This year’s Foodie issue is near and dear to our hearts, and stomachs. July saw the opening of Together Treasure Valley Dog Island, located in Ann Morrison Park's southwest corner. “We are proud to offer an opportunity for dogs to run, play and swim so close to downtown Boise,” says Doug, Halloway, Boise Parks and Recreation director. The park, open year-round, features a 5.4-acre active dog area, a fenced “shy dog” area and a pond. IGHLANDS HOLLOW BREWHOUSE (2455 HARRISON HOLLOW LANE) HAS BEEN AT THE FOREFRONT OF BOISE’S CRAFT BREWERY MOVEMENT SINCE 1992. “We’ve become this neighborhood brewpub,” general manager Megan Jones says of the family-owned and

-operated business. “We’re definitely a Boise icon.” It’s an icon with another icon hidden inside. In 1968, builder Nat Adams repurposed Boise State College (the former name of Boise State University) stadium parts into dining room rafters. However, those rafters needed decoration. “That kind of started the collection of coasters,” Megan says of

the beer coasters adorning The Hollow. “A lot of our customers have contributed over the years. When you’re eating, there’s a lot to look at.” The Hollow serves up delicious pub fare and is well known for its steamed clams, halibut and chips, soba salad and “mess o’ chops.” And if you’re headed to a brewhouse, why not get a beer too? “We have very approachable, wonderful beers,” Megan says. “We have enough rotating that there’s something for everyone, whether you’re new to craft beer or whether you have an acquired taste.” Ales, stouts and porters flow from Hollow tap handles. Fan favorites include Spoon Tongue, Fiegwild, Thunder Monkey and Hippie Shake. Can’t pick one? Try a flight. Have a favorite? There are $8 growler fills every Monday. The brewhouse also hosts live local music every Wednesday night. “It’s a pretty eclectic atmosphere in here,” Megan says. “If you’re looking to have a great meal and a beer in a down-to-earth environment, you couldn’t ask for a better location.”

Portland is the perfect

FOODIE DESTINATION. The city’s culinary scene spans a myriad of cuisines—every style, genre and ethnicity can be found in the city, whether it be at a corner food cart or a fine-dining restaurant overlooking the beautiful Willamette River. One restaurant not to be missed is Noble Rot. Found on the fourth floor of the Lower Burnside’s Rocket Building, the restaurant’s rooftop patio offers unmatched views of the downtown Portland area. Tables inside will find a light-flooded charming dining area, perfect to enjoy the delicious cuisine Noble Rot has to offer. On the menu, you will find a variety of dishes, ranging from grilled sirloin to seared salmon, all nicely garnished. Ingredients are sourced as locally as possible, and many are grown on the restaurant’s

rooftop garden. The menu even highlights ingredients grown on the roof. Noble Rot has a wine list with more than 300 options with 30-50 by-theglass choices. Noble Rot is open for dinner nightly starting at 5 pm. Reservations are recommended, especially for patio seating. Two other recommended food stops are the Third Avenue Food Cart Pod and Pambiche. The Third Avenue Food Cart Pod is a no-frills, carts-only pod that is commonly referred to as the Gyro District. We had one, and they are delicious! If gyros aren’t your thing, Mama Chow’s Kitchen has delicious dumplings, and El Pilon has gluten-free Colombian food. Pambiche is a trendy Cuban eatery with the classics. The brightly colored restaurant exemplifies the charm of Cuba with the food to go along with it. The pastries are a must while visiting. If you stop by for lunch or dinner, we recommend the Plato Cubano or the Pescado con Coco.

Vista House at Crown Point

If you are in Portland during the weekend, visit the Portland Saturday Market. Recognized as the largest continuously operating open-art market in the county, the market is filled with more than 250 local small businesses selling arts, crafts and foods. Part of the market is found in the Tom McCall Waterfront Park. The park runs along the Willamette River and is a popular place for jogging, walking and biking. If you are visiting during the warmer months, stop by the Salmon Street Springs. It is a great place to enjoy some yummy treats from the market and let the kids play. There is no better place to take in the cityscape than the Portland Aerial Tram. It is one of the only aerial trams for commuters in the country. It carries commuters 3,300 linear feet from the city’s South Waterfront district to the main OHSU campus. At the top, you can enjoy the city views and visit the nearby patios and cafes. A round trip fare is $5.10, and children younger than 6 are free.

