We live in a society that prides ourselves on being busy, filling our schedule with tasks and being productive. With 4 kids that are involved in multiple activities, 1 away at college and both my husband and I working full-time; I admit our family schedule falls into this category. As my kids have gotten older, it has just gotten busier and is progressively harder to find time when we are all together. I know that my time with all of them living under my roof is limited, and I want to spend this time wisely with them and look back without regrets on how we chose to enjoy life together. As a family, we have decided that it is a priority to leave some room for exploring, trying new things and adventuring. It is in those times that are unstructured where the space exists for connections to be made, relationships are fostered and memories are built. However, I’ve come to realize that “adventures” and “exploration” doesn’t even have to be something big and crazy. It can be playing a board game out on the patio while listening to your child’s new favorite band, biking a new trail or going out to find a new coffee shop we’ve never been to before in a different part of town. If there’s any advice I could give to those of you still in the thick of the craziness of raising young children, it would be to take the trip. Go to dinner just the two of you. Pick up the phone and schedule lunch with your friend. The days may drag but the years will fly. Our hope is that this issue encourages you to make room for exploration—to prioritize time away from the regular schedule of life and to maybe lose yourself on a trail or in a book. Make time for the things that matter most but often come last on the calendar. If April showers bring May flowers, make time to play in the rain! Here’s your reminder to - and I say this with warmth in my heart - get lost! Happy April!

“Some of the most popular trails in the metro include the Tomahawk and Indian Creek trail system that extends 12-15 miles across Johnson County. I think my next Pedego may be our new Platinum Element model, which is just becoming available.” So, why choose electric over traditional bikes? “The short answer is that it is way more fun. Take a day trip from the Johnson County area to Lawrence to see why dining at 715 on historic Mass Street is truly an unforgettable experience. 715 is both uniquely fresh yet oddly familiar—it’s almost like eating at your favorite restaurant, but for the very first time. From the shiny disco ball above the entryway, to the eye-catching wall of wine and spirits, to the beautiful open kitchen that allows you to see the kitchen staff hard at work, taking great care to prepare everything on the menu, you’ll notice everything was curated intentionally, even down to the delicate mismatched vintage China plates. This award winning, locally-owned and operated downtown restaurant is known for its inventive cocktails, extensive wine list and delicious handmade food from Executive Chef Kelly Conwell. “I went to school at Johnson County Community College and then studied abroad in Germany for a year, going to school and working,” says Conwell. “When I got back, I got my first sous chef position at The Raphael Hotel, where I was an apprentice before I left for Germany. All the changes that have happened in my culinary career have been organic, not necessarily looking for a change, but someone mentions an opportunity, someone reaches out, and things kind of fall into place. I never thought I wanted to get into pastry. I knew I loved savory cooking and think I wanted to rebel against it…it sounds silly now.” From there, Chef Conwell became a pastry sous chef at Bluestem, a pastry chef at Jax Fish House, executive pastry chef at Stock Hill, and chef at YaYa’s. “Matt Hyde, the owner of 715, popped into my Instagram DM’s asking if I would ever be interested in working in Lawrence. My first thought was no, but I learned from mentors that it never hurts to have a conversation—if you don’t put yourself out there, you’ll never know about new opportunities. So, we met at a coffee shop, and Matt and 715 partner Katrina Weiss and I hit it off. We talked for hours. Then, my husband and I went to Lawrence and had dinner, and everything was just so perfect. The space was beautiful, the food was amazing, the staff was awesome. I think the biggest factor was that I would get to be doing my food again—making specials and getting back into desserts was a big pivot from what I was doing, and I missed it.” CONTINUED >

