Recently, on July 28th, I woke up just like any other morning to care for my Dad, but as I touched his cheek, I realized he was gone from this earth. Thankful for this community is what this issue is about, and it is my state of being for being blessed with such a wonderful father. Thanksgiving day was always our favorite holiday as it is about family and fellowship and, of course, great food. This will be my first Thanksgiving without my

During his memorial service I was honored to share what he stood for. Consistent and stable, a rock of safety, selfless and giving, and it was always God, family, country, duty, honor, and service before himself. My loss is not unique, and my prayer is for a peace that surpasses all understanding for each of you who have experienced loss. I shared the following verse at his service with his name in place of “Love,” and my goal is to live each day this way; if we all live each day this way, our community will be blessed beyond our ability to imagine. South OKC Chamber Hosts Membership Awareness Campaign Through the South Oklahoma City Chamber of Commerce's Membership Awareness Campaign, held Sept. 17 through 19, they realized a membership growth of 26%. They had 117 incredible volunteers creating a buzz in South OKC and sharing the great work the South Chamber does on a daily basis. The event was held in the newly renovated The Yale Theater.

AS A YOUNG BOY, ERNEST MARTIN WOULD HEAR HIS FATHER AND UNCLES TALK ABOUT THEIR MILITARY SERVICE, AND HE ALWAYS KNEW HE WOULD ONE DAY FOLLOW IN THEIR FOOTSTEPS. From his Marine father, Martin also learned that whenever he accepted a challenge, it was his sacred duty to fulfill it to the best of his ability. It’s a mindset that’s kept him alive and led to a full life of achievement for the decorated paratrooper and Army veteran, who served for 22 years and was a proud member of the Army’s storied 101st Airborne Infantry, known in military circles as the “Screaming Eagles.” Officially he served as a platoon sergeant for the Eagles’ 502nd Infantry Air Assault Regiment, completing 99 parachute jumps over his career. For much of his time in the service, Martin was overseas in the thick of things. He initially went into harm’s way during the U.S. invasion of the island of Grenada in 1983. That was only the beginning, however, as his unit would go on to be the tip of the spear for the liberation of Kuwait in Operation Desert Shield and the invasion of Iraq in Operation Desert Storm. Martin’s unit parachuted into Kuwait in advance of the regular U.S. forces, and in his duties as a platoon sergeant he established ammunition stores, trained troops and dealt with hundreds of Iraqi soldiers who voluntarily surrendered, all while dealing with SCUD missiles flying overhead. In addition to the Middle East, Martin’s service included an overseas tour in Southwest Asia, plus stints in Italy, Germany, Fort Bliss and Fort Knox. He even served as part of the color guard for President Ronald Reagan’s second inauguration. After growing up in Indiana and traveling around the world, the former paratrooper landed in Oklahoma through his final military assignment, as head of the Army ROTC program at the University of Oklahoma. While at OU, he took advantage of his four-year tenure to complete a bachelor’s degree in Native American history. For his efforts, Martin has earned literally several dozen medals, service ribbons and recognition certificates, including a National Defense Ribbon, four commendations, three meritorious service certificates and seven Army achievement medals.

A lifelong outdoor enthusiast, Martin said he relishes the opportunity to teach visitors and school children about Oklahoma’s wildlife and the great outdoors in general. He also loves spending time with his family. Together he and his wife, Rebecca, have three children and six grandchildren. “God’s always put me in places where I needed to be to take care of something,” Martin said. “In the military when something happened, I was there. Even today it (continues to) happen.”

