The Klondike Dog Derby Sled Dog Race

The Klondike Dog Derby is a two day event celebrating Excelsior's history and bringing the community together for a weekend of food, hot beverages, campfires, and a sled dog race. Pre-race events will take place on Friday, February 4th. The day kicks off at 9:30 A.M. with sled dog veterinary checks followed by a chance to meet the mushers and their Huskys. Fostering Friendship into Forever ON E COUPLE SHARES TH E INSPIRING STORY BEH IN D TH EIR LOVE. ARTICLE BY JE N L ARSE N FORTNE R

Barb Schultz & Ron Verdoorn

It’s a crisp winter day when I visit Ron Verdoorn and Barb Schultz at The Waters in Excelsior. Their apartment at the senior living community, where they have lived since May of 2021, is warm and bright just as they are: warm and bright. This lovely couple met as high school students in Albert Lea, but their love story does not begin until many decades later. If any two people have been blessed with long simmering kismet, it is these two. Ron grew up in the small community of Hollandale, Minnesota. Barb tells me “The Hollandale Boys” had a reputation of mechanical know-how and fast driving. So much so, her parents wouldn’t even allow her to catch a ride home with boys from Hollandale when she was a teenager. Barb assures me that Ron turned into a wonderful man despite his penchant for cars and motorcycles.

He grins and confesses to years of enjoying motorcycles and a daredevil stunt or two. Ron marries his first wife, Barb Solma, in 1957, and Barb married her first husband, Leo Schultz, in 1959. The four of them were best friends. Ron became a career military man rising to the rank of Army Major living all over the country and the world with his family. Barb and her husband lived out of state for a time but returned to Minnesota and both worked as educators in the Minnetonka area. Their high school graduating class in Albert Lea was a close-knit group who consistently gathered for reunions. Ron and Barb saw each other every five years at these events. Barb and Barb Solma were close friends and always enjoyed catching up in person at reunions. The couples kept in touch through annual Christmas letters as their families grew and changed. Sadly, Barb and Ron both lost their spouses in 2010 and 2013 respectively. In 2013, Barb was on the class reunion committee, busy planning the event for fall. She got a call from Ron that summer as he was sorting through things and came across every issue of their school newspaper, the Ahlahasa. He wanted to know if Barb wanted them since she had worked on the paper. He mailed them to her and called to follow up. While discussing their upcoming 60th class reunion, Ron made a simple offer that changed everything: he offered to pick up Barb and go to the reunion together. I ask them if they considered it a date. They both say no. Barb asks Ron, “Do you remember what you said?” Ron responds, “I said, how about I pick you up for the reunion and we can go together so we won’t have to walk in alone,” Smiling, Barb says, “Yes. Exactly.” On the final evening of the reunion weekend, Ron invited Barb to dinner; just the two of them. Barb shares that she knew then that her life was about to change forever. Before Ron headed back home to Texas, they dined where many Minnetonka locals hope romance will blossom: Maynard’s. Hearing their story lead me to wonder, what is dating like in your late 70s? It turns out it’s exactly like dating at every other age. Barb visited Ron in Texas and he visited her here. They had dinners and favorite restaurants and started traditions. They dated long distance for two years before tying the knot in 2015. The priest who married them mentioned marriage classes, but Ron gently reminded him they had a collective 106 years of marriage between them. I joke with them that they should teach the classes at this point and share their secrets to success. Ron comments, “At this stage of life, all those nickel and dime things that bother you, we don’t have that problem. We have never even had an argument…have we?” Barb shakes her head. “We haven’t. The great thing is we can talk about everything. Anything. There is no holding back. We can talk about Barb and Leo because we have that shared history. A lot of people feel like they have to hide those things or avoid them; not talking about the past. We talk about everything, and Ron has such interesting stories. He has world travels and appreciates art and tells stories with such vivid description.”

