You’d think after well over a year I would’ve perfected sourdough bread, whipped coffee, and that I’d be picking fresh vegetables from my backyard garden. Guilty of not achieving any of the above. This is especially important when living in the Pacific Northwest as we often receive plenty of rain and wind during the fall and winter months. 2. SECURE THE CRAWL SPACE You will want to be sure all exterior access points to the crawlspace or any storage areas are secured and blocked off. As the temperature drops, rodents and other critters often seek shelter through exterior access points of homes. Also, be sure to check your crawl space after the 1st big rain, to make sure there is no moisture getting in. 3. PROTECT PIPES & EXTERIOR FAUCETS Frozen pipes lead to burst pipes, which many know can be a homeowner’s nightmare. Make sure all exposed pipes are insulated and faucet/ spouts are property insulated or covered, and don’t forget to turn off any irrigation/sprinkler systems and purge them of water beforehand. 4. SERVICE THE FURNACE One last effort you can make to prepare your home before the cold, is to get your furnace serviced! As a main source of heat, you will want to be sure your furnace has been inspected and serviced recently, to ensure a comfortable and cozy home even during the chilly months.

CAN YOU DESCRIBE THE HIGHS AND LOWS OF BUILDING A NEW RESTAURANT WHILE MANAGING COVID CHALLENGES? Well, we almost got a puppy. It was a very difficult time for all of us, some more than others. I focused on the reality and evidence-based research or facts, I was ready to accept what was happening, worked through things one day at a time and recognized that I couldn’t control everything. I took some courses on nutrition and plant-based foods, did some development work, created some amazing foods, learned a lot….and got married best of all! YOUR OWN WEDDING WAS ONE OF THE FIRST EVENTS HERE AT THE LODGE, CONGRATULATIONS! WILL YOU SHARE A FEW DETAILS ABOUT YOUR CELEBRATION? Debbie and I had our wedding June 11, it was the first one at The Lodge and we were delighted. The photos we took were incredible using the artwork and architecture of the halls coupled with the natural light. Kevin Bradford did our flowers and he killed it. We had our ceremony in the grotto which was magical and our dinner in the year round Chef’s Garden, it was a small group, so it worked perfectly. Needless to say, the menu was seasonal and customized. The Lodge has history, there is reverence for its past and the holiness that accompanies it and it is gorgeous. We wanted something special, and it delivered incredibly well. There is a wedding booked for every weekend since. I am biased when I insist this is a top location for events, especially a wedding, but let me be biased! YOU’VE BEEN IN THE RESTAURANT INDUSTRY FOR A LONG TIME, WHAT CHANGES HAVE YOU WITNESSED, AND DO YOU THINK THE RESTAURANT CULTURE IS WHERE IT NEEDS TO BE? All industries evolve, we would be foolish to think that anyone or thing is exempt. People evolve, or not, but a society surely evolves. If I look at the question through this lens, then I say the industry will never be where it needs to be and there is always work to be done. I came from a very different era in the culinary world, a world written about in Bourdain’s books. A time where your prowess in the kitchen meant more about your technique and knowledge than your social media following; so you’re right, I have been in the restaurant industry a long time. All kidding aside, as my food has evolved, so too has my approach to leadership, managing people and teams, developing concepts and business in general. I am a student of our times, and like any student I cannot claim perfection

Labor shortage is a big challenge however, equally challenging is the labor dynamic; the new workforce is much smaller as many of the experienced members have moved to more secure opportunities. We are faced with retraining as fast as possible. People are still traumatized from the insecurities and loss of the pandemic. Many have not yet recovered. Our industry is populated with people that live check-to-check and the trauma of having the rug ripped out is hard to forget and move past.

