LIFESTYLE LETTER

Letter from the Editor

April 2022 PUBLISHER

Laura Poskie | laura.poskie@citylifestyle.com EDITOR

Spring is here! There is nothing better than opening up a window and letting the fresh spring air and sunshine in after a long, gray winter. I love what our city has to offer as the weather warms up, and we all start to gravitate outdoors. I am ready to fully embrace the busy schedule that spring brings of shuffling kids to activities and trying to get a little weekend outdoor fun in when we can. Among my favorite things that spring brings is the farmers market, outdoor patios, bike trails, taking our dogs out to explore and watching baseball. My second son is a junior this year. His high school baseball season is starting, and I am savoring every single game he plays, as I know how fast time goes, and before I know it a time will come when I will be watching him play his last game. I didn’t expect to love watching this game quite like I do, but it has become a weekly ritual that I look forward to enjoying all spring and summer long. Watching him play is inspirational to me because he has worked so incredibly hard to be the player he is today. It didn’t come easy when he was really young, and it took true grit, love of the game, daily consistency and determination on his part. Worn out bare patches of dirt where grass once was used to adorn our yard from the endless hours of time he spent outside playing ball. As much as those patches in the yard drove me crazy, I sure miss those days. For our April issue, we wanted to share some of our favorite things about the changing season: great food, entertainment, travel and getting outdoors. . We would love to hear from you about your favorite hidden gems in town and your go-to travel destinations, so drop us line or share it with us on Facebook or Instagram. Here is to a happy spring full of adventure and sunshine.

Making an Investment in Your Life By Marc C. Shaffer, CFP®, AIF®, EA CFO at Searcy Financial Services, a Fee-Only, NAPFA Registered Advisory Firm

As a financial advisor, I always have principles of financial investing in the front of my mind, but I love to take those principles and apply them to other areas of life. That might include investing in health, people, experiences, career development or something else, but the principles can translate very well. You set goals, make plans, get started and adjust along the way. In what ways are you investing in your life? In what ways are you avoiding making investments in your life? Many people think of investing as a sacrifice rather than an opportunity. You have to reframe this mentality, or you might miss out on a lot. When you reframe your thinking to consider investing an “opportunity” for future good, it could help you get started on reaching those goals. It can be hard to overcome the fear of opportunity cost. But many times, your opportunity cost may be small but the opportunity lost could be huge. You may have to give up something or allocate a resource today for the opportunity to gain something better in the future. Maybe you want to be stronger, but don’t want to sacrifice the time or physical effort it takes to get there. Without investing in the opportunity for increased health, you may find yourself 6 months, 5 years, or even 10 years down the road with that same desire but no results because you never invested. In fact, you may be in a worse state as age and other factors have been working against you. But, what if you took your goal and made a plan to invest just 10 minutes into a strength workout each day for a full week. You may find in week two you can lift heavier weights or increase your number of reps. You’re now reaping the compounding benefits of your investment. Each day, you’re starting from a stronger place than the day before.

I knew in my ® 20s that I wanted a big part of my life to include service to my community and organizations that were important to me. I’m almost 40 years old and just had my first child. I can’t imagine how hard it would be to just be starting to build out my goal of service. My life is busier, my career is busier, and my family is busier today than in my 20s, so adding a brand-new time commitment today would be more challenging. Because I started investing in this goal early by exploring many charitable organizations, serving on boards and building relationships, I was able to make small steps every year that now help me feel established in my role of service. And now, I can continue the relationships I have built to help better my community without it feeling like an overwhelming feat. If you don’t want to do it alone, get help! Just as I help others with investing to reach financial goals, I have had others help me invest in other areas. A life coach helped me invest in time management, teachers helped me invest in education, and mentors helped me invest in career development. Everyone is going to want something different out of life. People are going to have different goals, desires, and things that bring them joy. Invest now. Invest early in those things that you think are going to bring you joy. Don’t wait until the time seems right or perfect. Small steps along the way can be a huge help in getting to where you want to be and avoid wondering, “What if I had just started?”

“We use the same cooking techniques: open flame and long cooks. The same cuts: brisket, pork butt, chicken and ribs. It’s marinated and seasoned Thai style but cooked Kansas City style. At the end of the day, it’s all about balance.”

