Capturing the Spirit of the Holiday Season with Mark Borella

Local artist and professional commercial photographer for over 35 years, Mark Borella shares his secrets for capturing the holiday spirit this year. "You don't need an expensive camera or fancy editing programs," said Mark. "The camera on your phone is perfect for capturing and editing holiday photos. But - there are some secrets for avoiding awkward-looking pictures." Here are Mark's tips for terrific pics. Move towards people to capture their spirit in the photo. One of Mark's favorite tips is to have people place their tongues on the roof of their mouths to relax their necks. He also suggests that people don't have to look directly at the camera, nor does their entire body have to be in the frame. It can be visually interesting to capture a smile, a hand, or a hug. Be aware of objects surrounding the subject of your photograph. Check to ensure nothing is "growing" out of people's heads. And unless numbers or words are a vital part of the photograph, frame the photo to hide distracting backgrounds. Don't shoot into the sunlight or windows. Use your camera flash and experiment with natural light to create shadows and moods in your photos. Remember the composition of thirds. Create interest by placing the focal point of your shot off-center. Frame your photo by dividing the main subject and the background into three balanced areas. No one wants to see a picture of the ceiling. The biggest mistake Mark sees people make is taking pictures of people where half of the photo is of the ceiling. Mark recommends moving close to your subjects, shooting down rather than up, and layering or grouping people to fill the frame. We would love to see your holiday photos. Growing up, the coolest person Tamara Keefe knew was her grandmother's best friend, Clementine. So, when it came time for Tamara to choose a cool name for her new ice creamery, there was only one name that naturally rose to the top. Clementine's Naughty and Nice Creamery has kept St. Louis cool since 2014. As we close out the first year of Clementine's opening in downtown Kirkwood, Tamara reflects on the power of ice cream.
TALK ABOUT HOW CLEMENTINE'S IS KEEPING ST. LOUIS COOL. St. Louis is traditionally one of the cities where we get things ten years later than the coasts. But in the culinary world, Clemenentine's is keeping St. Louis cool and relevant. Whatever is happening in the hip culinary scene in New York or LA is happening here at the same time. One of our cone values—we use that term instead of core values—is that we are creators of cool. We make ice cream that is cold, frozen, and cool. But we also keep St. Louis cool. If you come in and get your kid a Clementine's sweatshirt, they will love wearing it to school. People proudly wear our merch and swag because we represent a cool thread that helped put St. Louis on the map nationally. Pappy's did it with barbecue, and Clementine's did it with ice cream.

WHAT ARE SOME OF YOUR COOLEST NEW FLAVORS? We are constantly innovating. We are the only Microcreamery in Missouri, so we don't use industrial machines to mass produce our ice cream. We make our small-batch flavors with all-natural, high-quality ingredients and work with local farmers. We try to be super inclusive, and we were the first ice cream shop in St. Louis to offer flavors like Challah Bread Pudding and Sufganiyot for the Jewish High Holidays. For all holidays, we offer Vegan Sugar Cookies and Italian Smoky Fig. Our Peppermint Andy flavor is the result of a cool collaboration between Andy Cohen and me. 50% of the profits from that flavor benefit Doorways, an interfaith non-profit organization that improves the quality of life and health of people affected by HIV/AIDS.
DO YOU HAVE ANY COOL NEW GIFT ITEMS FOR THE HOLIDAYS? We are very thoughtful about giving our customers an incredible experience. This year we are launching S'mores and mini tabletop bonfire pits. This is perfect for date nights, Christmas presents, hostess gifts, the person who has everything, or the person who loves St. Louis. No one remembers a bottle of wine someone brings to a party. But everyone remembers the person that brings Clementine's ice cream.
AS YOU REFLECT ON THE PAST YEAR, WHAT WERE SOME OF YOUR PROUDEST ACCOMPLISHMENTS? I'm proud that we expanded our team. We opened the Kirkwood location last November. I'm proud of that location because it was important to the people who owned the building to pass that space on to someone who would offer a frozen dessert. I am proud to honor what that family built over two generations. We love being in the heart of the communities we serve.

