Cook Once, Eat Twice

WITH MOST OF US PREPARING MORE MEALS AT HOME THESE DAYS, THE IDEA OF COOKING ONCE AND EATING IT TWICE CAN SAVE TIME AND MONEY. It’s really as simple as it sounds. Cook a base dish that can be enjoyed today and used for an entirely different meal tomorrow. For example, bake some fish for tonight’s dinner, and enjoy fish tacos for tomorrow’s lunch. Whether you love cooking or are just trying to get by with as less work and stress as possible in meal planning and preparation, keep these things in mind in order to cook once and eat twice: Stock up on staples. Before heading to the store (or placing your order for delivery), develop a list of ingredients that can be used for multiple dishes. Canned goods, such as black beans and corn, are great items to have on hand for a variety of favorite family recipes. Other basics like corn tortillas can be used in multiple ways, such as tacos, casseroles and even salads. Don’t forget produce. To increase flavor and nutrition, adding produce is key in your planning. For example, mushrooms can be used in a variety of ways, are filling, healthy and versatile. Crimini and portabella are excellent sources of the antioxidant selenium (four crimini mushrooms provide 38% of your daily recommended value). Eating a variety of mushrooms can also provide vitamins B, D and riboflavin. To make meat go further, use a three-step cooking technique called “The Blend,” which combines finely chopped mushrooms with ground meat to create dishes that are more nutritious and taste delicious. You can use the process to create multiple dishes such as tacos, pasta sauce and burgers. Mushrooms’ ability to mimic the texture of meat makes them easy to incorporate, and the addition of finely chopped mushrooms to meat dishes stretches portions, allowing the family to enjoy a meat-mushroom base two days in a row in two different ways in dishes like Mexican Lasagna and Blended Tacos, both of which include a Mexican Mushroom-Beef Blend. BLENDED TACOS Makes: 8 tacos + 1 cup sour cream + 6 tablespoons cilantro, chopped + 2 tablespoons lime juice + 8 yellow corn tortillas + 2 cups Mexican Mushroom-Beef Blend + diced avocado (optional) + shredded lettuce (optional) + shredded cheese (optional) + salsa (optional) In small bowl, mix sour cream, cilantro and lime juice. Cover and refrigerate. Warm tortillas in microwave or on stovetop according to package directions. Spoon 1/4 cup Mexican Mushroom-Beef Blend into each tortilla. Top with sour cream mixture and avocado, lettuce and cheese as desired. MEXICAN MUSHROOM-BEEF BLEND Makes: 8 cups + 1 medium yellow onion + 8 ounces fresh button or crimini mushrooms + 1 pound lean ground beef + 1 tablespoon olive oil + 2 cans (15 ounces each) black beans, drained + 1 package (1 ounce) reduced-sodium taco seasoning mix + 1 can (15 ounces) crushed tomatoes + 1 can (11 ounces) yellow kernel corn, drained In food processor, pulse onion and mushrooms to coarse texture. Set aside. In large frying pan, brown ground beef. Drain fat. Set aside. In same frying pan, heat oil. Add mushroom mixture and saute 3-4 minutes, or until most moisture has been released. Add black beans and mix. Add beef, taco seasoning, tomatoes and corn to black bean and mushroom blend. Mix and cook until heated through. MEXICAN LASAGNA Servings: 6-8 + Nonstick cooking spray + 16 yellow corn tortillas + 6 cups Mexican Mushroom-Beef Blend + 1 cup shredded, low-fat Mexican cheese blend + sour cream (optional) + chopped cilantro (optional) + salsa (optional) Heat oven to 350 F. Spray bottom of 9-by-13-inch baking dish with nonstick cooking spray. Place four corn tortillas on bottom of dish and layer 2 cups Mexican Mushroom-Beef Blend on top. Repeat layers, ending with tortillas as top layer. Top with cheese. Bake uncovered 25 minutes, or until cheese melts and lasagna is heated through. Top with dollops of sour cream, cilantro and salsa as desired. 12

That changed when a conversation with a fellow Italian American, Rio Vitale, prompted Joseph to begin what would become his first feature-length film. Within five days of Vitale’s suggestion that he dig into the history of the Hill, Joseph, a St. Charles resident and 2014 graduate of Lindenwood University, had called some of his film-making buddies from Lindenwood and was already interviewing longtime residents in their homes. “I was afraid we were losing some of the stories that needed to be told,” he expressed. After 6 months of filming interviews, going through thousands of photographs and 8mm home movies, and 18 months of editing, “American’s Last Little Italy: The Hill” made its debut at the 20th annual (and first virtual) Whitaker St. Louis Filmmakers Showcase in July.

Louisiana proved to be a profitable shipping point on the Mississippi River, and that wealth led to numerous antebellum homes. The Missouri Department of Natural Resources says that Louisiana has “the most intact Victorian Streetscape in the state of Missouri.” Louisiana’s first settler, John Bryson, built the first residence in 1817. Of Louisiana’s 3,300 or so residents, many are descendants of the early settlers. For a small community, Louisiana certainly has its fair share of historic buildings. More than 15 buildings in the downtown area are on the National Registry of Historic Places, with many more dating back to the mid and early 1800’s. You can take a walking tour of the two historic districts. Louisiana is one of three communities that formed the 50 Miles of Art corridor. Artist John Stoeckly’s studio and gallery is there. For over 20 years, Stoeckley has been capturing the history of Missouri and other notable sites in America in extremely detailed pen, ink, and watercolor. Over 300 drawings make up the two main bodies of work: “The Heartland Collection” and “Reflections of Missouri.” These drawings, along with many others, are available for viewing and purchasing at his studio, located in one of the oldest buildings in Louisiana.

