CRUISING IS THE FASTEST-GROWING TRAVEL SEGMENT FOR GOOD REASON. While offering great value, cruises enable us to visit multiple destinations while unpacking only once; our floating hotels deliver us to the next place while we dine, enjoy entertainment and sleep. However, until recently, the options for cruising from our local Southern California ports were quite limited and mostly on older ships. Carnival Cruise Line introduces its newest ship, Panorama, sailing from Long Beach in December. It will be the only ship doing seven-day Mexico cruises year-round, including summers when the other ships are in Alaska. This feature-packed floating resort offers families the most value-packed summer vacation imaginable. There is literally something for everybody including water slides, mini-golf and movies under the stars. The array of dining options range from classic steakhouse to sushi to Guy’s (Fieri of the Food Network) Burger Joint. Princess Cruises has deployed one of its newest ships, Royal Princess, to Los Angeles, giving Princess loyalists the opportunity to do Mexico and Pacific Coastal cruises on one of the best ships of their favorite cruise line. ITINERARIES GOING FAR AND WIDE Tests of Alaska cruises from Los Angeles have been so positive that Princess is doing an entire season of 14-day round-trip treks in 2020. The cost per day is phenomenal, similar to a seven-day cruise with flights to Seattle. So you can double your vacation and keep to your budget. Board the ship in flip flops and view glaciers in a couple of days—after being wined, dined and entertained along the way. What a spectacular experience! If you haven’t yet been to Alaska, you really need to go. Vast expanses of forests, soaring peaks and ever-present wildlife treat the senses like nowhere else. You also can cruise from Los Angeles (and San Diego) to warm places beyond Mexico’s west coast. The 15-day Hawaii round-trip is a popular one, but there also is a 28-day itinerary that goes to Tahiti, Bora and other French Polynesian islands—all without flights. These pristine islands have their own explosions of nature. As in Alaska, the water is as pure as you can find, but here it is much more comfortable to jump in, put on a mask, snorkel and fins, and peer into an underwater kaleidoscope of colorful fish, majestic sea turtles and playful dolphins. Did you know that the whales that summer in Alaska migrate to Hawaii for winter? And don’t forget to look up. These remote islands have little ambient light and offer the best stargazing on earth. It’s even better at higher altitudes of Hawaii Island’s Mauna Kea and Maui’s Haleakala. Alaska also offers stunning star-filled nights—plus a chance at seeing the Northern Lights. In addition to these round-trip itineraries, cruise lines also offer a number of one-way cruises to and from the local ports. 20

A classic is the 15-day Panama Canal, transiting that impressive engineering feat en route between Southern California and South Florida. WITH THE HOLIDAYS FAST APPROACHING, IT’S TIME TO PUT SOME THOUGHT INTO HOSTING OVERNIGHT GUESTS. The reality is that most of us don’t have a dedicated guest room, but fear not! You can create a comfy retreat for your guests to feel welcomed for their short stay. Here are a few functional design ideas to help. To maximize guest comfort, start by focusing on the presentation and comfort of the bed. Fresh, white linens are my go-to as they create a clean and fresh feeling. Layer throw pillows on the bed for a pop of character, color and texture. Have additional blankets and pillows for sleeping so guests can adjust for their needs. The weather cools, and school-year routines are running on all cylinders. Although we enjoy the mechanical consistency

of daily living this time of year, we can’t help but look forward to the chaos of the holidays, gathering with family and friends and a prosperous new year ahead. Fall is a time when distinct holiday flavors bring us to times gone by. For example, eggnog is an all-time favorite of many. It comes and goes each year. When we taste it again, each fall, it’s as if we’re tasting it again for the very first time. Memories of past holidays flood in. It’s like an old favorite song we haven’t heard in decades. So, in celebration of the fall season and all of its culinary pleasures, we reached out to the Laguna Niguel Woman’s Club for a collection of recipes. The Laguna Niguel Woman’s Club recently celebrated its 50th anniversary, and many of these mothers and grandmothers have been baking love into the hearts of Laguna Niguel families for decades. But amazing cooking skills are not all that we celebrate about this fantastic group of women. The Laguna Niguel Woman’s Club is a true community service organization. And, they’ve been serving this community since its inception. In 1969, the Laguna Niguel Woman’s Club was organized and charted by a group of eighteen enterprising women whose initial common purpose was to build a neighborhood park for their children. Since that time, the Laguna Niguel Woman’s Club has been actively involved in many key projects that have benefited our Laguna Niguel community as well as greater Orange County. 28

HOT MULLED GINGER-SPICE CIDER By Joy Andre Yield: 12 servings (serving size: 1 cup)
INGREDIENTS + 3 whole cloves + 2 (1-by-4-inch) strips orange rind + 2 whole allspice + 1 (3-inch) cinnamon stick + 1 (1/2-inch) piece peeled fresh ginger + 12 cups apple cider + 1/2 cup apple jelly + 1/4 teaspoon ground nutmeg
METHOD Place the first 5 ingredients on a 5-inch square of double-layer cheesecloth. Gather edges of cheesecloth together and tie securely. Place cheesecloth bag, cider, jelly and nutmeg in an electric slow cooker. Cover and cook on high for 4 hours. Remove and discard cheesecloth bag. NOTE: This recipe is prepared in an electric slow cooker, freeing up the stovetop. However, it can be heated in a pot on the stove if you prefer.

COCONUT CREAM CHEESECAKE By Elaine Gennawey
CRUST INGREDIENTS + 2/3 cup flour + 1 tablespoon sugar + 5 tablespoons butter, well chilled
METHOD In a large bowl, combine flour and sugar. Using a pastry blender, cut in butter until mixture resembles coarse meal. Gather into a ball, wrap in plastic and refrigerate 15 minutes. Preheat oven to 365 F. Press dough into the bottom of 10-inch spring-form pan. Bake until golden brown, 15 to 20 minutes. Cool slightly. Lower oven temperature to 300 F.
FILLING INGREDIENTS + 3 (8-ounce) packages cream cheese + 1 1/2 cups sugar + 4 eggs, room temperature + 2 egg yolks, room temperature + 2 cups flaked coconut + 1 cup whipping cream + 1 teaspoon fresh lemon juice + 1/2 teaspoon vanilla extract + 1/2 teaspoon almond extract + Shaved coconut
METHOD Using an electric mixer, beat cream cheese and sugar until smooth. Beat in eggs and yolks, one at a time. Mix in flaked coconut, whipping cream, fresh lemon juice, vanilla and almond extracts. Pour filling into crust. Bake at 300 F until edges of filling are firm, about 70 minutes. Let cheesecake cool completely. Remove springform. Cover cheesecake with plastic wrap. Refrigerate at least 4 hours. Just before serving, sprinkle with coconut shavings.

METHOD Toast pecans over low heat with 1 tablespoon butter. Mix syrup, sugar and salt together. Drizzle into pecans with 3 tablespoons butter and vanilla. Mix well and pour into pie shell. Bake at 350 F for 40-50 minutes.