I'm proud that we've acquired our new production facility in North St. Louis. We needed to expand to a larger building with more freezer space, and we found this building. It requires a massive and expansive build-out, but I couldn't imagine doing it anywhere else than the city of St. Louis. It is on us as business owners to make the investment decision as we grow our businesses to move the needle and actually make those choices. I wanted to make our product in the city where it all started. If our city is going to improve, we must be willing to make those investments. We are a real business that offers our employees benefits, a 401k, healthcare, profit sharing, travel grant ($1500 for full-time employees), and a 30-day sabbatical after three years of service, which is more than any other business our size offers. And, much more than other businesses our size. We create a direct impact on the community in a positive way. That's the power of ice cream.
WHAT'S ON THE HORIZON FOR 2023? We'll open the production facility and three to four more locations. And we're getting ready to move into Kansas City in 2024. We are open to the universe and the opportunities that come our way. Now, I have to figure out how to fund our growth and expansion. We have to have a bake sale!
WHAT DO YOU WANT YOUR LEGACY TO BE? I want people to know that I love St. Louis so much that I built Clementine's to give it back to them. Clementine's is my love letter to the city. I moved to St. Louis from California, and within six months of being here, I fell in love with this city. Without St. Louis, I could have never followed my dreams, and I live it every day.

Adding bright greens and crisp reds to your holiday décor makes any space warm and welcoming. Keep your winter wonderland accents fresh all season long with these simple tips. Remember, fresh greenery will last indoors for about two weeks; outdoors, it will last considerably longer, sometimes even months.
SPECIFIC CUT LIVE DECORATIONS LAST LONGER THAN OTHERS Pine is the longest-lasting for indoor use. It can stay fresh for up to a month. Spruce is best used outdoors as they drop needles quickly inside, usually within the first week. Boxwood stems last about a week indoors but may be preserved with a glycerin solution. The preserved stems may last years if properly maintained. Traditional Holly will only last a few days indoors or out. However, Winterberry Holly can last for weeks outdoors. Red Twig Dogwoods will last for years, inside or out.
TO KEEP YOUR CUT GREENS FRESH, TRY THESE CARE TIPS: 1. Before making your arrangements, condition them to absorb as much water as possible. Snip off the bottom of the stems, then crush the cut ends with a small hammer. Crushing the stems helps them absorb more water. Set conditioned stems in a bucket or the sink full of room temperature water for a few hours. 2. Place them out of direct sunlight and away from heat sources like vents and fireplaces. 3. Keep them hydrated. Just like Christmas trees, cut greens need water to stay fresh. Mist your evergreen decorations with water every couple of days and, if possible, even every day. 4. Keep the material moist if arrangements were made with potting soil or florist foam as the base. 5. Spray foliage with an anti-desiccant. These easy-to-use products seal the pores on the leaves and bark and help the foliage retain moisture causing cut greens to last about twice as long. Have more questions? Chef Lydia Gwin of Gwin's Tiny Kitchen has created a marvelous holiday must-have. The Gingerbread Bundt cake topped with an orange rum glaze is perfect for any occasion, but pair it with sugared cranberries, and this dessert becomes next level. GINGERBREAD BUNDT CAKE WITH AN ORANGE RUM GLAZE • • • • • • • • • • • • • •
21/2 cups all-purpose flour 3 teaspoons ginger 3 teaspoons cinnamon 3 teaspoon nutmeg 1 teaspoon cloves 1 teaspoon allspice 1/2 teaspoon salt 1/4 teaspoon baking soda 1 teaspoon baking powder 12 tablespoons unsalted butter, at room temperature, at least 65°F 1 1/2 cups brown sugar, packed 2 large eggs at room temperature 1/2 cup molasses 1 Cup of water
Glaze • ¼ cup orange juice • 2 Tbsp spiced rum or Rumchata • 1/4 teaspoon ginger • 1/4 teaspoon cinnamon • 1 ½ cups powdered sugar Directions 1. Preheat oven to 350°F. Lightly grease a 10- to 12-cup Bundt-style pan. 2. Whisk together flour, spices, salt, baking soda, and baking powder in a large bowl. Set aside.
3. In a separate bowl, beat the butter and sugar until fluffy. It takes about 6-8 minutes. 4. Add eggs one at a time, beating well and scraping the bottom and sides of the bowl after each addition. Stir in the molasses. 5. Add flour mixture in three additions alternately with the water, starting and ending with the flour. Mix just until smooth. 6. Pour batter into the prepared pan, smoothing the top. 7. Bake cake for 55 to 65 minutes or until a cake tester inserted into the center comes clean. 8. While baking the cake, make the glaze by stirring together the water, spice, and sugar. Set aside. 9. Remove the cake from the oven, and cool it in the pan for ten minutes, then turn it onto a rack. 10. Brush the cake with the glaze, and allow it to cool completely before serving. Sugared Cranberries • 2 cups sugar divided • 1/2 cup orange juice • 1 tsp vanilla bean paste • 1 tsp orange zest • 1 (12-ounce) bag of fresh cranberries Directions Combine 1/2 cup sugar and 1/2 cup orange juice in a medium saucepan over medium heat, stirring until the sugar dissolves, about 2- 3 minutes. Stir in cranberries until well coated. Using a slotted spoon, transfer to a wire rack; let dry for at least 1 hour. Add orange zest and vanilla bean paste with the remaining 1 1/2 cup sugar; work ingredients together until they are combined. Working in batches, roll the cranberries remaining. Let them dry for at least 1 hour.

