Now that “School’s Out,” what are your plans for the summer? Concert Series at Kirkwood Park:

A Perennial Summer Favorite

Live music is back in a big way at the Making Music Concert Series at Kirkwood Park After enduring the pandemic-induced sociocultural isolation of recent years, it’s clear we will never again take for granted the ability to gather communally to see a live concert, go to a sporting event, or even take in the latest thriller at the local movie theater. “There are aspects of the in-person music experience that just cannot be replicated in a live-streamed event,” noted Mike Molloy, longtime co-chair of the summer series. “The shared communal feeling of the crowd, the artists playing off the audience’s energy… It was something we’d all been sorely missing. People were anxious to get back out there—to move and be moved—after the universal uncertainties and limitations of the pandemic.” The Making Music Concert Series at Kirkwood Park draws enthusiastic music lovers from all over the entire metro region and beyond. Widely acclaimed for top-notch performers in a variety of genres and

musical styles, this unique concert series produced by the Kirkwood Arts Commission promotes community engagement and celebrates the joy of fine music on summer Saturday evenings at Lions Amphitheater in Kirkwood Park. The 2022 season includes a broad array of musical styles and talent, with something for everyone’s taste. Stellar bands on alternate Saturday nights perform jazz and soul, wind symphony music, bluegrass, country, rock, blues, Cajun/Creole/Zydeco, and ‘70s Americana music. The signature Fall Harvest Concert at Kirkwood Park’s Walker Lake on Oct. 8 will conclude the season and feature the band Rosewood, perhaps best known for its fine interpretations of Crosby, Stills, Nash & Young classics among a repertoire of over 200 songs. “The Lions Amphitheater’s space and feel are warm and inviting, nestled among the towering pine trees. the perfect place for people to safely get out, see their friends, and experience a great concert,” Molloy concludes. An expansive lawn area of several acres complements the amphitheater’s stadium-style fixed seating. As always, concerts are free and open to the public. Donations are welcome at the concerts. The series is made possible through generous support from presenting sponsor Kirkwood Electric, The Kirkwood Arts Foundation, and Kirkwood Parks and Recreation. The Kirkwood Arts Foundation’s Facebook page contains information about the series, as well as performing band profiles. All dates are Saturdays. Concerts begin at 7:30 p.m. in Lions Amphitheater. FIRE UP THE GRILL DALIE’S SMOKEHOUSE HEAD CHEF CRAIG BASLER SHARES SOME LOCAL FARE AND FLAIR

It's backyard barbecue season, and we had questions about what to grill and what to wear. So, we caught up with our favorite local chef, Craig Basler, head chef at Dalie's Smokehouse on Big Bend and Dougherty Ferry Road, for some answers. We found Craig firing up the grill—with a blow torch—and sporting the perfect backyard barbecue fashion from local men's clothing designer Paulie Gibson. Our first question for Craig was, "How do we get our steaks and sides to taste like yours?" "We make almost everything from scratch," said Craig. "Everything from our side dishes and sauces to how we finish our main dishes, we put our little twist on every product. We are a lot different than our big brothers downtown."


Dalie's Smokehouse is part of the Pappy's Smokehouse Family of restaurants, including Pappy's Smokehouse, Bogart's Smokehouse, Southern, and Boogie's BBQ in Nuremberg, Germany. Dalie's prides itself on being a community restaurant with a family feel. Craig explains, "We create specials that evoke traditional family memories. Every Friday, we have chicken and dumplings, and our cucumber and tomato salad is made exactly the way Grandma made it. It makes me happy to offer the food we grew up with on Dalie's menu." And while the menu offers familiar favorites, like the Reubens and the Cubans, every day is different. "We have the Dalie Special that can be anything from Cajun food to a pork steak sandwich," said Craig, who said keeping the menu fresh keeps him from getting bored. New to the menu are charcuterie boards that Craig made from local trees. Craig expands Dalie's catering menus with appetizers and main courses to accompany these beautiful boards. Dalie's will collaborate with Civil Life Brewing to offer a special evening dinner that pairs various local beers with popular menu items in the fall. In the meantime, feel free to pair your favorite beverage with two of Craig's favorite recipes: pork steak with a side of cucumber and tomato salad.

