Love Local All my writers, editor, and I refer to this as our “Love” issue for obvious reasons. However, in thinking about this issue, we didn’t want to only write about relationships. What do you love? It could be a person, place or thing, or something spiritual. It could be something that moves you, a passion or a life’s work, your art, or a best friend and confidant. I don’t know about you, but I am torn. I find myself torn between resisting the commercialization of another greeting card holiday and indulging in all the sweet excuses to enjoy the season. We’ll each arrive at different answers based on our preferences and personalities, but what we hold in common is an opportunity to make sure those around us know we love them. And regardless of how you choose to celebrate, we hope the pages of this month’s magazine will help you do just that as we celebrate and highlight what’s to love in your local community. “Love local” means your local businesses, those in your community - but it also means loving what is nearby. In this issue, we cater to some indulgences and suggest a way to spark some ideas for a favorite getaway. We tempt your culinary delights from a main course to a delectable combination of wine and chocolate. There are Valentine's ideas and perhaps a new look at a gym to get you shipshape this spring. And for those of us that hibernate more often than we would like at this time of year, we dig into how you can fall in love with your home all over again with a little help. Spotlight: 3soteric HOW ONE GYM IS USING MMA TO TRANSFORM YOUR MIND AND BODY. ARTICLE BY LAUREN BEAUBAIRE PHOTOGRAPHY BY ANNA KOSTOCHKO
“I decided to be a personal trainer when I was about 12 years old,” recalls Merrick Morlan, owner and founder of 3soteric, an MMA (mixed martial arts) gym. The decision was made while Merrick sat outside the doctor’s office, listening to the doctor speak to his parents about his diagnosis: cystic fibrosis (CF). “The doctor was preparing my parents, saying I probably won’t go to college and might be lucky to live into my late 20s. And that’s when I decided I wanted to be healthy and help others with their health and wellness journey,” says Merrick. Merrick took up martial arts when he was young, driven by his CF and his desire to be a Teenage Mutant Ninja Turtle. (He was 12 after all.) Merrick has practiced martial arts for over 30 years, training all over the world in Thailand and Japan, as well as Las Vegas, before settling down in Minnesota to focus on coaching. “I’ve been coaching since I was 20,” says Merrick. “I was at Lifetime Fitness and enjoyed my time there, but I wanted the ability to be more impactful and be able to really personalize and direct someone's health journey overall.” And so Merrick opened 3soteric in Mound, using martial arts to transform people’s health, incorporating a three-tiered approach: nourishment,

movement, and enlightenment. Learning what to put in your body is vital. Merrick’s wife, Kristi, a naturopathic doctor (ND), operates her medical practice inside the gym, helping members with their nutrition. Through neurogenetic testing and additional lab work, testing hormones, adrenals, high sensitivities, and more, Kristi helps you discover what works for your body and finally understand why certain diets work for your friend but not you. At 3soteric, the second tier, movement, is all about moving your body and being mobile throughout your entire life. “Martial arts allows you to use your body at 360 degrees, gaining stability, balance, and agility without damaging your joints,” explains Merrick. The third tier, enlightenment, ensures your mind is engaged. “Workouts can get very boring quickly, turning into part-time jobs where people show up to the gym because they think they have to,” says Merrick. With MMA, you’re always engaged, it’s exciting, and empowering. “I do teach actual fighters,” says Merrick, “but 90% of 3soteric members are there to improve their health, improve their life. My biggest demographic is moms. Women 35 to 45 years old tend to stick around the longest working out alongside professional fighters.” MMA can seem intimidating at first. However, Merrick assures you’ll never be thrown in a ring. “I'm going to give you a big giant pillow to beat up, and you’ll learn to hit something big and soft and fun, and there's no way you lose against a pillow. You’re going to have a blast,” says Merrick. No matter what level you’re at, Merrick will personalize your workout and make it a challenge for you. “For some, just getting to the gym is a big deal,” says Merrick. This is where Violet the gym cat comes into play. “When you’re on the “Violet program,” seven days a week you come in, spot the cat, and then you can go,” explains Merrick. “I've had people lose 40 pounds in a year, and they're solely showing up to look at the cat. Red Wine Braised Short Rib Ingredients MEAT