Buck Tui BBQ is KC’s newest entry into its culinary landscape of smoke and fire. The restaurant is eager to make a good first impression. The staff, prepping for the day’s open, dart about with gusto as they brace for the onslaught of rabid customers. And I use the word “rabid” deliberately here. Not long after ingesting a few bites of Chef Ted Liberda’s inventive menu, even the hardest to impress will find themselves frothing at the mouth like a cast member in Night of the Living Dead. The Liberda name, of course, has a storied history in Kansas City. Ted’s mother, Ann, emigrated to the U.S. in 1975 after meeting her husband, a pilot in the U.S. Air Force, during the Vietnam War. She introduced the area to traditional Thai cuisine in 1991, methodically building an empire of Thai Place restaurants across the region. While Ann’s influence remains strong, her son Ted, co-owner and executive chef at Buck Tui BBQ , and his wife Pam, co-owner and executive chef at Waldo Thai, have emerged as an entrepreneurial force all their own. The power couple met at Thai Place on 87th Street, where Pam was a server, and Ted was working as a busboy and learning the family trade. Their relationship, like many enduring recipes, developed with a slow, steady boil. Pam, who had left behind a nursing career in Thailand, paired a deep passion for cooking with a strong work ethic. Ted, who had been admiring his future wife from afar, weighed his approach and eventually delivered a unique pitch: “I told her, ‘You’re a great cook. Let’s open a restaurant together.’ We started the Blue Springs location [of Thai Place] not long after, and the rest is history,” he says and laughs. Buck Tui BBQ has been a long time coming. The concept started as a kernel in Ted’s mind, where it

14

H OT SP OT | FOOD + BEV E RAGE

remained for years, patiently waiting for the right moment to burst forth. “Buck Tui,” which roughly translates as “Fat Boy,” is a Thai term of endearment and Ted’s nickname since childhood. In fact, the restaurant’s logo—a smiling, chubby young boy— is based on a photo of Ted as a baby, sitting in a kitchen pot. “When we found the photo long ago, we said, ‘one day you should put this up in one of the restaurants,’” Pam says. The concept was initially tested during pop-up collaborations with local chefs before the Liberdas took Buck Tui to the Farmer’s Market in Old Overland Park. The opportunity was a godsend, allowing Ted to not only hone his dishes but also build the Buck Tui BBQ brand, mainly through the power of their Instagram account. But in 2021, life threw the Liberdas one more curveball as the original brick and mortar location for Buck Tui had to be scrapped due to construction and insurance roadblocks. The frustration turned out to be a blessing in disguise, as not long after, the former Plowboys BBQ space—just down the street from the Farmer’s Market—became available. Already equipped with a full barbecue pit, it was a perfect match. Entering Kansas City’s already saturated barbecue market is certainly not for the timid. But by utilizing his dual influences (Ted is half-Thai, half-American), Chef Liberda has conjured a mesmerizing blend of flavor and presentation. It just might change the barbecue game in KC. “We use the same cooking techniques: open flame and long cooks. The same cuts: brisket, pork butt, chicken and ribs. It's marinated and seasoned Thai style but cooked Kansas City style. At the end of the day, it’s all about balance,” he says.

