LIFESTYLE LETTER

Welcome to Lake Houston City Lifestyle Welcome to the very first issue of Lake Houston City Lifestyle, I'm so thrilled you're here! As the publisher of this new community publication, I couldn't be more excited to introduce you to a magazine designed with heart, style and a deep love for the people and places that make up the Lake Houston area. Each month, our goal is to spotlight the stories behind the businesses, creatives, families, non-profits and hidden gems that make our neighborhoods shine. In this issue, you'll find a little bit of everything that makes our community so special. You'll get to meet me, your publisher and learn what inspired this journey. You'll also get a first look at a buzz-worthy restaurant that just opened in Atascocita (yes, the one everyone's talking about!) and discover the inspiring story of a floral designer right here in Kingwood, whose arrangements are as beautiful as her passion for people. Launching this magazine has been a dream rooted in connection. As a local resident, small business advocate and mom, I know firsthand how important it is to feel plugged in and proud of where you live. My hope is that this magazine becomes a celebration of all things Lake Houston, one page at a time. Thank you for joining us from the very beginning. We can't wait to grow with you, one story at a time.

designing blooms and inspiring hope How Kimmie of Glorious Kreations spreads love and hope through f loral design For Kimmie Lu Gibson, owner of Glorious Kreations, flowers aren’t just blooms in a vase—they’re symbols of hope, healing and connection. Her journey from wedding planner to Houston-based florist is deeply intertwined with her personal story of faith, resilience and the heartache of infertility. “I feel flowers can create something beautiful out of nothing,” Gibson says. “It amazes me every time to think that this flower was grown from a seed and water.” Gibson grew up in Monterey Park, California, and always had a passion for hosting events. As a young girl, she’d help her cousin plan weddings, igniting a spark that would eventually become her career. By middle school, she was hooked. From birthdays to college events, Gibson found herself at the center of the action, creating joy wherever she could. When The Wedding Planner movie hit theaters, it clicked—this could actually be a job. Later in college she started assisting other planners, eventually running her own events. Along the way, she encountered a florist who missed the mark on a bride’s color palette. Gibson took it upon herself to race to grocery stores, gathering pastel blooms to salvage the wedding. “I loved watching florists design, but I never thought I could do it,” she says. That changed when a friend on a tight budget asked Gibson to handle the florals for her wedding. “My

husband encouraged me, saying, ‘You make arrangements at home— you could do it!’” Soon, Gibson was offering floral services alongside wedding planning, but balancing both proved exhausting. When she decided to focus solely on florals, the COVID-19 pandemic hit—weddings were canceled, and the industry slowed to a halt. Instead of stepping back, Gibson pivoted. She started offering Valentine’s Day and Mother’s Day arrangements, even “just because” bouquets for people who couldn’t visit loved ones during lockdowns. “It really forced me to be all in,” she recalls. In 2021, Gibson and her husband Jordan made a life-changing move to Houston, drawn by a sense of calling and community they

had cultivated during church trips to Texas. They arrived with no jobs, living in a small apartment in Atascocita and little more than faith and a vision. “I decided to put Glorious Kreations on hold. I didn’t know anyone or the area,” Kimmie says. She took a job at Mayesh, a wholesale floral shop, and flourished as a sales rep, connecting with florists of all levels and offering advice and encouragement. But that quiet nudge from God kept pulling her back toward her own business. “I was scared,” she admits. “We had just bought a house in Kingwood, we had a mortgage to pay, and I didn’t know if I could make it work. But I kept feeling that nudge.” With her husband’s encouragement—and a custom-built cooler in

