It's Fall, Y'all ELEVATED BURGERS, CRAFT COCKTAILS, SEASONAL BEERS, HAND TACOS, ROASTED BRUSSELS SPROUTS, CAULIFLOWER PUREÉ, KIMCHI THIS AND KALE THAT, FARM-TO-TABLE HERE AND DOCK-TO-TABLE THERE. I like all food trends. They are fun and sometimes even tasty. But mostly, trying something new builds our confidence and gives us perspective. I remember begging my mother to buy individually wrapped processed cheese slices thinking my street cred in the lunch room would significantly improve. No such luck on either front. My mom was dedicated to Koepplinger's 100% whole wheat bread and natural peanut butter. Cardboard on cardboard. And, rather than the zip top sandwich bags, I’d get wax paper or the basic fold top sandwich bags. She was not one for trends, gadgets or even shortcuts.

THEY HAD ME AT “EXPERIENTIAL SHOWER.” The warm staff at The Henderson Beach Resort in Destin welcomed us with a handshake and a suggested itinerary for our 30th wedding anniversary weekend that included a couple’s massage in a suite at their 10,000 square foot Salamander Spa. “Be sure to stick around after your massage and enjoy Himalayan sea salt room, steam room, whirlpool, sun-lit relaxation lounge and experiential shower,” said our cheery concierge. After our easy five hour drive from Atlanta listening to podcasts (“Heavyweight” from Gimlet Media), we checked into our room and threw open the drapes to reveal a balcony overlooking the lush 200- acre Henderson State Park next door and the emerald green of the Gulf, just a stone’s throw away. The spacious room and mountain-high pile of pillows made my husband smile. The bright bathroom with separate loo (more smiles) had a soaking tub and glass-enclosed shower both decked out with huge soft towels and bath products. We stopped in for a light lunch at Horizons, the resort’s octagon-shaped bar

There’s even an old-timey ice cream parlor, Sprinkles, which opens its doors on the weekends. Down at the private access beach, find waitress service, reserved chairs and umbrellas and two smiling attendants to help with stand-up paddle boards (my favorite), kayaks, masks and snorkels and fluffy towels. Stay active or not, with the blindingly beautiful crystal clear waters of the Gulf to stare at for hours. Dinner at the hotel’s premiere dining room, Primrose, was memorable, with a Florida gulf shrimp cocktail, an 18 oz boneless ribeye served with caramelized onion, asparagus, truffle potato puree for him and Blackened snapper with corn puree, field pea succotash and gnocchi for the bride. The service was big-city slick with down south warmth. We asked Executive Chef Gary Palm what he is looking forward to cooking this month, for his autumn menu. “I’ll use seasonal ingredients like sweet potatoes, root vegetables, scallops, sea urchin and make duck confit flat bread and seafood stew with opal basil pesto. We believe in great quality products at their seasonal peak, prepared with global culinary influence that will surprise intrigue and delight our guests.” We have no doubt he will succeed. Local photographer, Aubry Canales, shares their secrets! Aubry is a Johns Creek resident, mom of three, and owner of Aubry Canales Photography. She specializes in unusual and unique photo compositions for corporate clients as well as individuals, emphasizing her graphic design background. Through years of hard-earned experience, she has learned the ins and outs of taking the best photos of just about anything. Here are her tips.

» TIP #1: It’s hard but try to photograph your food before you start eating it. Presentation is everything for chefs so showcase what they give you.

» TIP #2: Use different angles. Go ahead and get your phone/camera down on the table so you are on the same level as the food. Or take the photo from directly above if there is a unique design to show off.

» TIP #3: Get up close. Food often has great textures that we overlook. Most cameras have a “portrait/ macro” mode which helps you focus on something closer, while putting the background slightly out of focus. It creates a fantastic effect.

» TIP #4: Always be conscious of the background when taking the photograph. Move glasses, silverware and other items out of the background. This will simplify your photo. Also, just tweaking your camera angle slightly can change the background.

