HELLO BRIDGEWATER! September is arguably the best weather month of the year—you can comfortably enjoy being outside during the day in short sleeves without the sweltering heat of the previous few months, but the evenings bring fresh, cool air, and along with that, the beginning of light jackets and cozy sweaters. ITALIAN COMFORT FOOD WHAT IS SPAGHETTI PIE?

WHAT EXACTLY IS A SPAGHETTI PIE? Bobby Gannone, owner of Spaghetti Pie Cafe in Manville, is used to answering that very question. “To me, spaghetti pie is comfort food,” he says. Growing up in Raritan, Bobby’s Italian neighbors had 11 children, which meant they needed to come up with simple and cost-effective ways to feed so many mouths. One evening, Bobby was over at dinnertime and witnessed his first spaghetti pie being served. He went home and told his mother how good it was. And just like that, a new tradition was born in the Gannone household.

“To this day, you’ll find a spaghetti pie on my mother’s counter every weekend,” Bobby says. Spaghetti Pie Cafe serves a lot more than their signature dish. They are a full-service deli that’s open for breakfast and lunch, MondaySaturday. Bobby has worked in the food industry his whole life, and last November, he opened the doors to his own restaurant. SPAGHETTI

“I opened the cafe because I wanted to make people happy by feeding them.” The business is a family affair. You’ll find his sisters and mother pitching in behind the counter on the weekends or making desserts to sell. Bobby wants to be more than a typical deli, so he teamed up with Chef Joe Vischetti. “Joe’s food is incredible," Bobby says. "With Joe leading the kitchen, our menu is Italian with a Cajun edge. We do a little bit of everything.” Want to try your hand at making your own spaghetti pie? According

to Bobby, “No two spaghetti pies are alike!" Below is the simple recipe that the Gannone family has been perfecting for more than 40 years. Who knows—maybe this will become a weekend staple in your house as well?

PECORINO ROMANO CHEESE

S PAG H E TT I P I E INGREDIENTS + 1 pound spaghetti + 10 eggs + 1 cup Pecorino Romano cheese + 1 teaspoon granulated garlic + 1 teaspoon black pepper

Optional Garnishes: + Marinara sauce + Sliced pepperoni + Diced tomatoes + Basil

COOKING INSTRUCTIONS 1. Cook spaghetti al dente and drain water. 2. In a mixing bowl, combine all ingredients and mix well. 3. Pour in a well-oiled frying pan and cook on medium heat for approximately 10 minutes. 4. Flip and cook approximately 10 minutes on the other side or until cooked through.

DICED TOMATOES

5. Remove from pan and let rest for 10 minutes.

SERVING INSTRUCTIONS: 1. Add sliced pepperoni, diced tomatoes, fresh basil or your favorite pizza toppings. BASIL

LAUNCHED A HIGHLY SUCCESSFUL MOBILE APPLICATION, GIVING HIM A TASTE FOR RUNNING A BUSINESS. It didn’t take long for him to realize that entrepreneurship was in his blood. Always a coffee enthusiast, Cheech enjoyed bottling organic cold-brew coffee in mason jars in his kitchen. He started sharing his coffee creations with his friends, and one asked him to sell the coffee at an upcoming beer festival. Cheech partnered with a culinary kitchen in Somerville and used their commercial space to brew large batches of coffee in the evenings. For the next two years, he sold one product—the organic concentrate—at festivals and farmers markets. Last year, Cheech welcomed an investor and opened up a cafe in Somerville.

“We built a formal venue stage in the cafe, that we fill with local acts.” —Cheech “Instead of just serving cold-brew, we basically took everything that we did with coffee and molded it into one concept.” The cafe is a social atmosphere that serves 100% organic coffee and a wide variety of vegan and gluten-free baked goods. “People care more and more about what goes into their bodies. They want quality over quantity.” Cheech noticed that many local businesses were volume-driven and embraced table turnover. “Businesses don’t want you to stay for long, so they make the seating uncomfortable and don’t provide community meeting spaces.” When Cheech was designing the cafe, he decided to build the first stage in Somerville. So not only is Cheech’s Own a spot to grab a delicious vegan treat with a cup of freshbrewed organic coffee, but it is also a place to socialize and enjoy a show. The stage at Cheech’s Own quickly became the entertainment epicenter of Somerville. “We built a formal venue stage in the cafe that we fill with local acts. One of our first recurring events was our poetry night with Kelso A. Nickels.” They host a comedy night on the second Friday of each month, with comedians traveling from all over the tri-state area to perform. Recently they had a cappella group, Musae, perform a 90-minute set to a standing-room-only crowd.