Warren’s Restaurant in Loretto has become a staple of the community and has been serving up delicious comfort food since 2019. Chef Benjamin Eidem was generous enough to share the classic Red Wine Braised Short Rib recipe with us. “An at-home chef can easily recreate the short ribs with a little time and patience,” said Benjamin. So put your chef skills to the test, and then enjoy with your favorite glass of red. Benjamin recommends a dry red wine with this meal. His go-to is a pinot noir

• Bone in short ribs (Tip: Account for one bone per person. A larger bone will average around 1 lb. a piece and will yield 7 oz. of finished meat. Smaller bones will yield 4 oz.) • Salt • Pepper • 2 tablespoons olive oil • Mirepoix (2 ribs celery, ¼ cup yellow onion, 1 jumbo carrot), chopped • 1/4 bottle of red wine • 2 quarts beef stock • 3 sprigs fresh thyme • 2 sprigs fresh rosemary • Whole head of garlic, halved • Flat leaf parsley, chopped

1/2 cup of melted butter 1/4 cup of flour 1/2 cup red wine 1/2 cup of beef stock 1 tablespoon of cornstarch 1 tablespoon water
Directions 1. Preheat oven to 300 degrees. 2. Season the meat with salt. In a Dutch oven or frying pan, heat up the olive oil and sear all sides of the meat. (Tip: Cooking times do vary between electric and gas stoves, and what pans are being used. Benjamin recommends a Dutch oven.) 3. In the Dutch oven, add in the Mirepoix, 1/4 bottle of the red wine, beef stock, thyme, rosemary, garlic, and a pinch of salt and pepper. Place the meat bone side down, ensuring that it is not fully submerged in the liquid. Cover tightly and
place into oven for at least 2 ½ hours. (Tip: A simple fork will help you gauge the tenderness of the meat. The meat should be easily turned, but not falling apart.)

4. While the meat is cooking, you can make the demi-glace. Make a quick roux of ¼ cup of the melted butter and flour over a pan. Keep it moving to cook off the flour taste.
7. The sauce should begin to thicken. To help thicken, mix the cornstarch and water in a separate bowl and then add to the pan with the glace.
5. Add in ½ cup of the red wine to the pan with the roux. Stir together for a few minutes to cook off the alcohol.
8. Check that the meat is fork-tender and pulling away from the bone. Serve over mashed potatoes if you would like, and cover with the demi-glace. Garnish with chopped parsley. Enjoy!

