Foodie: a person who has an ardent or refined interest in food, and who eats food not only out of hunger, but also as a hobby. i.e., a person who enjoys food for pleasure. At first thought, I wouldn’t call myself a foodie. What pops to mind is artfully presented, very small portions of food. Don’t get me wrong, a 10-course meal here and there feels adventurous and special, but not usually what I’m craving nor something I have the time for. But when foodie is defined as “a person who enjoys food for pleasure,” that is something I (and I’m sure most of us) can relate to! I’ve always loved dining in Seattle’s creative and delicious restaurants, and it’s exciting to see more options pop up on the Eastside. That said, I’m still waiting for that perfect brunch spot – the opportunity is ripe! What are some of your favorites? Tom Douglas has been a force in the Pacific Northwest culinary culture for decades, and his presence continues to permeate the region with “low and slow” cooking, dynamic dining rooms, and seriously good pie. His most recent installment of the self-described “pizzeria with a bread baker’s soul” opened in August at The Village at Totem Lake. Douglas’ first Serious Pie started serving in 2006 on Virginia Street between Third and Fourth Avenue in downtown Seattle. Since then, the Italian eatery has multiplied and created something of a cult following. The secret to its success? “In crust, we trust,” says Douglas. “It’s a fermented dough that has a lot of character. It’s very hydrated, so it’s crispy in the oven. We cook our pizza at a lower temperature than most pizzerias so that we get a firmer fix.” Serious Pie now has three locations open in the area, including its original restaurant in downtown and one in Ballard. Douglas’ success outside the chain continues at other long-loved local haunts, showing his versatility as a chef and resilience as a restaurateur. His distinctly different offerings include the Carlile Room — serving swanky sixties and seventies vibes with modern American cuisine by the Paramount

Theatre, Dahlia Bakery around the corner from the original Serious Pie, and Seatown Rub Shack and Fish Fry on the outskirts of Pike Place Market. While Douglas credits crust as a unique draw that keeps people craving Serious Pie, he says his overall success is inextricably linked to the talent and dedication of the people around him. “I have a few business partners. Some of them are part owners and others are directors…We have an ownership team because we’ve spread out a little bit,” he says. Team “TD & Co.” includes his co-founder and wife Jackie, daughter Loretta as Managing Director and General Counsel (as well as namesake for his “Etta’s” restaurant), Managing Partner and Chef Eric Tanaka, Director of Business Development Amy Richardson (who Douglas says “does all the imagining and dreaming of our places”), Operations Director Sean Hartley, Restaurant Director Brock Johnson, Finance Director Adriana Fox, and Serious Pie Director Tony Catini. Since surviving the pandemic’s blows of shutdowns, gut-wrenching layoffs, and
lingering unknowns, Douglas cherishes his staff and partners more than ever. “They take real pride and [spend] literally hours and hours and hours to make these places what they are…That’s something I recognize more now. I’m not so clouded with all the things that I’m doing, and I see the effort going on day in and day out, in a more real way…This team is doing such good work.” Looking ahead, Douglas is optimistic about the future of TD & Co. and the community it serves. Even during the dog days of 2020, he saw Seattle’s strength in adaptability. “Seatown, when the pandemic hit, was the only restaurant that we owned at the time that had outdoor availability…I’ll never forget shucking oysters when it was 25 degrees out of a snowdrift of 10 inches. I just shoveled off the patio, and we had our heaters on. You couldn’t eat indoors, and the place was packed. People were just sitting there drinking hot chocolate and whiskey ciders…It just it gave me so much hope. And I think it upturned my emotional thinking that this is a temporary thing, this isn’t forever, and that we’ll be back.”

WHAT IS THE INSPIRATION BEHIND OPENING FARINE? My wife, Stephanie, and I travel to Western Europe fairly often – both to see my family in Belgium, but also because we truly love the history, cuisine and vibe of the region. When we would travel with my two sons, we had to find restaurants and cafes that would be enticing and satisfying to children’s appetites. And we realized that we gravitated towards a specific type of eating experience – one that was warm, open, casual, and high quality. Farine draws from our collective experiences – a place that recalls the culinary traditions of Western Europe and is close to my roots, but also speaks to the artisanal quality of freshness and craftsmanship.
TELL US ABOUT YOUR WORK HISTORY. It’s a wonderful twist of fate – I actually came to the Eastside, when I was 15, as a foreign exchange student from Belgium and I spent a year at Interlake High School. Years later – after working with Microsoft in places like Cote d’Ivoire and San Francisco – I made my way back here to the Eastside. It’s been rewarding to participate in different cultures around the world, learning how to do business in different countries and regions.

Ras el Hanout is a blend of aromatic spices that embodies the history of the spice trade, and every cook from Morocco to Tunisia has their own traditional recipe which adjusts from sweet to spicy.

• 1 ea. Chicken (3#), quartered • 2 Tbsp. Ras el Hanout • 1 Tblsp. Olive oil • 1 ea. Onion, chopped • 2 ea. Carrots, chopped • 1 ea. Whole garlic head, halved • 1 qt. Organic chicken broth ** • 2 c. Couscous • 2 ½ c. Organic vegetable broth • ½ c. Dried apricots, julienned • ½ c. Pistachios • ¼ c. Parsley, chopped • ¼ c. Mint, chopped ** • 1 bunch Organic carrots • 1 Tblsp Olive oil
CHICKEN: Preheat oven to 350. Rub chicken with oil and spices. Add onions, garlic, and ½ of the stock to roasting pan. Roast chicken on top of vegetables for 35-45 minutes. Baste chicken frequently with stock in roasting pan. Remove once fully cooked, add the remaining stock reduce to saucy consistency. COUSCOUS: Bring seasoned vegetable stock to a bowl and pour over couscous in medium bowl. Cover with plastic for 15 minutes. Uncover and fold in the remaining ingredients. CARROTS: Slice the carrots into 1/4” rounds. Simmer in vegetable stock with olive oil, parsley, and mint. Season with salt and pepper. Serve with spinach, chard, or kale sauteed with fresh garlic. EAT WELL!

Instructions 1. Heat oven to 250°F. Spray a 13 x 9-inch baking pan with non-stick cooking spray. Combine cereal and pecans in pan and set aside. 2. In a 4-cup microwaveable bowl, combine corn syrup, brown sugar and butter spread. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds or until boiling. 3. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake for 1 hour, stirring every 20 minutes. Spread on baking sheet and cool completely; break into pieces. When cooled, add peanuts and pretzels. Makes about 10-11 cups. Store tightly covered.
