GARDENING IN CENTRAL OREGON IS A CHALLENGE, AND GROWING TOMATOES IS FOR THE MOST INTREPID. Whether dodging frosty nights or reckoning with sandy soil, harvesting this summer treat calls for careful attention. Backyard gardeners may sow seeds in a greenhouse, transplant starts with an eye on overnight temperatures, and have cover ready to protect these sensitive plants during cold spells that sometimes pop up even in July. Whether you reap the crop from your own bounty of Sweet 100s or bring tomatoes home from the local farmer’s market, here are two ways to enjoy the reward of this taste of summer.

INGREDIENTS

+ 2 pints assorted cherry tomatoes, halved + 1/2 small red onion, thinly sliced + 3 T fresh basil, chopped + 1 T white wine vinegar + 2 T extra-virgin olive oil + 1/2 tsp. salt + 1/2 tsp. sugar + 1/4 tsp. freshly ground black pepper

DIRECTIONS Combine basil, white wine vinegar, olive oil, salt, sugar and pepper in a bowl. Mix together with cherry tomatoes and onion, chill and serve. NOTE: This salad is an excellent place to experiment with fresh tastes from the garden or farmer’s market. Add chives, Italian parsley or a favorite seasonal herb of choice. For another boost of flavor, feta gives this salad a Mediterranean flair and half a cup of crumbled cheese is just about right for this salad’s proportions.

ROASTED CHERRY TOMATO

PASTA

Roasting tomatoes brings out even more of their ripe sweetness. The addition of balsamic vinegar allows them to caramelize in the process, giving depth to this quick and easy summer favorite. 4 Servings

INGREDIENTS + 3 pints cherry tomatoes + 1/2 cup olive oil + 2 T balsamic vinegar + 4 cloves fresh garlic, minced + 1/2 tsp. salt + 1/2 tsp. freshly ground black pepper + 1 pound thin spaghetti or Capellini pasta + 1 cup fresh basil, coarsely chopped + Freshly grated Parmesan (for serving)

DIRECTIONS Preheat oven to 400 degrees. In a bowl, mix cherry tomatoes, olive oil, balsamic vinegar and garlic. Spread tomatoes on a baking pan lined with parchment paper, and sprinkle with salt and pepper. Bake 15-20 minutes or until tomatoes have a light char. Meanwhile, boil water and prepare pasta as directed (the cooking time will vary by the pasta variety). When cooked through, drain pasta and mix with roasted tomato mixture. Toss with fresh basil and serve with Parmesan cheese.

BACK TO NORMAL: HOW PHYSICAL THERAPY CAN HELP IN COVID-19 RECOVERY COVID-19 primarily affects the lungs, but also can have heart and muscle/joint complications. People that have been affected directly by the coronavirus or who have limited physical activity due to self-isolation may have similar issues – increased fatigue, weakness, difficulty breathing, decreased endurance, and reduced balance. The good news – we are here to help! COVID-19 is a restrictive lung disease, meaning that it prevents the lungs from fully expanding with air. As therapists, we can help ensure that every other part of the body involving breathing is working at its highest capacity. We take an individualized approach with each patient. We perform a thorough evaluation that includes vital monitoring (heart rate, blood pressure, breathing function, etc.), balance testing, strength and flexibility testing, and activity tolerance. These tests and measures establish a baseline of function. We then develop a plan to progress safely to the highest level of function. How we do this: • Capacity testing: Using an appropriate measure for each patient, we establish a safe baseline of activity • Musculoskeletal evaluation: Looking at the whole body to determine specific areas we need to address in order to meet each patient’s goals o This includes chest wall mobility screening and breathing assessment • Manual therapy: Improving chest and stomach expansion so the lungs can work to their full capacity o Stretching techniques that incorporate breathing o Special tools and other equipment to

improve soft tissue mobility and reduce restriction for breathing • Corrective exercise: Strengthening the diaphragm and postural muscles used to optimize breathing o Specific breathing techniques to help strengthen the muscles used in breathing o Postural exercises to optimize breathing mechanics o Training efforts to maintain proper mechanics and posture during daily tasks • Balance and gait training: Reintegrating safely to community activities • Goal-oriented functional activities: Providing comprehensive treatments focused on patient-specific goals in order to improve quality of life • Safe-discharge planning: Educating patients to know the enemy they are fighting, with emphasis on safe vital levels, symptom management, and how to progress safely on their own o No matter what, our patients will always be our patients – and we are only just a phone call away Evidence has shown that manual therapy followed by corrective exercise improves overall lung function. DIRECTIONS 1. Take your cardboard and cut two pieces into the shape of a llama (we found a stencil online). Then, cut strips of cardboard the depth you want your llama to be. You’ll connect these to either side of the llama cutouts to enclose your piñata. 2. Glue your strip of cardboard all along the edge of one side of your llama, then glue to the other side. (Be sure to leave a hole you can close up later so you can fill it with your favorite candy!) 3. Starting at the neck, cover the front, back and sides of your llama with white crepe paper, cutting a slit every half inch or so to create the traditional piñata look. 4. Cover all remaining sides of the neck and head with white construction paper, cut to fit your design. 5. Using construction paper, beads, pom poms, tassels, buttons, etc., add some flair to the rest of your llama! Bonus points for incorporating different shapes and textures into your final product.

His person, Bend native Racheal Nordby, brought Winston home six years ago and he soon became a constant companion, even to the barn where Racheal rode horses as a competitive equestrian. Soon, belying his petite demeanor, Winston was soon called “Boss of the Barn” as he learned how to herd livestock. The easy way Winston made friends was a natural segue to his own Instagram account @wanderpupz where folks follow along a scrapbook of adventures. “It began as a way to connect with other dog owners,” says Racheal. But people responded to Winston’s ways, and now his recognition from photos serves as a real-world introduction at dog parks and around town. Most adventures