MOVING FORWARD? We were not able to open with all the distinctive menus and programs I had planned so they will start to populate in the fall. We will be focused on Fall produce, growing leeks, arugula, Delicata squash (to go on scallops), kale and mustard greens. The Fall menu will include tortellini with pumpkin from the garden incorporating, sage, apples and hazelnuts. We are planning separate concept menus for Tonsorium and Heritage bars, as well as a high tea program in Cedar + Elm. Some nights we will serve from the wood fired asado grill. T H E L E H R M A N N F A M I LY HOW DO YOU MAKE A MEAL “SPECIAL”? Special meals at our house usually have a theme – we are festive like that. The build-yourown pizza bar when kids are in abundance, spicy margaritas and mariachi music for street taco night when we are entertaining a big group, and “fancy” hotdogs when we come home from a day on the lake or swimming at the beach. Nights often end on our rooftop deck, watching the sunset, counting stars, and roasting s’mores. WHAT IS YOUR FOOD TRADITION? My husband Kurt’s Christmas Prime Rib! It’s a meal we prepare together, with a homemade seasoning from my sister-in-law, rosemary from my mother-in-law’s garden, timed to a tee by Kurt. The only time the house is silent on Christmas is when dinner is served. DO YOU USE OLD FAMILY RECIPES? My aunt created a cookbook filled with family recipes accompanied by personal notes. I’m from the South and enjoy cooking our family’s French-fried shrimp, punch bowl cake, and Mississippi pot roast. WHAT’S YOUR PREFERRED DINNER MUSIC? Guests will often hear country music at our home. When we built our house, we put speakers in the front yard. Friends feel it sets a great mood to pull up and hear music to get everyone excited for a fun night.

Our family has always prioritized being together for meals, particularly dinner because making it together is a big part of the “specialness.” The kids always help make the food and harvest ingredients from our garden. WHAT IS YOUR FOOD TRADITION? Taking a seasonal approach to food is part of our tradition – picking blackberries as they ripen in the summer or harvesting tree fruit to preserve from our original Kirkland homestead trees. DO YOU USE OLD FAMILY RECIPES? Bolognese Sauce or “Nonno’s Meatballs” from our Italian (great) grandpa’s recipe book are popular choices. At holidays there are culturally expected dishes on the table – for example, manicotti and lasagna for Christmas. WHAT DO YOU PREPARE FOR LARGE GATHERINGS? When we’re not in a pandemic, we invite about 120 friends for a big summer hog roast. You definitely need a lot of mouths to feed if you’re going to cook at that scale and it’s become a huge party and cherished tradition. WHAT’S YOUR PREFERRED DINNER MUSIC? We listen to music in non-English languages, or instrumental so we don’t get distracted by the lyrics and can all chat at dinner. Gypsy Kings Radio, Marisa Monte Radio and Eros Ramazzotti Radio on Pandora all get a lot of play. CONTINUED >

I always set the table with beautiful dinnerware, napkins, candles and flowers. WHAT IS YOUR FOOD TRADITION? My family and I are from Sweden so every Christmas, Easter and Midsummer we eat a traditional Swedish Smorgasbord with smoked salmon and herring, etc. DO YOU USE OLD FAMILY RECIPES? In most of my cooking I don’t use recipes. I have a fully stocked pantry with everything I need and I usually don’t plan my meals until I start cooking each day. WHAT DO YOU PREPARE FOR LARGE GATHERINGS? I either like to go for a theme like Spanish tapas, Italian delis, Mediterranean small dishes or a large dish like a traditional Spanish Paella, or in the fall a rustic Beef bourguignon. We are a big family of seven, so cooking for a large party doesn’t scare me at all. WHAT’S YOUR PREFERRED DINNER MUSIC? While I’m in charge of cooking in our household, my husband is the dinner music DJ. He mostly plays lounge music, which probably matches the ambiance I try to obtain, the feeling of being in a place and a tranquil setting.

For guests, I prep ahead of time with a lovely tablescape, a certain cuisine for all the dishes, and a bottle of wine waiting. WHAT IS YOUR FOOD TRADITION? My husband and I spent our five-year wedding anniversary in Italy, so Italian food is special to us. We installed an authentic wood-fire pizza oven from Italy in our backyard which is fun to light up when we have larger groups over. My homemade pasta is always a hit as well. DO YOU USE OLD FAMILY RECIPES? Every Christmas my grandmother would make a dish called pastys. They are flaky meat pies similar to pierogies. My aunt has the recipe down perfectly but my skills are still a work in progress! WHAT DO YOU PREPARE FOR LARGE GATHERINGS? A go-to is herb encrusted beef tenderloin, twice-baked potatoes and roasted veggies. Simple but elegant. I also love to make flavorful soup such as pozole with all the toppings. If you ask my husband Ben, he will always request pizza! WHAT’S YOUR PREFERRED DINNER MUSIC? Currently, Lake Street Dive is constantly playing in our kitchen.