February and love go together like wine and chocolate. Or do they? Professional sommelier Sherry Perra says it is possible. However, like most romantic pairings, ideal matches with wine and chocolate can be complicated. After 25 years in the medical device industry, Sherry decided to turn her passion for wine into a full-fledged career. After a rigorous certification process that included lectures, tastings, reviews,
and examination Sherry was certified through the USSA, United States Sommelier Association. This training is not for the weak and concludes with a seven-part theory exam and blind tastings. The course requires a minimum passing grade of 70% in each examination. A slim 20% of students pass and receive their credentials. As an expert, Sherry recommends drinking what you like but also willing to be adventurous. Many of us purchase wine based on
factors ranging from familiarity to price point to label design which are not always the best strategies. When purchasing wine, Sherry suggests considering the occasion and the food pairing. She says, “Try to match the intensity of the flavors, flavor profile, and texture. For example, a delicate fish with lemon will pair better with a lighter-body wine with citrus notes and higher acidity. Individual preferences are important because we all have different taste profiles. But if unsure, ask for assistance. Sherry says she sincerely appreciates getting other expert opinions. “That’s how we learn!” she says. Education is clearly part of the enjoyment for her and can be for both novice and expert. Local wineries in Minnesota have been getting accolades and are worth a visit and easily accessible. Many vineyards offer tastings and an exploration of their unique processes. Sherry also said the University of Minnesota has done a great job with cultivar development of cold hardy varietals such as Itasca. They have invested a lot of time and resources into the project. Wine is available at a wide variety of price points in stores and in restaurants, but Sherry cautions expensive does not always mean better. “I personally think finding the hidden gem is fun which is usually a rare wine of great value. No matter your price point, quality is most important.” Sherry contends that wine and chocolate are two of life’s greatest pleasures. But how are they best enjoyed? She suggests tasting light to dark and beginning with the lightest-bodied pairing and working your way to the fullest-bodied. “Start by awakening your palate with a small sip of wine. Then place a small piece of chocolate on your tongue and let it melt slowly in your mouth. You want the chocolate flavors to develop as it melts throughout your mouth. Once the chocolate is almost fully consumed take another sip of wine. Ideally, the wine should enhance the taste of the chocolate, and the chocolate compliments the suitable characteristics of the wine.” As with food and wine pairing, intensity matters. Dark chocolate has lower sugar content, and that bitter intensity is best paired with a wine that has a hint of sweetness for balance. Sherry shares, “The most magical pairing is Banyuls, which is one of France’s most important sweet, fortified wines, made primarily of Grenache or Grenache Blanc grapes. Sweeter wines like a vintage or tawny port work great. Seek out a juicy Zinfandel or a New World Pinot Noir. Just avoid dry reds with high tannins because those will accentuate the bitterness.” With Valentine’s Day approaching, we all need tips on how to impress our loved ones. Sherry has a perfect idea of how to cap off an evening. “If you are surprising your special someone with hand-dipped chocolate-covered strawberries, try a sparkling red like Brachetto d’Acqui from Italy or the sparkling rosé called French Kiss by JCB.” Wine and chocolate. When you see or hear the word, “February” it often conjures up thoughts of romance because of Valentine’s Day. Although it has fewer days than any other month, in Minnesota, it can feel like the longest month to get through because of the cold temperatures; and let’s face it, we all long for spring! In addition to romance, February is a time when we consider home remodeling projects. It wasn’t that long ago when you were basting a turkey or carving up that ham during the holidays when you whispered under your breath, “I need more counter space and a deeper sink!” Sometimes even the smallest change in your kitchen can make one feel inspired. Perhaps it’s new curtains or a different color on the walls that jump-starts your culinary inclinations. Or maybe February is the perfect time to “Love Your Home” with a new faucet and sink or purchase a new oven that can actually steam cook your food. Recessed ventilation hoods for your stoves, (that are installed in the ceiling), ovens with the capability to steam food, and stoves that offer the Sous-vide method of cooking food, especially meat or fish, by vacuum-sealing and immersing in warm water, were also worth considering. In lighting, there’s something new called “nature-inspired elements with neutral raw textures” and lighted mirrors that help to create a desired atmosphere. One of my favorite items that I personally am considering is the elongated kitchen sinks with depth. Back in the day, we used to call them “farm kitchen sinks.” They were long, however, shallower than the fantastic sinks you will see at Ferguson. I appreciate being able to use a kitchen sink for bigger pots and soaking the stains out of fine washables. My ultimate reason for wanting a new, deeper, and longer sink with a fabulous faucet sprayer is for bathing my little dogs! If there’s one room in the house that screams LOVE more than any other room, it’s the kitchen! “It’s the LOVE SPOT

in the house, the room that everyone gathers in. It’s where the best memories of family and friends are created,” said Elizabeth. Melissa agreed, “Even a small kitchen renovation is uplifting as well as inspiring!” Elizabeth added, “A new Cambria countertop on an island could be the catalyst for learning French cooking. Or simply entertaining more often.” I have always liked the look of chrome faucets for the bathroom sink and a brushed nickel faucet in the kitchen. So, I asked if chrome faucets had gone out of style and been replaced by the dark faucets that are so popular. Melissa said, “Chrome is still popular. It’s probably around 38% of the market.” Back in 2011, my husband and I underwent a substantial $250,000 renovation project in our home.
It made me feel good to know that the faucets I selected then are not out of date today. We bought our faucets from Ferguson, and twelve and a half years later, they’re still performing perfectly. Purchasing faucets from retail hardware stores can be less expensive than one might pay at Ferguson. However, with Ferguson, many of their manufacturers have substantial warranties, specifically on the inner workings or guts of their faucets. Purchasing faucets from retail hardware stores are often made with plastic, which limits the amount of time you have before you are possibly looking at replacement costs. Not to mention the headaches of having a leaking faucet ruin your beautiful hardwood floors. So, it’s always a good idea to ask how things are made. Typically, you get what you pay for, and Ferguson has not let me down. It’s always fun to “tweak” a room at the beginning of the year; it seems to bring new energy into the house. Whether the homes we live in are large or small, comfort and lastability with a dash of color, design, and the three F’s, “family, friends, fun” and love is the ultimate definition of “home sweet home,” in any language.