PORK STEAK RECIPE Feeds 6 Ingredients: • 6 Pork Steaks, Bone-in (We like them cut ¾” thick) • 6 Tbsp Red Rub, Available at Dalie’s Smokehouse • 4 Tbsp Brown Sugar • 2 cups Pork Steak Sauce: • 1 cup Papa Joe’s Original sauce -Available @ Dalie’s Smokehouse • 1/2 cup Sweet Hope sauce - Available @ Dalie’s Smokehouse • 1/2 cup Apple Juice • 1 1/2 Tbsp Rib Rub, available at Dalie’s Smokehouse Procedure: We smoke our pork steaks with indirect heat for 2 hours before we grill them directly over a charcoal fire. This effect can be achieved using any indirect heat method that allows you to control the temperature at 250 degrees CONTINUED >

1. 6-8 hours before cooking your pork steaks, season each pork steak on both sides. Each pork steak should get ½ Tbsp of rub and 1 tsp brown sugar on each side. 2.Preheat your smoking device to 250 degrees. 3. After the pork steaks have been seasoned for at least 6 hours and your smoking device is up to temperature, place the pork steaks on to smoke. 4. While the pork steaks are smoking, combine the ingredients to make the sauce. Put the sauce in a pan and bring to a simmer. 5. Once the pork steaks have smoked for 2 hours, you should see the meat receding from the ends of the bone. When this happens, remove the pork steaks from the smoker, wrap and place in a warm (140 to 160 degrees) area 6. Prepare your charcoal fire to finish the pork steaks. 7. When the charcoal has heated up, place the pork steaks over the coals until the meat/fat begins to caramelize. Flip the pork steak over and repeat the caramelization. 8. When both sides of the pork steak have some caramelization, baste one side with the Pork Steak Sauce. 9. Flip the pork steak over and baste the other side. 10. Allow the sauce to caramelize on the charcoal side and repeat Step 9 twice. 11. When both sides have been sauced and caramelized twice, remove from the grill and allow to rest for 15 minutes. Enjoy!

CUCUMBER AND TOMATO SALAD Makes ½ gallon Feeds 12 people Ingredients: • 6 cucumbers (approx. 8-10 inches long), sliced ¼ inch thick • ¼ cup Red Onion, very thinly sliced • 1 lb. Tomatoes, Ripe, Diced

VINEGAR & OIL DRESSING: 3 CUPS • 4 cups sugar, white granulated • 3 Tbsp salt • 2 tsp finely ground black pepper • 2 cups apple cider vinegar • ¼ cup salad oil Procedure: Prepare Cucumbers and Red Onion. Mix together in a 3-quart or larger bowl. Combine the Vinegar and Oil dressing ingredients and mix until the sugar is dissolved. Best way to mix is in a 1-quart jar with a lid and shake vigorously. Pour the dressing over the cucumber and onion and allow to sit at least 2 hours. While the salad is setting, dice the 1 lb. of tomato and add right before you serve it.

There is a scenic stretch of the Missouri countryside that can't be seen from a car. The Missouri River rolls along the base of limestone bluffs stretching from the ground to the clouds, and bluebirds play in prairies of wildflowers and native grasses. This part of Missouri is aptly described as magnificent. Magnificent Missouri is a not-for-profit founded in 2012 to provide education, events, and projects dedicated to the conservation of the Katy Trail and the last 100 miles of the Missouri River Valley. "We work with Missouri State Parks to make the Katy Trail even better by planting trees, native grasses and connecting people to the history and culture of the places they are riding past,” said Dan Burkhardt, president of Magnificent Missouri. Dan was a partner at Edward Jones for 30 years and a close friend of philanthropist/businessman Edward D. "Ted" Jones and Ted's wife, Pat. Ted and Pat were advocates for conservation of the Missouri countryside and donated more than $2 million to acquire and construct the Katy Trail. After Dan retired from Edward Jones, he co-founded Magnificent Missouri to continue improving the trail. The Katy Trail is America's longest park. "It's 237 miles long and about 40 feet wide," said Dan. And while thousands of people visit the Katy Trail each year, Dan noted, "There are relatively undiscovered stretches of the trail. My favorite is a wonderful, less-traveled stretch of trail that starts in Dutzow and ends in McKittrick, just across the river from Hermann. It's about a 25-mile bike ride." Don't let the 25-mile bike ride deter you from exploring this part of the Katy Trail. Visitors can now rent Pedego bikes at the Peers Store in Marthasville. Dan's partnership

