Climbing Mount Kilimanjaro A mother-daughter duo from Brentwood, Sandy and Clare Cornelius, recently climbed the highest mountain in Africa: Mount Kilimanjaro, a dormant volcano in Tanzania. "We experienced majestic beauty, incredible people and six ecosystems there. It was the trip of a lifetime. But my favorite part was having my teenage daughter, all to myself, for a week without her phone," Sandy says.Â

Current owners Ciprian and Rachel Alexandru bought the business in 2018, saying they just knew Brentwood was a great location. “I think people come in for the boba and stay for the food,” Rachel says. She explains that bubble (or boba) tea originated in Taiwan. “It’s a frothy drink, usually made with tea and a flavoring added, then toppings, such as tapioca pearls, jellies and bursting bobas,” she says. Rachel says she loves that people come to their location to relax and work all afternoon. “It really helps us to be a gathering place for the Brentwood community,” she says, adding that they also deliver and cater. “We have amazing customers, and we’re grateful. People have gone from customers to friends and pretty much family.” This fall, they plan to launch an online ordering platform, plus new menu items, including more vegan-friendly options. Rachel says they are switching to all-natural Applegate turkey in their turkey wraps. “And, of course, our fall bubble tea menu will launch Oct. 1, so Pumpkin Pie Chillers are back!” Rachel says. “Our goal is fast, fresh food, made-to-order, every time, so we cut our fruit to order. We strive to be the place you can come and get your meal the way you like. SUSHI—TO BE MORE SPECIFIC: GOOD SUSHI—IS ONE OF THE MOST SOUGHT-AFTER DISHES IN CITIES AROUND THE WORLD, AND NASHVILLE IS NO EXCEPTION. Nama has been a top sushi destination since it opened in Nashville in 2014, with its open, modern space, contemporary decor and savory creations welcoming locals and tourists alike. Both area locations offer a pleasantly diverse menu and cool vibe, making Nama a staple sushi stop. The appetizers alone are worth the visit. A clear standout, the shellfish ceviche is incredibly fresh and a real treat. Mixed with pico de gallo, avocado, cilantro crema, scallion, sriracha and lime, Nama references South American cuisine with this light and flavorful dish. Crispy Crab Bites take the traditional idea of a comforting, delicate crab cake to a playful new level one just has to bite into to understand. For the more traditional diners, vegetable spring rolls with soy glaze and sweet and sour sauce are a tender, crisp and savory hit to palates. When it comes to sushi, everyone has their Secret Garden Roll
preference—from preparations of sashimi or nigiri to smoked fish, cone-shaped hand rolls to signature cylindrical rolls sliced into six or eight pieces.

Perhaps the most debated preference comes from those devoted to raw fish versus the tempura-fried fanatics. So, which is best? Though Nama offers something for everyone on its menu, Brentwood Lifestyle thought it’d be fun to taste a few house favorites side-by-side for comparison in an attempt to answer that question. A group of Brentwood community members served as secret judges for a sushi showdown. Popular rolls from Nama were placed head-to-head in a creative culinary battle. The setting served as the perfect vessel to mingle and discuss food with other local professionals who may or may not have visited Nama before. “This is a really fun event to meet people in a cool setting,” said Megan Reed, local creator and graphic designer. “I mean, everybody loves sushi!” Bert Simmons, organizer of The Jacksonville Tattoo Convention, said the atmosphere was a real highlight. “The intimacy [of the event] was the best part—how close it was, and how everyone could talk and interact.” Adding to the excitement, the gracious chefs of Nama were front and center, showing guests step-by-step how to create the rolls up for judging. Their talent for the craft of rolling sushi was evident with every deft maneuver of their bamboo mats, and they threw in some impressive extra knife skills by demonstrating how to thinly slice avocados with daring speed for the artistic (and delicious) topping of the Secret Garden Roll. Each person tasted all the rolls and voted for their favorite on an anonymous card to crown the winning flavor combination.