As someone who grew up straddling two disparate culinary cultures, Ted Liberda has certainly put what he’s learned over the years to good use. The food I sampled at Buck Tui can only be described as otherworldly. The brisket egg rolls—a crispy, buttery blend of brined brisket, warm cream cheese and chopped scallions—might as well be labeled a controlled substance. They are that addictive. The delectable appetizer, which matches Eastern and Western traditions, is the perfect example of what Buck Tui BBQ is all about. Sure, you’ve had the Z-Man, but don’t sleep on Buck Tui’s X-Man. This sandwich standout packs hearty portions of brisket, pulled pork and Thai sausage, all topped with papaya slaw, Buck Tui BBQ sauce, and creamy Tiger Cry sauce. This X-Man wields so much flavor, Dr. Xavier himself might try and recruit it. The brisket curry features thin slices of brined brisket delicately wrapped around a generous portion of long beans and vermicelli noodles. All this goodness sits within a stew of roasted small potatoes, Thai chili, and coconut curry. For those new to traditional Thai flavors, this is the perfect foray. Looking for more traditional fare? Worry not, as Buck Tui more than handles the barbecue basics. While all their Thai barbecue platters are winners, it’s the brisket that is truly transcendent. Customers are treated to a half pound of heaven in the form of hefty slabs of beef. The dish is served with jasmine rice (salted with chicken stock), Buck Tui BBQ sauce (a sweet, tangy treat) and its soon to be famous Tiger Cry Sauce (a spicy blend that will make you cry from joy). Not to hyperbolize, but this might just be the best brisket in the city. Of course, it’s not just about the food at Buck Tui. Every great meal deserves an equally compelling cocktail. For this, the restaurant has turned to renown “Potions Master,” per her Instagram profile, Mari Matsumoto. When you visit, be sure to sample the guavarita: a sharable combination of tequila, lime, agave, dry curacao and guava puree. Just a few sips, and you’re guaranteed to leave happy. Because at the end of the day, creating a joyful experience is what restaurants like Buck Tui are all about. Pam Liberda sums it up: “Our goal is for you to walk out and say to each other, ‘damn that was a really good meal.’” Visit Thailand and you’re sure to hear a common phrase: ‘kin khao reu yang?’ The phrase, exchanged with family and friends, roughly translates as ‘have you eaten yet?’ Well, if you’re reading this and the answer is ‘no,’ head over to Buck Tui BBQ as quickly as you can. Buck Tui BBQ is now open for dine-in, carryout and curbside service.

THE SEND

Andy Byrd

24

M UST SE E | L IFE + CU LTURE

A HOPE MOVEMENT: FAITH AMID THE IMPOSSIBLE

During a time when negativity, darkness and divisiveness have plagued modern society, never has the hope of spiritual awakening resonated so clearly. Now, imagine the daunting task of activating a massive missional emergence that expands across ages, denominations, people and nations, and it becomes abundantly clear that this faith journey can only be ordered by God. It is within this overwhelming reality that real hope can be found—A hope that touches the soul during this most urgent of hours.

And it is The Send that is merging these immense societal needs of the people of the world with the purpose of finding their place in the great commission. “There is a generation that is hungry, hungry for something more to live for, hungry to make a real difference, hungry to re-present Jesus to the nations as He is portrayed through scriptures and how He lived out his life. This is about the least, the last and the lost.” - Andy Byrd, Youth with a Mission (YWAM) This urgency now has a response. When missionaries Andy Byrd and Francis Chan reflect on the history and vision of The Send, a poetic passion illuminates the room. It is a passion so driven by divine enthusiasm, and a belief that the kind actions of people would reflect what Jesus has called the world to do, that it is impossible to dismiss. The history of this calling was birthed in 2000 with the guidance of Lou Engel Ministries. This vision, The Call, has packed stadiums worldwide for 18 years with a message of prayer and fasting along with a mission of encouraging America to turn to Jesus. It was in 2018 that a team of distinct ministries began to question what could be done for the Kingdom if they really worked together in a spirit of unity and collaboration. The Call had become the catalyst in creating The Send, a movement of massive missional activation that had hopes of impacting the 3.2 billion unreached peoples of the world through the promise of the gospel. The trajectory was paved, and the response was immense. In 2019 The Send filled an Orlando stadium, resulting in a mind-blowing 58,000 people answering the call to mission fields and thousands making commitments, willing to joyfully live for something bigger than themselves. They were just getting started. By virtue of the Orlando event and the thousands in attendance from Brazil, The Send rented a stadium in the South American country, further building the momentum of spiritual promise. Within six hours the stadium was sold out to its capacity of 70,000 people. Due to the demand, two additional stadiums were secured. The result of the February 2020 event was 140,000 Brazilian participants, 3 million viewers worldwide and 100,000 missional commitments within the mission fields of high schools, universities, communities, Bible and engagement, prayer and fasting, vulnerable children, and missionary service to the nations. The average age of these responders was 24. A generation had found its answer.