To avoid constipation, seniors might pay attention to consuming enough dietary fiber from sources such as whole beans, raw vegetables and whole fruits. If a senior can’t chew fiber-rich foods easily, recommend consulting his or her doctor to find out if a powdered fiber supplement dissolved in water would be appropriate.

6. Water Aging can dull a person’s sense of thirst. If a senior doesn’t feel thirsty very often, he or she may not drink enough water. Adequate hydration helps the body system function well, and it promotes the absorption of medications and vitamins for maximum benefit. Older adults can track their water intake for a day or two to learn how much they’re actually consuming, then adjust as necessary. The Institute of Medicine recommends healthy men drink about three liters of water a day, and women should get just over two liters per day. However, if a senior has been diagnosed with congestive heart failure or other fluid-restricting diseases, he or she should closely follow the doctor’s instructions for fluid restriction. No Bake Salted Caramel Bars Servings: 30 Cookie Layer: + 2 1/2 cups raw pecans + 8 pitted dates, soaked in hot water 10 minutes then drained + 2 tablespoons blanched almond flour + 1 teaspoon coconut flour + 1/4 teaspoon sea salt + 1/4 cup granular zero-calorie, natural sweetener + 3 tablespoons coconut oil, melted Caramel Layer: + 1/2 cup coconut palm sugar + 1/2 cup granular zero-calorie, natural sweetener + 2 tablespoons full-fat coconut milk + 2 tablespoons coconut oil + 1 pinch sea salt + 1 tablespoon vanilla extract + 1/2 teaspoon baking soda Chocolate Layer: + 2 cups stevia-sweetened chocolate chips + 2 tablespoons coconut oil + coconut oil + 1/3 cup dry roasted macadamia nuts, chopped + coarse sea salt 28

Cookie Layer: Toast pecans in large skillet--medium high heat; stirring often, 8-10 minutes until golden. Remove from heat. Chop until fine in food processor. Add dates, almond flour, coconut flour, sea salt, sweetener and coconut oil; pulse until dough forms. Caramel Layer: In skillet--medium heat, combine coconut palm sugar, sweetener, coconut milk, coconut oil, sea salt and vanilla extract; bring to boil, then decrease to low and cook 5 minutes, stirring often. Remove from heat; whisk in baking soda. Return pan to low heat and cook 2 minutes, stirring often. Remove caramel from heat and let cool 5 minutes. Chocolate Layer: In double boiler, melt chocolate chips and coconut oil. Stir until mixture is smooth; remove from heat. To assemble: Line bottom & sides of 9x9 baking pan with parchment paper, leaving some hanging over sides. Lightly rub parchment paper with coconut oil. Press cookie dough into bottom of pan to create even layer. Place in freezer 5 minutes to harden. Pour caramel over cookie layer; spread to coat evenly. Place in freezer 5 minutes. Pour chocolate over caramel and spread to cover evenly. Sprinkle with macadamia nuts and coarse salt. Place in freezer 10 minutes until chocolate sets. Use overhanging parchment paper to ease set mixture out of pan. Transfer to cutting board and slice into bitesize bars. DEFIANCE RIDGE VINEYARDS HAS TAKEN THE TERM “FARMHOUSE DINNER” TO A WHOLE NEW LEVEL. The 42-acre property, with its vineyard, tranquil lake, lush landscaping and sweeping views of the Missouri River Valley can be enjoyed year-round from the terraces and veranda surrounding their historic farmhouse. But to fully experience the most exciting, unique cuisine created with ingredients from local vendors and exquisite wine pairings, you have to attend one of their monthly Farmhouse Dinners. “Inspired by our desire to nurture people through food and wine, each month we host an intimate multi-course dinner in our modern farmhouse tasting room,” describes father-son owners Chuck & Trevor Gillentine. “We try to work with a wide variety of local vendors that have a unique place in our local food scene. The goal is to keep it fresh and introduce a new vendor each month and hope to use them annually. At the moment, there are about eight different vendors we have worked with, and our plan is to continue to build upon that. Some that we have worked with so far include Moondance Farms, Tony’s Family Farms, Triple J Shrimp Farm, and Mushrooms Naturally.” There is a theme for each, including anything from “Wild Game” to “Mushroom” dinners. If you’re interested in this experience, you may want to do it soon. When asked how many people are usually at these dinners, they replied, “At first, we had envisioned small intimate dinners, with capacities of 30-35 people. Over time, with greater demand, that has changed as the concept really took off. We’re now hosting crowds of 70-100 people for the most recent ones. The idea is still to keep the dinners feeling intimate for our guests, so 100 would be our absolute cap.” As far as COVID limitations, they say they’re very fortunate to have a large pavilion space that holds 300 people. So they can easily host 100 people and space tables out while adhering to social distancing guidelines. Also, staff are required to wear masks at all times and customers are required to wear masks inside the indoor tasting room at Defiance Ridge.
