After the holiday season, which can sometimes lead to overindulging in both food and drink, many people decide to cut down or eliminate their alcohol consumption. Deborah Friend Wilson, who co-owns The Lakehouse restaurant in Bellevue with husband Jason Wilson, a James Beard Award-winning chef, has personal experience in that regard. Sober (which she describes as free from all substances) for six years, she feels that the pandemic has made conversations around substance abuse more accessible than before and people in the hospitality industry can help open a dialogue around emotions and mental health to ask, why do people numb themselves with alcohol? “What in your life is causing discomfort, such that you reach for a substance?”

In addition to The Lakehouse, Friend Wilson founded a management consulting firm to work with restaurants in “emotional literacy” when she noticed that their employees were reluctant to return to work after pandemic closures. “Working in restaurants should not be such a churn and burn lifestyle,” she says, and that lifestyle influences mental health which in turn can affect the use of alcohol to numb oneself. “The more comfortable we are to talk about living a healthier lifestyle, acknowledging our minds and emotions are big things – removing stigma could save lives. We have the opportunity to help people live with less fear, judgment, and shame.” Abstaining from alcohol needn’t take anything away from the dining experience. Having non-alcoholic or “soft” cocktails on the menu is increasingly the norm, as guests request these options and restaurants respond. Friend Wilson explains that the science behind mixology has moved forward leaps and bounds with interesting flavors and pairings, and non-alcoholic is part of that. With these soft cocktails, diners still get the experience of beautiful flavors and glassware as well as human connection.
Of the local hospitality scene, Friend Wilson says “Working in a market as exciting as Bellevue feels like a real privilege.” When thinking of festive soft cocktails to serve for a party, Friend Wilson recommends fizz and color! “Pomegranate jewels in the bottom of any beverage invite some sparkle, and garnishes are fun, festive, and eye-catching.” One option is a Rosemary Pomp and Circumstance, which she calls an elegant and refreshing soft cocktail. Grapefruit citrus forward with a balance of honey and hint of rosemary, it pairs especially well with roasted vegetables, greens and seafood.

The Seattle Chinese Culture and Arts Association (SCCAA) was founded by a group of enthusiastic volunteers with a goal to showcase Chinese heritage values amongst the multicultural communities in Washington. Kirkland Lifestyle had the opportunity to catch up with one of the founders, Taidi Fang, to learn more about the SCCAA and about their annual Lunar New Year celebration at The Bellevue Collection. Describe the significance of Lunar New Year in Chinese Culture. Lunar New Year is the most important and the biggest festival in Chinese Culture. Observed by billions of people, this festival is marked by themes of family reunion, just like Thanksgiving in America. As in Chinese tradition, this is the period when everyone rests from their work, ranging from a week to a month or so. Family members from near and far travel to be with loved ones in time to usher out the old year and welcome in the new, with great celebratory flourish; shops do a flurry of businesses selling gifts, new clothes, and festive foods; kitchens are bustling with preparations for elaborate feasts; and streets are filled with the sounds of firecrackers, dragon and lion dance, and nonstop seasonal greetings. What is the 2023 Lunar New Year animal and what does it represent? 2023 is the year of the Water Rabbit, starting from January 22nd, 2023 (Lunar New Year), and ending on February 9th, 2024. In Chinese Astrology rabbits are a symbol of longevity, peace, and prosperity. 2023 is predicted to be a year of

hope and luck; bringing what we have lacked in 2022. In addition, the year of the Rabbit will be a good time for all the zodiac signs and an extremely lucky year for most of them. 2023 marks the 12th anniversary of the Lunar New Year event at The Bellevue Collection. Describe the event program and performances. Since 2012 the SCCAA has enjoyed the opportunity to partner with The Bellevue Collection to celebrate Lunar New Year (also known as the Chinese New Year festival event). This annual ongoing activity has achieved a snowball effect which justifies SCCAA’s effort of giving back to our community through selfless volunteer work and contribution. The great success of our Lunar New Year event owes much to the generous support of many sponsors like The Bellevue Collection, local government officials, and our loyal participants and audiences. “Good Luck, Good Fortune and Good Health” are the main themes for the Lunar New year celebration. The entire program, whether contemporary or traditional performance, such as Chinese Opera, ethnic dances, traditional Chinese orchestral music, Martial Arts, Lion and Dragon Dance, Paper craft and knot, and the unique genuine Taiwanese Traditional folk performing troupes, all reflect the Lunar New Year joyful spirit and the richness of our 5000-year cultural heritage. We make every effort to ensure these events are as festive, safe, and successful as possible. Anything else you’d like to share with our readers about the 2023 Lunar New Year event? Remember you don’t need to be Chinese or of Asian heritage to benefit from Lunar New Year traditions and activities. Our event is open to all. Programs to Fit Your Genes Your genetic profile can provide insights for a customized healthy lifestyle