What came next was further proof that God was in all the details. The Send received an invitation from Kansas City’s Arrowhead stadium. It was an opportunity to extend the gospel in the loudest stadium in the world. Byrd believes that Arrowhead could become a megaphone to the nations: “How powerful that we could make a sound in that stadium: The sound of hope, the sound of the love of Jesus, the sound of hope for a generation, the sound of activation and the sound of love running across the streets of our cities and hope running to the hardest and most difficult places,” says Byrd. It would be unrealistic to think that organizing an event of this magnitude would come without challenges. Planning began in 2020 but was halted by Covid. This pause extended into 2021 and now, finally, in May 2022 their efforts are coming to fruition. With trials this immense it would have been easy to relinquish their energies, and the team did experience weariness. Endless Zoom calls, scheduling disappointments, the uncertainty of large gatherings, and inability to secure funding all served to fuel the temptation to purge the idea altogether. Add to this the enormous confusion permeating the nation, and it is only through faith that this undertaking could see the light of day. “We became further fueled as the urgency in the nation seemed to increase. Experiencing the division in the last two years as if everything served to divide our nation whether it was politics, Covid or racial lines, it was just so painful. Three major traumatic divisions were being pushed in the nation where normally we would get one of those a decade. At a cultural level the division was off the charts. If the church cannot be unified, how can we unite the nation? We needed something so risky that thousands would be able to say that they are not alone,” explains Byrd. This urgency energized an army of people, missionaries and volunteers. They toured across the U.S. hosting over 45 events, calling the nation to Kansas City. In addition The Send partnered with a 350-campus tour to spread the dream of making a difference.. The church of America needs to be able to see itself as part of the solution to the crisis of the hour. The greatest mobilization across the nation is to culminate at Arrowhead Stadium on Saturday, May 14, 2022. The ultimate goal of The Send is to encourage simple acts of the love of Jesus multiplied by ten thousand—serving our marginalized communities in addition to helping children in foster care. Byrd believes people want to get on the field but that many need permission to take a step. The Send KC is a call to action. It is 12 hours of Great Commission

26

Francis Chan

messaging intended to stir an awakening. It is as simple as: come, bring friends, pray, love your neighbor and serve marginalized people. The Send hopes to represent the beauty and diversity of the nation and to continue to spread a message of hope as we all do our part to see a spiritual awakening and a broad scale activation of believers from every walk of life. “We need courage. We need courage to face the difficulty. We need courage to face daily challenges. We need courage to not become cynical, to not lose hope. We need courage to not just blame other people and fuel the division. For people who are on the edge of their own faith and their own hope, there are few things that bring greater courage than to stand together with thousands of others who are also willing to take a stand and live with hope. We need to gather together. We are not alone.” -Andy Byrd For more information and to get involved visit: thesend.org

Stay Curious ARTICLE BY LEANN PARKER | PHOTOGRAPHY BY JANIE JONES

If you have ever watched a child take a walk in the woods then you will have most certainly noticed how unhurried their journey is. Stopping at every twist and turn to point out a bustling squirrel or to listen to a singing bird all while stuffing pockets with acorns and other natural treasures. Children are not hurried in the

least; simply present and curious. I wish to keep that sense of wonder by slowing down and taking the time to notice beauty in the nature around me, especially this time of year. Join me in this exercise of curiosity by getting outdoors and playing with nature.

A LOCAL COFFEE SHOP HOPES TO BRING SOME 1970S CULTURE TO SOUTHERN OVERLAND PARK.

36

O UR TOWN | FOOD + BEVE RAGE

JINKIES! COFFEE AND HANGOUT For mother/daughter duo Lisa and Madi Dombrowski, Jinkies! Coffee and Hangout is much more than just a coffee shop. It’s a place to encourage customers to put their smartphones down and spend genuine time with friends. Madi says she’s always had a love for coffee shops, and her mom has always had a love for baking. The two decided to combine their favorite pastimes into one business and make it ‘70s-themed. “I have always loved ’70s culture ever since I was in high school and how people didn’t have social media back then, and they would have to call up their friends and go meet somewhere instead of just texting or snapchatting,” Madi says. “I always thought that it would have been so cool to live in a time period without the distractions of social media and just have that connection with people.” The business is also a way to fulfill Lisa’s dream of owning a bake shop. She bakes fresh pastries each day, including her gourmet sugar cookies and pop-tarts. The pair opened the business in January 2021. While brainstorming ideas for the shop’s look, they knew they wanted something different from a traditional coffee shop. Both women love everything about 1970s culture, including music, fashion and decor. The business is located in the part of town where the pair have lived for the last 21 years. Lisa says it’s been fun to get to serve