their garage—Gibson left her job at Mayesh in December 2023 to fully embrace Glorious Kreations. She started small, posting in local Facebook groups, offering flowers for events, and taking every opportunity that came her way. But for Gibson, Glorious Kreations was never just about flowers. Her journey of infertility—eight years of hoping, praying and waiting for a child—shaped her business in a profound way. “I’ve always been the little girl who carried a baby doll everywhere. That desire to be a mom has always been in me,” she shares. “Mother’s Day can be incredibly hard. I realized so many women are out there, struggling, and they feel so alone. I wanted to use my business to bring them hope.” Kimmie offers free flower arrangements to women experiencing infertility, through nominations on her website on gloriouskreations.com. Friends can nominate someone they know struggling with infertility and send a tied arrangement for free or an arrangement in a vase for only $10. “I hope my flowers can bring a moment of joy, a reminder that they’re not alone and not forgotten,” Gibson says.

“I want my pain to be something I can share, to say: I see you. You are not forgotten.” Through Glorious Kreations, Gibson creates for all of life’s moments—weddings, birthdays, funerals and dinner parties—but her heart is especially drawn to supporting women who, like her, are navigating the silent struggles of infertility. “There are organizations that support women who have lost a child through stillbirth, but I hadn’t seen many that specifically care for women who are waiting, longing for a child,” she says. “I want my pain to be something I can share, to say: I see you. You are not forgotten.” As Glorious Kreations grows, Gibson continues to design arrangements that reflect her heart—an eye for beauty, a spirit of hope and the belief that even in the hardest seasons, something beautiful can bloom. In fact, designing flower arrangements is a form of therapy and calm for her too. “I feel so grateful,” Gibson says. “Designing flowers is a breath of fresh air. It forces me to stop, be present and remember that beauty can come from the most unexpected places.”

The Perfect Steak ARTICLE BY CASEY WEBER, TALL GRASS MEAT COMPANY Nothing describes summer better than a good cookout! And what is a cookout without a good, quality steak and the perfect grilling recipe? 1. Thaw and acclimate the steak. For searing to occur, the proteins in steak need to be heated to at least 310°F. Tossing cold meat onto a hot grill lowers the temperature and can prevent a crust from forming, so it’s important that any frozen steaks are thawed completely before cooking. 2. Salt your steak 30-45 minutes before grilling. This causes the salt to draw moisture from within the steak up to the surface, where it dissolves the salt and creates a brine that gets reabsorbed into the steak where it breaks down tough connective tissues. 3. Oil the grate on the grill, not the steak. Use tongs and a paper towel dipped in vegetable oil to lube your grates. 4. Manage your heat well. Remember that your grill needs to be hot for your steak to get a good sear. But if it’s hot enough to cause your oil to smoke, it’s too hot.

16

H OW TO | FO O D + BEVERAGE

5. Use the 60/40 rule. The best-tasting steaks are seared on both sides and cooked evenly in the middle. The simplest way to do that is to only flip your steak once. The 60/40 rule suggests that 60% of your cook time should be spent on one side, and 40% on the other. 6. Keep the lid closed. It may be tempting to peek, but trust the experts and keep it shut! Opening the lid makes your grill lose heat, which makes steaks cook unevenly. 7. Check for doneness. A meat thermometer will give you the most accurate temperature reading: • Rare: 120°F • Medium Rare: 130°F • Medium: 140°F • Medium Well: 150°F • Well: 160°F 8. Let your steak rest. Pull your steaks from the grill once they’re cooked to 5-10 degrees below your target temperature and rest for 10-15 minutes.

BURGER FRESH & MORE BRINGS HOMETOWN FLAVOR AND 1950S FLAIR ARTICLE BY TIFFANY HARSTON Burger enthusiasts in Atascocita can now savor a slice of Texas culinary history. Burger Fresh & More, a beloved Conroe institution since 1997, has opened a new location, bringing with it the same old-fashioned burgers, 16 flavors of Blue Bell ice cream and nostalgic 1950s ambiance that have made it a favorite for decades. “We’re excited to establish a flagship location in this thriving area and to start serving old-fashioned burgers along with

