ood! We need it. We love it. We plan dates and parties around it. Sure, it is essential for us, but food is so much more. Between Pinterest, blogs, friends and the Food Network, new recipes and flavor combinations are available for us to create daily. But sometimes I just don't want to cook, I want nothing more than to go out for a meal and have someone cook for me. When hubs and I decide to go out to eat for a meal, we have two choices to make: One - let's pick somewhere close, fast, good and easy; or Two - let's choose a place for us to have a culinary experience. Not just any experience; an experience where foods and spices are melded together in a dish created by a chef for us to savor - a masterpiece of food. Lately, I find that no matter which choice hubs and I make, we walk away happy and content with our food experience. Which brings me to...

ative Texan, Jessica Dupuy, praises her state’s unique history and acknowledges the multiple immigrant influences on its cuisine in her latest cookbook, The United Tastes of Texas: A Culinary Tour of the Lone Star State. Featuring over 125 recipes, divided into regional chapters, Dupuy showcases classic Texas recipes and cutting edge creations from the state’s culinary stars. Some of the highlights include Bacon Wrapped Dove Poppers and Cream Cheese Kolaches in Central Texas (a nod to the area’s Czech immigrants,) and East Texas favorites Chicken Fried Steak from Georgetown’s Monument Cafe and Royers Buttermilk Pie Delight from Royers Pie Haven in Round Top. Coastal Texas embraces fresh seafood like Grilled Redfish with Cilantro-Serrano Chimichurri, as well as Slow Burn Bolognese (a Texas chile pepper variation on the Italian staple brought to the area by European immigrants.) The Mexican influence on South Texas provided inspiration for migas and chilaquiles along with “Nifna’s” Green Sauce, a slight variation on the famed green sauce of The Original Nifna’s on Navigation in Houston. Frontier-style West Texas selections include Red Chile Pork Posole and Carne Guisada. Each chapter of The United Tastes of Texas begins with a short introduction to the region’s original commerce, landscape, and cultural heritage. Also included are profiles of the state’s top chefs and some of their signature dishes, fun Texas Tidbits, and descriptions of Texas Tools such as cazuelas (bean pots) and charcoal starter chimneys. The Central Texas chapter features a few of Austin’s own master chefs: Andrew Wiseheart with his Rabbit and Sage Dumplings and Jack Gilmore with his Shrimp Creole. Packed with gorgeous photographs of the delicious finished masterpieces and breathtaking views of the Texas landscape, Dupuy serves up a visual feast to accompany the easy to follow recipes. While this cookbook is sectioned into individual regional cuisines, she shows how they each overlap and blend to produce statewide favorites. As Julia Child says, "I enjoy cooking with wine, sometimes I even put it in the food I'm cooking." Wine should be added to food early enough in the cooking process that it has time to simmer. As wine cooks down, the alcohol evaporates away and the flavors begin to concentrate. Use a light hand at first until you get familiar with cooking with wine. Typically, white wines impart their delicate flavor to seafood, and dishes like chicken piccata and vegetable risotto. Red wine adds depth to bolder dishes like beef bourguignon, mushroom steak sauce, and of course, great-grandma's famous pasta sauce. Using wine in a reduction or to deglaze a pan creates an intense and complex sauce. It easily picks up those coveted brown bits that elevate the flavor of any dish. But be careful—light and overly fruity wines can ruin a sauce. The fruitiness is lost during the cooking process and will leave the sauce too acidic, ensuring those lovely brown bits have gone to waste. Red or White? Let's be clear about what is considered a good cooking wine. The so-called "Cooking Wine" found in your local grocery store next to the fancy vinegars and Worcestershire sauce is a poor excuse for a cooking ingredient. They are low in alcohol content, highly acidic, and contain a massive amount of salt. Instead, choose a wine you would pair with the meal. Use one that is fruity, medium or full-bodied, and with little or no oak flavor. Wine aged in oak barrels tends to turn bitter and harsh when cooked in food. For red wines, Pinot Noir and blends such as Côtes du Rhône will produce consistent results. Again, avoid wines aged in oak such as the robust Cabernet Sauvignon. White wines should also be dry and full-bodied. Try a Sauvignon Blanc, unoaked Chardonnay, or even a French Vermouth.

from
similar
wines
in the $5, $10, $20 and $30 price points. They discovered that the $5 wines cooked down to sweet, syrupy sauces, while the $10, $20 and $30 bottles were smoother,
making
sauces
with
multiple layers of flavor. Although tasters favored wines in the two more expensive price ranges, none thought the difference justified spending an extra $10 or $20. They found that limiting the price to $10 left cooks with plenty of good shopping options.
Cooking Tips:
• Add a light, dry white wine
to melted butter and baste grilled, broiled, or baked fish. • Mix wine with different herbs and olive oil to make a delicious salad dressing. • Stir in a couple tablespoons of red wine into brown gravy. Slowly simmer to create a luscious sauce for beef. • Freeze leftover drinking wine in ice cube trays for future cooking use. • Use a wine-based marinade to help keep meat, poultry or seafood moist while it cooks.