DURING ITS 14 YEARS OF EXISTENCE, BENVENUTI’S RISTORANTE HAS GARNERED A WELL-DESERVED REPUTATION FOR ITS SIGNATURE, MADE-FROM-SCRATCH OLD WORLD ITALIAN DISHES CREATED BY MASTER CHEF ANTHONY COMPAGNI. It’s the restaurant of choice for many area residents for celebrations like birthdays and wedding anniversaries. Others enjoy the warm atmosphere, great service and, of course, great food and drink throughout the year. It’s also a popular gathering space for business people and organizations. The menu is quite extensive, and one could go for some time trying new appetizers and entrees without repeating any, especially since the menu is constantly undergoing review and updating. More and more, the restaurant is becoming known for its steak and seafood selection as well. “We use only prime beef, or better, for our steaks, and often feature Kobe and Waygu,” notes Benvenuti’s general manager Tarasina Compagni. “We have a 32 oz. Kobe Bone-in Tomahawk Ribeye on the menu as well as an 8 oz. Prime Filet. We only source meat from ranchers who guarantee hormone- and antibiotic-free and grass-fed beef. And our seafood is flown in twice weekly. “Chef Anthony Compagni will try product from a number of sources to make sure he serves only the best of what’s available.” Chef Anthony – always on the lookout to make diners’ experience fresh, memorable and pleasurable – also offers a monthly Chef’s Menu. The Chef’s Menu features two dishes paired with wine or beer. November’s offerings are Veal Cheeks with Roasted Heirloom Pumpkin Risotto, served with Banfi “Summus,” a red blend; and Clams and Sausage with Fregola Sarda Pasta in Tomato Brodo with David Arthur “Mertaggio,” another red blend. The Chef’s Menus is varied based on seasonal ingredients and the chef’s culinary creativity. (Spoiler Alert! Personal Experience Recounted Having sampled some of Benvenuti Ristorante’s fabulous fare at Cleveland County Lifestyle’s Women of Influence dinners the past two years, I was ready to check out more of its offerings. So, in late September, I invited several members of my family, along with two friends, for a night of great food and drink. We started with several delightful appetizers, including two recommended by Benvenuti’s general manager, Tarasina Compagni: Risotto Arancini and Crab Claws; we especially enjoyed the latter, which is served in a tasty garlic lemon white wine butter sauce. Additionally, we ordered meatballs, which they make with veal, pork and beef, and fried Calamari. Suffice it to say, the only appetizer left over was one meatball, which one or our party claimed for his lunch the next day! I ordered the Caprese salad, which I shared. A fan of heirloom tomatoes, which my mother used to grow, I’ll definitely order this salad again. For my entrée, I selected the Chicken Piccatta, featuring lightly pounded chicken scallopini in a flavorful lemon caper sauce, served up with a side of garlic potatoes. Loved this dish, and there was enough of it to save some for the next day. (Truthfully, though, it got finished off that same evening. LOL)

I’ll let the other parties at my table offer their own thoughts on their Benvenuti’s evening. My sister, Lori Hanna, called her experience “excellent.” “The staff was very attentive, the food superior (I had the Chicken Milanese). Too good for words. It truly melts in your mouth. Portion size was enormous. Unfortunately, they ran out of their signature Tiramisu, which is my favorite dessert. I’m assuming that other patrons must feel the same about this dish and that is why they ran out. Ambience was quaint, yet elegant.” Lori also ordered the Greco salad; though all she said was “delicious,” I noticed that she cleaned her plate. My niece and nephew-in-law, Lindsey and Evan Davies, were impressed with the “caring waitstaff, who took the time to explain dishes and elaborate on ingredients.” “We were sat at a family-style round table with a central turntable so appetizers and other goods could be freely shared,” they noted. “Service was prompt, and we were impressed with the presentation of the food, which was like art. Of course, the flavors of each dish were exquisite. We split a Tartufo pizza and the Wild Boar Gnocchi and were equally impressed with both dishes. Dessert took our experience to a new level, and the Flourless Chocolate Torte has become a family favorite.”

“Our meal was absolutely delicious, from the appetizers to the salad to the entrée, Gamberetti, to the dessert (Triple Chocolate Mousse Cake – all was to die for. Best meal, ever!” exclaimed Julia Dowling. “It was a super evening and the food was fantastic,” said Eddie, Julia’s husband. “The meatballs were the best I have had in a long time, and the pepperoni pizza was a knockout.” Eddie also praised the Creme Brulee, which, by the

When you call to request a reservation, you simply choose how many courses you would like to experience. When you arrive, you’ll be greeted at the door with a warm welcome as though you’ve just stepped into a friend’s home. If you arrive earlier than your seating time, you may want to enjoy a pre-dinner cocktail as you choose your seat. That’s right. Nobody tells you where to sit at Grey Sweater. You can choose to sit at any of the 18 seats at the dinner bar, which wraps around the open kitchen like a culinary amphitheater, or at a semi-private table with a view of the kitchen. The space is private and cozy,

despite its ability to very comfortably seat 52 people. And the design is lowkey luxury at its finest. The first thing that came to mind for me, was that the space felt elegant but relaxed, like somewhere the ladies from “Sex and the City” would be spotted. As the diners arrived and found their seats, the culinary team got to work, and it wasn’t long before the delicious scents began to fill the room. This is where food becomes a form of creative expression. There is no menu and the ingredients change weekly.

