THIS YEAR WILL MARK THE 25TH YEAR OF THE HOLIDAY LIGHT SHOW AT SHADY BROOK FARM. Shady Brook Farm has been a staple in our area for more than 100 years. The family-owned farm got its start in 1913 and continues to be one of the last working farms in historic Bucks County. Dave Fleming is part of the fourth-generation owners that include his brother Paul and sister Amy. Their parents, Dave Sr. and Bev, also own and operate the beautiful Rose Bank Winery in Newtown. The farm is fully committed to preserving farming as a way of life through education and a ton of wonderful events. This holiday season, Shady Brook is adding an extra element to its Santa experience: breakfast with Santa. They really think of everything and everyone! Shady Brook opened its pub, The Stone’s Throw, two years ago in October 2017. They named it “The Stone’s Throw” because everything they serve is from a stone’s throw away. The cozy pub serves locally crafted beer and wines from Bucks County and signature cocktails made with Pennsylvania spirits. The Stone’s Throw has the perfect historic local feel. Reclaimed pieces of wood from around Shady Brook were used to create the bar and countertop with a lot of wood coming from the Carriage House dating back to the 1800s. They even added outdoor tables for a beer garden atmosphere and have Winter unWINEd Concerts. LA STALLA, MEANING THE STABLE OR DAIRY STALL, GOT ITS NAME WHEN THE TRATTORIA TOOK OVER THE LOVETT BARN, A RESTORED HISTORIC BARN THAT WAS ORIGINALLY BUILT IN 1929 AND HAD BEEN USED TO SHELTER AND FEED COWS. VEAL CHOP PARMIGIANA INGREDIENTS + 1 16-ounce bone-in, milk-fed veal chop + Plain flour

GRATED PARMESAN

+ 2 large free-range eggs, beaten + Fresh breadcrumbs + Olive oil + 2-3 fresh basil leaves + 2 cloves garlic, peeled and finely sliced + 1 handful freshly grated Parmesan cheese + Mozzarella cheese

METHOD Butterfly center-cut veal chop. TOMATO SAUCE

Remove excess fat, then tenderize with a meat tenderizer. Dip veal chop into the flour until well coated. Shake off any excess, then dip into egg batter. Let the extra egg drip off, then coat the veal chop in the breadcrumb mixture. Pan-fry for 4 minutes, 2 minutes on each side, at 375 F. Top with tomato sauce and fresh mozzarella cheese and bake for 15 minutes at 500 F. Top off with fresh basil and grated Parmesan cheese.