RED WINE REDUCTION FOR SAUCES
Makes about 2 tablespoons Two tablespoons of this potent wine reduction can be substituted in a recipe, such as a pan sauce, tomato sauce, or roast beef jus, that calls for one-half to three-quarters cup of wine. Add this reduction near the end of the cooking time—the way you might finiswh a sauce by swirling in some butter. The reduction can be kept for up to two weeks in an airtight container in the refrigerator. 1 small carrot, chopped fine (about 2 tablespoons) 1 medium shallot, minced (about 2 tablespoons) 2 button mushrooms, chopped fine (about 3 tablespoons) 1 small bay leaf 3 sprigs fresh parsley 1 cup fruity, smooth, medium-bodied red wine blend Heat all ingredients in 12-inch nonstick skillet over low heat; cook, without simmering (liquid should be steaming but not bubbling), until mixture reduces to 1 cup, 15 to 20 minutes. Pour through strainer and return liquid (about 1/2 cup) to clean skillet. Continue to cook over low heat, without simmering, until liquid is reduced to 2 tablespoons, 15 to 20 minutes. Joining La V as a very upscale restaurant on the East Side, Juniper is all about New American food with a North Italian influence. Executive Chef and Partner Nicholas Yanes (also from Uchi) uses his time spent in northern Italy to combine premier ingredients with old world techniques to create inventive yet comforting classics. The housemade fresh pasta is a specialty, and it’s divine when topped with white alba truffle or osetra caviar. Don’t miss the sunchoke puree that is poured over stone crab, arugula and meyer lemons — this dish was one of the best things I ate all year. The small plates make it easy to share and taste many dishes, but be aware that a full dining experience here can run up a hefty tab. The newest restaurant from Shawn Cirkiel of Parkside and Olive & June brings modern Spanish tapas to the booming Airport Boulevard revitalization in North Central Austin. The vision for Bullfight came from Cirkiel’s love affair with Spain; four years prior to opening Bullfight, Cirkiel explored the cuisine in different regions of Spain, visiting farmers markets, jamón and sausage houses, cheesemakers, and vineyards. Executive Chef Ryan Shields wows diners with a menu that is heavy on seafood and inventive treatments of vegetables. For example, the gazpacho is made with various seasonal ingredients such as corn, tomato or cauliflower; or start with a cheese plate or some of the tasty snacks served in paper cones, such as jamón croquettes, crispy squid and fried eggplant. A Brave Reinvention Lexus 2016 RX 350

einventing oneself is always challenging and a bit scary; which qualities to keep and which ones to
change or discard are important facets to ponder. It is brave to want to change. The same is true for a car manufacturer, and now Lexus is taking on that challenge with the reinvention of its luxury crossover of the 2016 RX 350. The first major change is the sleeker body, and that, combined with a sharply angled windshield and sculptured sides, make this SUV more car-like. The high beams, low beams, and taillights are LEDs, plus the power liftgate can be opened with the wave of a hand at the Lexus logo on the hatch. Yet all this uber style does not take away from some other significant changes. Once inside, the cabin is spacious with plenty of light and air. It’s almost five inches longer and has about a two-inch

That's enough to keep any tech-savvy driver happy while cruising. Thanks to 25 more horsepower, the RX 350 accelerates great and the brakes are quite responsive with an almost ‘pinky-finger’ ease of steering. Another advantage is the cabin remains extremely quiet, allowing little outside noise to seep in. Overall, the ride is plush and very comfortable. On the safety front, the RX comes fully loaded with 10 airbags, including driver, knee and front passenger anti-submarine airbags, all standard. The RX also

Lexus estimates the fuel economy of 20/28 mpg (city/hwy) for the front-driver, while the all-wheel-drive version is expected to return 19/26 mpg. Reinvention is tough and not for the shy, but the 2016 Lexus RX350, the fourth-generation of this popular crossover SUV, with its additional luxury equipment, plush ride, more cabin space and upgrade in technical features, made this transformation look easy. 28