customers she and her family have known for years as well as meet new people every day. “The response has been truly amazing, more than we ever imagined,” she says. Madi says one of her favorite parts of owning the business is watching customers embrace the shop’s theme by putting their phones down and engaging with each other. She loves looking out into the cafe and seeing people talking and laughing. “It feels truly amazing, there’s no feeling like it, I’ll go to the back and grab my mom and go ‘just look at all the people sitting out there talking,’” Madi says. “It just brings me so much joy to see the underlying message we’re trying to convey.” The mother/daughter duo have always been close. Owning a business together has taken their relationship to a new level. “It’s just been so fun getting to spend that extra time with her. Most people don’t work with their mom or dad so getting to have that time is really nice,” Madi says. “I know for her I am her baby, so she just absolutely loves it.” A lot of the decor in the shop is either thrifted or re-used items from the ‘70s. The business’s feature piece is a record wall, which belonged to Madi’s grandfather who passed away in 1994. His records had stayed in the family throughout the years and helped bring Lisa and Madi’s vision of the store to life.

“That’s something that is super special is that my grandpa is in the shop too, and my mom loves that,” Madi says. “A lot of the stuff is actually from the ‘70s like our phone and old church pew for a bench, and all of the posters on the walls are some of our favorite bands and movies.” While the shop primarily sells local coffee and baked goods, it also sells a variety of non-coffee drinks such as lemonade.

Visit Music City

Getaway to Nashville

and ‘Write Your Own Music City Story’

Write your own music story. That’s exactly what the chefs, artists, historians, musicians and impassioned locals of Nashville want visitors to do as they dive into this culturally diverse and oh-so-friendly city. Our team of local lifestyle fanatics at City Lifestyle are thrilled to collaborate with Visit Music City to present a customized visitor’s guide and exclusive GIVEAWAY* to this city rich in experiences that only Nashville can give. As the largest city in Tennessee, Nashville boasts an impressive array of destinations, including luxurious hotels such as the Sheraton Grand in the heart of downtown, Urban Cowboy, Noelle and The Hermitage Hotel, which houses the upscale restaurant Drusie and Darr, led by world-renowned chef Jean-Georges. Come and enjoy a truly elevated dining experience that reflects the new era of Nashville. When ready to absorb the historic side of the city, the centuries-old landmark and winery, Belle Meade Historic Site & Winery, offers guests “historic tours, family tours, wine and food pairings, bourbon tastings and chef-inspired food and wine pairings” that are unparalleled in their local experience. Likewise, Nelson’s Green Brier Distillery carries an incredible story of origination and bottles a remarkable 1860 family recipe that made Tennessee Whiskey world famous. Let’s talk about one of the most anticipated draws—the food scene! Three things Nashville is known for are hot chicken, barbecue, and meat & three restaurants. Nashville has amassed a lot of attention over the last 10 years for its exquisite food scene, with

several James Beard award-winning chefs and an incredible independent restaurant scene. People know how good the food scene is, but if they really want to find those independent chef-driven restaurants like Rolf and Daughters, FOLK, Bastion, Locust, or Henrietta Red, these are the chefs that garner a lot of attention that you won’t want to miss. For the art lovers at heart, Nashville’s ever-growing arts scene is as diverse and approachable as its music scene. Murals, street art, public art, art galleries and museums are all a part of experiencing Nashville’s visual art offerings. Music history venues such as the new National Museum of African American Music will complement your old favorite Frist Art Museum, Cheekwood Estate & Gardens, and Grand Ole Opry experiences. According to @visitmusiccity, “Everyone should do the Grand Ole Opry one night; it’s not just about the music, it’s a piece of history and the world’s longest running radio show.” Last but not least is the music scene. Whether you’re into blues, jazz, honky tonk, rock, symphony or quite literally any genre of music imaginable, Nashville has it all. Spend one night on Broadway hopping bar to bar, sit orchestra-side at the Schermerhorn Symphony Center, tour and take in a show at the 130-year-old Ryman Auditorium, then experience a songwriter’s night at The Bluebird or The Listening Room Cafe. The music is different every night everywhere, so one is best served by referring to visitmusiccity.com for their Upcoming Concerts Calendar to soak up all the magnificent sounds.

“Nashville’s ever-growing arts scene is as diverse and approachable as its music scene. Murals, street art, public art, art galleries, and museums are all a part of experiencing Nashville’s visual art offerings.”