When it comes to wellness, PRO Medical Genetic Specialist & 20/20 LifeStyles Program Lead/Educator Heather Marsh likes using genetics to inform personalized programs that focus on sports/exercise, mental health, skin, nutrition and weight loss for clients. PRO Club works with Denmark-based dnalife, “a global provider of genetic and test pairing, innovation and education” according to its website. It takes 2-3 weeks to receive the results of a genetic test, which are sent to a provider for interpretation. For example, a dietician would help decode the results of the nutrition genetic test, and use that information to develop a tailored program that can help a client achieve their goals, while checking in at regular intervals to monitor progress. As Marsh says, “Sustainability is key” in terms of manageable changes that will work with a client’s lifestyle. If a client is involved in athletics, the “sport report” can help maximize the benefits of a training program and minimize the likelihood

of injuries. The 20/20 LifeStyles weight loss program entails three reports: Nutrition, Counseling, and Sports/Exercise, and Marsh mentions that “Nutrition touches on everything.” The age management program is also a comprehensive program, with four included reports. Clients often begin that program in their 40’s as they contemplate healthy aging. These genetic tests are considered “Lifestyle”, rather than diagnostic testing. The information yielded shows a client’s predisposition toward certain issues, but lifestyle factors play a significant role as well. For example, some people are more susceptible to sun damage and inflammation, as well as advanced glycation; and different products – like lasers and exfoliants – can help reduce or even reverse that damage. The aestheticians at the Medical Spa at PRO Club would help interpret the results of a skin-focused genetic test to give clients guidance. “Genetic information helps guide us to problem-solving faster, rather than a guess and check method,” says Marsh.

TWO COMMUNITY MEMBERS SHARE HOW THEIR FAMILIES CELEBRATE LUNAR NEW YEAR

MIA RAFN Growing up in Korea, Lunar New Year meant many hours of making mandu, Korean dumplings. My family made two types: Kimchi and gogi (meat), but our favorite was kimchi mandu because we made it only in the wintertime. In the summer, kimchi – the spicy Korean fermented vegetable dish – is made fresh from seasonal vegetables. But in November, Koreans do Gimjang, the traditional process of preparing and preserving kimchi to last through the harsh winter months. This labor-intensive process is shared by relatives and neighbors who make a large quantity of kimchi and store it in earthenware jars buried to the neck in the ground to prevent the contents from freezing. Even though fresh vegetables are now available year-round and homes are equipped with modern refrigeration, this tradition is still practiced in Korea because it brings people together to work, share food, and enjoy each other’s company.
Many Korean families make mandu around the Lunar New Year in late January to mid-February, and Gimjang kimchi is well fermented by that time. It appears in different Korean meals from stew to pancakes, dumplings, and more. The distinct sour taste of aged kimchi adds unique flavor to other common dumpling filling ingredients like tofu, ground beef and/or pork, yam noodles, bean sprouts, and green onions. I have fond memories of my family gathered in the living room making mandu, watching favorite TV shows or just chatting to catch up. There was laughter and a sense of togetherness, and eating freshly made mandu was the best part! After living in the States for many years away from my family in Korea, some years I didn’t do anything special for the Lunar New Year. But once I had my daughter, Mikaela, I thought a lot about what I could do to honor my heritage and pass it on to her. One tradition that connected us to my family in Korea is making mandu. I hope Mikaela learns the family recipes over the years, and celebrates her Korean heritage even after I am gone. Often, we invite other Korean friends to have a big production of making mandu and eating other traditional Korean food for the New Year celebration. My house is filled with laughter, the aroma of mandu cooking in bamboo steamers, and the sound of us speaking Korean. Watching Mikaela enjoy making and eating mandu brings back my childhood memories of Lunar New year celebrations and my heart is full!

CHIACHIA LIN I am hardcore about keeping the Lunar New Year tradition for my kids. The holiday is a family holiday, so people don’t generally go out to celebrate. New Year’s Eve we have a big dinner, play gambling games, and stay up late. Then we take the next day off. In Taiwan or China there would be a month-long preparation. Here in the U.S. I make everything from scratch, like suan cai, which is like Chinese sauerkraut with fish. I chop meat which is similar to salami or prosciutto and air-dry it, and make sticky rice cakes with brown sugar or red beans – which are good luck to eat at the end of the day. I make enough to have some leftovers to carry into the New Year. There is a lot of symbolism around the Lunar New Year. Hot pot is the symbol of everyone getting together and being peaceful and happy. The hot pot is really hearty and goes well with seafood.
I say “Go fancy or go home!” so I get a king crab. Ten is a symbol of perfection, so I make ten dishes, including dumplings in the shape of ingots which represent wealth. When I was a child, my grandparents would put a coin in one dumpling and whomever found it would be very excited as it symbolized good fortune in the New Year. After the big dinner, kids say specific phrases to the adults – one example is Gong Hsi Fa Tsai 恭喜發財 which means “Congrats and hope you get rich!” – and receive red envelopes with money in them to be used for gambling games. Traditionally, the money and everything are all brand new to represent a brand-new start. For our game we toss dice in a bowl, which makes it easy for guests or anyone to learn. Sometimes we share this Lunar New Year experience with local American friends.

Risotto- ‘It’s not just for rice’ LOW CARB ALTERNATIVES FOR A HEALTHY NEW YEAR Happy New Year! Most of us make resolutions to eliminate ‘bad habits’, generally focusing on health and diet. Risotto, a soul-warming northern Italian dish composed of carnaroli rice, parmesan and mascarpone cheeses can take us off track of our new resolutions. This butternut squash variation contains over 60% fewer carbohydrates per serving than the original. Have fun and be creative.
Butternut Squash Risotto ingredients: • • • • • •
1 Tbsp olive oil 2 Tbsp onion, diced small 1 Tbsp garlic minced 12 oz. butternut squash, diced small 10 oz. chicken stock 4 oz. chanterelle mushrooms, peeled and quartered • 4 oz. mascarpone cheese • 1 cup spinach, chopped • salt & pepper
directions: Sauté the onion, garlic and mushrooms in the olive oil. Add the squash and stock in a pan with enough stock to barely cover. Simmer until the squash is tender. Remove the squash from the pan and reduce the stock until thick. Add mascarpone and spinach. Adjust seasonings. Return the squash to the pan.
