FIT FOODIE FINDS SHARES THEIR STORY

“MY PHILOSOPHY SURROUNDING FOOD AND FITNESS IS ALL ABOUT BALANCE,” SAYS FOUNDER OF FIT FOODIE FINDS, LEE FUNKE. “Over exercising and disordered eating is a thing of my past and today I strive to eat intuitively and move my body daily. I care about the food that goes into my body, but no foods are off limits! Yes, that includes cinnamon bears, donuts, and beer.” This is the philosophy that inspired and fueled the successful website “Fit Foodie Finds.” A website that focuses on living a healthy and balanced lifestyle through sharing recipes, workouts, travel, style and body positivity. Lee has had a passion for food and fitness for as long as she can remember. She grew up as an athlete understanding the importance of health and wellness. It has always been a part of her life. She then started an informal blog in college that shared inspiration with recipes and fitness. During this time she was also on her own personal journey with finding the right balance to be healthy and most importantly, to be happy. She knew others were also searching for the same information so it was a natural fit to be able to help others by sharing her knowledge. Being a creative person, Lee has always been interested in content creation and food photography, which stemmed from her love of cooking. She gravitated to jobs in the creative field where she gained knowledge about social media, content creation and brand online presence. This experience intrigued and motivated her to take a leap and start her own website in 2011 at 23 years old. The once informal blog she started in college evolved into a small publishing company. ‘This was a big risk, but completely worth it to do what you love everyday,” says Funke. Today the website has millions of views a day and thousands of followers on social media. The primary audience is females 24-45 years old ranging from single women to mothers. “It’s been a fun experience to grow with the audience through the years,” says Funke. “The male audience has been increasing, with interest in the grilling and meat content. We love meat and they love meat. Overall, our audience shares the common interest in being healthy while still being able to be yourself CONTINUED >

and not feel like rules are restricting you and making you unhappy. Food and fitness plans should be positive and bring happiness to your life.” Fit Foodie Finds is a fully women run business. “I have two employees now and we strive everyday to break the barrier and create the best content that connects with our readers,” says Funke. “We are a small but mighty team that shares the same passion, and we are always lifting each other up.” Linley Richter is the Chief Recipe Developer and Community Manager. She joined the team in 2015 and specializes in social media, recipes and event planning. She has experience in digital marketing and working with non-profits. Chief Operating Officer, Emily Richter, spent the first 10 years of her career in marketing and advertising roles and side gigging with Fit Foodie Finds until becoming a full-time employee in 2018. Emily focuses on business operations, sponsorships and brand collaborations. “We are excited for what the future holds,” says Funke. “Our goal is to eventually expand into a studio of our own and have space for other creators to be able to come and create content. The more we grow, the more the website grows and gets us closer to our sales goals and hitting that million dollar mark.” The website is primarily food focused and highlights cooking recipes with real food that tastes good, all with a bit of Midwestern twist. This is not your typical food and dieting site because it emphasizes having food freedom and not limiting yourself. Featuring great recipes like quick flavorful meals, grilling the perfect salmon, cooking with whole foods, new cocktail recipes – the variety is endless. You will also find helpful lifestyle blogs about travel, style, home and overall wellness. Fit Foodie Finds also has an online shopping store that features new and trendy products for the kitchen and home, along with beauty and clothing. COPILOT DOG OUTFITTERS CELEBRATES YEAR TWO

IT IS HARD NOT TO FEEL HAPPY WHEN WALKING INTO COPILOT DOG OUTFITTERS. The shop is colorful, bright, and has a friendly vibe. Clearly, this is not your ordinary pet store. Copilot is all about treats, grooming and functional gear for best dog friends and “copilots”. Having worked for a home builder for most of her career, Kim Hanson was excited by the possibility of starting a new business. After the owner of the building company decided to retire, Kim felt it was the perfect time to start a business on her own. “The only requirement was that it had to be something where I could bring my dog to work with me every day.” To make this dream a reality, her first thought was to open a pet store. While Kim was hunting for a location for her new store she knew she wanted it to be located in a pet friendly community. She soon discovered the perfect spot in Linden Hills. Kim was familiar with the close-knit neighborhood and was drawn to its charm, walkability and friendliness of CONTINUED >

