GIVING BACK (CONTINUED) ASK FOR HELP! Don’t be afraid to ask for help! For parents who are returning to work and also juggling their children’s online learning, stress can rise for the whole family. We may find that many students have fallen behind due to the break in instruction. I did a quick online search for tutors, and found many excellent resources. You can also reach out to the teachers at your child’s school. Many classroom teachers enjoy tutoring after school, on weekends and even on ZOOM. Kelly Pollock has been teaching students from 1st grade to 7th grade for over 9 years. She spends a lot of time doing private tutoring when not in school. She tells us how helpful this can be for a student who may need more individual attention. “There is a huge benefit for students to get one on one time with a teacher. Sometimes just hearing it from another person in another way, without the distractions of a classroom of peers is all they need.” I asked her if there seems to be a notable difference between the students who receive tutoring and those who don’t. “Definitely! I love seeing the kids succeed. One day I had a little girl run over and show me her grade on her report card which had gone from a D to a B!” Many times getting individualized tutoring can make a huge difference in just a short amount of time. So whatever may unfold when “back to school” rolls around, remember you are not alone. We are all traveling this new path together as a community, and there are teachers, counselors and neighbors ready to help. If we all do our part to emphasize respect and personal responsibility, we can unite to ensure that all Spring Hill students feel safe and loved. I for one, can’t wait to see them! Contributing

1.6 DOGS AND 1.8 CATS. Taylor and Whitney Lasseter of the Spring Hill community are anything but average with 3 kids, 2 steers, 17 chickens and more pets than the typical family can dare to imagine. Whether furry, feathered, or flippers a-flapping, each of their 54 pets holds a special place in the hearts of each family member. To understand the wonderment of the Lasseter Farm, one needs to note the wide range of pets the Lasseter’s currently care for on their property. I recently had the opportunity to chat with Taylor, Whitney and their hard-working kids - Molly, Mason, and Max. Each family member was all giggles as we explored the barn that housed the chickens, ducks, peacocks, and their infamous donkeys! As they introduced me to one creature after another, it was evident that each of their pets is unique and has their own story to tell. Keep reading to find out how Whitney describes each of the animals they call pets!

“I have loved animals for as long as I remember. I grew up here in Franklin in the Grassland area when there was still so much wideopen space. I was in fields and creeks with my brother everyday turtle hunting and fishing and bringing home strays. I always thought I would end up going to vet school but took some lefts and rights along the way and never quite got there. But my love for animals continued nevertheless. Taylor is also local and grew up in Murfreesboro. And he has known about my love and passion for animals since we met on a blind date on Sept 12, 2001. One of my life's detours was to follow him out west to Los Angeles to pursue his career in television production. While we had a blast and took advantage of all that California had to offer, Tennessee called us home just like Drew Holcomb song "Tennessee" And we have been working to find the best place to set up long term farm roots ever since. All the animals we share home with were rescues, re-homed, or were born here. My brother is my "dealer". EASY LEMON

CHICKEN THIS FAMILY RECIPE FROM MY ROCHESTER, NEW YORK ROOTS DOESN’T REQUIRE MANY INGREDIENTS YET IT STILL YIELDS AMAZINGLY FLAVORFUL RESULTS, AND IT’S ALL THANKS TO THAT BRIGHT LEMON AND CREAMY BUTTER. With this recipe, you get perfectly tender, golden brown pan-seared chicken breasts flavored with lemon sauce.

INGREDIENTS 4 Servings Prep: 15 Min Cook: 15 Min Skillet or Pan

+ 1 lb Chicken breast, sliced thin and pounded flat + 1 Cup Flour + Salt and pepper to taste + Olive oil + 1 stick butter + 1 cup dry white wine (Chardonnay) + Juice from 2-3 lemons + 4 eggs + 1/2 cup Parsley chopped (which is totally optional) Be sure you are sticking with 4 small breasts or halving 2 large through their thickness.

DIRECTIONS First, you’ll pound the chicken breasts out until you’ve got fairly thin chicken cutlets. For a shortcut, you could buy thin cut chicken. Then season both sides of the chicken with salt and pepper. You will need two small bowls. Put the flour in one. In the second bowl beat the eggs and add chopped parsley. Heat a skillet with olive oil over medium to medium-high heat. First, dip the chicken pieces in the flour and shake off excess. Then, dip the chicken in the egg wash and shake off excess as well. Finally, add the chicken breasts to the pan and sear on both sides until golden brown and cooked through. Continue this process until all the chicken is cooked. Transfer the chicken to a deep dish or plate. After all the chicken is cooked, leave the bits to make the sauce. Dump oil and add the butter, wine and lemon juice to the pan, scraping the browned bits from the bottom of the pan. Reduce by half, about 3-4 minutes. Pour the sauce on the chicken and enjoy! GREEN BEAN TOMATO

SALAD

This is an easy and delicious summer salad that will pair perfectly with almost any dish. Simply blanch the green beans, and toss in a bowl with the olive oil, tomatoes, and onion. Season to taste and finish off with sprinkled fresh basil for a fabulous addition to your meal.

INGREDIENTS

4 Servings 20 Min

+ 1 pound fresh green beans. + 1 red onion, thinly sliced (optional). + 2 Roma or small heirloom tomatoes + 3 tablespoons chopped fresh basil. + 3-4 tablespoons extra virgin olive oil + 1/2 teaspoon salt + 1/4 teaspoon freshly ground black pepper + Parmesan Cheese as desired

DIRECTIONS Drop beans into a saucepan with salted boiling water. Cook until crisp-tender, about 3 to 5 minutes according to the size of the beans. Do not overcook. Rinse under cold water to stop them cooking further. Drain and let cool. Cut the tomatoes and onion into thin slices Chop up basil leaves. In a salad bowl, add beans, tomatoes, olive oil, salt, pepper, and onions. Toss well. Sprinkle with basil and parmesan cheese as desired. ENJOY!

DIRECTIONS 1. Take your cardboard and cut two pieces into the shape of a llama (we found a stencil online). Then, cut strips of cardboard the depth you want your llama to be. You’ll connect these to either side of the llama cutouts to enclose your piñata. 2. Glue your strip of cardboard all along the edge of one side of your llama, then glue to the other side. (Be sure to leave a hole you can close up later so you can fill it with your favorite candy!)

3. Starting at the neck, cover the front, back and sides of your llama with white crepe paper, cutting a slit every half inch or so to create the traditional piñata look. 4. Cover all remaining sides the neck and head with white construction paper, cut to fit your design. 5. Using construction paper, beads, pom poms, tassels, buttons, etc., add some flair to the rest of your llama! Bonus points for incorporating different shapes and textures into your final product.

DIRECTIONS 1. Using a stencil, cut out the pieces you’ll need for your flamingo from construction paper: Pink: 4-6 circles for the body (depending on how “fluffy” you want it), neck and legs White: Outline of the beak Black: Beak 2. Fold the circles in half and glue them all together back-to-back to create a sphere that looks like an accordion. 3. Glue the beak and white stripe to the neck, then glue the neck to a flat side of your inner-most circle. 4. Add the legs, a black dot for an eye and pink feathers for the ultimate flamin-goal.

You’ll need: (2) rocket bodies for the front and back of your ship, (2) fins, (1) nozzle, (1) nose cone, (3) rectangles for your pencil cup, and any additional cutouts for decorations, like windows. 2. Glue the your rectangular pieces to one side of your rocket ship, then glue the back on. You should have an open spot at the top where your pencils will go. 3. Glue the rest of your pieces to the front of your rocket and add embellishments as desired.