Despite the joys and rewards of being a parent, raising kids often leaves parents with little time and energy to nurture their marriage. This isn’t just unhealthy for your relationship, it can also affect the way you relate to your kids. Add to that, kids grow up, bringing to their
own relationships what they witnessed growing up. Nurturing your marriage benefits your entire family. A retreat away from the responsibilities of home and kids is a great way to re-ignite the spark and may be more doable than you realize.
WEEKEND CAREGIVER A significant hindrance to getting away is finding suitable arrangements for the kids. Relatives are a great source. Even if they don’t live nearby, it may still be a feasible option. If your parents or relatives live a distance away, ask if you can leave the kids with them for a night or two the next time you visit. That makes for a great bonding experience for grandparents and grandkids who don’t get to see each other often. Another possibility is asking a friend or neighbor with kids similar in age to do a weekend exchange. Or, talk
with the parents of your child’s friends about planning future weekend sleepovers in advance so each of you can make the most of your weekend of freedom. MAKE IT A SURPRISE
Pull this off, and you'll have your partner eating out of your hand. Concoct a story about going to dinner, to an out-of-town furniture store that you've been dying to visit, or whatever it takes to get your partner on the road with you. When you reach your destination, act confused, and explain you got your directions wrong. Pull into a hotel parking lot (conveniently where you've made reservations). Then say you'll run in and ask for directions. After you've checked in, see how far you can drag your partner along before your partner discovers the surprise.
Research and plan your weekend getaway, so it isn’t over before you get started. Talk about your wants and expectations with your partner beforehand so you don’t arrive with different ideas that’ll lead to disappointment. Come to a mutual agreement that meets both of your needs so you’ll both come home feeling renewed. Discuss costs and spending in advance to avoid arguments that could ruin the weekend. Turn your phone off to avoid unnecessary interruptions. But also give the phone number of where you’ll be staying to the sitter. Remind the kids to call you only in an emergency. Finally, keep in mind some things might not go as planned. Take it in stride, and be flexible because the weekend is just about renewal and enjoying your time together.

Valentine’s Day FUN
PARTIES FOR KIDS – AT SCHOOL OR HOME
Whether you're helping with your child's Valentine's Day party at school or planning one at home, there are so many fun, creative ways to keep kids busy and make their party a blast. Try some of these ideas kids are sure to love.
CRAFTS Heart suncatcher. Lay a sheet of wax paper in front of each child. Then have the kids cut red, pink, and white tissue paper into squares or other shapes. Next, lay a tissue square on the wax paper and brush it with liquid starch. Continue by overlapping the pieces of tissue to create an 8" x 8" collage. When the collage is dry, carefully peel the tissue away from the wax paper. Cut the collage into a big heart. Then put a single hole punch in the heart, and thread a piece of yarn or ribbon through it to hang it. Heart structures. Provide each child a supply of gummy hearts and toothpicks, and let their creativity take over. They can build a house, sphere, rocket, airplane, or whatever their imagination desires. Finger paint Valentine. Fold a piece of paper in half, and cut out a large heart. Next, place the paper with the big heart-shaped hole on top of another piece of paper. When done, remove the top sheet, and you'll have a colorful heart image underneath. Valentine candle holder. Give each child a glass jar. Have them start by cutting red, white, and pink tissue paper into small hearts or other shapes. Using a mixture of one part flour to two parts water and a paintbrush, paste the tissue shapes onto the jar overlapping each other until the jar is completely covered.
GAMES Musical hearts. This game is played similar to musical chairs. Cut out enough hearts for the number of players. On each heart, write an action such as “rub your belly,” “dance,” and “pretend you're an elephant.” When the music stops, everyone must act out the heart they landed on. Pin the heart on the Tin Man. Draw the Tin Man on a large sheet of poster board, then cut it out. Have each kid cut out a heart from construction paper. Then blindfold and spin each child around, and have them try to place the heart on the Tin Man's chest. Candy heart bingo. Buy a Valentine's Day bingo game available through many online retailers. Then use candy hearts for the markers. Valentine's Day word find. Have each kid write 'Valentine's Day Cupid' on a sheet of paper. Then have them write down as many words as they can make from it. Offer prizes for the most words, longest word, and the most rhyming words.

2023 Klondike Dog Derby
WATER STREET, EXCELSIOR | 1:00 PM On February 3rd and 4th, 30 sled dog teams will race in Excelsior’s 2023 Klondike Dog Derby. The race starts at 10am on Feb. 4, but there’s tons of family-friendly events the day before and day of, including sled dog rides, Hug-AHusky & Meet-the-Mushers event, sled decorating contest, Klondike Village with food, warm beverages, tap beers & spirits, bonfires, games, and more.
