All of the students were selected because they demonstrated excellent leadership potential. During the week-long program, students gain an understanding of economic reasoning principles and how to employ these concepts for successful and effective leadership.

CY-RANCH HS EQUESTRIAN RIDER EARNS NATIONAL RECOGNITION Cy-Ranch senior, Samantha Reynoso, competed in the USHJA Championship this past summer earning a team gold medal as well as an individual bronze medal, qualifying to compete in the USHJA National Finals in Las Vegas Nov. 11-17. She is also one of 16 riders from across the country to be selected for USHJA’s Emerging Athlete Program, a program for professional and non-professional riders younger than the age of 25. Selection for the program includes not only the rider’s talent, but their knowledge of all phases of horsemanship.

others share recipes and food reviews. One of her favorite recipes, French onion soup, originates from her time growing up on the farm where onions were always plentiful. Metta’s mother, Phyllis, would enlist her young daughter’s help to prep the soup before Metta was even tall enough to reach the counter. “She would put me on a footstool and she had me cooking beside her,” Metta said. Together they would spend hours in the kitchen making food and memories. The soup calls for loads of onions, a few simple ingredients and tons of time. The key is allowing the onions to cook until they reach a near jelly-like state before adding a homemade bone broth, Metta says. Allowing at least 2 1/2 hours for cooking all of the flavors is key. Metta hopes those who try her family recipe would “feel a sense of nostalgia and appreciation of a time where people chose to disconnect

METTA’S FRENCH ONION SOUP Serves: 4-6

Time: 2 1/2 hours

INGREDIENTS + 6-8 thinly sliced yellow onions + 1 1/2 tablespoons olive oil + 3/4 stick of butter + 1 tablespoon of flour + 2 fresh bay leaves + Sprigs of fresh thyme + Salt and pepper to taste + 6 cups of bone broth TOPPING + 1 loaf fresh French bread + Olive oil + Smoked bacon sea salt + Fresh Parmesan + Gruyère cheese

DIRECTIONS Heat a heavy stockpot over medium heat. Add about 1/2 stick of butter until melted. Add olive oil. Add thinly sliced onions and cook about 20-25 minutes until translucent. Add salt and pepper. Cook an additional 45-50 minutes at medium heat to extract as much sugar as possible. Once the onions are caramelized, turn up heat to medium-high. Add remaining butter. Sprinkle a heaping tablespoon of flour. Stir about 2 minutes until the mixture is sticky and gloopy. Add wine or sherry. Scrape the bottom of the pot to extract all bits clinging to the bottom. Cook for a few minutes. Add stock or bone broth and fresh herbs. Simmer for about 30 more minutes. Look for a few bubbles popping at the top of the mixture. Taste the soup. Add more herbs, wine or broth to taste. BREAD TOPPING Preheat oven to 375 F. Slice a loaf of fresh French bread into rounds. Add generous amounts of olive oil and salt and massage it into the bread. Place on a baking pan and bake until the slices become croutons. Remove from the oven. Meanwhile, grate a heaping pile of fresh parmesan and gruyère cheese. ASSEMBLY Ladle the soup into an oven-safe bowl. Place a crouton on top. Add a large handful of cheese. Place the bowls in the oven on high broil until bubbly. Remove from the oven. Place a spring of thyme on top. Serve hot.

SHREDDED BRUSSELS SPROUTS SALAD Serves: 4

Time: 20 minutes

INGREDIENTS + 3 tablespoons olive oil + 3 tablespoons fresh lemon juice + 1 1/2 teaspoons pure honey + Kosher salt and freshly ground black pepper + 1 pound Brussels sprouts, trimmed and thinly sliced + 1 large Gala apple, cut into matchsticks + 1 small shallot, chopped + 1/4 cup toasted hazelnuts + 1 ounce Pecorino cheese, shaved

DIRECTIONS Whisk together oil, lemon juice and honey in a bowl. Season with salt and pepper. Add Brussels sprouts, apple, shallot, and hazelnuts; toss to combine. Fold in Pecorino.

