Bamboozled by an “as seen on TV” display and fueled by feeling flush on payday, my husband bought a 7” Ginsu chef’s knife many moons ago. Celebrating Christmas while living in Hong Kong, we used it to trim the trunk of a gorgeous Fraser fir. The tree was ridiculously expensive since it had been shipped from Vermont in a refrigerated container, but we were homesick and desperate to create a memorable holiday for our 3-year-old daughter Jane.
We lugged it back to our apartment in the back of a taxi and made a base out of cinder blocks (readily available in our neighborhood of Fanling, in the New Territories, where apartment buildings were flying up at record speed). The Ginsu knife miraculously cut through the 4-inch trunk and then performed like a champ back in the kitchen.
Today, I grab it when I’m dicing or slicing and remember those early days with fondness. I did nick my middle finger once with it, but only have myself to blame.

As a psychologist, I have continually witnessed the food and mood correlation. Our mind and body reap the benefits of clean eating. There is a growing body of research that supports the saying that “we are what we eat” physically and psychologically. Proper nutrition along with selfcare and exercise is extremely important in order to live a healthy life, mentally and physically.
Our nutrition impacts our gastrointestinal (GI) tract, which is involved in the production of important neurochemicals that help us function. A large percentage of our neurochemicals are produced in our GI tract, including gamma-aminobutyric acid (GABA), serotonin, norepinephrine, dopamine, acetylcholine, and melatonin. For the purposes of this article, we will focus on food as it relates to serotonin, dopamine, GABA, and acetylcholine. These neurochemicals regulate our mood, learning abilities, memory, and so much more. These important neurochemicals help us function physically, mentally, socially, and professionally.
Research has demonstrated that foods are natural sources of substances that may affect the nervous system (Briguglio, Dell’Osso, Panzica, Malgaroli, Banfi, Dina, Galentinoe, & Porta, 2018). Briguglio et al., (2018) searched literature related to the impact of food sources on neurochemicals. Their findings indicate that certain foods can impact the production of serotonin, dopamine, GABA, and acetylcholine. Corresponding research has shown that those who include a good number of fruits and vegetables in their diets show improvements in mood, memory, depression, and overall quality of life (Gehlich, Beller, Lange-Asschenfeldt, Köcher, Meinke, & Lademann, 2020). Examples of these foods are listed below, although there are many more.
• Foods that impact serotonin include: kiwi, strawberries, potatoes, paprika, plums, & pineapples.
• Foods that influence dopamine include: avocados, bananas, plantains, peas, apples, and oranges.
• Foods that affect GABA include: spinach, cruciferous vegetables, sweet potatoes, mushrooms, beans, and rice.
• Foods that impact acetylcholine include: peas, radishes, strawberries, squash, mung beans, and spinach.
It is important to evaluate the correlation between your foods and your moods. When your nutritional intake is optimal, you may notice an increase in positive moods. On the contrary, when your nutritional needs are compromised, you may notice more negative moods. A variety of theories exist regarding how food affects mood. These theories include the role of micronutrients, microorganisms in the gut, and changes in behavior when consuming a healthy diet (Eaton, Firth, & Sarris, 2020). Lachance & Ramsey (2015) emphasize the link between diet and mental health as it relates to the microbiome in our GI tract. Our mood may also be impacted by self-care and additional nutritional factors such as caloric intake, protein intake, inflammation, nutritional deficiencies, omegas, food sensitivities, and food allergies. It is important to discuss these factors with your doctor. Overall, it is vital to prioritize your self-care and unique nutritional needs in order to feel happier and healthier.

According to Hindu transcripts, Sankranti comes from a Sanskrit term that means “positive change.” This is the time when the Sun God transitions into the zodiac sign Capricorn. It also marks the end of the Winter Solstice. This holiday is an inspiration for Chef Srinivasa “Nimms” Nimmagadda, who uses this “positive change” to connect to the Alpharetta and Johns Creek communities. His restaurant, Sankrati, was created to redefine the restaurant industry.
In 2023, Sankranti participated in Taste Around Town, and won “Best Taste” for the Saturday night session. The restaurant was also featured in Taste of Atlanta’s new Grand Tasting events.
Srinivasa wanted to focus his restaurant on the idea of making food healthy, easy to prepare, and affordable. Sankranti is a one-stop shop, where the food is diverse and has offerings from both Northern and Southern India. The dishes are created from scratch, so that every meal is fresh. Many spices used in Indian food have health benefits. Sankranti uses turmeric in almost every recipe and ghee (clarified butter) which are both known to be superfoods.
Some of the well-known dishes on Sankranti’s menu are the paneer nest (marinated cottage cheese, wrapped with noodles and deep fried), karapodi chicken (fried chicken tossed in a powder made with different aromatic spices), and kaju paneer biryani (chicken biryani is a savory chicken and rice that includes layers of chicken, rice, and aromatics that are steamed together). Sankranti is a unique take on diverse Indian foods, made mainstream by Chef Nimmagadda, who one day hopes to have a nationwide franchise.

We are what we eat. And for bodies in fight-or-flight mode, the fuel matters even more. We asked the professionals at City of Hope Atlanta for some advice on healthy eating. The City of Hope Georgia cancer care team is available 24 hours a day, every day of the year, to listen, answer patients' questions, and help them decide on a treatment plan that's right and how to navigate diet and lifestyle.
When it comes to diet before, during and after treatment, it is important to include five servings of fruit and veggies every day. “A diet rich in fruit and vegetables is important for everyone, especially cancer patients," says Jayla Thurman, RDN, LD, Clinical Oncology Dietician at City of Hope Atlanta. "Fruits and vegetables provide many nutrients—such as fiber, antioxidants and phytochemicals—that help fight off radical cells that can cause cancer formation. "Meal planning can be helpful in thoughtfully making diet and lifestyle changes. Our lives are busy and sometimes we don’t have the time to think about what we should be eating, but meal planning can set us up for a better chance of making habits improve. "For cancer patients, this can be particularly helpful as travel, appointments, medications and overall stress is usually a larger part of day-to-day life," says Nathan Schober, MS, RD, CNSC, CET, manager of clinical nutrition at City of Hope Atlanta. "Having a plan can make them more likely to succeed.”

