimum payout requirement. That flexibility means many donors set aside funds with good intentions—but then leave them sitting idle, sometimes forgetting the money there or getting stuck in a giving rut, directing support to the same causes year after year without deeper engagement or reflection.

The Minneapolis Foundation sees an opportunity to change that dynamic by making it easier, more rewarding, and more personal for donors to connect with pressing local needs, and by reminding donors that a DAF isn’t a donation until it’s spent.

“We have a DAF problem,” Beach explains. “They’re fantastic tools, but they’re underutilized. Too many institutions are sitting on these dollars without offering the kind of support donors need to turn giving into action. We’re changing that.”

As part of its long-term vision, the Foundation is working to more than double the dollars invested in the community over the next 10 years. It’s an invitation for both current and future donors to be bold, recognizing that the time for transformational giving is now.

GIVING WITH INSIGHT—AND IMPACT

A key part of the Foundation’s strategy is activating its philanthropic advisors to help individuals, couples, and families make the most of the “advised” part of Donor Advised Funds by clarifying what they care about and connecting them with organizations and opportunities that align with their goals.

“This is a pivotal moment,” says Beach. “With so many urgent needs in our communities—housing, food access, youth opportunity—we’re helping donors get closer to the issues and be part of real solutions.”

The nonprofit landscape is shifting rapidly, with policy and funding changes creating new challenges and opportunities to reimagine what’s next. That makes it more important than ever for donors to be agile, informed, and engaged—qualities the Foundation is uniquely positioned to support.

A NEW KIND OF SUPPORT

What makes the Minneapolis Foundation’s approach unique is not just its commitment to impact, but its commitment to more informed and connected donors. “We walk alongside our

donors,” Beach says. “We listen deeply. We help them understand what’s happening in the community and how their dollars can do the most good.”

This approach includes hosting events, learning sessions, and facilitated conversations with nonprofit leaders and changemakers that help donors discover the possibilities and personal connections they crave. It also means offering flexible tools—from research and family philanthropy resources to impact investing and long-term legacy planning—to help donors and their families give with confidence and clarity.

“Giving should feel meaningful. It should feel joyful,” says Beach. “And it should feel connected to something real.”

THE RALLYING CALL

The Foundation is not shy about asking donors to move resources off the sidelines. As one of the campaign ads declares, “A Donor Advised Fund is a philanthropic nest egg. Crack it.”

“This is the time,” says Beach. “This money was set aside to help others. Let’s make sure it does.”

Health Goals Meet Vacation Mode

Smart strategies on staying healthy while enjoying every bite of vacation

The age-old question, what should we eat for dinner, unfortunately, doesn’t take a vacation. Oftentimes, the most stressful part of a trip is planning meal options in a location you may not be familiar with without the reliability of a fully stocked kitchen. However, you can (and should!) try new foods, eat that extra dessert, and know it is possible to stick to your health goals. But everyone is different. Assessing where you’re at and what you want to accomplish is the first step.

“While some people who eat very healthy and exercise consistently at home in their normal routine may want to let ‘loose’ a little more on vacation, others may like to try to stick to their normal regimen on vacation or continue to make progress towards their fitness goals,” says Sam Topping, a certified personal trainer, nutrition coach, and founder and owner of Top Training. “My rules for vacation are to do whatever you want, as long as you feel good about it. Your vacation should be exactly how you want it to be.”

While this is absolutely what you should do on vacation, infusing a little balance and staying on track can ensure you feel totally relaxed and recharged. Sam shares some easy tips and tricks to find that perfect balance.

FOCUS ON FRESH LOCAL FOODS

Putting an emphasis on fresh food could be as easy as a trip to a farmers’ market or checking out the local restaurant options. “For the freshest options, consider items that may be grown, harvested, or caught locally in the area. For example, if you’re vacationing in a coastal city or close to the ocean, fish will likely be one of the freshest protein options available (think places like Hawaii, East and West Coast, Caribbean). Why not take advantage of tasty and fresh food that is unique to the geographical area you are in?” says Sam.

PLOT OUT YOUR “SPLURGE” MEALS

If tracking calories is a priority, consider how you approach the day as a whole. “A good approach on vacation could be to eat light during the morning and day and ‘save’ most of your calories for a splurge dinner out at a fun restaurant you’re really looking forward to,” says Sam.

You can even mix and match dishes with those you are traveling with if you want to try multiple items on a menu. “You can easily share dishes with the people you’re traveling with. Instead of ordering your own entree for every single meal, you could order multiple dishes and share with others,” suggests Sam. “Another great approach my wife and I use is to order a bunch of appetizers or smaller plates and share everything! So instead of each of us only getting to try 1-2 foods at dinner, we can share 4-5 different items and get more of a full experience of what that restaurant has to offer.”

STOCK UP ON SNACKS (AND HYDRATE!)