The menu at 715 is constantly changing. “We have a ton of regulars, so switching the menu up is important to me. They can come in and get the OG things they love, like the Penne Rage or spaghetti, or look on the right side of our menu for specials. I have an amazing talented staff that comes up with dishes that we tweak and create together, putting new spins on oldies-but-goodies since we opened in 2009.” Some of 715’s most popular menu items include the crab ravioli made with mascarpone and ricotta filled pasta, butter-poached crab, cognac cream and herbs, and their goat cheese croquettes made with truffle honey, aged balsamic aioli and herbs. Also, the lasagna Bolognese made of braised pork and beef, béchamel, tomato and parmesan is nothing short of life changing. Try the Lumache alla vodka snail-shaped pasta made with tomato vodka sauce, fresh basil, parmesan, and add shrimp—it’s the one pasta Chef Conwell put on the menu and is her personal favorite. “We try to use as much local product as possible. Two Sisters Farm provides us with our lettuces, spicy greens, arugula, basil and baby kale. Scott, who we get our produce from, has an awesome selection of seasonal fruits and vegetables. He has a great relationship with other farmers and vendors and will send me lists of things that they have a little of, or an immense amount of, during the peak season.” “The overarching idea that we try to focus on is the honest belief that going out to eat is special. Decisions we make about the menu content, menu design, music, lighting, even things like the way the flatware feels in your hand...all of this matters. How do we like to be treated when we are guests somewhere? It doesn’t matter if you work in the back of house or front of house, we all want to feel special when we go out and provide that same attention to all of our guests.” 715 is located at 715 Massachusetts St. in Lawrence. 715 LIMONCELLO CAKE WITH MASCARPONE C H A N T I L LY Makes 6-8 servings “I love citrus, so I always try and have a lemon or lime dessert on the menu. I wanted something light and airy, that had a kick of citrus but balanced.” -Executive Chef Kelly Conwell

1. Pre-heat oven to 350° F. Grease and line a 9-by-13 baking pan with parchment paper. 2. In clean mixing bowl, whisk egg whites and sugar together, until stiff peaks form, about 6-7 minutes. 3. In another bowl whisk together flour, oil, vanilla, lemon juice and zest, and salt; whisk until smooth. 4. When egg whites have formed stiff peaks, fold egg whites into flour mixture and gently stir until well combined. 5. Pour batter into the prepared pan. Bake batter for 35 minutes, checking the center of the cake for doneness with a toothpick. Allow the cake to cool completely before topping with chantilly. C H A N T I L LY D I R E C T I O N S

In clean bowl, place cream, sugar, vanilla, salt and mascarpone and whisk on medium speed until the mixture forms medium peaks; the tip of the peaks should curl slightly when the beaters are lifted. 2. Dollop mixture over the top of the cooled cake. Add your choice of garnish. My favorites are nuts, white chocolate and fresh fruit.

“Valkommen to the City of Lindsborg!” Consider this your warm “welcome” from ‘Little Sweden USA’ located right here in our home state of Kansas! Founded by Swedish immigrants in 1868, the town of Lindsborg is known for its iconic Herd of Wild Dala Horses “roaming freely” throughout the town and its wealth of Swedish-inspi. One of Lindsborg’s most notable festivals that takes place every other year is Svensk Hyllningsfest, taking place on

October 13-14, 2023. It is a biennial celebration honoring the Swedish immigrants who settled in the Smoky Valley in 1869. There’s a new game in town when it comes to Pickleball, located at 91st and Metcalf in the new SERV complex, which broke ground in late 2021 and recently opened to the public. This new venue features a 1,400-square-foot recreation area, with an additional 5,000 square feet housing restaurants, retail spaces, a large TV and performance stages. Andrew Niemeyer, general manager, explains that there are six indoor and two outdoor pickleball courts. The complex is built near the Promontory Apartments, which are now open. “With all this square footage, pickleball was a natural use of the space, as it is the fastest growing sport on the planet, with superstar athletes and businesspeople investing in the sport at a very high level, including notable locals,” he explains.

Andrew played pickleball as a teen in high school and fell in love with the game. His adult career is in food and beverage, and he has been lucky to work with and for some of the best restaurateurs in Kansas City. Upon returning home from a rewarding six years working for Arrowhead Yacht Club & Boat Sales on Grand Lake in Oklahoma, he was introduced to Rachel Kennedy Cuevas, his operating partner. His love for the game was quickly rekindled as this project came together. “Connor Basnight, instructor and owner of D3 Pickleball, has put together a wonderful team of pickleballers to grow the game within our space,” Andrew says. “They truly have something to offer for all players, from first timers to advanced players.” Connor has been playing for eight years, is a 5.0 rated player and Level II IPTPA Certified Instructor. With their large outdoor space, the approaching warm months are sure to be very busy. They offer a large stage and video boards for all manner of entertainment, such as live bands and DJ’s, watch parties and movie nights. “Our location is fantastic due to the centralized geography, the diverse nature of the surrounding neighborhoods and the sheer size of it. With the mix of single- and multi-family homes, as well as high density of businesses in the immediate area, we look forward to being a gathering place for folks from all corners of Kansas City and visitors,” Andrew says.

At SERV, they believe the large and diverse menu of offerings through eight unique food and beverage concepts including two full bars mean that anyone can find something to suit their taste. Large groups can dine and drink and recreate while resting assured that all party members will be catered to. “Pickleball facilities exist, as do recreational spaces and dining halls and entertainment venues.
