CHILANGO, THE NAME OF A FRESH-CASUAL MEXICAN RESTAURANT IN LOVELAND, COMES FROM SPANISH SLANG FOR A NATIVE OF MEXICO CITY. Owner Mark Bennett refers to himself as the literal Chilango, having been born and raised in Mexico City by British parents. All nicknames aside, Chilango Fresh Mexican has elevated the notion of suburban Mexican food. The restaurant serves delicious and authentic tacos, empanadas, flautas, enchiladas, quesadillas and more, all made with fresh ingredients prepared daily. “We focus on very clean food. We don’t have a freezer, we don’t have a microwave, we’re shipped food every day. We make everything fresh, so it’s all truly scratch-made,” Mark says. Growing up in Mexico City with a chef mother certainly influenced his desire to one day run his own Mexican restaurant. “I learned from her,” Mark says. “My mother would always prepare fresh, authentic Mexican food when I was growing up, and when we decided to do this, that’s what we decided to go with.” To that end, Mark and his wife pride themselves on standing out from the crowd and making sure all their dishes have a distinct flavor profile, so the menu items remain consistent. “You can eat the tacos with your eyes closed and immediately know which ones you were eating if you’d had them before,” Mark says. “A lot of places you go, if you separate it all out and you taste the proteins themselves, they kind of start to blend together—there’s no real differentiator, nothing that makes them distinct.” “A lot of our recipes are very simple, made with fresh ingredients and executed well,” Mark says with a smile.

INGREDIENTS + 2 pounds Roma tomatoes, diced + 1 white onion, diced + 3 whole jalapeños (seeded and deveined), diced + 1/4 cup lime juice + 1/4 bunch cilantro, chopped + 2 teaspoons salt, or to taste
METHOD Combine the diced tomatoes, onions, jalapeños and cilantro in a medium-sized bowl (try to dice everything the same size, if possible). Pour or squeeze over the lime juice. and add salt to taste. Mix it all together and dig in!

As a dentist, Halloween has always posed a dilemma. Do we do the “dentist” thing and hand out tooth brushes on Halloween, or do I risk judgment as the dentist who promotes tooth decay through the dispensing of Halloween candy? Not only do we pass out candy, but we pass out big full-size bars! First and foremost, life needs and deserves reasons for neighbors to come together in an enthusiastic, joyous fashion. And secondly, there are dentally safe ways to enjoy candy! Here’s the key. When it comes to dental health and sugar consumption frequency is far more important than quantity! Let’s say you and I each have four identical pieces of Halloween candy. You lack restraint and eat all four of your pieces at one time. I however, eat one piece at breakfast, another with lunch, a piece at dinner and one at bedtime. In the end, my four pieces pose far more threat to my dental health than your four pieces! The bottom line is that when we feed ourselves, we also feed the bacteria that are living in our mouth. When we feed the bacteria sugar, they rapidly convert the sugar into an acidic by-product that has the potential to decalcify our teeth. If you eat the Halloween candy all at one time the teeth are subjected to just one episode of acid exposure. If any decalcification occurs there is time for reparative recalcification to take place throughout the rest of the day. If however, you spread the same quantity of candy throughout your day, you increase the frequency of sugar/acid exposure and place the teeth at far more risk!