One way to get a sense of how a community lives is to look at how its people are commemorated when they die. A funeral home provides a distinctive continuity within a community. There is something special and indeed rare about providing care and sympathy to people who are grieving, especially when one knows them as neighbors and friends. Over the course of four generations, thousands of families have placed their loved ones in the care of Bopp Chapel because they trust its professionalism, recognize the personalized care, and are grateful for the kind support. The funeral home is celebrating its 120th year and is acknowledged as the oldest continuous business in Kirkwood. Bopp Chapel was established in 1902 by Louis H. Giving Campaign Now in its third year, the City Lifestyle Giving Campaign will give away $300,000 this holiday season to help individual community members who would benefit from a helping hand during their time of need. But they need YOUR HELP to make it happen! Maybe you know of a single parent struggling to provide, an elderly person who has experienced loss, a child enduring a health issue, a co-worker suffering a sudden, unexpected tragedy or a neighbor with a financial hardship who has fallen between the cracks of getting assistance. Chances are you know someone with a specific need—even if nobody else does. To preserve and protect the dignity of every recipient, the City Lifestyle Giving Campaign is completely confidential. No identities will be revealed or publicized in ANY way. (Even those who nominate others may remain anonymous if they choose.) Last year, City Lifestyle was able to give to more than 70 recipients all over the country by sending checks in the mail through New Year’s Eve. (This year, the goal is to double that number with checks ranging in amounts up to $3,000 each.) With nominations flooding in from community members and leaders such as judges, police officers, teachers, nurses, social workers, mentors and readers like you, we were able to reach people who might otherwise go unnoticed. “We believe in giving back and serving the communities where we live in a real and tangible way,” says Steven Schowengerdt, CEO and founder of City Lifestyle. “This Giving Campaign is all about personally impacting the lives of people we know with an unexpected check in the mail just to say that someone thought of them this holiday season.” Together with Matthew Perry, Chief Sales Officer, Steven adds that the outpouring and gratitude from the recipients was overwhelming and affirmed that this is a tradition they want to continue. “We believe God has blessed our company with continued success,” Matthew adds, “so we in turn want to be a blessing to others.” City Lifestyle has also enacted an internal giving program whereby every employee in the company receives $100 to give away to someone in the community. “The idea is to encourage our employees to keep doing it on their own,” Steven says. “Taking care of one another and blessing others is so rewarding that it perpetuates a cycle of giving. It’s extremely important to me as a person and as a company to foster that culture of generosity.”