If you are visiting during the summer months, stop by the Hood River fruit loop and lavender farms on your way back to the Treasure Valley. MULTNOMAH FALLS

Attracting more than two million visitors a year, Multnomah Falls is the tallest waterfall in the Columbia River Gorge dropping a

remarkable 620 feet. After admiring the falls from the ground, take a short walk up to the postcard-famous Benson Bridge. It spans the lower falls and is a great place to take some pictures. When visiting the falls, consider taking the Columbia Gorge Express shuttle, visiting early in the morning or visiting late in the afternoon to avoid crowds.

LATOURELL FALLS AND BRIDAL VEIL FALLS

Two must-visit waterfalls in the Gorge are Latourell Falls and Bridal Veil Falls. Latourell Falls is surrounded by columnar basalt cliffs, letting the water freefall for 294 feet. There are paved paths to the bottom of the waterfall and to a viewpoint of the top. There is also a 2.1-mile loop that visits Upper Latourell Falls. The base, Bridal Veil Falls, can be accessed by a one-mile round trip, family-friendly trail. The trail has beautiful vegetation along the way with a spectacular waterfall at the end.

VISTA HOUSE AT CROWN POINT The Vista House, originally built as a “comfort station” for drivers, overlooks the entrance to the Columbia River Gorge. The Vista House is most famous for its jaw-dropping views of the gorge and has some of the best views in Oregon. The balcony is the perfect place to breathe in the fresh air, daydream over the picturesque river and observe the boat traffic. Spend some time inside the Vista House learning about the history of the house, gorge and Oregon. There are restrooms and a gift shop in the basement.

A TWIST ON THE CLASSIC FALL FAVORITE

CHILLY FALL EVENINGS CALL FOR A HEARTY BOWL OF COMFORT FOOD. This white bean chili is easy to make on the stovetop in less than an hour or in the slow cooker on busy days. The standard recipe has some kick but can be easily modified for a gentler version.

WHITE BEAN AND SAUSAGE CHILI INGREDIENTS + 2 pounds hot pork sausage + 1 medium onion, diced + 2 cloves garlic, minced + 2 cans (15.5 ounces)

INSTRUCTIONS 1. In a large Dutch oven, brown the pork with the onion and garlic. Drain fat. 2. Add the beans, chicken broth, bell peppers, green chilies and seasonings to the

In an average year, fewer than 1,000 people are shot by hunters in the U.S. and Canada, and only about 75 of those are fatalities. Also, a “typical” hunting accident is usually one hunter shooting another, not a hunter shooting a nonhunting person who also happens to be in the woods. To put those statistics in larger perspective, there were 15.6 million hunting license holders during 2018 in the U.S. alone, according to the U.S. Fish and Wildlife Service. Another thing that helps keep hunting safe is all hunters in Idaho born after 1975 must pass a hunter education course, with a few exceptions, and hunter education is also required by other states, which teaches safe hunting practices. PLAY IT SAFE But if you’re heading into the woods to hike, bike, camp, walk your dog or other activities, you should consider a few simple precautions during hunting season. Wear brightly colored clothes, such as orange, red, pink or yellow, which helps hunters to instantly identify you as a person. Avoid white, tan, brown or black, which could resemble an animal’s colors. Most hunters are out in early mornings and evenings when animals are most active. If you’re heading to a place where there may be hunters, and you’re concerned about them, you might choose to go late-morning to mid-afternoon.

