Benefit for Harlem Heights At-Risk Kids “Love Your Neighbor,” an event featuring Norman Love Confections and Mark Loren Designs, was held at the riverfront Gulf Harbour home of Clinton and Cynthia Winter. Guests enjoyed live music, fine wine and spirits and an assortment of culinary creations from local restaurants and chefs. Live and silent auction items were offered and all proceeds benefitted educational programs for at-risk children.

Special Equestrians Taste of Love The 17th annual culinary extravaganza was held at The Ranch Concert Hall & Saloon with feature dishes from popular area restaurants and chefs, wine tasting, live and silent auctions. All proceeds benefitted Special Equestrians, a nonprofit dedicated to helping children and adults with disabilities by providing a structured therapeutic horseback riding and carriage driving program and other equine assisted activities.

As you pass through the tropical lowlands, the rice paddy catches your attention. Rice, growing in Florida? The flooded plot, thick with a grass, vaguely resembling wheat, looks how you imagined it might, but what’s surprising is that each stalk of rice grows separately and it takes quite a large area to grow enough rice for a family’s needs.

To help multiply the amount of rice to harvest, ECHO encourages farmers to use a technique called System of Rice Intensification. Using less water and less seed, this technique has been proven to produce substantially more rice than traditional techniques. Next, we pass a small “mountain” and learn what can be grown on steep hillsides. Then we walk into a replica Caribbean homestead, complete with fruit trees, a food forest, field crops, and a small garden near the hand-molded brick home. The tour guide explains that this homestead allows the farming family to produce the most diverse harvest from a small amount of land. Volunteers and Interns are working in the garden and stop to share what they’re planting for this season. Around the corner, we come to a community garden, where you can see ideas that would work for school or neighborhood gardens. Plants abound in raised garden beds, and there are even themed gardens such as a “pizza” garden with tomatoes, basil, and oregano to inspire kids of all ages to eat what they grow. We stop for a few minutes to visit some friendly goats, who are an important part of a small farm. The goats, aside from being cute, provide muscle, manure, milk, money, and meat for their owners. The goats were snacking on mulberry leaves that were planted nearby as a renewable food source.

The Tropical Rainforest is the most lush part of the farm, resembling areas around the world that receive at least 100 inches of rain per year. We learn that most of the nutrients in the rainforest ecosystem are found in the green leaves of living plants, and that by mulching these leaves, a farmer can greatly increase the fertility of his/her soil. Instead of depleting the nutrients in the soil, ECHO teaches farmers around the world to nourish the soil. Possibly the most impressive part of the farm, though, is the Urban Garden. Herbs and vegetables thrive in old tires, kiddie pools, plastic bags, pallets… you get the idea. This creative space encourages those with even the smallest space available to grow their own food. It is inspiring to say the least. Whether you’re looking for an enjoyable half-day adventure, or ideas and plants for your own landscaping, ECHO is a great place to visit. You can find it just one mile East of I-75 at exit 143. ECHO’s nursery and bookstore are open 9-5 Monday through Friday and 9-4 on Saturday. Make sure to check the website for tour times and prices.

The primary focus of Market Earth is disproving the myth that fair trade and ethically made products are of a lesser quality. Karen wanted to show people that they don’t have to give up quality or style to buy products that give back and everything sold in the store gives back in

some way-fair trade, eco-friendly, recycled, ethically made or companies with a strong philanthropic arm. Karen calls it a “gift within a gift,” which makes every purchase more satisfying. While some of these terms may seem unfamiliar, Karen’s philosophy of “products with a purpose” is all about supporting the artisan spirit. Fair trade items help producers in developing countries achieve better trading conditions and greater equity in international trading, as well as help promote sustainable development for both producers and workers in developing countries. Recycling or upcycling products makes a positive impact on the environment as items are redesigned, modified or adapted to a new and better purpose. Karen strives to support a global marketplace with exceptional standards of quality and creativity and have her goods represent social awareness. She is proud to run a business that is a purveyor of change in the way it treats this beautiful earth and all those who live on it and she does this by sourcing from providers who are committed to supporting non-profit groups in order to break the cycles of poverty and ensure that all people are treated with dignity and respect. That packs a lot of purpose into shopping and whether or not customers already know that, them entering the store furthers that initiative. As they walk through the doors, shoppers will encounter a very relaxed environment. With an extensive array of products and merchandise, there is no need to hurry; customers are encouraged to take their time to explore and discover every unique piece. Market Earth carries both men’s and women’s apparel, accessories, bags, jewelry, home décor, and gift items. Some of the most popular products are the recycled bags made from upcycled military canvas or water bottles and their BlueQ socks. Karen works on keeping the store’s inventory fresh, up-to-date, and unique by carrying merchandise that you can’t easily find elsewhere. She travels to find new lines, artisan-made pieces, and smaller boutique products that are distinctive and memorable in order to be the “Where’d you get that?!” store.

Chipotle Quinoa Sweet Potato Burgers ingredients with Crunchy Guacamole

Yield: 2 extra-large patties, 3 medium sized patties, or 4 sliders.

BURGER + 1/3 cup quinoa + 2/3 cup water

+ 1 cup cooked sweet potato + 1/2 cup white beans + 1/2 teaspoon sea salt + 1/4 - 1/2 teaspoon chipotle powder + 1/4 teaspoon garlic powder (or 2 cloves minced fresh garlic) + 1 - 2 tablespoons tahini (optional) + 1/2 cup panko crumbs + Olive oil + Sprouted grain hamburger buns CRUNCHY GUACAMOLE + 2 avocados + 1/2 teaspoon sea salt + 2 tablespoons salsa or pico de gallo + 2 tablespoon raw pepitas (shelled pumpkin seeds)

Heat a small pot on the stove with the water and qui-

noa. Bring to a boil, then reduce to a simmer and cover. Cook quinoa for 10-15 minutes (or until all the water is absorbed). Remove from heat and let set for 5 minutes. While the quinoa is cooking, peal and dice the sweet potatoes. Cook the sweet potatoes in boiling water for 10 minutes, or until soft and mash-able. Once the sweet potatoes and quinoa are done, combine the sweet potatoes and white beans in a mixing bowl and smash with a potato masher until well mashed but still retaining a little texture from the beans. Add in the tahini (if using) and the spices. Mix well. Fold the quinoa into the mixture. Heat a medium size pan to medium heat and drizzle with olive oil. Form the quinoa sweet potato mixture into desired size/amount of patties, coat with panko crumbs, and cook for 4-5 minutes on each side (or until a nice crispy golden brown outer shell is reached). While the burgers are cooking assemble the crunchy guacamole by combining all the ingredients and mashing them together (or less mashing if you like your guacamole chunky!).