Debbie LoCurto, president of the local travel agency, routinely sets up clients with all-inclusive trips to Napa Valley
and Sonoma, specifically to California’s Wine Country, specially designed to uncork new experiences. She says clients can taste the history of 400-plus wineries paired with some of the finest food in the world at Michelin-starred restaurants. “You can even make your own bottle of wine,” says Debbie, who also can arrange for hot air balloon rides, culinary classes or spa sessions. The best way to approach a Wine Country trip, Debbie says, is not to stay in one region of the Valley. “Napa Valley has 16 American Viticultural Areas nested in it, with distinguishable geographic features that make the same grape taste slightly different,” she says. Debbie says many folks travel to Napa/Sonoma and feel overwhelmed. “They stop at the first winery they see and experience a flight tasting at the bar top. Wine is wonderful this way, but there are tons of experiences in Napa that will truly help you learn your palate and what all goes into making a fantastic bottle of wine,” she adds. This experienced wine enthusiast shared a few other hints: + Experience wine in a variety of ways: drinking a glass of wine made from vines one is literally standing in, to a cheese-and-wine paring experience or a blind taste test. + Ask questions. Sit with the winemaker, if possible. Wine hosts also give incredible information. + Don’t leave the Valley without experiencing a chef’s tasting with wine pairing; that’s really experiencing Napa Valley. “Whether you’re traveling with your loved one, a group or a bachelor or bachelorette party, we can book the perfect trip for you. There’s nothing that brings me more joy than planning the perfect trip for my family, friends and clients,” she adds. Debbie recently set up a group who sipped, swirled and savored their way through a five-day guided tour in Napa Valley. “Debbie handled every single detail. We were able to truly just show up and enjoy our vacation. We learned and experienced so much about wine and Napa and got to meet a lot of the winemakers. Every tasting felt intimate and special,” Daisy Marx says. Likewise, Susan Reinfeldt says she likes Debbie’s attention to detail. “We took a mother/daughter trip, and from start to finish, the trip was wonderful. Debbie’s hospitality and sense of adventure made the trip one of the best experiences we’ve ever had.” Debbie’s next guided Napa Uncorked tour is April 22–26.

DEBBIE’S PERSONAL WINE FAVORITES At home, Debbie has a two-story wine cellar that holds 3,000 bottles, with 90% of the wine sourced from Napa. She says she normally purchases two to three cases of a wine each fall from Napa/Sonoma. She then tastes one immediately, followed by opening a bottle every year until she feels like it’s at its peak. “Opening a bottle from 2004 with such a burst of fruit and softened tannins—now that’s a good wine experience!” Cabernet sauvignon comprises 50% of Debbie’s collection. She also enjoys cabernet franc, pinot noir, syrah, petite sirah, zinfandel and malbec. She has a little white wine, too. Debbie LoCurto
“Wine is meant to be experienced. It has a history, and every bottle tells a unique story,” she says. Debbie’s most cherished bottles came from one of her first experiences in Napa, at a boutique winery called Benessere Vineyard. “We savored a half bottle there in the vineyard. I still have one of those half bottles in my cellar— what a memory!”

PERSONALLY PREPARED GOURMET MEALS SERVED UP WHEREVER NEEDED—YES, PLEASE, THOUGHT HUNTER SYMPSON. So much so, this Brentwood-based culinary enthusiast started his own on-the-go food business, The Mobile Chef, in 2012. Hunter says he can accommodate large or small groups. “My crew and I can cook up any and all types of cuisine, from backyard crawfish boils to fine dining, six-course meals. Using new technology for Brazilian barbecue rotisserie, along with a 22-foot custom-built mobile kitchen, the options are endless,” he says. Hunter’s passion for cooking began at a very young age, partially due to his father, who cooked some “not so common” meals, such as smoking a whole pig on a spit and rolling their own sushi for lunch. “As a teenager, my dad took our family on many vacations around the world. He is a true foodie. From that experience, I gained great respect for multicultural cuisines, hence my love for different culinary aspects of food,” Hunter says. After attending his first culinary school in Baton Rouge, Louisiana, he headed to Orlando, Florida, where he graduated from Le Cordon Bleu. He then acquired an apprenticeship at one of the largest Hilton hotels in the world, Waikoloa Village Hawaii, on the Big Island. From there, he moved to Sarasota, Florida, doing numerous high-end catering events as a chef for the upscale restaurant, Mattison’s. He eventually returned to his Tennessee roots, advancing as a chef at the Hilton Hotel Downtown Nashville for six years before launching his own mobile food business. “I lived in eight different states on my culinary adventures. But I was born and raised in Brentwood, and I brought a piece of all those state-associated flavors back to my hometown,” Hunter says. Some of The Mobile Chef package offerings include Backyard Blast, Southern Pride, Divine Swine and Sinful Salmon. Now, Hunter says no two weeks are alike, as he moves from parties and company catering meals to community events and pop-up occasions, meeting more and more people for whom he can cook. He says cooking on-site versus in a standard kitchen is different, because when at various locations he can send his sous chef to Whole Foods or a nearby grocery store to change the menu at any time as required. Some of Hunter’s favorite meals to prepare at home in his own kitchen are any foods that bring family and friends together, such as crawfish boils and backyard barbecues, to enjoy the company of loved ones. Future plans within Hunter’s business aspirations are to enhance all his customers’ food experiences as he expands throughout the Nashville region. What Hunter says his customers share about Mobile Chef meals is they appreciate that his crew’s food is cooked on-site, compared to other caters. “They like that our food goes straight from the grill to the plate, ensuring freshness,” he adds.