CHEF LOU AARON (THE WESTSIDE DRIVE IN) IS AN ICON. Idahoans have seen his appearances on the Food Network with Guy Fieri and Alton Brown or have caught his cooking demonstrations on KTVB. His story is well known: Lou is a hometown boy who does good. Chef Lou got his start washing dishes. He apprenticed at several Boise establishments before graduating his apprenticeship program. He moved to San Antonio and was a chef for a well-known hotel chain. He was featured on PBS’ Great Chefs of the West. Word of his talent spread, and soon he was offered a position at a Wolfgang Puck restaurant in Aspen. On the fast track to fame and fortune, he was surrounded by glamorous celebrities, but he wasn’t happy. Everyone who worked there was doing drugs, and Lou realized he wanted out and returned to San Antonio. In 1989, wanting to spend more time with his children, Chef Lou and his family moved to Boise. In 1994, as he was looking for an upscale restaurant to buy, he noticed a “for sale” sign on the Westside Drive In. Lou had grown up nearby, and nostalgia won out. Since becoming the owner of the Westside, Lou’s greatest story has unfolded. During all the years at other restaurants, Lou kept a journal of things he liked/ disliked about how they were run. That journal has become his playbook for running the Westside Drive In. He describes his approach as a three-part formula: excellent communication with employees about the whys of everything they are asked to do, training each staff member to exemplify the mission statement (“We exist for our customers”), and treating employees like they are family. Lou lives what he preaches. He makes a point of hiring employees who have nowhere to go or can’t get another job. Working at the Westside Drive In is excellent job training. Besides getting to learn the art of cooking from scratch under an incredibly skilled chef, employees learn the particulars of business. Lou wants employees to be able to leave the Westside Drive In and succeed elsewhere. A number of Westside employees have gone on to become chefs at other restaurants. More remarkable is how he treats the employees who don’t succeed. Chef Lou says about 75% of prison inmates are addicts. Whether it is his ordination as a Catholic deacon or his experience as a sober alcoholic that informs his actions, Lou is a boss of second chances. When one of his employees falls off the bandwagon, he helps them get sober and gives them their job back if they wish it. Lou’s mercy extends to second, third and even fourth chances. As a deacon, Lou is literally a servant of the people. For 35-40 hours per week, he serves the community through baptisms, weddings, funerals and visits to people who are sick, widowed or in prison. Add those hours to the 35 hours per week he spends at the Westside Drive In, and it seems miraculous he has time for anything else. To top it off, Lou has lymphoma. But, it doesn’t seem to slow down his ministry at all. With so many accomplishments to his credit, it would be easy to be arrogant, but Lou is as unassuming and warm as can be. He truly loves people. Lou has always involved his family in the business. “Both my son and daughter have been working at the Westside since they were 13 years old.” His daughter, Emily, has been working with him for more than 15 years and now does the accounting for both locations. Lou is looking ahead to handing off the Westside Drive In to his son, Josh, who currently runs the Parkcenter location. Truly, Lou is the chef who makes everything good: food, business, employees and his community.

I WAS BORN AND RAISED ON THE NORTH SHORE ON OAHU AND MOVED TO IDAHO TO ATTEND THE BOISE STATE CULINARY PROGRAM, GRADUATING IN 2000. My passion was to learn from the best and bring the flavor of Polynesian cuisine to a state where it was mostly unheard of. During this transition in life, I realized my desire to do catering. I spent the next seven years catering all types of events and eventually opened my first restaurant, Ono Hawaiian Café. Don’t get me wrong—it wasn’t always an easy venture, but with the support and love I received from the community, it made the trials and tribulations well worth it. Through the years, I have dedicated my life to bringing the best catering and taste of cuisine to events with Kanak Attack Catering, and in 2018, I opened Pineapple Express Hawaiian Restaurant in the heart of Meridian. Coming this fall, we will be opening Kanak Kitchen 11-11 in the beautiful downtown Boise Plaza. This is only the beginning of our adventure, and I plan to keep creating new ways to keep my customers satisfied. Aloha! WHAT IS YOUR DEFINITION OF SUCCESS?
