SOUTHSIDE KITCHEN FEEDS SENIOR CITIZENS IN NEED DURING COVID-19 Throughout the outbreak of the novel coronavirus, Southside Kitchen, a soul-food community kitchen created by the Green Opportunities, has delivered meals to quarantined or homebound senior citizens living in the Asheville Housing Authority Residences. The kitchen teamed up with local farmers, chefs and Asheville Authority Housing's Executive Director David Nash to arrange the delivery of fresh and delicious meals. According to Blue Ridge Public Radio, the team involved in the project has plans to continue with deliveries after the COVID-19 crisis has ended. show will still go on. The festival's new date is August 23. Its time and place will remain the same, as well as its lineup of world-renowned pitmasters and smoked meat (and meat-free) offerings. ASHEVILLE'S WORKFORCE AMONG HARDEST HIT IN NATION DURING COVID-19 PANDEMIC Volusion, an e-commerce website that has served over 180,000 entrepreneurs worldwide, recently conducted a study finding that Asheville's retail, leisure and hospitality workforce were among the hardest hit in the country during the novel coronavirus outbreak. According to the WLOS-TV, the study reported: "Asheville ranked No. 9 for mid-size cities where workforces at-large have faced severe economic layoffs, furloughs and store closings because of coronavirus." Savannah, Ga. (No. 13), Salinas, Ca. (No. 7), Naples, Fla. (No. 2) and Myrtle Beach, SC (No.1) were also on Volusion's list of mid-size cities impacted

CULINARY CREATIONS
GRILLED CHICKEN + ASIAN KALE SALAD ARTICLE AND PHOTOGRAPHY MELISSA LATIN
GRILLED CHICKEN KABOBS
INGREDIENTS + 4 boneless chicken breasts (can substitute thighs), cut into chunks + kosher salt/pepper + metal or wooden skewers
FOR
THE
MARINADE
+ 1 can coconut milk + 2 tablespoons paprika + 1/2 teaspoon ground cinnamon + 1/2 teaspoon nutmeg + 1 teaspoon dried oregano + 3 garlic cloves, minced + 1/2 teaspoon crushed red pepper + 1 lemon, zest and juice
DIRECTIONS 1. Cut chicken into cubes or chunks. Season with salt and pepper. 2. In a bowl, combine all of the ingredients for the marinade and mix well. Add the chicken, cover, place in refrigerator and marinate for at least one hour. (I wouldn't suggest marinating overnight.) 3. If using wooden skewers, soak them in water while the chicken marinates. 4. Place the marinated chicken on the skewers. You should have around eight skewers. 5. Heat grill and spray with non-stick spray or brush with olive oil. Cook skewers for 12-15 minutes, turning throughout to ensure all sides are fully cooked.

INGREDIENTS + 3 cups kale, finely chopped + 2 cups broccoli, finely chopped + 1 cups purple cabbage, sliced thin + 4 radishes, sliced thin + 6 to 8 baby carrots, cut into matchsticks + 6 large Brussels sprouts, sliced thin + 1/2 to 3/4 cup dried cherries + 3/4 cup sliced almonds, toasted

+ 4 tablespoons low-sodium soy sauce + 3/4 cups light olive oil + 5 tablespoons rice wine vinegar + 1 1/2 tablespoons sesame oil + 1 clove garlic, minced + 3 tablespoons orange blossom honey + 1 tablespoon fresh ginger, grated + 1 1/2 teaspoons dijon mustard + 1/2 teaspoon crushed red pepper
DIRECTIONS 1. Chop all veggies to above recommendations. 2. Heat a non-stick pan to just under medium-high. Toast sliced almonds. (This will happen very quickly!) 3. In a small bowl, whisk all of the ingredients for the Asian dressing. 4. Dress the salad and serve with your grilled chicken kabobs.

PROTEINS Protein makes you feel full longer. If you eat a meal with little protein, you’ll feel hungry again pretty quickly, and it can be discouraging. But you don’t have to eat a huge steak to get enough protein. You can find it in cheese, nuts, seeds, spinach, eggs, avocados, broccoli, hummus, lentils—the list goes on and on! Mindful eating means taking note of how hungry you feel and eating enough protein to satisfy that hunger in a way that will last.
C A R B O H Y D R AT E S Carbohydrates are not your enemy. But, it is important to pay attention to how you feel when you eat them. If you eat a lot of carbs in one sitting, it can cause your blood sugar to spike, and when it drops back down, you can feel lethargic and maybe even irritable. By spreading your carbohydrate intake throughout your day and always pairing it with a protein, you can help your body regulate your blood sugar more effectively and feel more alert all day long.
F AT S Fats also help slow carbohydrates down so they don’t instantly turn into sugar in your bloodstream. Fats are important for energy, and it’s especially important to eat the right kinds of fats for your brain. For better concentration and memory, try to incorporate foods like salmon, avocados, nuts, seeds and olive oil.
