In 2008 and 2009, the team of urban planners, architects, engineers, and designers assembled to create a community unlike any other in the region, and homes began to take shape in 2011. By 2012, the town was ready to welcome the first residents, Grant and Jen Humphreys, and their family. Today, about 25 families live at Carlton Landing full-time, and numerous other families spend their time off in their own lake homes, or in one of the many beautiful homes available for single-visit rental or a time-share ownership option.

The community features multiple parks, two swimming pools, a community garden, boat club membership options, a local farm, and Carlton Landing Academy, the local public charter school that serves students from Pre-K through 8th grade. Six members of my own Oklahoma City family share a lake home that they built together in 2016. It is the perfect place for the two sets of grandparents to spend time with two of their grown children and three grandchildren, and the entire family can gather for holidays and celebrations. We’ve shared a Christmas fish fry with fresh crappie from the lake, bonfires on the porch, and bike rides to the local park and garden. The home is large enough for each couple to have their own personally designed bedroom and the kids to have their own space. My brother-in-law Jeremy Burt, shared with me that initially, they only decided to build a second home after hearing about the Carlton Landing community. “We weren’t even looking for a lake house. Eufala is nice because of its proximity to us. I can leave work on Saturday and be there in two hours.” When asked about his favorite part about spending time at their second home, he shared that it is the ability to focus on the important things. “Life can be going 200 miles per hour, but as soon as you get to Carlton Landing, it just all slows down, and the most important part of the day switches from answering e-mails to finding bugs on our family critter crawls.” The Bocce Ball Park offers three bocce courts, as well as an outdoor ping pong table. You can grab a bite at the food truck

ONE OF MY FAVORITE THINGS ABOUT SPRINGTIME IS THE RETURN OF THE GARDENING SEASON. Home gardeners are visiting herb fairs to select plants for their back yards, and transplanting seedlings that will be gorgeous produce by the middle of summer.

Local farmers, however, have been hard at work for months, both outdoors and in their greenhouses, getting a jump on the season. Not every city is fortunate enough to have a longstanding tradition of locally-grown food. Still, the OKC Farmer’s Public Market has stood the test of time, as the flagship of the Oklahoma City Farmer’s Market district since 1928. Every Saturday from 9 am to 2 pm, local farmers, bakers, chefs, cheesemakers, ranchers, and artisans gather to provide our community with the freshest local food available. On a recent visit, we purchased products from a few of these early-spring offerings for a delicious dinner at home.

EACH SPRING, I GET EXCITED FOR THE EARLYSEASON VEGGIES AT THE LOCAL FARMER’S MARKET. There is something magical about spring onions, leafy greens, and early root vegetables. Here, I have broken recipe tradition, and cooked MY way, without measurements or rules. I took beautiful ingredients and assembled a simple, easy-to-serve buffet of grilled meat, vegetables, and bread with sauteed spinach, paired with a simple spring salad.
spring market salad INGREDIENTS + Leaf lettuce + Spinach + Baby Arugula + Carrots, sliced + Cucumber, sliced + Fresh Parsley, Chopped + Fresh Chevre (I like the plain and any of the flavored varieties from Prairie Thyme Farms) + 3 parts Olive Oil + 1 part Balsamic Vinegar + Salt & Pepper, to taste DIRECTIONS Gently tear the leaf lettuce into fork-sized pieces. Toss with the baby spinach and arugula. In a pretty (my mother’s orders) salad bowl, place the lettuce in first, and arrange slices of carrot and cucumber. Sprinkle the chopped parsley over the top. Crumble the chevre and sprinkle over the top next. In a small bowl, whisk together the oil, vinegar, salt, and pepper. When ready to serve, drizzle the vinaigrette over the top of the salad. Serve with additional freshly cracked pepper, if desired. Serve alongside your favorite market staples such as grilled or roasted beef, pork, chicken, lamb, and vegetables from your favorite local farmers. The best part about this type of salad is that the ingredients can seamlessly evolve throughout the market season: Snap peas & tendrils, shaved asparagus, cherry tomatoes, grilled baby beets, and different herbs. You don’t need to measure the solid ingredients, simply create an attractive balance of colors, flavors, and textures. Cheers and happy farmer’s marketing! 34