YIELDS: 6 servings
INGREDIENTS:
• 1½ tsp. canola oil
• 1 lb. stew beef, cut into chunks
• 1 tbsp. fresh ginger, minced
• 2 garlic cloves, minced
• 1 lb. butternut squash, peeled, cut into 1-inch cubes
• 1 (15-oz.) can no-salt-added diced tomatoes
• 1 (8-oz.) can no-salt-added tomato sauce
• 1½ cup low-sodium beef broth
• 1½ tsp. ground cumin
• 1 tsp. ground cinnamon
• 3 cups cooked whole-wheat couscous
DIRECTIONS:
1. Heat oil in a 4-quart saucepan over medium-high heat. Add beef and cook until browned. Take the meat out and leave juice from the meat in the pan.
2. Add onion and cook until soft. Add ginger and garlic. Stir.
3. Add cooked beef to pan. Add squash, diced tomatoes, tomato sauce, beef broth, cumin and cinnamon. Bring to a boil.
4. Reduce heat to medium-low. Cover and cook 30-35 minutes or until beef is tender.
5. Serve with couscous.

Soraya Khoury, chef and owner of Hen Mother Cookhouse had an early introduction to the role that food plays in our families and community. Her father was a phenomenal cook and she has many fond memories of entertaining with her family as a child. “Growing up, there wasn’t a day where the kitchen lights weren’t on, there was always some sort of a spread on the table, and someone was always joining us for dinner,” says Soraya. “I have always loved to cook!”
As a young girl, Soraya spent a lot of time playing restaurant games and inventing her own recipes. It wasn’t long before she began dreaming about owning her own restaurant. At 14, Soraya got her first opportunity in the industry and began working as a server. High school and college would find Soraya continuing to work the front of the house, but she had learned that her true passion was in the kitchen. As she worked she would watch the cooks, learning from all of those around her. She would spend all her time prepping in the kitchen, and in the back of the house, always watching. After realizing that cooking was her passion, Soraya embarked on an incredible adventure. She went to study at
the Culinary Institute of America in Napa Valley. She also began cooking at a very prestigious Michelin starred restaurant.
For Soraya, autumn brings back memories of growing up in Chicago. Jumping in leaves and Halloween were always fun, but Soraya recalls that her absolute favorite thing to do was purchase the fall food magazines. She would pour over the magazines so that she could get the best recipes and begin in earnest working on her Thanksgiving holiday feast.
“Hen Mother Cookhouse is a place where we want you to feel like your best friend has made you breakfast or lunch,” says Soraya. “I make the food that I would want to eat!”

We all know the pink ribbon holds a powerful message for those impacted by breast cancer, but the rest of us may need reminding of its significance.
In 1985, the American Cancer Society dedicated the month of October to breast cancer awareness to encourage women across the country to get mammograms, the most effective tool against breast cancer to date. Nowadays, it still serves as a reminder for women everywhere, but it’s also a time to honor loved ones who have fought the battle against breast cancer and rally around those currently fighting it through support and donations.
At age 40, women should start talking with their doctor about their risk of breast cancer and their need for screening. By age 50, all women should get screened every one to two years.
On average, one woman is diagnosed with breast cancer every 14 seconds, making it the leading cause of cancer in women. In fact, as of 2020, breast cancer is considered the most common cancer worldwide, so the need for more research and new treatments is urgent.
Whether you or a loved one is currently fighting cancer, you’ve had cancer or you simply want to make every effort to lower your risk of getting cancer, nutrition is one of the biggest natural weapons we have. According to OSFHealthcare.org and SarahCannon.com , the following tips play a major role in cancer recovery and prevention.
1. Follow a plant-based diet if you can. It’s been found that fruits, leafy greens, legumes, nuts and seeds actively fight cancer. Phytochemicals, found in plants, are anti-inflammatory and therefore disrupt cancer formation. Fiber, found in all of these foods, is linked to lower rates of breast cancer specifically.
2. Watch your protein intake, especially if you follow a plantbased diet. Protein is key to strengthening your body to withstand chemotherapy treatments and fight cancer. While there are plenty of plant-based proteins, it takes more intentionality to work them in. Lentils, nuts, seeds and Greek yogurt are all great options.
If you aren’t eating plant-based, you’ll have a much wider variety of protein to choose from, but poultry, fish, and eggs (in addition to plant-based proteins) are some of the cleanest, making them ideal for fighting cancer.
3. Listen to your body when it comes to sugar. We’ve all heard it said that sugar feeds cancer cells, and while it’s true to an extent, our bodies still rely on natural sugars to power healthy cells. So while sugar intake should be limited, natural sugars, like those found in fruits and whole grains, will always be part of a healthy diet.
Not to mention, chemotherapy can cause cancer patients to lose their appetite, and eating enough is necessary to give your body the strength it needs to keep fighting. Sugars are often easier on the stomach, so if it comes down to carbs or nothing, choose carbs!
*Remember, only you and your doctor know your medical situation. Make sure to talk with them before making any drastic changes to your diet.
The good news is breast cancer cases have been steadily decreasing for over two decades, so we know our efforts have been effective. As we continue the fight, there are a host of charities and nonprofits you can support this month.
