LOCALS ONLY (CONTINUED) For those concerned about health and safety precautions, Cameron is very reassuring, Says Cameron, “All of our volunteers are masked. We have handwashing stations. Everyone is required to wash hands and wear gloves when people arrive. All vendors are masked when they are onsite. We are following social distancing protocols and are constantly re-sanitizing tables all day. We want our customers safe but we also really want our farmers to stay safe.” And stressing the importance of keeping farmers healthy and the markets opened is paramount to the overall community. Says Cameron “We are the place to get local food. In a normal situation, we would be the only place where you could talk to the farmer about their food. Grocery stores keep food isolated from its producer. Right now, it is super important for those people who want to eat local food that they can still get it through us in a way that is safe and convenient.” Program Coordinator, Denise Dixon of the Idaho Farmer’s Market Association (IFMA,) echoes this sentiment. “We (the IFMA) do a state-wide webinar every year. When Covid broke, we put together a webinar on best practices, and recommendations for all farmer’s markets throughout the state.” And with health and safety concerns addressed and put at ease, consumers can continue the very-much needed support for local farmers. After all, it is the community at large that these farmers serve so that they in turn can provide the freshest and most nutritious food source for local families. Says Dixon, “The IFMA is an association that oversees all farmer’s markets in the state of Idaho. There are currently 47 markets in the state, we have funding and have opportunities to help families with things like double-up food bucks. We have a four-year grant through Health & Welfare for EBT which has been a huge blessing for all of our markets because they do not have the funding to print tokens or to have to apply for being a food-stamp friendly market. We have about 20 of these markets out of the 47 that honor this program.” While consumers can choose where they purchase their food, farmer’s markets offer an opportunity to not only support local farmers and vendors, but to provide the freshest available options. Fruits and vegetables that are often picked straight from the earth, mere hours before they are consumed. It is a way to ensure that special connection between sustenance and nature, to provide for those who intimately nurtured this food source by selecting locally-grown food for your own family’s table. Farmer’s markets help sustain our local economy but also feed our souls. For more information on the IFMA and Boise Farmers Market, go to theboisefarmersmarket.com/. 24

Green Gold HISTORY AND QUALITY OF OLIVE OIL

ANY GUESSES HERE? What product is derived from the process of picking summer-ripened olives, ensuring they’re exposed to no more than 80 degrees (F), guaranteeing less than .8% of free acidity and pressing them within 24 hours? If you guessed first-coldpress extra-virgin olive oil, you nailed it. Also known as EVOO, it’s the most flavorful and nutrient-rich of the lot, and it’s best served fresh on salads, with bread or drizzling over a steamy bowl of thick soup. IT’S HOW OLD? While the process and quality have evolved over thousands of years, the premise is still the same: press the olives, stems and pits with great force; capture the liquid that is released and bottle it up for same-day or future use. Evidence of oil production dates back to the 8th century B.C., and it was used for everything from cooking and eating to skin and muscle treatments.

Ancient trees exist in Greece, Southern Italy and Sicily today that still produce olives. At two to three thousand years old, it’s difficult to imagine a living thing on this earth for that length of time. In the heel of Italy’s boot, I’ve stood inside ancient trees, whose curious hollow centers can offer refuge for man or beast from the wind, rain and sun. But the shell of the tree and its strong branches continue to grow through the centuries, producing perfect olives nearly every fall.

New owner and longtime foodie Cheryl Neruda is enthusiastic and delightful. “Healthy and flavorful foods have always been a big part of our life,” she said. “We really enjoy helping people find the flavors they like and then pair with the dishes they plan to prepare.” She and her daughter are co-owners; she includes recipes with purchases; tastings are free and they’ll host small-group tasting events that sound like a perfect party. Society, Boise Bully Breed Rescue and Green Heart Rescue. It’s been the honor of my life to help these dogs and cats find their people. My favorite photography sessions are the “Rainbow Bridge” photos which captures the relationship with owners and their ailing pets. WHAT MAKES FOR A GREAT PHOTOGRAPHY SESSION? A great photography session for me is one with no plan. Working with animals means we get to be silly and go with the flow. I let the dogs decide what kind of session we’re doing. If they want to be snuggly, or playful or shy, I just work with that. No one has to fake a smilie when they are with their pets. WHAT IS IMPORTANT TO CONVEY TO PET OWNERS? Pet owners should know that first of all, this is pet photography, there is no stress! I like to use the Mike Tyson saying, “Everyone has a plan until they get punched in the face.” My sessions are fun and silly and we never ask the dogs do to more than they are willing to do. If someone is expecting the classic photo of everyone staring into the camera looking perfect and the dogs are on either side like little statues, that’s probably not what we’re going to get. I like to convey that I don’t take photos of people with their dogs, I take photos of dogs with their people. The dogs are the star of my show. Because my mission is to help rescue pets get the attention they need, I only take a few clients a month as this allows me to keep working pro bono. 40
