NOT QUITE LIKE MAMA MADE IT THANKSGIVING IS KNOWN FOR ITS TRADITION. Certain dishes are passed down for generations; yearly events like races, parades and ball games are on the minds of many; and even non-traditional celebrations become, well, tradi-

tion. But if you’re toying with the idea of changing your lineup, or you’re looking to host a re-envisioned Friendsgiving celebration, give these recipes a taste!

STACEY THOMPSON’S GLUTEN-FREE* FRIED OKRA Serves: 4

INGREDIENTS + 1 pound fresh okra, washed and cut + 1 1/2 cups cornmeal + Salt, pepper and favorite seasoning + 4-6 cups vegetable oil

DIRECTIONS Mix cut okra in bowl with cornmeal, dash of salt, pepper and favorite seasoning. Make sure all pieces are coated. Fill deep nonstick frying pan with 2 inches oil. Heat oil on medium. Test oil by putting one piece of coated okra into oil, being careful not to splash. Oil is ready when okra sizzles but does not pop. Turn down heat if oil pops. When oil is ready, use a slotted, not-stick spoon to transfer coated okra to oil. Stir okra carefully as it fries. Prepare plate with layered paper towels. Okra is done when crunchy, just before edges begin to darken. Transfer okra to coated plate. Serve hot. *For gluten allergies: cornmeal and seasoning must be certified gluten-free; nonstick pan must not have been used with gluten recipes. 14

CHEF CHRIS NAJMOLA’S BRINED, GRILLED AND LIGHTLY SMOKED TURKEY Serves: 8

YOU’LL NEED + 10-12 pounds whole turkey

+ 2 cups favorite wood chips

+ 1/4 cup extra virgin olive oil

+ Large pot

+ 1 tablespoon black pepper

+ Large mixing bowl

+ 2 tablespoons granulated garlic

+ Meat thermometer

+ 1 tablespoon Kosher salt

+ Kitchen shears

+ 300-325ºF grill or smoker with indirect heat source (I

+ 1 gallon water

+ 1/2 pound melted butter

+ 1 cup kosher salt

(for basting)

+1/2 cup sugar

DIRECTIONS Buy turkey one week in advance, allowing to thaw in the refrigerator. Once thawed, using kitchen shears, remove the backbone. Discard or save for gravy. Twelve hours before cooking, mix water, 1 cup of salt, and 1/2 cup of sugar thoroughly—this brine makes a world of difference. Add turkey to brine in a large pot. Refrigerate for 12 hours. Remove turkey from brine and pat dry. In a large mixing bowl, mix turkey, oil, salt, pepper and granulated garlic. Massage into meat evenly. Allow to marinate while readying grill/smoker. Preheat grill/smoker to a maintained 325ºF. Melt basting butter. Carefully place whole turkey breast-side-up on grill, not directly over the heat source. Close smoker/grill; maintain 300-325ºF for about 3 hours. Stay with your bird! Enjoy your favorite beverage with friends and family, opening up the grill/smoker about once every 45 minutes to baste the bird and add wood chips (less is more here). When the thermometer inserted in the thickest parts of the bird reaches 165ºF, carefully move bird to skin-side down over open flame, just long enough to give it color. Remove turkey, allow to rest about 20 minutes, carve and enjoy! CONTINUED >

CHEF CHRIS NAJMOLA’S GARAM MASALA PUMPKIN PIE WITH BOURBON WHIPPED CREAM Heard of pumpkin spice? Well, garam masala is pumpkin spice’s older, more mature sister. Garam means “to warm,” and this pie is sure to warm the hearts of your friends and family.

INGREDIENTS FOR FILLING:

+ 4 Eggs

+ 1 1/2 cups all-purpose flour

+ 16 ounces unseasoned

+ Very small pinch of salt

pumpkin puree

+ 1/4 pound cold unsalted

+ 28 ounces sweetened

butter, diced

condensed milk

+ 3 tablespoons water

+ 3 tablespoons garam

+ Small sheet pan

masala spice

+ Parchment paper

+ 1 teaspoon Kosher salt

+ Dried beans

+ 14 ounces your favorite

+ 400ºF oven

bourbon (optional)

FOR WHIPPED CREAM:

+ 350ºF oven

+ 2 cups heavy whipping cream

+ 8-10 ramekins

+ 5 tablespoons confec-

DIRECTIONS Preheat oven to 400ºF. Mix all ingredients for crust thoroughly, then roll into a thin sheet. Place crust onto lightly buttered sheet pan. Prick crust with fork in several places to help prevent bubbles. Top with parchment paper, then enough dried beans to weigh paper down. Bake for 15 minutes, remove parchment and beans (careful: they will be hot), then bake 15 more minutes. When crust is golden brown, take out to rest, turning oven down to 350ºF. In a mixing bowl, whisk eggs, garam masala, condensed milk, pumpkin and a pinch of salt. Note: for adults-only version, replace 1/2 condensed milk with bourbon. Fill Ramekins 3/4 to top with pie filling. Place ramekins in flat-bottomed casserole dish. Pour 1 quart warm water into dish around ramekins. Bake for 1 hour at 350ºF, filling house with wonderful aroma. After 1 hour, carefully remove from oven and allow to cool. Whip heavy whipping cream, bourbon and sugar till stiff peaks are formed, then chill. Once everything has cooled, top each pie with bourbon whip. Break freeform “cookies” from pie crust and insert into each pie, bringing it all back together. Enjoy this nice twist on an old favorite with your closest friends and family. 16

To say that we are thankful is an understatement, and this month, we are honored to present just a few of our community’s devoted public servants who have shared their approach to the holidays. While they and their roles are all unique, they each have a heart to serve the Evans community and their city. Rabii Madi