“And what about all those looking for love?” I ask. Ron shares some insight, “People think being different from each other is good. But I think having a shared history helps. We knew each other quite well, had a lot in common. And it helps if you don’t let the small things bother you.” Barb elaborates further, “As you go through life, all of us lose people we love. All of us. Stop and think about what is really important, and it’s those people you love. Keep those people you love and make them more important than you are. It’s easy to get all upset about little things that have no importance.” Ron adds, “Like things. I left a houseful of things behind. Things are not important.” I am so charmed by both of them. I make a mental note to try and not irritate my husband when I get home, make my laundry stories far more engaging, and skip ordering another lamp. So how does a couple, who seem to have it all celebrate Valentine’s Day? Barb’s ideal Valentine’s Day is to have a nice meal at home with a glass of wine. She plans on making a special dinner. She asks Ron what he would like if he could choose anything. He smiles and immediately says, “a baked potato and a tenderloin wrapped in bacon. And pie for dessert. Pumpkin or apple.” He tells me that he has married a very good cook and they both beam. I tell them I think it is inspirational for other people to see that you can find love at every age. They make it look effortless. They say they hope that they can bring hope to others, especially now when so many need some. Barb says, “We wake up and just think, we are here! We get to have another day together.” What strikes me most about Barb and Ron is their joy of being together is rooted in a long-standing friendship. A relationship built and nurtured over years. This is what’s possible when one person bravely extends an offer to another who bravely accepts. So nobody has to walk in alone. Love grows. Oh, to be so lucky in love. Twice. theatre A Historic Theater Bringing Entertainment & Delight to the Lake Minnetonka Community.

When Greg and Marissa Frankenfield bought the Old Log Theatre and attached restaurant Cast & Cru in 2013, theirs would be the most recent chapter in the theater’s long history. Dating back to the 1940s, the Old Log Theatre stands as Minnesota’s oldest professional theater. And in some form or another, there have been performances every year since. It’s a legacy the Frankenfields don’t take lightly in the age of COVID. “I think people are hungry for a chance to get out and be entertained. There’s something about live theater that is unique, that you can’t get any other way,” says Greg. With their current show, “The Play That Goes Wrong,” they seek to continue the tradition to “entertain and delight”.

But long before the Frankenfields, even before the city of Greenwood came to be, the Old Log Theatre started out as just that: a log theater. What is now known as the Old Log Theatre started out as a summer stock theater that ran as many as thirteen plays from May to September, catering to the tourists coming to Lake Minnetonka. Though most of the records of those early years have been lost through old programs left in the theater, it is possible to see which plays ran summer to summer. “Beyond that there wasn’t much left to see what those shows looked like,” Greg shares. Only a few years after its creation, the summer stock theater was bought by a WWII veteran named Don Stolz. In the late ‘50s Stolz would build the theater that is now the Old Log Theatre. Interestingly enough, Herb Bloomberg, the architect in charge of constructing the new theater “thought it was such a good idea, he went and built the Chanhassen Dinner Theater,” Greg explains. From the new theater’s construction, Don Stolz and his four sons would continue to run the Old Log until 2013. “They pretty much ran it non-stop for 75 years.” Since then, Greg and Marissa have done several major renovations to both the theater as well as the lobby and restaurant. While a restaurant was attached to the new theater when it was constructed in the late 1950s, “from what we understand, it started off really just doing hotdogs and sandwiches,” says Greg. Later into the 1960s when the kitchen was expanded, the food was still minimal. “Like how you might be fed at a wedding. It was exactly that concept: fish, beef, or chicken.” However, Greg and Marissa had grander plans for the restaurant. Soon after purchasing the Old Log, they rebuilt the entire kitchen and restaurant to fit their ambitions of fine dining for Cast & Cru. They also opened a themed pop-up bar on the grounds of the Old Log that changes to match the season or show. It is currently called the ‘Love Shack’, on theme with Valentine’s Day of course. Together, the Love Shack and Cast & Cru seek to modernize the Old Log Theatre from its humble beginnings. CONTINUED >

