COOK UP A FRESH AND DELICIOUS SAUCE FOR PASTA, CHICKEN, AND MORE!
SPRINGTIME IS IN FULL SWING, AND MY GARDEN IS GROWING. While it is too early for summer veggies, herbs are an excellent option for creating flavorful (and even healthy!) meals. One of the best things about using herbs in recipes is how simple it can be since the herbs themselves pack in so much flavor without the need for a long list of ingredients. These are the types of recipes that are perfect for cooking with kids. They don’t have to take a lot of time or advanced skills. For this recipe, we’re using fresh basil

and parsley. Both have very distinct flavors

and aromas. You can also add in any other fresh herbs that you love. A little bit of cilantro is a delicious addition for a Latin flair, or toss in some mint to serve over grilled meats such as lamb. Before you begin, have your child smell each herb. Does the basil smell a little like licorice? What about the parsley? What does it smell like? Using a mortar and pestle is an excellent way to make this since it doesn’t require an appliance, and it is a great interactive step for kids. You can also have them squeeze the lemon halves into a small bowl and use a fork to remove the seeds.

INGREDIENTS
INSTRUCTIONS
+ 1 garlic clove, peeled
01 Use a mortar and pestle to smash the garlic clove
+ 2 cups fresh basil leaves + 1 cup fresh parsley leaves (you can use curly or Italian flat-leaf parsley) + 1 tablespoon fresh-squeezed lemon juice
until it is well crushed. 02 Tear the basil and parsley leaves into smaller pieces. 03 Add a few leaves at a time to the mortar and grind the mixture into a fine paste. 04 Stir in the salt, lemon juice, and olive oil. Serve over hot pasta or chicken, or even chilled for a great pasta or chicken salad.

WHETHER YOU’RE ALREADY INVESTING OR ARE JUST THINKING ABOUT IT, YOU SHOULD UNDERSTAND RISK AND THE ROLE IT CAN PLAY IN A PORTFOLIO. And although it may seem simple enough on the surface, risk can be one of the most challenging concepts to grasp – especially for new investors. To help clear things up, here are some things you should know:
R I S K H A S M A N Y F A C E S Usually when people talk about risk, they’re referring to investment risk: You purchase a stock at $50 a share, for example, and a year later it’s worth only $25. Investment risk is relatively easy to understand, and it’s measureable based on the ups and downs in an investment’s price. The more volatile it’s been, the more risky the investment is considered to be. Unfortunately, investment risk is only one type of risk that investors face. There are plenty of others that may not be as easy to understand or measure. For example: MARKET RISK. While investment risk has to do with a specific investment, there’s also the risk that the entire market will decline – like now with COVID-19 – and pull your investment down with it. That’s market risk. INFLATION RISK. Inflation is the overall increase in prices in an economy. It creates the risk that an investment’s return won’t be enough to overcome its impact. For example, if inflation runs 2% a year and your investment returns only 1%. That means you have lost “purchasing power.” As a result, even with your returns, it would buy less at the end of the year than at the beginning. OPPORTUNITY RISK. Some investors believe you can avoid risk by investing conservatively. However, there’s opportunity risk, which is the possibility of missing out on the chance to earn better returns by being more aggressive.

There are tools, like questionnaires, available to assist you. In addition, one indicator that you’ve exceeded your risk tolerance is when you find your investments’ performance is keeping

AVOID A MENU RUT WHILE HELPING YOUR FAVORITE LOCAL RESTAURANTS SURVIVE THESE UNEXPECTED CIRCUMSTANCES
I LOVE FOOD. I love cooking (and travel) more than most things in life. Some readers may not know that in my other life, I am a chef. I have been a food journalist in various media for many years, but long before that, I am a chef, culinary instructor, and cheesemonger. On days when I am not wearing my “Historic District Lifestyle hat” (and some that I am), I am usually in a kitchen. A lot of my friends are chefs, instructors, servers, bartenders, and restaurant owners. One positive thing that I have noticed about the recent “shelter at home” situation is that people are finding comfort, entertainment, and even family time in their kitchens. They are cooking with their kids, and trying out recipes they clipped out of a magazine a year ago and never made time to prepare. I love this. I also know that there comes the point when all we (myself included) want to do is let someone else cook for us. To relax and enjoy the amazing talent we have in Oklahoma. I look forward to the day I can sit happily (and worry-free) in my favorite restaurants and enjoy my favorite dishes from so many of my chef friends. One concern many of us in the hospitality industry (and many others) have right now is whether or not our favorite establishments will see the other side of this still in business. Employers had to make the heartbreaking decision to lay off staff, many whom they considered like family to ensure the employees’ ability to get unemployment, and to increase the odds that there would be a job waiting for them when restaurants reopen. The restaurants that are still operating under the delivery/take-out rules are on skeleton crews in the kitchen, and many have reassigned staff to delivery drivers and carry-out attendants. They need our support right now, just as we need them to stay in business. Fortunately, we can help the situation. We can help one another. Our talented restaurants and chefs can help us find comfort in eating well. We can help them make it through these trying financial times. I have compiled a list of restaurants in the urban core that are offering delivery and take-out services to give you a break from cooking, and to bring back just a little bit of the “normal” that we’ve all been missing.