Take a look at what activities or events you have planned throughout the day, and be sure your body is fueled appropriately with snacks and other easy-to-eat foods. “If you have a full day of activities or if you are the kind of person that prefers to have snacks on board, some great on-the-go options you can grab at gas stations or grocery stores are: beef jerky, protein shakes or bars, baby carrots, fruit, sliced turkey, and Greek yogurt,” says Sam. These can easily be stashed in a hotel fridge to last for the duration of your trip.

“Snacks can also be helpful on vacation if you want to keep things lighter during the day and consume most of your calories

in a larger dinner in the evening. This strategy also works well if you are going to be on your feet and doing activities during the day. Higher protein and/or high fiber snack options may help you stay satiated throughout the day if you are banking calories for a bigger meal in the evening.”

And don’t forget to hydrate, especially if you’re out in the sun. “Drink a full glass of water before touching any food at meals,” recommends Sam. “Many people don’t drink enough water on vacation, and being thirsty can often be mistaken for being very hungry. This may help fill you up a bit before you dive right into food.” Tip: Most airports, hotel lobbies, and resorts have areas where you can refill water bottles.

And finally, don’t forget vacations are about the experience of trying something new. “Eat slow, enjoy every bite, focus on keeping conversation with whomever you’re with, and soak in the ambiance and experience of a new restaurant. Make it about spending time and conversing with the people you are with instead of pressuring yourself to eat properly, or on the flipside –mindlessly shoveling food in till you’re stuffed.”

The eye care center quickly expanded, adding locations in Glencoe and Norwood Young America in 2007, followed by a Minnetonka clinic in 2012. A significant milestone came in 2014 with the merger of Crow River Eye Care and the addition of Dr. Scott Glaser as the fourth partner, bringing services to Hutchinson. Technology is also revolutionizing treatment. In the realm of glaucoma care, minimally invasive glaucoma surgeries (MIGS) and long-acting drug implants now offer alternatives to daily eye drops. For early-stage keratoconus, cross-linking procedures can now halt disease progression without the need for corneal transplants. And for patients over 40 seeking visual freedom, Clear Lens Exchange—a procedure that places premium lens implants to correct nearsightedness and or farsightedness—is becoming increasingly popular.

“People used to accept reading glasses and cheaters would come with age for everyone,” Dr. Krassin explains. “Now, we’re seeing a shift toward proactive vision correction that restores near and distance vision—often eliminating the need for glasses altogether.”

On the optometric side, SWEC is addressing the rise in digital eye strain, dry eye, and myopia, particularly in younger patients. The team incorporates anti-fatigue lenses with blue light filters and anti-glare coatings for computer use to manage screen-related strain and slow myopia progression. Annual eye exams remain the cornerstone of preventative care, enabling early detection of silent threats like glaucoma.

New tools like SightSync and neurolens also allow optometrists to better evaluate symptoms such as headaches or eye misalignment—conditions that are often overlooked but can be life-changing when properly addressed.

What’s next for SWEC? Continued expansion of its integrated model, deeper investments in AI and imaging technology, and a continued commitment to patient education and comfort.

DRINKS UP ROSEMARY GRAPEFRUIT

Crafting Cocktails with Fresh Garden Ingredients

Summer is here and what better way to quench your thirst than with drinks crafted from the season’s fresh produce? Embrace the natural sweetness of sun-ripened fruits and the invigorating zest of garden-fresh herbs. From crisp berry infusions to fragrant herbal blends, enjoy the art of crafting delicious and revitalizing beverages that celebrate the fresh flavors of summer.

LIME MINT

OSE MOJITO

Ingredients:

• 10 fresh mint leaves

• 1 lime, cut into wedges

• 2 tablespoons white sugar (or simple syrup, to taste)

• 2 ounces white rum

• 1 ounce rose water (adjust to taste, as it can be potent)

• Club soda or sparkling water

• Garnish: Mint sprigs, lime wedges, edible rose petals (optional)

Instructions: Muddle:

Place the mint leaves and lime wedges in a glass. Add sugar. Use a muddler to gently crush the mint and lime. Pour the white rum and rose water into the glass. Stir well. Fill the glass with ice. Top with club soda or sparkling water. Stir gently. Garnish with a mint sprig, a lime wedge, and, if desired, edible rose petals.

PEAR FIZZ

Ingredients:

• 2 oz Gin (or Vodka)

• 1.5 oz Fresh Grapefruit Juice

• 1 oz Pear Liqueur (or Pear Juice)

• 0.75 oz Fresh Lime Juice

• 1 sprig of Rosemary

• Sparkling water

• Garnish: Rosemary sprig, grapefruit slice, pear slice

Instructions:

Place the rosemary sprig in a cocktail shaker. Lightly muddle the rosemary to release its oils. Add the gin (or vodka), grapefruit juice, pear liqueur and lime juice to the shaker. Add ice. Shake well until thoroughly chilled. Strain the mixture into a chilled glass filled with ice. Top with sparkling water or Prosecco. Garnish with a rosemary sprig, a grapefruit slice, and a pear slice.