Though Greg has always loved the theater, his was a long arc that finally landed at the Old Log. When he attended the University of Minnesota, he shares, “I was a theater major my first year […] it didn’t last. I switched majors to chemical engineering soon after.” Greg would later go on to get an MBA and work for companies like Proctor & Gamble and General Mills. In 1995 he started his own software development company Magenic. But it was his involvement in the community theater, along with his children’s high school plays that rekindled his love for the theater. “I kind of got the bug again when my kids grew up,” says Greg. According to him, “I was getting into my 50s and I thought, I’m going to need to do something with the second act in my life.” So, with his renewed interest in theater, as well as having gained experience working in the financial side of plays, Greg and Marissa bought the Old Log. Over the decades, the Old Log Theatre has had a substantial impact on the Twin Cities theater scene. It has established a reputation for quality productions and featuring many fine actors and actresses who have come from around the country and gone on to have famous careers in New York and Hollywood. Some of the most notable names include Nick Nolte, Loni Anderson, Lois Nettleton, and Steve Zahn. When Greg explains what has really helped him and his wife keep the Old Log running, he brings up his previous experience in software development. “Some of the same business concepts apply: project management, organization process rules, it’s all there. But what this has that I didn’t have, what my wife brings, is really the social aspect of both theater and restaurants.” Greg happily calls himself “a back office guy”, adding that Marissa “runs the restaurant side, and is far, far better at it than I am. She keeps the place running.” However, despite the ‘back office’ persona, Greg plays the role of Trevor, the light and sound operator within the fictional play of “The Play That Goes Wrong.” The recently off-Broadway show “is classic slapstick in some ways,” says Greg. And that was by design. “It was important for us to open the show post-COVID, to something light, that people would just laugh at.” And perhaps now more important than ever, the Old Log Theatre continues its long tradition of bringing the joys of live theater to Lake Minnetonka.

From-Scratch Pasta Yield: 1 pound WHAT YOU NEED

2 cups all-purpose flour, plus more for dusting 4 large eggs WHAT YOU DO

1. Mound the flour in the center of a work surface with a well in the middle. Crack the eggs into the well and beat with a fork until smooth, then work flour into eggs with the fork. Use a bench scraper to work in the rest of the flour a little at a time. When the flour is incorporated, form the dough with your hands into a rounded mass for kneading. Lightly dust your workspace with flour and knead dough about 10 minutes, until smooth and elastic. Cover dough with a bowl or plastic wrap and rest 1 1/2 hours, or chill overnight. 2. To roll by hand, flour a clean work surface. Vigorously roll dough to a very thin circle and roll constantly with even pressure as it stretches for several minutes until as thin as possible, almost translucent. 3. Dark Chocolate Truffles WHAT YOU NEED

1/2 cup heavy cream 8 ounces bittersweet chocolate, chopped 1 teaspoon pure vanilla extract 1 cup cocoa powder, for dusting WHAT YOU DO

1. Bring the cream to just a simmer in a saucepan over low heat. Pour the cream over the chocolate in a bowl and let stand about 10 minutes to melt the chocolate. Add the vanilla, stir until smooth and set aside to cool for 1 hour at room temperature. 2. Beat chocolate at medium speed until thick and light-colored. Spread over the bottom of a baking dish, smooth and refrigerate 2 hours until firm. 3. Pour cocoa powder onto a deep plate or shallow bowl, and using a melon baller or small ice cream scoop, scoop out balls of chocolate. Something Sweet ARTICLE BY DANA MURPHY Nothing says “I love you” like homemade cookies. And my mom’s Linzers are no exception. I’ve watched her make these festive cookies for years and have seen the joy they bring to family and loved ones. I thought, what better recipe to share for Valentine’s Day? My mother’s recipe calls for tart raspberry jam sandwiched between two lightly sweetened cookies and finished off with a dusting of powdered sugar. These decadent yet delicate treats will leave anyone feeling extra loved this month. Wrap them up in parchment paper and package them into a cookie tin for the perfect Valentine’s Day gift.

L IN Z E R C O O K IE S INGREDIENTS • 1 cup unsalted butter, softened • 1 cup white sugar • 2 egg yolks • 1/4 tsp. salt2 1/3 cup all-purpose flour • Raspberry jam • Powdered sugar (for dusting) DIRECTIONS 1. Cream butter and sugar until fluffy. Add egg yolks and beat well. 2. Add salt and flour and beat until just blended. Wrap the dough in plastic wrap and refrigerate it until firm (about 1 hour). 3. Divide dough in half. Roll half of the dough between two pieces of wax paper until 1/8” thick. Cut out cookies using a 2” floured round or heart-shaped cookie cutter. Transfer the cut-outs to an ungreased cookie sheet. 4. Roll and cut the other half of the dough as in step 3. Then, using a smaller, lightly floured heart-shaped cookie cutter, cut a hole in the center of this half of the cookies. Transfer to ungreased cookie sheet. Re-roll dough scraps and repeat steps 3 and 4 until dough is used up. 5. Bake all cookie cut-outs at 350 degrees until very lightly browned. About 6 to 8 minutes. Transfer to wire racks to cool. 6. When cool, sift powdered sugar onto cookies with centers cut out. Spread a layer of raspberry jam on whole cookies and top with heart rounds. Press together and enjoy!