the myriad of other menu items we offer,” says James Canada, owner of Burger Fresh. The original restaurant was founded by Jay Lehman, who ran it until retirement. After his passing in 2019, the legacy continued under Scott Levantino and then under Canada—a veteran, proud Texas A&M Aggie and 1966 graduate of Conroe High School. Canada has been in the restaurant business since 1982 and has deep family ties to the area. His grandfather moved to Conroe in 1935 and opened a grocery store and ice cream parlor. Canada continued that tradition, owning several Conroe businesses including Canada’s Dairy Kastle, Conroe Lunchbox

and Main Street Diner. But Burger Fresh, he says, has been the most fun. “When I took over the Conroe location, I didn’t just want to serve burgers—I wanted to create an experience,” Canada says . “I started using fresh meats, updated the menu and filled the place with nostalgic décor that takes you back to a simpler time.” That immersive feel is one of Burger Fresh’s biggest draws. Guests are greeted by a life-sized Betty Boop, antique bicycles hanging from the ceiling and walls adorned with vintage memorabilia—from Coca-Cola trays to classic diner signs. Slide into a padded booth and you might hear “The Twist” or “Surfin’ USA” playing

“WE DIDN’T JUST WANT TO SELL BURGERS—WE WANTED TO GIVE AN EXPERIENCE.” in the background, instantly transporting you to the golden age of jukeboxes and chrome counters. When COVID-19 hit, the restaurant pivoted. With dine-in shut down, Burger Fresh launched a pick up option of family-style casseroles like spaghetti and chicken spaghetti to keep things running. That slower period also sparked creativity. “When we were sitting around during the day waiting, we would brainstorm new burger ideas,” says Karen Swearingen,

general manager of the Conroe location and now a partner in the Atascocita location. “When we opened back up, we tried out different combinations and the chili con queso, ultimate beef and Cheeto burger made it onto the menu permanently.” Swearingen joined the Conroe location in 2019 as a part-time cashier. After the COVID shutdowns, Canada recognized her leadership potential and asked her to step into a management role. Around the same time, her daughter, then in college,

encouraged her to join a playful “sign war” between local restaurants in Conroe. “My daughter said, ‘Mom, this is free marketing! You have to do it,’” Swearingen recalls. The team’s clever message—“Pedros, Lubos & Steakhouse – like a good neighbor, stay over there! Love you, Burger Fresh XOXO”—went viral overnight. “We made the news. Facebook blew up. The next day, the line wrapped around the building,” Swearingen says . By spring 2023, demand had grown so much Canada doubled the size of the Conroe location—expanding into the space next door. Now, they’ve brought that same energy to Atascocita. The new location is open for lunch and dinner with plans to serve breakfast and offer a drive-thru. In addition to signature burgers, the menu includes po’ boys, hot sandwiches, baskets, salads, hot dogs, loaded fries and hand-spun shakes. Canada’s favorite burger? A stack with mayo, mustard, bacon, avocado, pepper jack cheese, grilled onions and peppers, lettuce, tomato and pickle—all served on a sourdough jalapeño bun. Burger Fresh is located at 12235 Will Clayton Pkwy across from the neighborhood Wal-Mart.

The Island of Missing Trees

B

BY ELIF SHAFAK

It is 1974 on the island of Cyprus. Two teenagers, from opposite sides of a divided land, meet at a tavern in the city they both call home. The tavern is the only place that Kostas, who is Greek and Christian, and Defne, who is Turkish and Muslim, can meet, in secret, hidden beneath the blackened beams from which hang garlands of garlic, chili peppers and wild herbs. Just before the Second World War the Durrell family decamped to the glorious, sun-soaked island of Corfu, where the youngest of the four children, ten-year-old Gerald, discovered his passion for animals: toads and tortoises, bats and butterflies, scorpions and octopuses. Through glorious silver-green olive groves and across brilliant-white beaches Gerry pursued his obsession . . . causing hilarity and mayhem in his ever-tolerant family.