BUSINESS/ORGANIZATION: Augusta University Health WHO ARE YOU? Dr. Rabii Madi is the director of urologic oncology and robotic surgery and a professor of urology at Augusta University. He has been in practice for 13 years, eight of which have been in the Augusta area. In addition to his responsibilities at the college and hospital, Dr. Madi serves the community through cancer education seminars and screenings. He and his wife, Irina, have been married for 20 years and have two sons, Bilal and Nijad, and one daughter, Safa. WHAT GIVES YOU ENCOURAGEMENT ON THOSE DAYS WHEN YOU ARE WORKING RATHER THAN HOME FOR A HOLIDAY? I personally don’t mind taking some holidays and being off on other holidays. Someone has to be there in order to serve our patients. Doctors and nurses who are working in the hospital really do their best to give the best care. What gives us the incentive to work hard and to be on-call and to be doing surgery on weekends or on holidays is really our dedication and feeling that this is what we want to do. Nothing is more rewarding than appreciation from our patients. When I do big surgery and I see the patient doing well and recovering and being cancer-free, that makes my day. That’s really what motivates me to keep doing what I do. WHAT IS YOUR FAVORITE THANKSGIVING DISH? I personally like turkey–Thanksgiving is really the only time I eat it. My wife is Russian, so she prefers goose or duck, so we typically have a big goose on the dinner table. WHAT’S YOUR FAVORITE HOLIDAY TRADITION? For me and my family, New Year’s is the big holiday. Traditionally, I prefer to spend it at home with my family and friends with their families. We have a nice dinner and hang out together. With me being Lebanese in origin and my wife being Russian, we try to prepare some mix of Russian and Lebanese dishes.

BUSINESS/ORGANIZATION: Gold Cross EMS WHO ARE YOU? With more than 31 years of experience in emergency medical services, Lieutenant/Field Training Officer Jim Ellis started his medic career in the army and has served through Gold Cross EMS since 2006. In addition to serving the community as a paramedic, Jim is also active in his church, teaches CPR/first aid classes and is in the Coast Guard Auxiliary. He and his wife, Melani, a NICU nurse, have three daughters: Abby, Lauren and Noel. WHAT DOES YOUR TEAM DO TOGETHER WHEN YOU WORK ON HOLIDAYS? A lot of times, families will bring meals to the station. The station itself, especially when we are based out of a firehouse, will have Thanksgiving dinner there. WHAT IS YOUR FAVORITE THANKSGIVING DISH? Sweet potato soufflé WHAT’S A FAVORITE HOLIDAY TRADITION? We have a tradition at my house of covering the living room door with wrapping paper so the kids have to smash through the wrapping paper on Christmas morning.

BUSINESS/ORGANIZATION: Columbia County Sheriff’s Office WHO ARE YOU? Deputy Sheriff and Field Training Officer Jerry Studer has served Columbia County through law enforcement for 13 years and recently joined the Special Response Team. He also does educational outreach to help children understand the full role of police officers. Jerry’s wife, Alana—who also works for the Columbia County Sheriff’s Department—and his daughter, Isabella, share him with the Evans community during holidays. WHAT ENCOURAGES YOU ON DAYS YOU ARE WORKING RATHER THAN HOME ON HOLIDAYS? During the holidays, most businesses are closed, and everyone is out of town or with their families. Meanwhile, the community is vulnerable. So, we’re there to provide protection while home and business owners are enjoying the holiday. WHAT’S YOUR FAVORITE THANKSGIVING DISH? My wife is Italian, so sometimes we don’t have a traditional Thanksgiving turkey, but she will make lasagna or some sort of sausage dish—so I would have to say lasagna. WHAT’S SOMETHING UNIQUE THAT YOU GET TO DO AT THE HOLIDAYS? Around Christmas time, we have “A Day with a Deputy” which helps underprivileged children. They are assigned to a deputy to go pick out a toy, have a good experience and get paired with a deputy as a mentor. 20

Anthony Lovett and Evan Davis BUSINESS/ORGANIZATION: Columbia County Fire Rescue

WHO ARE YOU? Battalion Chief Anthony Lovett began his fire service after high school as a volunteer firefighter with the Martinez Volunteer Fire Department. Thirty-two years later, he’s still serving the public through Columbia County Fire Rescue. In addition to his fire service, Anthony is an active member of Wesley United Methodist Church and is dedicated to working for drug-free communities through Columbia County Connections. He and his wife, Deborah, have been married for 23 years and have two daughters, Molly and Erin. Evans native Lieutenant Evan Davis has served for 14 years through Columbia County Fire Rescue. He’s been married for seven years to his wife, Agatha, and has two children, Joanna and Evan, Jr. As an active member at Warren Grovetown, Evan is on the music worship team, co-leads a community group with his wife and strives to go on an international mission trip every other year. He’s also on

the board of Fire-K Five-K, which helps raise cancer awareness and support firefighting families as they battle cancer. WHAT ENCOURAGES YOU ON THOSE HOLIDAYS YOU ARE WORKING RATHER THAN HOME WITH FAMILY? ANTHONY: Our fire department shifts are really our second family, and our crew members know each other’s families. When our shifts end up working on a holiday, we have our families up at the station. For the most part, when my children were younger, they looked forward to that afternoon coming on up to the fire station to be with all the other firemen’s kids that they knew from other family events. Turns out that he really wasn’t. The grease drippings had caught fire, causing a major inferno that burned up the ribs and the backside of the chimney. So the meat of the day, rather than slow-cooked, was toast, and we had some good side dishes for Thanksgiving!”