with Bill and Carla Sauerwein, owners of Pedego St. Louis in Kirkwood, allows riders to explore more of the trail because the electric bikes enable them to travel farther and see more. "The fun of the Katy Trail is exploring these old railroad towns," said Bill. "Pedego bikes have greatly expanded the number of people who can enjoy biking. The average person can now ride this stretch of the Katy Trail in a few hours. You'd have to be an accomplished cyclist to do that without an e-bike." The Peers Store in Marthasville is a great place to start an excursion along the Katy Trail. "It's a historic general store but with all the modern conveniences: air conditioning, snacks and cold Gatorade," said Dan. "And there is plenty of information about Magnificent Missouri." Bill said, "If you start at Peers and go west, you’ll see one of the most beautiful parts of the trail where the river, the trail, and the bluffs all come together. You are riding on America’s longest bike path between towering limestone bluffs and America’s longest river, the Missouri, for about five miles." Dan added, "Or you could go east from Peers to a great little healthy food restaurant called The Caboose in Marthasville. It's an actual railroad caboose that is right on the Katy Trail. Ride a little farther east and you’ll be in Dutzow, where German immigration to America began in the 1820s." "It's consistent with the Pedego culture for our customers to seek adventure and explore new places," said Bill. "That is what we are trying to accomplish by renting Pedego bikes at the Peers Store. We want to give people access to unique places to explore."

Pedego bikers can travel east or west from Peers Store

“The best time of the year to explore the trail from the Peers Store is in July. The Peers Prairie is in full bloom. It’s a spectacular 4-acre native prairie we planted between the Katy Trail and the Peers Store.” It takes about an hour to get to Peers Store from Kirkwood. "It's a beautiful drive through Washington, Mo., and along the Missouri River," said Bill. "Once you arrive at the Peers Store, you are in a completely different environment, which I think is fantastic." "The best time of the year to explore the trail from the Peers Store is in July. The Peers Prairie is in full bloom. It's a spectacular 4-acre native prairie we planted between the Katy Trail and the Peers Store," said Dan. "People can sit on the front porch and listen to music and walk through a native Missouri prairie. And we've got live bluegrass bands playing on the front porch every Saturday and Sunday afternoon until the end of October." It sounds like a magnificent way to spend a summer weekend.

EXPLORING THE KATY TRAIL FROM DUTZOW TO THE BLUFFS WEST OF TRELOAR HEADING EAST FROM PEERS — You will see native Missouri River valley trees that were planted as part of a three-year tree-planting campaign sponsored by Magnificent Missouri and Forest ReLeaf. In the town of

Marthasville you can dine at the appropriately named Caboose restaurant or Philly’s Pizza. About 8 miles east of Peers is the Dutzow Trailhead. Along the way you’ll pass Boone Monument Village, and the original burial site of Daniel Boone who lived nearby, and the popular Lake Creek Winery. HEADING WEST FROM PEERS — 3.5 miles west of Peers is the old railroad town of Treloar, home of the Treloar Mercantile Building and the Treloar Elevator—and the best burger on the Katy Trail at the Treloar Bar and Grill (closed on Monday and Tuesday). Also look for Missouri’s largest ear of corn in the side yard of the Treloar Mercantile—and the Trees of Treloar, a native tree planting created by Magnificent Missouri as a companion to our native prairie at Peers. About 4 miles west of Treloar, you’ll ride through a shaded “Tunnel of Trees” and begin riding along the Missouri River. Here, the Katy Trail and tall limestone bluffs come together to create some of the best river views on the entire trail. With some diligent searching, you also find Lost Creek winery and its views.

DISNEYLAND OR WALT DISNEY WORLD? Disneyland has two parks, and Walt Disney World has four parks and two water parks. Both destinations are magical, so it depends on what experience you wish to have. Disney destinations include Walt Disney World, Orlando, Disneyland, Disney Cruises, Aulani Resort in Hawaii, and Adventures by Disney.

HOW LONG SHOULD WE STAY? The length of time isn’t as important as the quality of time spent at Disney. I’ve found that often, everyone in the family is left so exhausted by the end of their trip because they feel like they have to pack everything in while they are there. I always recommend letting yourself have a vacation and building downtime at the resort. Walt Disney World has unique resorts that offer excellent dining experiences, including character dining, relaxing pools, and resort-specific activities like bike rentals, horseback riding, and movies on the beach.

WHAT IS THE BEST AGE TO GO? Disney destinations offer a magical experience for toddlers, teenagers, adults, family reunions, or adultonly groups. Planning is the key to ensuring that everyone has a great vacation.

