"That Healing Feeling" - an interview with owner Bettina Hamblin, who started Farmacy to offer healthy, whole, southern foods (with a southwestern twist) to area residents. Harmony Family Center's 4th Annual Grateful Hearts Luncheon Harmony Family Center celebrated its fourth annual Grateful Hearts Luncheon on Wednesday, November 6, at Jackson Terminal. INCREDIBLE TINY HOMES FOUNDER RANDY JONES IS FOCUSED ON BUILDING A COMMUNITY. He’s also focused on keeping costs down, staying true to his mission, and updating everyone about his progress on YouTube. But that’s what you do when you vow to be transparent. Randy didn’t set out to be a tiny home builder. In fact, after leaving his Knox County teaching job, he went into contracting and eventually built a resort in Pigeon Forge. Things were looking up, that is, until the financial crash of 2008 sent him out of business. Randy went from building a dream property to swinging hammers alongside younger men who were just getting their start. Then, a friend asked him a question that would plant a seed for a new dream: Have you ever seen these tiny homes? “I took some salvaged wood that I’d gotten from cleaning off a lot and built a tiny home. I listed it for $20,000,” he says. “No one was selling them for that price. I sold the first one four years ago. It was Memorial Day and we took ten orders that weekend.” Randy gathered a crew and settled in Newport. He’s never borrowed money, never taken out a line of credit. He uses the money from buyers to build their tiny homes and, subsequently, build the company. Everything he’s done - right or wrong, he says - goes on the YouTube Channel (Incredible Tiny Homes). “I’m as transparent as I can get it. If I show you everything, you’re going to trust me. Our transparency and price point is unheard of,” says Randy. “We’re selling houses less than when I started. The base price is $15,000. The tiny house industry has increased in price, but I want to keep this tiny home trend alive. The freedom to leave when you want to and do what you want to? Financially, it’s a no-brainer.” Last year, Randy threw out an idea to his viewers. He bought 34 acres, stood in the middle of the woods and asked, “I can put 30 lots out here. What do you think?” Within the month, he had 30 people submitting a deposit. Off they went to clear the land and create additional space for more tiny homes. The project has been underway for months. “It’s called The Forest,” he says. “We hope to have people move to Newport and live financially free. People can live here or use them as AirBNBs. I’m excited to have a community here.” Randy says the entire process has been a challenge, and not one free of mistakes. However, the team grows as the tiny home trend continues. Randy keeps re-investing in the business and keeping everything above board and online.

“Everything is done here. Nothing is subbed out. We put a personal touch into everything we do. We don’t want to be a manufacturer,” he says. “I feel a responsibility when I’m on YouTube. When I lost everything in 2008, it wasn’t about the money. It was that I didn’t have anything to do. I lost a vision. That’s why this is so important to me. AS AN UNDERGRAD, DR. PEGGY PRATT TOOK A BASIC NUTRITION CLASS AS AN ELECTIVE, BUT SHE FELL IN LOVE WITH THE COURSE AND IMMEDIATELY DECIDED TO MAJOR IN DIETETICS. She interned in food management, graduated and bounced around in management roles, honing her skills as a dietician. She worked in hospitals and in outpatient settings, teaching and going back to school herself. Peggy had a keen interest in eating disorders, which is where most of her continuing education courses were focused. Eventually, after settling in Knoxville and working part-time for an intensive program, Peggy decided private practice was her true calling. “I really felt like this was my sweet spot - therapy and nutrition. The whole-body approach,” she says. “It’s not about the food. It’s about the other things.” If there’s one thing Peggy wants people to know it’s that food isn’t good or bad. Food is just food. It exists to nourish and energize. It’s what people do with the food that leads to disordered eating and unhealthy relationships with food. “I was doing intuitive eating a long time ago. The mind needs to be connected to the body. That’s the beginning,” she says. “Diet culture is making people exhausted, frustrated, angry, and sad. They

say, ‘What’s wrong with me? Clearly, I don’t have the willpower.’ It becomes shameful in a way. We need to unravel all those early messages from family, coaches, friends… What made them start manipulating food and not trusting their bodies?”

BETTINA HAMBLIN NEVER IMAGINED SHE WOULD BECOME A RESTAURANT OWNER, BUT IT WAS HER LOVE FOR THIS COMMUNITY AND BRINGING PEOPLE TOGETHER THAT LED HER TO OPEN FARMACY, A FRESH TAKE ON FAST-CASUAL DINING IN SOUTHWEST KNOXVILLE. Located at 9430 South Northshore Drive, the storefront location once served as the workspace for Bettina’s previous catering business, Luxe. While she enjoyed the boom of local eateries in the downtown and other parts of Knoxville, the Northshore community where Bettina lives seemed to be missing out on the fun, so she chose to convert her catering kitchen into a comfortable restaurant worth making the drive out west to visit. Growing up, making dinner was a family affair for Bettina, and she wants that homecooked, made-with-love feeling to

That’s why she makes sure her entire team at Farmacy loves the food and their jobs. “I feel like the guest gets to eat all of the joy that we’re experiencing while we’re making the food,” Bettina says. “It’s really important to me that everyone who works here finds joy in those things because it really resonates when you’re eating it.” Farmacy’s menu features flavors and dishes inspired by Bettina’s childhood homes, from northern Maine to southern Arizona to Nashville. Look for southern foods with a southwestern twist, like tacos with fried chicken, topped with pico de gallo and buttermilk dressing, or the popular grilled Chilean salmon served with a maple-pecan glaze. Weekend brunch features Nashville hot chicken and waffles, a southwestern favorite chicken tinga on a crispy tostada, and a south-of-the-border take on a classic dish with the churro waffles, tossed in cinnamon sugar and served with roasted banana pudding, whipped cream, fresh strawberries, and a salted caramel sauce. As much as possible, Bettina incorporates fresh, local ingredients from farms right here in Knoxville and the surrounding counties. She makes it a priority to support other female entrepreneurs, farms with purpose, and the community that has given so much to her.
