COMPOSTING GUIDE FOR BEGINNERS

Think about your space… An open space to create the perfect compost is preferred. You want moisture but not completely wet. It can be possible in an apartment or small home; one can simply find a stainless steel tin or compost bin. Be selective about what you put into it… You can choose to be conservative with your compost or even use meat. Be careful with limes, lemons, or anything too acidic. Items you may want to include in your compost are: potatoes, banana peels, apple peels, broccoli, squash, left overs, avocado shells, onion skin, coffee grounds. Tip: Go ahead and take your knife and chop into strips. It will decompose significantly faster.

Balance… Make sure to balance your green (nitrogen) and brown (carbon). You want a ratio of either 2 to 1 or 3 to 1. Personally, I shoot for 3 to 1. I like more carbon, but it’s definitely personal preference because your compost may need more brown or more green. Tip: Your compost is your compost. It will act differently than someone else’s. Just pay attention to all the above factors. Compost with other people... You can do this with your community. If you want to start but do not have the time/space, or are simply just nervous about committing, find friends or neighbors with a compost bin . Contact them to see if they’ll take your scraps. This helps the process! Time… While you’re waiting, have fun with it and get dirty. During the time, explore and get to know your compost. It’s a beautiful process and you’ll find all kinds of different shapes and things running/rolling around.

Although Palmetto Bluff is known for regular dolphin pod sightings, one dolphin in particular stands out among the rest – sporting a unique notching pattern on her dorsal fin and known for her playful behavior. Her name is Lucky. Through the relationship between the Conservancy and USC Beaufort, Montage Palmetto Bluff was able to “adopt” Lucky, thus becoming the symbol for the sustainability program. There, 32 miles of riverfront — featuring the May, Cooper and New Rivers — provides a safe haven for the Atlantic Bottlenose dolphin. Scientists hope to gain a better understanding of the behaviors and needs of the Atlantic Bottlenose dolphin that make their home in the vast tidal estuaries and rivers that make up the Lowcountry.

Regular guest lectures on the Dolphin Research Program are complimentary to resort guests (and the local community). The series is part of a robust schedule of 200+ educational programs and activities being offered through the Palmetto Bluff Conservancy each year. Paddle, bike, walk or horseback through the ecological diversity which thrives under the watchful eye of the Palmetto Bluff Conservancy, the caretakers of the ecological and environmental integrity of the honored land. Guests can join the Feederwatch citizen science project and monitor bird feeders, meet winged predators under the watchful eye of an instructor with Lowcountry Raptors, or explore the prehistory of coastal South Carolina with an archaeologist. Free classes, brown bag lunch workshops and guided nighttime hikes are listed in the extensive catalogue on the Montage website or the friendly concierges can help you make a plan for an engaging stay. But of all, the feather in the cap of the property’s conservation efforts is the May River Golf Course. Recognized as a Jack Nicklaus Signature Course, the 18-hole May River Golf Course is a Certified Audubon Cooperative Sanctuary, with a variety of conservation concepts used in the development and maintenance of the course. Club superintendent Chris Johnson and his crew of 35 check daily to identify irrigation needs and are diligent not to over-water which would cause unneeded run off or drainage issues on the precious land. Once the crew identifies exactly where on the 18-hole watering is needed, they can remotely trigger any of the approximately 2300 sprinkler or mister heads to take care of business.

