What’s a meal without the perfect side kick, the drink to complement the flavors on the plate? Parkhill’s South Liquors and Wine owner Tina Parkhill, featured on the cover of this months’ issue, graciously took some time as she, sommelier James Andrews and beer and alcohol expert Chris Vedda shared what’s new in the spirits market. Did you know they host virtual tastings for wine, beer and various drinks? Get some friends to join you virtually for a fun time with the Parkhill experts. If you want to get away and try food in the mountains of Colorado, there are some excellent restaurants and good food in Westcliffe as well as exciting adventures, breathtaking views and plenty of space to relax. There is also mention of the quirky Bishop Castle, where I'm pictured above in the mid-evil fortress. It’s easy to get stuck in a rut and find yourself eating the same things each day. We get it; we’re all busy, and we have our go-to meals that we know will feed the family for the whole week. We return to our favorite restaurants and order our favorite dish every time because we know it is always amazing.

Many Custody Cases Being Complicated by Some Schools Not Reopening
August is almost always a tough month for parties going through divorce or custody disputes. In many cases, parties have trouble agreeing on where the children will go to school. The parties might also have trouble agreeing on who is going to pay the cost of private school if the children do not go to public school. Prior to school beginning in August, many parties, unfortunately, end up in court on motions to modify or motions for contempt as it relates to these kinds of school issues. The litigation often involves where the children will go to school and who will be paying. Many custody schedules have it setup where custody exchange revolve around the beginning and ending of school days. In other words, many parents drop off the children at school. The other parent then often picks up the kids after school is over. With COVID-19, many school districts will not be opening up this Fall in a traditional sense. Instead,
many school districts are going to be opening virtually. By opening virtually, many parents will now have to co-parent as it relates to homeschooling their kids through an online program. Many school districts are making this decision due to safety reasons. With the spread of COVID-19, many school districts are concerned that students and teachers can quickly spread the virus. In some cases, the parties will now end up having more face-to-face encounters where they are exchanging the children because it cannot take place at school. Custody exchanges can be a source of dispute. One party could be late for an exchange. Sometimes, somebody does not show up. In other cases, parties might engage in verbal discourse that is not productive. As it relates to virtual schooling, one parent may have a concern that the other parent is not equipped or capable of handling virtual schooling during their custody time. Some parents might also be unable to do virtual schooling because they have to work. It might be that the children have to go with the other parent or the
parties might need a tutor or childcare to assist with schooling. In other situations, one party might wish to send the children to a private school that is going to be open versus leaving them in the public school, which will not be open. In some cases, parties might be able to agree. In other cases, they may not. For many parties, they might consider engaging in mediation or collaborative law to attempt to resolve these disputes. For others, they may end up having to file a motion to modify to change the existing custody schedule because no agreement can be reached. COVID-19 has been challenging on many levels. But the impact on custody cases with many schools not reopening is, unfortunately, going to be seen for many involved in the family court. There’s a tiny, picturesque town named Westcliffe enveloped in between the Wet and Sangre de Cristo mountain ranges in the Colorado Mountains with unbelievable views, an old western vibe and the perfect place to relax. There is plenty to keep you busy if settling down with a good book or taking a nap on the hammock isn't on your list of favorites. If driving, you’ll have to take a break at the Gloss Mountain State Park near Fairview, Oklahoma for a hike up Cathedral Mountain offering a spectacular view of the valley floor. “Miles of prairie floor stretch out as far as the eye can see, broken up only by the native red dirt and sparse green shrubbery.”—TravelOK.com. I had to stop twice, on the way to and from Colorado, as the scenery changes with the sun depending on the time of day. If you prefer to fly to Westcliffe, there is a small airport that accommodates jets and small planes. Visit SilverWestAirport.com for more information. As you approach Westcliffe, you are greeted by a quaint main street dotted with restaurants, galleries, a local grocery store, and places to stay with gorgeous views of the mountains. The sky at night is amazing. “Since the mountain ranges shield Westcliffe and nearby Silver Cliff from light pollution in the region, the communities are the first in Colorado to be recognized by the International Dark-Sky Association for their exemplary stargazing opportunities.”—Colorado.com. If mountain climbing is on your bucket list, there are five 14,000-foot peaks, known as the Crestone Group. This quirky castle, a bizarre feat of architecture and engineering, has lots to explore, hundreds of stone and metal spiral stairs to climb and amazing views. Jim Bishop has been building the mid-evil castle by hand since 1969 and it’s free to visit and explore.

Depending on the time of year, you can also visit the Monarch Mountain ski area if you enjoy skiing the slopes and sipping on hot chocolate. Complete your visit by staying at Uluru Ranch, a dome shaped Airbnb home just outside of town situated on 40 acres across from Lake DeWeese in the DeWeese Reservoir State Wildlife Area. The boating and fishing lake is within walking distance. The views from the deck surrounding the home are breathtaking and if you hike up the mountain behind the house, the views give you the feeling of being on top of the world. Randy Page has been in the food industry since 1985 and a Chef for more than 25 years. His restaurant, Cricket & Fig, opened last fall in the London Square shopping center. DID YOU COOK AS A CHILD? Yes, my mother was a great cook and baker, and I wanted to learn to make cakes and pies like she did. I enjoyed making Chocolate Mousse because it has a reputation for being difficult to make as well as being elegant and rare (at least to an 8-year-old). I like to learn how things work and I enjoy challenges. My early influences were the master chefs of the early 90’s; Charlie Trotter, Jean Louis Palladin and Jean-Georges Vongerichten, and pastry chefs Jacques Torres and Norman Love. BEST THING YOU EVER ATE? A Crème Brûlée Napoleon with Butterscotch at The Townhouse in Charlotte, NC. It was the best dessert I have ever had. The layers of rich custard were so cold and just perfectly balanced by delicate, buttery crisp almond pastry layers and a rich butterscotch sauce. And yes, I know how to make it—the chef/owner is a friend of mine. WHAT IS THE BIGGEST THING THAT HAS EVER HAPPENED TO YOU AS A CHEF? While working in San Luis Obispo, California, I was asked to cook for Julia Child and two companions. Do you reminisce about an oasis in the desert after a night of margaritas and friends when you see a taco truck? All these things occur in our normal day-to-day lives without realizing how much comfort, love and relief we find in these foods. Here is a grown-up recipe after a weekend getaway with friends and family at Fort Gibson. This grown-up French toast and Monte Cristo hybrid will become your new favorite comfort food.
The Fort Gibson INGREDIENTS: + French Brioche Bread + Dash of cinnamon + 1 cup heavy whipping cream + 1 cup milk + 1/2 cup brown sugar + 2 medium eggs + 1 teaspoon vanilla extract + 1 medium tomato + 8 slices provolone cheese + ½ pound Dietz & Watson Honey Maple Turkey + ½ pound Dietz & Watson Honey Ham + 1 tablespoon powdered sugar for dusting DIRECTIONS: 1. In a large bowl mix cinnamon, eggs, whipping cream, milk, brown sugar and vanilla. 2. Dip bread into mixture on both sides, making sure the mixture is absorbed. 3. Place bread into frying pan with a pad of butter. 4. Cook on each side until golden brown (about 30 seconds on each side) and then flip. 5. Add one slice of cheese on each side as soon as it is flipped. 6. Add two slices of turkey, two slices of tomatoes and one slice of ham and remaining bread. 7. Using a sharp knife, cut the sandwich into triangles and dust with powdered sugar. Enjoy!