» TIP #5: Lighting is everything! If you have natural light, use it! If you need light, try not to use the flash on your phone/camera. Instead, have a friend turn their phone’s flashlight on and light the food at an angle from above. This trick also works really well when taking photos of people too. 14

The Sharon McCollum Knight, Polo in the Pines Pediatric Cancer Research Fund was established to fund critical research at the Aflac Cancer & Blood Disorder’s Center of Children’s and Polo in the Pines leaders began the journey with Children’s for a deeper understanding of the needs of serving the mission to fund research. “We had a goal to find tangible results in the shortest amount of time,” said Tina. “Tobey J. WHETHER YOU NEED SOME NEW BOTTLES TO STOCK YOUR WINE COOLER, OR YOU ARE READY TO START A SERIOUS COLLECTION, MAKING A WINE PURCHASE CAN COME WITH ITS OWN BLEND OF ANXIETY. Finding balance between price and taste is a key concern. With a plethora of wines that offer a good value and plenty that make spending more worth it, local wine and spirit shops offer an easy place to ask for recommendations to make the most of the fall harvest. Vinay Ramakrishna, CSW, manager at Johns Creek Wine & Crystal, and Warren Dennis, the official wine man at Pop’s! Wine & Spirits, share some of their favorite bottles for any budget.

BUDGET BOTTLES With so many Chardonnays to choose from, narrowing the list to one great, well-priced selection offers a challenge. Ramakrishna suggests Mossback, a Russian River Chardonnay, for its oaky and buttery flavor – a cheerful wine usually priced below $20. Moving beyond Chardonnay’s popularity, the Napa Valley Silver Spur Sauvignon Blanc has flavors of tropical fruits like pineapple, as well as nectarine and honeydew. This white wine from Jamieson Ranch Vineyards can pair well with light entrées like fish and pasta. One cannot talk white without mentioning a good sparkling wine that delivers bubbles without the high price tag. One go-to option in this category is La Marca Prosecco, an Italian sparkling wine with fruitier notes and lighter bubbles than its typically costlier French counterpart. COSTLY CORKS Napa Valley delivers with the Newtown Unfiltered Chardonnay. Skipping the act of removing tiny particles produces a wine that is less clear, but some say unfiltered wines retain more flavor, and in the case of this Chardonnay, that would be a handful of fruits and a smoky complexity. Located in the southern part of Burgundy, the Pouilly-Fuissé appellation for white wine features Chardonnay grapes. Château-Fuissé’s Tête de Cru is perfectly blended from many areas of the appellation’s vineyards and is aged in oak and stainless steel. “French Champagne is absolutely the best sparkling wine in the world,” says Dennis. “They just taste better than bubbly from anywhere else.” A great high-end option right now is Veuve Clicquot’s La Grande Dame 2006. 28

TWO WAYS WINNING WINES FROM CELEBRATORY SPLURGES TO THE EVERYDAY TABLE.

REASONABLE REDS In the $20 range, there are plenty of good values in Cabernet Sauvignon, one of which is BV Rutherford. Staying cost-conscious does not rule out French wines. Consider Côtes du Rhône appellations, specifically Gigondas and Lirac, which are near the expensive Châteauneuf-du-Pape cru but offer good wines at half of the price. Dennis recommends a bottle of Notre Dame de Cousignac Lirac. Spanish wines can be terrific for the money, according to Ramakrishna. These “hidden treasures” include the Tres Picos Garnacha, which is fruitforward with a bit of oak and spiciness, along with a hint of green bell pepper. FANCY FERMENTATION From Tuck Beckstoffer Wines, Mockingbird is a Cabernet Sauvignonbased Bordeaux that was named for Harper Lee’s acclaimed book. Currently available in the 2014 vintage, Opus One is one of “the most unbelievable wines you can buy for your money,” according to Ramakrishna. A Rhone Valley cru, Châteauneuf-du-Pape got its name from a time in the Middle Ages when the papacy relocated to Avignon and fortunately for the world’s future oenophiles, planted vineyards. Because the best wines grow in infertile soil, according to Dennis, the area’s riverrock-laden topsoil proved ideal. While Châteauneuf-du-Pape wines like Château de Beaucastel carry a bigger price tag, they are well worth it. POP’S!
