Public Library in the form of a monthly reading circle of Shakespeare’s plays. It’s called “Shakespeare Allowed!” and has been going for over a decade, currently reaching into the middle of the fourth time through the canon. This April, do not neglect to see “As You Like It.” Coproduced with Lipscomb University, the play runs for three days in the Shamblin Theater on campus. In the merry month of May, attend the NSF fundraiser “Jester’s Dead,” a staged reading of the original “Top Gun” screenplay as the Bard would have written it. Also in May is another collaboration with the Frist, “Shakespeare in the Galleries,” an immersive performance in which NSF actors and musicians will fuse carefully curated poems, songs, and instrumentals with the artwork of J.M.W. Turner, the great English artist of the Romantic period. As for this season’s Summer Shakespeare, it’s “What You Will” (Twelfth Night), a comedy set in contemporary Nashville. And, while you are certainly welcome to go as a groundling, consider treating yourself, friends and family to the “Royal Package” as the NSF teams up with the Italian restaurant Pastaria to provide a lifetime memory: reserved VIP parking in the adjacent garage at oneC1TY, pre-show reception and dinner catered by Pastaria on the private, 2nd floor terrace overlooking The Yard, and reserved, comfortable chairs in the center of the action. Also, in case you miss the performance at The Yard this summer or simply want to see the NSF’s great performance at another venue, the Summer Shakespeare once again appears at Franklin’s Williamson County Performing Arts Center at Academy Park for one weekend after their 5-week run in Nashville. So, dear reader, do not go through thy vale of years, or even one more season for that matter, infirm of purpose; savor the delights the NSF has to offer! Sure, all the world’s a stage and all the men and women merely players, having their exits and their entrances and all that, but the actors of the NSF are particularly worth watching. But do not tarry! These our NSF actors, as I foretell you, are all spirits, and are someday melted into air, into thin air.

nutrition MINDFUL EATING MEANS KNOWING WHAT IS IN YOUR FOOD, HOW IT IS AFFECTING YOUR BODY AND TAKING THE TIME TO FULLY APPRECIATE THE NUTRIENTS AND FLAVORS YOU ARE TAKING IN. Whether or not you are trying to lose, gain or maintain weight, reading labels and understanding nutrition facts will help you make better choices for your body and ultimately feel better in your day-to-day.

PROTEINS Protein makes you feel full longer. If you eat a meal with little protein, you’ll feel hungry again pretty quickly, and it can be discouraging. But you don’t have to eat a huge steak to get enough protein. You can find it in cheese, nuts, seeds, spinach, eggs, avocados, broccoli, hummus, lentils—the list goes on and on! Mindful eating means taking note of how hungry you feel and eating enough protein to satisfy that hunger in a way that will last.

C A R B O H Y D R AT E S Carbohydrates are not your enemy. But, it is important to pay attention to how you feel when you eat them. If you eat a lot of carbs in one sitting, it can cause your blood sugar to spike, and when it drops back down, you can feel lethargic and maybe even irritable. By spreading your carbohydrate intake throughout your day and always pairing it with a protein, you can help your body regulate your blood sugar more effectively and feel more alert all day long.

F AT S Fats also help slow carbohydrates down so they don’t instantly turn into sugar in your bloodstream. Fats are important for energy, and it’s especially important to eat the right kinds of fats for your brain. For better concentration and memory, try to incorporate foods like salmon, avocados, nuts, seeds and olive oil.

HEALTHY LIFESTYLE (CONTINUED) While nutritionists can recommend average nutrient intake percentages for a population, those might not be entirely accurate for your body and what you need. If you don’t enjoy calculating and counting

every single gram you eat, you can just start with the recommended guidelines and make adjustments based on how you feel each day. If you are groggy and sluggish mid-day, look at how many carbohydrates you had in your lunch and see if you want to change anything about your lunch tomorrow. Here’s how to read nutrition labels so you can better keep track and know what you are eating.

Serving sizes can be confusing if you don’t know what an ounce of that food looks like. Look at “Servings Per

food. If you are eating a package of nuts as a snack, and you are not eating anything else with it, you may need a couple of packages to eat as many calories as you want for that snack. It’s not wrong to eat multiple servings! Focus on what your body needs.

You need a variety of vitamins in your day, so check the percentages and make sure you are getting lots of different nutrients. Vitamin C is great, but it is possible to have too much Vitamin C and neglect Vitamin A. Calcium and iron are important for strength and to avoid injuries, so make sure you get enough of those each day as well. An easy trick is to try eating a vegetable of every color each day.

28

Green Hills Lifestyle | April 2020

Carbohydrates are broken down by dietary fiber and sugar. To feel fuller longer and to have a clear mind and avoid getting foggy, choose carbohydrates, such as wild rice, that have more dietary fiber and less sugar.

YOU CAN SEARCH FOR A NUTRIE N T C A L C U L AT O R O N L I N E T O FIND OUT HOW MUCH PROTEIN, C A R B O H Y D R AT E S A N D F AT S Y O U S H O U L D B E E AT I N G I N A D AY FOR YOUR SPECIFIC NEEDS.

You are the best expert of you, and you get to make all of the final decisions for your body. Do your research, get all of the info that you can and then decide how you want to divide up your nutrition each day. One of the most effective things you can do is keep a log of your moods, how your skin looks, how your hair feels, your water intake and your energy levels. While your fitness goals are important, how you feel each day is so much more important. It’s easy to lose weight by dramatically cutting calories, but that can leave you feeling irritable with low energy, and it’s ultimately not worth it. Take care of yourself and think about how the choices you make will affect your health in the long run. And never forget that you are enough, just the way you are.

CULINARY CREATIONS

Fire Up That Grill!

ARTICLE WILLIAM HARWOOD AH, SPRING! The season when our tummies yearn anew for good things cooked in the great outdoors. Sure, winter kept us warm, compelling us to stay inside to bake or simmer or boil in the oven or on the range. But now, as the days grow longer and the buds about us burst into bloom, we venture out once more to make our meals upon that ultimate temple of all things tasty: the backyard grill. Warning: The recipe you are about to read is addictive. Proceed at your own risk.

Pork Satay with Peanut Sauce INGREDIENTS: Marinade: + 1 1/2 cups coconut milk + 1/4 cup peanut butter + 3 tablespoons fresh lime juice + 1/4 cup lie soy sauce + 4 cloves garlic, minced + 1-2 serrano peppers, seeded and finely chopped + 3 tablespoons cilantro + Salt + 1 1/2 pounds pork tenderloin, cut into 1-inch thick cubes + Wooden skewers Sauce: + 1 1” piece ginger, peeled + 1 small garlic clove + 1/2 cup creamy peanut butter + 2 tablespoons reduced-sodium soy sauce + 1 1/2 tablespoons fresh lime juice + 1 1/2 teaspoon (packed) light brown sugar + 1/4 -1/2 teaspoons crushed red pepper flakes DIRECTIONS Marinade: Combine all ingredients in a medium bowl, add pork and let marinate 2 to 4 hours. Sauce: With motor running, drop ginger and garlic clove into a blender and blend until finely chopped. Add peanut butter, soy sauce, lime juice, brown sugar, red pepper flakes, and 1/3 cup water and blend, adding more water by tablespoonfuls if needed to thin, until smooth. Preheat the grill.

MEAT THE CHALLENGE OF SPRING AS THE DAYS GROW LONGER

Remove the pork from the marinade and thread on skewers. Grill for 7 to 8 minutes or until cooked through. Serve with the sauce. Can be served hot or room temperature. Satay can be made ahead of time, refrigerated, then served at room temperature