Wood Hat Spirits, located in New Florence, Missouri, is a unique operation. Owner Gary Hinegardner uses special corn and an ecofriendly distilling process to make his bourbons and whiskeys. But wait: where does the name Wood Hat come from? “That comes from wood turning. I turn wood hats. I really loved the concept of the wood hat. … It’s just part of my life.” When it came time to name the distillery, Gary noted that most distilleries are two words. “Jim Beam, Jack Daniels, Maker’s Mark,” Gary says. “And my name’s Gary Hinegardner. That doesn’t fit into that mold at all! You can’t even put it on a bottle.” Back to this unique operation. Gary first grew blue corn for whiskey in 2012. His background in both woodturning and agriculture—plus his observation that no one in Missouri was making truly local Missouri whiskey and bourbon—sparked the idea for the distillery. “It always amazed me that we make the barrels, and a lot of the corn in Missouri goes to making Kentucky bourbon, we ship the barrels, we ship the corn and we buy back the value-added product,” Gary says. His longtime friend and colleague, Dave Endres, a Kirkwood resident, has been growing corn for nine years. “We have been through different stages in our lives dealing with woodturning, horticulture and whiskey,” Gary says. Dave grows corn on an unincorporated plot of land within the 63122 zip code. The corn is bred and grown separately, so there is no cross-pollination. “I do not own enough land in Kirkwood proper to grow corn, but the piece of property that I own is in the 63122 post office. So is it corn grown in Kirkwood? No. Is it corn grown in that zip code? Yes,” Dave explains. Gary emphasizes that Dave is not making whiskey in Kirkwood and that Wood Hat Spirits is a completely legal operation, not moonshine. “I grow the corn and mill it and take it to Gary,” Dave says. “Then Gary handles the whole distillation part of it [in New Florence].” Wood Hat Spirits distills “63122” unaged corn whiskey as well as “It’s About Time” aged whiskey, both made with corn grown in 63122. “The statement ‘It’s About Time’ is a statement of age,” Dave says. “And that wording came from my mother. When I would get something done, she would say, ‘It’s about time you got that done,’” Dave says. It also alludes to the aging process of the whiskey, Gary adds. “We not only grow our own corn, we breed our own corn,” Gary says. “We’re the only distillery that I know of anywhere that breeds its own corn.” Breeding his own corn allows Gary to better control the taste and mouthfeel of his bourbons and whiskeys. He says they are in the process of predicting how the corn they breed will taste when they make whiskey with it. “One of the things we do is we make clear whiskey from the corn. We make cornbread and grits from that corn so we know how humans respond to that taste,” Gary says. “That gives us an idea of what kind of whiskey it’s going to make down the road so

we can continue breeding those lines for future whiskeys. We’re pretty unique that way. There’s no one else out there that we know of who’s doing what we’re doing.” Gary explains that most whiskeys and bourbons use No. 2 Yellow Dent corn, which is why many of them taste so similar. “We can breed the corn specifically to taste a certain way,” Gary says. For example, blue corn whiskey is smooth up front, big in the middle and has a smooth finish. Red corn whiskey is not so smooth up front and has a big, spicy middle and finish. A red/blue corn whiskey is smooth on the front and spicy on the back. Eco-consciousness is an important part of Gary’s distilling process. He owns the only wood-fired distillery (that Gary knows of) in the United States. “The biggest stave mill in the world is right next door to us, and I used to work for that company,” Gary says. The mill makes barrel staves, which creates waste that is ground up into chips. Wood Hat uses those wood chips to fuel its wood-fired operation. “We take that scrap wood and heat oil. We pump oil into our plant to do our cooking and distillation,” Gary says.

Wood Hat doesn’t waste any electricity cooling down the product. Instead, the distillery uses either geothermal or a tank outside the building with a heat exchanger for the cooling water. “We’re extremely green in that regard because of the lack of BTUs involved in our process.” Wood Hat has coils both in and below the concrete floors of the distillery to heat the building. “We don’t spend any energy de-watering our mash. When we finish making whiskey, we take the starch out of the corn, and all the protein, vitamins and minerals are left in there, which makes a really high-quality animal feed. Gary says, “As an American, as a citizen of this world, it means a lot. I always tend to tread lightly on the earth in whatever I do, I try to do so in a manner that doesn’t affect my environment and my fellow citizens in a negative way. That’s kind of who I am.” When the distillery was built, Gary says energy consumption was a prime concern. “I’m only going to make whiskey in a way that doesn’t impact our carbon footprint.” You can find Wood Hat Spirits at any major liquor store in St. Louis.
