cauliflower salad with carrots and jasmine rice
INGREDIENTS
+ 2 pounds cauliflower + 2 Tablespoons olive oil + 1/2 red onion, sliced thin + 1 cup diced carrots or shredded carrots + 1/2 cup raisins + 2 Tablespoons cilantro (optional) + 2 Tablespoons lemon juice + 4 cloves garlic, minced + 1/2 teaspoon ground cumin + 1/2 teaspoon paprika + 1/8 teaspoon cayenne pepper (if you like a bit of spice) + 2 cups jasmine rice DIRECTIONS + Toss the cauliflower and carrots with oil and season. + (option if using shredded carrots do not add to oven but add raw with remaining agreements) + Roast on a cookie sheet or in baking dish until softened about 5 to 7 minutes. + Remove pan from oven. Scatter the onions on the pan and place back in the oven. + Roast until the cauliflower is golden brown and the onions have a slight char for about 10 to 15 minutes. + Cook the rice according to the package directions. + When the cauliflower, carrot ,and onion are done roasting, place it all in a bowl and add the remaining ingredients. + Serve on top of the rice. wevegotyoucoveredllc.com 34