the residents, dogs and humans alike. She had attended the annual Woofstock event and “loved the unique mix of other independent businesses and how supportive they all are of Linden Hills,” and soon realized that, “if it wasn’t going to be in Linden Hills, I didn’t want to open a store at all.” Happily, on May 16th Kim is celebrating her second year of owning Copilot Dog Outfitters. Most pet stores don’t have a clear focus on gear. Copilot carries unique, high quality brands that you can test out before you purchase. Kim says she wanted the store to center around “functional products and gear that enable people to spend more time with their dogs.” Maybe they have a dog who is not as active or who can no longer run. Copilot has backpacks that allow people to bring their dog along while hiking or biking. Kim stresses that Copilot is “focused on getting people to spend more time with their dogs.” A lot of her quality products help make dogs feel safe and comfortable, such as booties for walking, harnesses, special bike leashes, functionable winter coats, and rain gear. Kim knows firsthand what Minnesotans need to fully enjoy the four seasons with their dogs. Dogs are always welcome to visit Copilot to try products on before venturing outdoors. Copilot also provides grooming services that emphasize lower volume. Kim explains that she strives to provide, “a better experience for many dogs because we only groom one dog at a time – straight through.” Doing so makes for a quiet and less chaotic atmosphere as well as shorter kenneling time. Pet owners appreciate Copilot’s thoughtful approach to grooming as it seems to work well in minimizing dogs’ stress and anxiety. Copilot would not be complete without Audrey, the brindle Frenchie who Kim lovingly refers to as her Public Relations Manager.
Kids especially love to visit with Audrey and she is equally excited to see them. Kim comments, “It makes the job fun and rewarding. Audrey was born to be a shop dog. She loves people. It’s one of the sweetest things ever.” When Kim holds special events in her store, she likes to feature a charity. Copilot has collaborated with organizations such as Mutt Mutt Engine Dog Rescue, the Animal Humane Society, and Underdog Rescue. As far as her plans for the future go, Kim intends to continue searching for innovative, high quality products to offer dogs and their owners. Every year she attends several trade shows and travels to visit other pet stores to learn what is successful and rated top notch. Copilot is committed to bringing innovative products and gear to those who truly consider their dog to be their best friend, family member, and copilot. Because she wants her store to be an integral part of the neighborhood, Kim fosters an environment that encourages people and their copilots to feel happy and be actively part of their community. People often drop by to say “hi” and Kim says, “It has turned out to be the best thing.” 22

SOMETIMES THE BEST THINGS HAPPEN WHEN YOU ARE NOT LOOKING. This happened to be the case for a young couple living in the Twin Cities. Joanie and Ryan were not actively looking for a new home, but their realtors, Susan and Gary Wahman of Edina Realty always had them in mind when new properties became available fitting their criteria of neighborhood, size, and price range. Then appeared this quaint South Minneapolis home located in the Fulton neighborhood; the exact neighborhood they had their eyes on. Ironically, this also happened to be across the street from Joanie’s parent’s first house. It took just one showing and they were smitten with this charming, 1921 built gem on Abbott Avenue. “We just knew right when we walked in, it was for us,” said Joanie. “There was such a good energy, the house was loved and filled with happy memories. The previous owners had lived there for over 60 years and it was well taken care of.” Even though the house was perfect for the couple, there was still some work that needed to be done to bring the vision of their dream home to life. When purchased, the house was 1,231 square feet with three bedrooms, two baths, a half story on the second level, and an unfinished basement. The plan was to open up the space and change the layout of the house, bringing a more fluid flow throughout. This would also allow for any updates or repairs needing to be completed. The first phase was adding two extensions to the house. The first extension was off the right side, keeping the original fireplace intact. The wall to the kitchen space was lengthened and a dining room was added. A wall was also taken down to create a more open kitchen with quartz counter tops throughout and a large kitchen peninsula for extra seating and entertaining. The second extension was off the back of the house, creating a new exterior back entrance and an addition which included laundry, a mudroom, and space for a large coat closet and pantry. This also allowed for a more private entrance to the master bedroom. With the renovation, the house was able to incorporate better function and flow growing to 2,300 total square feet. The couple wanted to keep the hard wood floors, but they were deemed unrepairable, so the floors were replaced throughout the entire house. Both bathrooms were redone to include modern updates. The master bedroom was reconfigured to accommodate a walk-in closet and larger bathroom space with a soaking tub. Another major renovation was replacing all the windows and putting up new drywall. Original skylights were kept to enhance the natural brightness, but became prominent when the popcorn ceilings were converted to flat ones.

Extensive work went into the backyard, and the layout was revamped to include a large patio area. Fencing was also added along with a total overhaul of the siding, making for a completely renovated look for the entire property. Joanie worked with designer, Leigh Hull, to enhance the interior of the house by focusing on the 1920’s aesthetic and bringing in modern elements. Hex tile, penny rounds and basket weave designs were used. Beveled edge subway titles were chosen for the kitchen with black stainless-steel appliances. After the extensions were added and the wall in the kitchen was taken down, the lighting was beautiful and brought a natural open feel to the space. Fun light fixtures were placed throughout the house to add character. “The entire house has a nice energy and feel to entertain and also for just relaxing with a quiet dinner,” said Joanie. “We were so fortunate to work with such an amazing team which included Josh Hauer as the contractor and Ken Huber as the architect. They worked around the clock so we could get moved in as soon as possible. We couldn’t thank our realtors, Gary and Susan Wahman from Edina Realty enough. They found us our dream home. This caught the attention of Guy Fieri from The Food Network show “Diners, DriveIns and Dives.” The crowds began to flock and that is when the brick and mortar was built, and the rest is history. Smack Shack continues to be a neighborhood favorite and is recognized by food critics as one of Minneapolis’ best. Not only does Smack Shack serve up the best seafood and cocktails in the city, but they also really know how to throw a party. One of their biggest events is celebrated at the end of summer. Crayfest, is an annual block party with all-you-canenjoy food, drink and live music along with a crayfish-eating contest. The biggest feature at Crayfest is their signature crayfish boil. This is a fan favorite and is served in a cardboard boat filled with crayfish (or crawfish), corn on the cob, Andouille sausage, and potatoes. If you are not into seafood, they also serve hamburgers and brats. The massive outdoor party features local beer, cider and signature cocktails, like the Hurricane.