Golf courses do not have the best reputation as environmental caregivers, but Jay Walea, director at the Conservancy gives May River an A+. “Chris has taken a holistic approach to golf course management and is doing it right, growing beautiful and healthy grass and being a good steward of the land. And the two don’t often go hand in hand.” All this care benefits golfers, too. “It’s a very special course,” says May River Golf Professional, Greg Wrobel. “It’s one of only eight Jack Nicklaus Signature Courses in the state and the views are spectacular, much the same now as 200 years ago.” He applauds his colleagues for their dedication to the course. “Novices will find it playable and fair where our members can play every day and find new nuances. You can look out across the marsh and see dolphins, boats cruising by, oysters being harvested and Bluffton across the river.” While golfers may never know about the chemistry behind the greens as they play the striking May River Golf Course, they will undoubtedly feel a natural pull. “REDUCE, REUSE, RECYCLE!” The importance of these words resonates in our daily lives. Each time we finish a soda or dispose of an empty plastic container that little voice in our head reminds us of them. Or maybe it’s when we see trash along the highway, clearly indicating that someone did not take this mantra to heart. But, there is more to these words than putting our newspaper or aluminum can into a recycling bin and Cath Shaw Truelove, founder of Bees on a Bicycle and author of a book by the same name, understands the importance of not only reducing, reusing, and recycling... but also in the practice of sustainability. REDUCE. What does Cath do differently to reduce the use of plastic? For one thing, she does not automatically place your purchase in a bag. Although bags for your items are available on request, she only uses bags made of paper. For another, Cath decided she would reduce the use of plastic by selling her plants in two different types of organic pots: Legacy pots and Grain Fiber pots. While Legacy pots are typically sturdy enough to be passed down for generations, Grain Fiber pots are made from waste products of plants and decompose in a few years thus reducing the impact on our landfills. REUSE. Needing to get rid of a few boxes around your home? Just drop them off at Bees on a Bicycle. Cath will use all boxes dropped off at the door for packaging. RECYCLE. Cath focuses her efforts on reducing and reusing so there are few items to be recycled or wasted. She realizes the need to recycle will never be completely eliminated, so if she can’t reduce or reuse, she recycles any way she can for the sake of our community. Cath’s mission is that no items are wasted; and anything that can’t be used in its current state be recycled in order to help insure sustainability. To Cath, the use of sustainability saves you money. Her favorite quote about saving money is, “It's not about how much money you have, it's what you don't spend”... and at Bees on a Bicycle you’re guaranteed to get your money’s worth. She focuses on the level of quality of the plant itself and the pot in which it comes. “Think of it as purchasing a good pair of shoes,” explains Cath. “If you want the shoes to last a long time, you spend more money and only have to buy one pair. If you buy a cheap pair, you end up buying multiples over the same period of time because they won’t last”. CREAMY LEMON PASTA – A delicious pasta dish with a garlicky lemon dairy free white bean sauce served alongside roasted asparagus. It comes together easily – perfect for a weeknight dinner. HEALTHY ASPARAGUS –Asparagus is incredibly high in Vitamin K and folate. It also boasts B vitamins, vitamin C, vitamin E, vitamin A, potassium, zinc, iron, protein, and calcium. This Lemon Pasta with Asparagus is one healthy dish! Course: Entree, Pasta Cuisine: dairy free, egg free, gluten free, nut free, soy free, vegan.

INGREDIENTS

For the Asparagus: + 1 bunch fresh asparagus + 1 tsp olive oil + salt/pepper (to taste) For the Pasta: + 1 lb ziti (or pasta of choice) (use gluten free noodles if desired) + 2 tsp olive oil (or 1 tbsp vegetable broth) + 1/4 of a white onion (diced) + 3 garlic cloves (minced) + 15 oz canned cannellini beans (rinsed and drained) (or 1 1/5 cups cooked dry beans) + 1/2 cup low-sodium vegetable broth (plus extra to thin, if needed) + juice of 1/2 lemon + 1/2 tsp salt + fresh parsley (to garnish) + zest of 1 lemon (to garnish) DIRECTIONS 1. Preheat oven to 425 degrees. 2. Trim asparagus. Toss with oil, salt and pepper. 3. Roast for 10-12 minutes until tender and starting to brown. 4. Cook the ziti according to directions 5. While the ziti is cooking, make the sauce.

6. In a small skillet, sauté diced onion and minced garlic in 2 tsp of olive oil until softened. 7. Combine beans, onion/garlic mixture, vegetable broth, lemon juice, and salt in a blender and purée until smooth. 8. To serve, combine ziti and sauce and serve the asparagus on the side. 9.