Our thing is this, let’s get lost in food culture,” Chef Black said. “As cooks, chefs, dishwashers, front of the house, we truly get together and ask ourselves about food. We question ourselves all the time about what we’re doing. Whatever the answer, the guests happen to be a part of it. When you come in this room, you’re in my house for two or three hours and I’m taking you on this journey. It’s this journey where you’re going through different emotions.”

When Chef Black says he’s going to take you on a culinary journey, he doesn’t disappoint. Ingredients are sourced from around the globe and vary based on what is available or in season. All of the seafood is wild caught, fresh and flown in daily. Vinegars are made in-house and spices are collected from around the world and stored on-site, while vinegars are made and fermentation takes place in-house. Each course is paired with a complementary wine. The elements of your journey are presented to you over the course of the meal and explained in terms of flavor, ingredients, and even the artistic choices that are behind the creation of the dish. My experience was one of the autumn varieties. Each dish was creamy and rich, which flavors and textures that surprise you and expand your perception, but also make you feel invited and cozy. There were everyday favorites that had been turned into works of edible art, and dishes that included unique flavors, textures and ingredients. Each dish was decidedly different from its predecessor, yet somehow, they all worked in concert to create a journey of the senses. My favorite part of the evening, however, was in the details between courses. One stood out in particular. I was presented with a small round dish containing a small, thick white disk, which I soon discovered was a dehydrated towelette as it expanded when my host poured a mixture of warm water and a blend of essential oils on it. Despite the scent’s official name being “wood and spices, essential oil number 7,” the oils seemed to me to smell more of lavender and lemon than woods and spices. Either way, the scent was both surprising and light. I was instantly relaxed and my experience went to an entirely different level. “It’s also a place where people conversate. What is happening now is exactly what we dreamt about,” Chef Black said, motioning to the other conversations going on despite the meal having ended nearly 20 minutes earlier. “People finish eating and just sharing good food and good memories, it’s catching up with people.” Then, as guests began to leave, Chef Black stopped and took the time to personally thank and say goodbye to guests as though each was an old friend. Grey Sweater’s waitlist had grown to some 1,800 reservations within weeks of opening, and they are currently working their way through reservations. November 2019 | Cleveland County Lifestyle

Marketing messages about these clear aligners suggest that they are a convenient, pain-free and cost-effective alternative to metal braces and an often “invisible” way to gain the perfect smile at a fraction of the cost. To investigate the truth behind these claims, we reached out to three local orthodontists, who agreed to share the good, the bad and the sometimes crooked truth behind the best way to get straighter teeth. According to Dr. K. George Elassal of Elassal Orthodontics in Oklahoma City, one of the biggest concerns with ordering teeth aligners online is the lack of a comprehensive diagnostic evaluation before treatment begins. “Without a proper oral exam, existing adverse conditions will be easily missed,” Dr. Elassal explains. “If a symptom or condition is missed, then later diagnosis and treatment will probably entail a more involved treatment and at a higher cost.” The importance of a pre-treatment plan cannot be overstated, according to Dr. Tim Shannon of Norman’s Orthodontics Exclusively. “Without a pre-evaluation, you have no idea who is reviewing or approving your prescribed treatment and there is no routine follow up care to monitor whether teeth are responding favorably or if adverse side effects are occurring.” But for consumers seeking quick solutions, does the convenience of ordering teeth aligners online offset the risk? “We live in an ‘on-demand’ society where we can grocery shop from apps on our phone and order anything with the click of a button,” explains Dr. Ryan Streight from Craig & Streight Orthodontics in Norman, Mustang and South OKC/Moore. “With this shift, there is a push for more efficient, less time-consuming, more affordable options. Teledentistry is an exciting new avenue, but it is our job as health care professionals to find a way to provide the same convenience and affordability, as well as the standard of excellence that we have a duty to perform for our patients,” Dr. Streight says. “For minor tooth correction, we can often treat patients in two or three office visits, which is similar to the number of trips to scan centers or impression kits that are required in the mail order process. Many of the customer reviews of mail-order companies are filled with complaints about terrible customer service, long wait times and extended treatment times. Spending hours on the phone with a mail-order company is not terribly convenient.” While many online companies claim to reduce the cost of teeth straightening, Dr. Shannon says that isn’t actually the bottom line.