CREAMY PARMESAN HERB CHICKEN Serves: 4-6 Time: 2 1/2 hours

DIRECTIONS 1. Preheat oven to 400 F. 2. Season chicken with garlic powder, salt and pepper. 3. Heat cooking oil spray in a large, nonstick and oven-proof skillet over medium-high heat until hot. Sear chicken thighs until golden and crispy on each side (about 3-4 minutes each side). 4. Transfer chicken to the oven and roast until completely cooked through (about 25-30 minutes). 5. Once chicken is done, transfer to a warm plate and set aside. Drain some of the excess fat from the skillet, reserving 2 tablespoons for added flavor. 6. Return skillet to the stove over medium-high heat and sauté the garlic in the pan juices until fragrant (about 1 minute). Add the mushrooms, herbs and 2 teaspoons of parsley and fry until mushrooms begin to soften. 7. Reduce heat to low-medium heat, add the milk (or cream) and bring to a gentle simmer, stirring occasionally, and being careful not to boil. Add in the bullion powder and season with salt and pepper to your taste. 8. Pour the cream/cornstarch mixture to the center of the pan, and continue to simmer while quickly stirring the mixture through until the sauce thickens. 9. Add 1/2 cup of parmesan cheese; allow sauce to simmer for a further minute until cheese melts through the sauce. Add the chicken back into the pan and allow to simmer for 1-2 minutes in the cream to take on the flavors. Taste test and add extra salt or pepper, if desired. 10. At this point, add in the optional add-ins, if desired. Allow spinach to wilt (if using). 11. Sprinkle with the remaining 1/4 cup of parsley and 1/4 cup parmesan cheese. 12. BRIDGET SMALLEY WAS ALWAYS A FAMILIAR FACE AT CHURCH. She sang alto in the choir, attended weekly Bible studies and rarely missed a Sunday service. So when she abruptly missed months of church services last fall, her close friend, Inyang Ekong, a local teacher, grew worried. Inyang sang with Bridget in the church choir, but she had no idea Bridget’s health was in jeopardy. “I couldn’t imagine just doing life and her not being there,” Inyang says. “That doesn’t make sense to me.” Bridget had struggled quietly for 26 years with a deadly genetic kidney disease called polycystic kidney disease. Cysts grow on the kidneys blocking the organs from cleaning the body’s toxins. The condition is so severe, that when Bridget was first diagnosed, a young doctor told her she had only five years to live. She received a kidney transplant eight years ago, but that organ failed too. By January, Bridget had battled gout, struggled to walk and was on dialysis. And by February, when she finally returned to church, she had little hope for healing. “I thought that I would be on dialysis until who knows when,” Bridget says, “and that I would just get sicker and sicker and not have much of a life except what that machine can do for me.” When Inyang finally learned about her friend’s dire health, she was moved to action. She gave her a call and offered Bridget her own kidney. “She thought I was crazy,” Inyang says. “I said, ‘Hold your horses here,’” Bridget says. “‘You’re single. You don’t have kids. You really have to think about it.’” Inyang’s resolve never wavered. While Bridget was “cautiously optimistic,” Inyang was making room in her summer teaching break for transplant surgery. Before a patient can receive a kidney, both the donor and patient must pass extensive physical tests. The donor and recipient’s blood and tissue types must match, and both people must be healthy enough to survive the surgery. After all the tests were done, Inyang was a match, and the two had successful surgery in July. Inyang’s kidney immediately began clearing Bridget’s body of toxins, and the two were home within days of the procedure. “Sometimes I can’t believe that this actually happened,” Inyang says. “But then I have to look down on my left side, and I have four scars.” Inyang, who is an avid fitness enthusiast, says she’s in better shape now than before she donated her kidney. She works out several times a week and has lost weight. Bridget, meanwhile, plans to sing again in the church choir and hopes to spend more time with her grandchildren this holiday season. She’s thankful for her friend Inyang whose organ donation changed her life. “I was existing,” Bridget says, describing her life before the transplant, “but I wasn’t living. This gift of a kidney—what Inyang has done for me—I’m living.” According to the U.S. government information on organ donation and transplantation, more than 113,000 men, women and children are on the national transplant waiting list as of January 2019. More than 36,000 transplants were performed in 2018, a record high for the sixth consecutive year. In 2018, there were a total of 17,773 donors, among which 39% (6,831) were living donors. Kitchen Makeover Gives Home a Timeless Look HOME CONTRACTING CREATES HOMEOWNERS DREAM KITCHEN

AFTER HURRICANE HARVEY BROUGHT FLOODWATERS INTO BETTY WILEY’S CYPRESS HOME, SHE KNEW IT WAS TIME FOR A CHANGE. She repaired the kitchen enough to be useable for a time but planned to upgrade it to her dream kitchen after she retired. “I wanted to create a welcoming kitchen that was easy to function in, easy to organize and looked great,” she says. The original floorplan was a long galley kitchen that separated it from the living room. Betty wanted an open concept that would expand the kitchen and connect the living room space, creating an inviting larger room where she could host friends and family. To make it happen, she enlisted Home Contracting, Inc. The company, which has been in business since 1987, is a design-to-build renovation company for residential and commercial customers. Home Contracting works side-by-side with homeowners to remodel kitchens, bathrooms, install flooring and complete other custom services. It’s also worked with businesses such as Pluckers Wing Bar and Hilton Hotels. Deloris Ludwig, who manages the company, has been doing design and renovation work for nearly 25 years. “I’m always aware of making sure the job is done correctly and catching things as we go along,” Deloris says. THE HOME CONTRACTING PROCESS Home Contracting employs a process to every remodel project from conception to completion to be as stress-free as possible for their clients. Deloris is the one point of contact for every project, which starts with an on-site personal consultation followed by 3D design ideas she creates based on the client’s vision. Then, they visit the beautiful showroom on Spring Cypress to choose materials and finish with Deloris’ expert help. Next, she schedules each piece of the project so that the amount of disruption for the client is as short as possible. “We never start demo until all the materials are received and available to install,” she says. “And we have the team to do the work.” REMOVING A LOAD-BEARING WALL To open up the kitchen the separating wall needed to be removed. It was a load-bearing wall, so Home Contracting’s experts had to plan not only the demolition but also to install a support beam running the length of the kitchen. This would make room for a sprawling island in Betty’s new open-concept kitchen. The process was involved, but Deloris helped with the effort. “I was nervous about the support beam,” Betty says. “But the company she got and engineer she got made me feel at ease.”

During the process, they found a section of the ceiling attached to the wall that was dropped to hide gas, water and electrical lines. However, Deloris and her team engineered a solution that solved the problem and created a butler’s nook that became a unique accent to the kitchen. recess lighting, a light over the island and a custom-made stove vent. They replaced baseboards and even rebricked a portion of the outside of her home that had to be altered during the renovation. A NEW SPACE FOR ENTERTAINING While Home Contracting shoots for a 10-day renovation on a room, Betty’s project took a bit longer because of the structural changes with the elimination of support wall. Yet, within few more weeks, Betty’s kitchen was just as she’d imagined—striking granite countertops, clean cabinetry and an open-concept layout with a timeless design. And, Betty says she excited about entertaining in her new space. “I just think it upgraded the look of the house on the first floor,” Betty says. She believes that working with Home Contracting and getting Deloris’ help, you get your choice of style without feeling overwhelmed by handling a renovation project alone. “I think these types of projects are good when you have the homeowner and designer working together and managing it as a team,” Deloris says.
